Hello everyone and welcome back to another episode of Nikoli's Kitchen! This week I'm talking about mental health awareness and that it's okay to not be okay- and that it's okay to need help. Special thank you to Heather of Just Heather's and Sunshine & Powercuts for the inspiration with her stream during mental health awareness week in New Zealand! The recipe is getting there but definitely packs a lot of flavor. The breakdown below is my amended recipe based on the experience of making the first version, but I talk about the differences more in the show as well. Thank you so much for listening, and thank you so much for coming on this journey with me.   Featured Recipes for this Episode Breakfast Lasagna: 3 c sweet onion, diced 2 c sweet pepper, diced 3 c par-boiled potatoes, cubed 1 T canola oil 4 T butter 12 large eggs 12 oz cheddar cheese 2- 12 oz packages chicken breakfast sausage Sage Paprika Salt Pepper 9 crepês, around 8" diameter (crepê recipe listed below) Zest of 1 lemon 4 T scallions, chopped 2 c tomatoes, diced Hollandaise: 4 egg yolks 1 T lemon juice 1 stick unsalted butter Salt Paprika Pepper Crepês: 1 c all-purpose flour 1-1/2 c milk 2 eggs 1 T canola oil 1/4 t salt ~| After my first experience with this as discussed in the episode, I went back and re-tooled the recipe, lowering the amount of butter and potatoes and adding some tomatoes in for a little bit of contrast, both in terms of flavor and color. This ended up somewhat heavy in a single piece at almost 700 calories- and that's without the hollandaise to top it. |~ Begin by preparing your various ingredients to layer into the lasagna. Add canola oil and 2 T butter to a large skillet at medium heat.  Once the butter melts, add your onion and pepper. Sprinkle some salt in to start sweating them down.  Cook them for 5 minutes or so; they'll get part of the way done here, but you'll finish them next. Add your potatoes to the skillet and toss everything together to combine. Do yourself a favor and par-boil the potatoes, it will make cooking them to the desired doneness far easier. Cook everything until your potatoes are nicely seared and browned and your veggies are softened. Remove from the heat and transfer to another dish. Whisk your eggs vigorously for about 30 seconds or so. If you like you can add some milk here, or water. Add remaining butter to your skillet and return to the stove at just above medium heat. Add your eggs and cook to your desired doneness- I think leaving them a little wetter than normal is fine because they'll finish in the oven. Remove eggs from the heat and transfer to another dish. Wipe the skillet clean at this point (no need to wash it). Cut your sausages in half lengthwise. Turn the heat up to mid-high and sear the sausages until well browned on both sides. Remove from the heat to rest. Once rested, chop them into pieces the same size as your potatoes and set aside until you're ready to prep your lasagna. Add your salt, pepper, lemon zest, sage, and paprika to the bowl with your sausage and stir to combine. Add your peppers, onions, and potatoes and stir to combine them as well.  Shred your fresh cheddar cheese and set aside. Prepare your crepês- Add flour, milk, eggs, canola oil, and salt into a medium bowl. Using an electric mixer, mix them together until blended. Grease your skillet or use cooking spray and heat the skillet at mid-high heat. Remove from heat and spoon in about 1/2 c of crepê batter, tilting your skillet to spread the batter evenly. Return to heat and flip as needed to cook it through. Transfer to a plate to rest. Preparing the lasagna- Preheat oven to 350°. Add two crepês to the bottom of a 9x13" baking dish. Layer over 1/3 of your potato/onion/pepper/sausage mixture.  Add 1/3 of your scrambled eggs. Add 1/4 of your cheddar cheese. Add two more crepês and repeat your layers, then repeat again. Add final two crepês on the top and finish with remaining cheddar cheese. Bake uncovered for 25-35 minutes or until cheese on top is nicely browned. Remove from the oven and rest. While your lasagna rests, prepare your hollandaise or other potential toppings. Hollandaise sauce recipe and instructions followed to the letter from Tyler Florence's recipe at https://www.foodnetwork.com/recipes/tyler-florence/hollandaise-sauce-recipe-1910043 (instructions are copied below)- Vigorously whisk the egg yolks and lemon juice together in a stainless steel bowl and until the mixture is thickened and doubled in volume.  Place the bowl over a saucepan containing barely simmering water (or use a double boiler,) the water should not touch the bottom of the bowl.  Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble.  Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume.  Remove from heat, whisk in cayenne and salt.  Cover and place in a warm spot until ready to use. If the sauce gets too thick, whisk in a few drops of warm water before serving. Top your finished slices of breakfast lasagna with scallions and freshly-diced tomatoes as well as hollandaise or other toppings as necessary. In 2017 she developed a podcast that would share insights into her off-grid experience but also share learnings from having to rely on nature for power and how nature is connected to our wellbeing. To succinctly describe her experience Heather came up with the title Sunshine & PowerCuts which then became two alternating podcast episodes. Sunshine relates to solar power, and also can be related to our wellbeing in terms of what brings us joy or "lights us up". And the PowerCuts can be actually having no power which happens a lot when you have a small alternative power system, but also when we have challenges in life. How we deal with the power cuts in our lives depends on our wellbeing and using nature examples and reconnecting with nature we can re-sync ourselves to the world around us and recharge ourselves in this very digital age. Sorry for the delayed episode this week! If you follow me on Instagram or Twitter, you may have seen that I went to DC Podfest. And the first day I was there, I woke up with the beginnings of a