I start by asking for a big favor!! Thank you in advance!   This show is part of the effort to refresh the WFNP catalog, based on the ideas of Patron Chris C, who did a ton of work to help me come up with a list of things he thought I could re-do, given that it's been 14 years since I covered some of this stuff. If you have any ideas, please drop a DM on Patreon or send me ideas through the site!   This show has my recommendations for filling a case of wine with classics from around the world. These wines will give you a great idea of what these regions represent and why they are so famed. Even for experienced wine drinkers, I think it's good to go back to the basics and try stuff you haven't had in a while to remind ourselves why they are so good!   The list contains 12 still wines (no sparkling or fortified this time!), whites, reds, and one rosé. The wines are:   Whites: White Burgundy, which is Chardonnay. I recommend the wine especially from the Hautes Côtes de Beaune or Hautes Côtes de Nuits, Côte d'Or Blanc, or Chablis 2. New Zealand Sauvignon Blanc – with a twist. Look for wines from the Awatere or Wairau Valleys. 3. German Riesling from the Mosel (for off-dry wines) or Rheingau. I also mention Pfalz for great dry wines. 4. Portuguese Alvarinho – Vinho Verde, specifically from sub-regions of Monção and Melgaço   Rosé 5. Tavel from the Rhône Reds 6. Bordeaux – especially from the Médoc or Côtes de Bordeaux for Merlot-driven wines (Pomerol and St. Émilion) and for bolder, more ageworthy wines with more Cabernet -- Haut-Médoc or Saint-Estèphe or for spendier versions – Graves, Margaux, Saint Julien, Pauillac 7.   Rioja from Spain   8. Italian reds either Chianti Classico (have food with it!) or Roero/Langhe Nebbiolo/Nebbiolo d'Alba/Barbaresco   9. California – Santa Barbara County Pinot Noir (or more specifically Santa Maria Valley or Sta. Rita Hills)   10. Barossa Valley Shiraz (take another look if you haven't in a while!). For more restraint, you can look for Shiraz from Eden Valley, a sub region of the Barossa Valley   11. Chilean Cabernet Sauvignon, especially Maipo Andes/ Alto Maipo is best, due to the higher altitude in this area 12. Clark Smith has a Noam Chomsky story to tell. Clark Smith is in the studio for California Wine Country with Steve Jaxon and Dan Berger. Today he tells his MIT stories and more. The Clark Smith MIT story begins with his first two years of college, at Massachusetts Institute of Technology. This podcast episode is from the portion of the live show where Clark tells his personal story. Clark' last appearance on CWC was this episode of last March. The rest of Clark's conversation with Steve and Dan is about the wines he brought in today, so that has its own podcast episode, here. Clark Smith dropped out of MIT after two years and we finally hear the story today. At MIT, the senior faculty teach the Freshman courses. So he had Noam Chomsky for Linguistics, Francis Crick for microbiology, and several others. The trouble came when he had to declare a major at the beginning of his junior year, after earning straight As his first two years. He wanted to create his own major that combined science and art in some way. Today, that is a common practice in universities but at that time, he was not able to do it. So he dropped out thinking he would take a year to figure it out. The One-Way Cross Country Trip That is when Clark and a friend drove across the country and he ended up getting a job in a wine shop in Oakland. Someone asked him about a bottle of Paul Masson Emerald Dry wine. He didn't have the answer, so he started tasting the wines, eventually all of them. There were 250 wineries in the US and he visited a lot of them, maybe “all” of them. One day while visiting a winery he told his wife, that this was his calling. He is happy to have found the art plus science angle he was looking for. After that, he completed the BS and MS programs at UC Davis. Then he helped found RH Philips winery and he started his WineSmith consultancy. Click the logo to visit Davis Bynum Wines. When he was working for Benziger, their owner needed to find non-alcoholic wine. So he bought a reverse osmosis machine. One of the big problems of winemaking up to the 1970 was how to get rid of VA, Volatile Acidity, i.e. vinegar. In 1960 the average wine in California was 18.5% ABV, mostly Port and Sherry but that was before enough people learned how to really do it. There is great wine coming from places like South Africa and Australia, but most of the best product stays in the country of origin. As two women in the wine industry, what better topic for us to tackle than “Women in Wine”?!  Special guests include Lindsey Koch and Benedicte Rhyne who share their passion for wine and how they embraced their natural female skills and talents to make their way in the traditionally male oriented world of wine.  