DJ Dirk Swartenbroeckx klinkt misschien niet zo bekend. Als we de naam van deze Limburger een vleugje Hollywood meegeven, krijg je Buscemi: muzikant, dj en live artiest. Deze Belgische topper speelt zijn muziek van Zuid-Amerika tot Belgische sterrenrestaurants en van Oost-Europa tot Japan. Zijn muziek is moeilijk in een vakje te plaatsen, want Buscemi laat zich beïnvloeden door funk, jazz, jungle, drum ‘n' bass, latin en afrobeat. It takes a lot of calories to run a brain, and the bigger your brain, the more calories it takes. So how is it that, over the last couple million years, the human brain tripled in size. How could we possibly have afforded that? Where did the extra calories come from? There's no shortage of suggestions out there. Some say it was meat; others say it was tubers; many say it was by mastering fire and learning to cook. But now there's a newer proposal on the table and—spoiler—it's a bit funky. My guests today are Katherine Bryant, Postdoctoral Fellow at Aix-Marseille University, and Erin Hecht, Assistant Professor in the Department of Human Evolutionary Biology at Harvard. Katherine, Erin, and another colleague are the authors of a new paper titled 'Fermentation technology as a driver of human brain expansion.' In it, they argue that fermented foods could have provided the caloric boost that allowed our brains to expand. Here, we talk about how the human body differs from the bodies of other great apes, not just in terms of our brains but also in terms of our bowels. We discuss the different mechanisms by which fermented foods provide nutritional benefits over unfermented foods. We consider how fermentation—which basically happens whether you want it to or not—would have been cognitively easier to harness than fire. Along the way, we touch on kiviaq, chicha, makgeolli, hákarl, natto, Limburger cheese, salt-rising bread, and other arguably delectable products of fermentation.  This is a fun one friends. In De Perstribune ontvangt Margreet Reijntjes deze week zanger/presentator Lex Uiting en wielrenster Chantal van den Broek-Blaak. Zanger en tv-presentator Lex Uiting is een man die zijn Limburgse roots vol overtuiging omarmt. Hij zingt in het dialect en is een fervent carnavalvierder, zoals binnenkort te zien is in het programma Carnavalshart. Zijn eerste stappen in de media zette hij in het opleidingsklasje van BNNVARA. Hij werd radioverslaggever en daarna Jakhals bij de Wereld Draait door. Volgens ‘de Limburger' een man met olijke bravoure, die tegenwoordig achter de desk bij RTL Boulevard te vinden is. Wielrenner Chantal van den Broek - Blaak besloot deze week per direct een punt achter haar profcarriere te zetten, omdat ze onverwacht zwanger bleek te zijn. Ze kijkt terug op een topsportleven waarin ze door haar nietsontziende benadering -aldus haar intimi- een prijzenkast vol fietste; met als hoogtepunt haar WK titel in Noorwegen. Na haar eerste zwangerschap duurde het even voor ze weer op koers was. Toch lukte het haar vorig jaar de NK titel in de wacht te slepen. Het bleek haar laatste grote overwinning.

Een van de meest bekende dancetempels in België was club Atmoz, waar onze gast in deze aflevering de allereerste resident-dj was. Nico Parisi begon al op zijn veertiende plaatjes te spelen en al snel groeide hij uit tot een vaste waarde in het dancelandschap. Die laatste track werd in 2023 opgevist door Kevin De Vries en Mau P en werd dé wereldhit van het jaar. In deze aflevering kom je te weten hoe een warme zomerdag ervoor zorgde dat Nico zijn eerste booking op Dance Opera miste en hoe hij precies ontdekte dat zijn Metro een wereldhit was. Tierschützer retten 700 Tauben aus Limburg und verhindern somit, dass die Tiere per Genickbruch getötet werden. Dennoch fordern sie eine nachhaltige Lösung. Ein Ende des Leidens möchten auch Tierschützende in Frankfurt erreichen. Dort gingen am 6. Juli 1.800 Menschen auf die Straße, um für die Versuchstiere wie den Makaken Gandalf und seine tierischen Leidensgenossen zu demonstrieren. Ihnen wird am Ernst Strüngmann Institut bei lebendigem Leib der Schädel aufgebohrt, um Experimente an ihren Gehirnen durchzuführen. Das muss aufhören, fordert das Bündnis aus „SOKO Tierschutz“, „Ärzte gegen Tierversuche“, „Peta“, „Animal Rights Watch“, „Activists for the Victims“ sowie regionalen Gruppen. Surface-ripened cheeses account for some of the 142 classes at the World Championship Cheese Contest. That includes Limburger cheese. Limburger has a reputation for a potent aroma, but it's also a staple in Wisocnsin's cheese-making heritage. One of Limburger's biggest fans, John Jaeggi, is the coordinator for the Wisconsin Master Cheese Maker program at the Center for Dairy Research. He's also a go-to judge for the "stinky cheese" categories at competitions. Brains are not cheap. It takes a lot of calories to run a brain, and the bigger your brain, the more calories it takes. So how is it that, over the last couple million years, the human brain tripled in size. How could we possibly have afforded that? Where did the extra calories come from? There's no shortage of suggestions out there. Some say it was meat; others say it was tubers; many say it was by mastering fire and learning to cook. But now there's a newer proposal on the table and—spoiler—it's a bit funky. My guests today are Katherine Bryant, Postdoctoral Fellow at Aix-Marseille University, and Erin Hecht, Assistant Professor in the Department of Human Evolutionary Biology at Harvard. Katherine, Erin, and another colleague are the authors of a new paper titled 'Fermentation technology as a driver of human brain expansion.' In it, they argue that fermented foods could have provided the caloric boost that allowed our brains to expand. Here, we talk about how the human body differs from the bodies of other great apes, not just in terms of our brains but also in terms of our bowels. We discuss the different mechanisms by which fermented foods provide nutritional benefits over unfermented foods. We consider how fermentation—which basically happens whether you want it to or not—would have been cognitively easier to harness than fire. Along the way, we touch on kiviaq, chicha, makgeolli, hákarl, natto, Limburger cheese, salt-rising bread, and other arguably delectable products of fermentation.  This is a fun one friends.
