So what exactly IS natural wine? How to define it - or is that even possible? What does it taste like? Why are we seeing so many natural wine bars, shops and events springing up? Natural wine remains niche yet it seems to be influencing mainstream wine - but how exactly? And why does natural wine get everyone so darn hot under the collar..?! Join us as we tackle all these burning questions and more with natural wine luminary and RAW WINE founder Isabelle Legeron MW, plus Mel Xenaki from natural Greek wine producer Tetramythos. We find time to taste and recommend a couple of natural wines (though Susie does ask if one wine, 'really is safe to drink?!') Isabelle talks about receiving hate mail, the difference between a 'living wine' and 'a lifeless product', why 'only natural wine can be great', plus why natural wine means, 'we have to re-frame our expectation of wine.' She calls for more transparency in wine, including ingredient labelling, so people can have the choice, 'to decide: this is what I want to put in my body, or this is not what I want to be drinking.' It specifies a set of vineyard and winery practices to qualify for the designation. A talk-tasting.After a eureka moment in 1995 when he decided to macerate his ribolla grapes on their skins (to reproduce his grandfather’s methodology), Stanko Radikon never looked back. So pleased was he with the results that his entire production followed suit in 1997. He lost customers, was shunned and vilified by many in the trade who denigrated his methods, only in time to become one of the world Kingpins of Orange Wine. In fact, he is perhaps the man who has had the most profound influence on completely natural orange winemaking anywhere. His wines were always farmed cleanly, experienced no temperature control, no addition of sulphites (or any other winemaking aids or additives), and were only ever released after years of maturation (the estate’s current release is 2014, for example). Although he passed away unexpectedly on 11 September 2016, his son Saša took up the mantle. A talk-tasting.Ask anyone in the natural wine world and they will probably know of the celebrated contadino, Stefano Bellotti. He started making wine in earnest back in 1977 at the age of 18, with the help of an elderly neighbour in Piedmont who showed him how to make wine traditionally – which of course meant naturally. Over the years he grew his 1 hectare of vines into a poly-cultural, self-sufficient haven where he bred animals, grew vegetables, harvested honey, made bread, cheese and of course wine. It became a model of the closed-loop farm – a piece of paradise in the now urban Novi Ligure. A biodynamicist since the early 80s, Stefano was known for his frankness (which occasionally saw him going head-to-head with the Italian authorities), for his welcoming nature, for heading up the grower association Renaissance des Appellations in Italy, for his delicious, wholesome produce, and of course for his incredibly complex, long-lived, upfront, no nonsense, authentic wines. He sadly passed away in September 2018 but is succeeded by his daughter Ilaria who has taken over the reins at the farm. As the demand for Prosecco grew internationally, growers abandoned their old hillside vineyards in favour of the easily mechanisable, easily sprayable, high-yielding valley floors. In 2005, Ernesto and a group of friends decided to do just the opposite, buying up parcels in the pre-Alpine foothills of Treviso. What followed was the development of a polycultural ideal that was as much about growing plants and nurturing livestock as it was about making delicious wine. Ernesto adopted biodynamics (one of the first to do so in the region) and went on to become one of the most strident advocates not only for clean farming but also of traditional Prosecco col fondo (‘sur lie’), whose international revival is in no small part thanks to him. with Antonella Manuli (Fattoria La Maliosa) The challenge of transparency is part of the natural wine mission and can only be achieved by measuring objective parameters. A key issue is the current problem of rising CO2 concentrations in the atmosphere, which must be addressed in the production of natural wine. CO2 emissions can be measured and are a key indicator of the sustainability of a product or winery practices at large. La Maliosa was the first biodynamic farm in Italy to measure its “carbon footprint” in collaboration with the University of Siena (Tuscany). Join Antonella Manuli, the pioneering powerhouse behind La Maliosa, to find out why and how she decided to turn her farm not only carbon neutral but into a carbon sink, such that today it absorbs more CO2 than it creates. She was an East Asian analyst at the BBC World Service, and was the first westerner to train as a chef at the Sichuan Institute of Higher Cuisine in Chengdu, Sichuan, China. Her latest book is Land of Fish and Rice: Recipes from the Culinary Heart of China. After the break, Alice Feiring is back in the studio to talk about natural wines and the recent RAW Wine Fair in Brooklyn.
This week on In the Drink, host Joe Campanale is joined in the studio by Thierry Valette of the Clos Puy Arnaud vineyard. Clos Puy Arnaud is mentioned in the Feret book (the bible of Bordeaux's Wines) in 1874 as a first growth. Thierry Valette has been producing here since 2000. The vineyard is run with the principles of an organic approach, and has been involved in biodynamic agriculture since 2004.

After discovering a CD of Georgian polyphonic singing in a second-hand record store in Richmond Virginia, John Wurdeman was amazed many years later to randomly enjoy a private performance of the group on the CD visiting Georgia. At the time he was studying art in Moscow, but after visiting Georgia he decided he would settle there and pursue the life of an artist. After many years preserving traditional Georgian polyphonic singing whilst based in the town of Tibaani, John was offered (bullied) into making some wine with the same ideals of preserving tradition. This was how Pheasant's Tears was born, and since 2007 John has been involved with not only taking Georgian wine to the world, but also introducing visitors to Georgian life and culture.