Meet Lindsey:  Lindsey started her career in Fort Worth, TX as a medical staffing agency before launching her own staffing company, Embracing her interest in wine she studied to become a certified Sommelier, she took the big leap of faith to start her own wine bar, WineHaus from the ground up.  After  8 years, she sold the business to a previous customer as she made the move out to Sonoma County, California to further her career in wine. Living in California Wine Country, Lindsey is currently the Estate Director for Small Vines Wines in Sebastopol, managing everything from marketing and customer outreach, to curating bespoke tasting experiences at the winery. Additionally, Lindsey and her husband always dreamed about starting their own winery and made the dream a reality, starting Curves & Edges Wines during the 2020 vintage. She focuses her efforts at Curves & Edges on two varieties that have always brought her great joy, Sauvignon Blanc and Merlot. Meet Bénédicte: Bénédicte (Bennie) Rhyne is a native of Aix en Provence, France. She received her master in oenology (the study of wine) from the Université de Bourgogne (Dijon), had a successful experience at Chateau Pétrus, in Pomerol, Bordeaux, before global adventures to New Zealand and England landed her at Ravenswood Winery in Sonoma, California, as a member of the winemaking-team. Here she developed a”Meritage“program increasing the winery's production ten-fold between 1991-2001. Additionally she created a sophisticated wine laboratory with well -trained staff and quality control procedures. In 2002, Bénédicte and her family moved to Fredericksburg, TX and created a Wine Laboratory to compliment her Wine Country Consulting business.  Bénédicte served sixteen years as the winemaker of Mesa Vineyards, St. Genevieve Wine in Fort Stockton, Texas. Et c'est en avril 2021 qu'il décide de créer avec son associé Daniel Fischer, l'entreprise Lavrela, spécialisée dans l'importation et la distribution de vins géorgiens pour les particuliers et les professionnels.   A travers une plateforme de ventes en ligne, Lavrela propose une belle carte de vins élaborés dans des jarres en terre cuite, qui raconte l'histoire et les traditions géorgiennes.  Saskia de Rothschild - Domaines Barons de Rothschild Lafite De Bordeaux aux Corbières, du Chili à la Chine, les Domaines Barons de Rothschild Lafite ont créé une famille de vignobles soudée. Fermement ancrée dans le sol qu'elle cultive, dédiée à l'art d'une vinification exemplaire depuis le premier jour au Château Lafite Rothschild en 1868, la famille, s'est agrandie. Après le Carbenet Franc et le Cabernet Sauvignon, l'œnologue Béatrice Dominé et le MOF Sommelier Laurent Derhé vous font découvrir dans l'épisode d'aujourd'hui le troisième grand cépage de Bordeaux, le Merlot.     Le Merlot est le cépage le plus planté dans le bordelais, notamment sur la rive droite où l'on retrouve de grandes appellations comme Pomerol ou Saint-Émilion. Mais on le retrouve aussi au nord de l'Italie, en Suisse, en Nouvelle-Zélande et en Afrique du Sud !  

Le monde entier connaît le château Angelus à Saint-Emilion, et pour cause : c'est l'une des étoiles de première grandeur des vins de Bordeaux, premier Grand Cru Classé A du classement de Saint-Emilion depuis 2012, au même rang que Château Pavie, Cheval Blanc et Ausone.Dans cet épisode des “Quatre saisons du vin”, Mathieu Hervé et César Compadre reçoivent Hubert de Boüard, copropriétaire du Château Angélus, copropriétaire du Château Bellevue (qui fait face à Angélus) et du vignoble de Klein Constantia, en Afrique du Sud. Les primeurs, c'est une période clé de l'économie du vin à Bordeaux. En cette année 2022, la semaine des primeurs aura officiellement lieu du 25 au 28 avril. Petit rappel : les primeurs, c'est ce système de vente de vin très particulier et typique de Bordeaux, consistant à vendre au printemps suivant la récolte des vins dont l'élevage n'est pas encore terminé, après la dégustation d'échantillons. On parle ici du millésime 2021.Comment un vin arrive-t-il à naître ? Des vendanges à la sélection parcellaire, de la vinification à l'élevage en barriques, comment réussir la subtile alchimie entre plusieurs facteurs ? “On va mettre certaines parcelles avec d'autres, certains tonneliers avec d'autres, et il faut également du temps pour que tout ça se digère et pour que le vin soit le meilleur possible ” explique Charly Lassus, l'invité de cet épisode des “Quatre saisons du vin”, le podcast qui décrypte l'actualité du vin. Charly Lassus est responsable qualité, vigne et environnement au Château La Conseillante, prestigieuse propriété de Pomerol (les bouteilles du premier vin sont commercialisées à plus d'une centaine d'euros auprès du consommateur).