cold. Luckily, I was able to get a hold of a bottle of Zicam fairly quickly and stave off the cold for a few days … until I got home. And then, it hit. This week has been a bit of a fever dream for me, but it made me start to wonder about some of the things we say when we're sick and the origins, so get ready for a bit of an etymology episode. But as long as there have been humans, humans have been getting sick, and many of these idioms carry a lot of unverifiable history with them. If you follow @StoryBehindPod on Instagram, you may have seen that I went to Boston last weekend for the Sound Education conference at Harvard University to be on a panel with other history podcasters that included Liz Covart from Ben Franklin's World, Patrick Wyman from Tides of History, and David Stenhouse from BackStory. I respect these podcasters greatly and it was such an honor to be in the same room as them. Because my travel schedule is pretty hectic this month, I only stayed in Boston for one day so I didn't get to experience anything outside of Harvard and the train station, but if you've ever been to Boston, you know that it seems there's history on every street. I got to hang out with Chris Nesi from The House of #EdTech podcast while I was there and he suggested I do an episode relating to Boston. Since any history regarding Boston would be a huge undertaking, I wanted to pick something a little more obscure, but still very much Boston-related. This is a very special episode of The Story Behind. Believe it or not, two years ago I pressed Publish on the first three episodes of this podcast, The Story Behind the Theremin, The Story Behind Dry Ice, and The Story Behind Sugar Skulls. This podcast was supposed to be a side-project for me. It was supposed to just take up a little of my time, so I could continue my hobby of podcasting while holding a full-time job and when I was pregnant with my son. That's what it was supposed to be. But in the two years since the show began, it took on more. It became my favorite distraction. It allowed me to geek out over things I never had a reason to learn otherwise. And it kept my brain from going to complete mush with pregnancy brain and post-partum brain. Plus, it led me to a career in podcasting and finally, it became the basis for The Story Behind book. Now, after last year's one-year and 100th episode special of The Story Behind The Musical, which was sung, I knew it would take a lot to top that for this year's episode. If you're a parent who has even been on Pinterest and looked for activities for your child, you've probably seen at least a dozen different recipes for modeling clay or sensory dough, as it's sometimes called. Most of the recipes are different variations on the mixture of flour, water and salt dough I remember using to make Christmas ornaments. So, one morning this week, I was searching for a recipe for my son. I spent a good 20 minutes making it, mixing in different colors, getting just the right proportions of flour to water to coconut oil so it wouldn't stick to my hands or leave a greasy mess, only to have my son pick it up, drop it on the cat, and decide he was done with it. 20 minutes of making it, only to have it covered in cat hair after a minute or so. After all that, I threw away the dough I had made and added today's topic to the shopping list partially because it was easier to keep in the house and more convenient. School picture time is here and every time I get my daughter ready for her picture, I try not to follow current trends too much. I have this fear she'll have the same experience I had in 1990 when my mom decided to go all out with my school picture and not only give me a big enough pinafore on my dress that it could double as a wind sail on a small boat, but she also teased my bangs and hair so much that I remember the photographer moving his camera back to get the full look. And, yes, if you follow The Story Behind on Twitter, Instagram and in the Facebook group, I'll post the picture for you all to see. I also encourage you to post some of your school photos so I don't feel as bad. But I bring up this picture for a reason. I honestly didn't think I would be as interested in the history of today's topic when I first started reading about it. There was a lot of chemistry involved and anyone who knew me in high school knows that was the worst subject for me. When you listen to the episode, you'll notice I kept the chemistry aspect to a minimum. But as I kept researching, what intrigued me the most was when the chemistry switched to biology and women's studies toward the end, when working conditions for those making today's subject resulted in a serious epidemic and women went on strike to protect themselves and other workers. One of my favorite things about doing this podcast is looking at things in everyday life and wondering if they still have the same purpose they did when they were invented. This week's subject is a bit ambiguous. It's most notably known for bringing a pop of color and whimsy to an otherwise drab suit, but aside from that, it's more seen as form over function. Yet it's so ubiquitous and has been around for hundreds of years, showing no signs of going out of fashion, despite many men counting down the minutes until they can loosen theirs every day. If you've ever read Edgar Allan Poe's “The Tell-Tale Heart,” you may hear a heartbeat as something a little creepy. Although it's funny to note that on many sound machines for babies, a heartbeat is offered as a way to help them remember one of the sounds they heard in the womb. However, for doctors, the sound of a heartbeat can tell an awful lot about a person. It's one of the first things they listen to during a physical exam. It's also one of the first things an OB-GYN looks for and, later in the pregnancy, listens to for a pregnant woman. While listening to the heart isn't new in the world of medicine, one of the most common tools for doing so is only a little more than 200 years old. That’s a phrase that has been banned by our current administration, so what does that mean to climate scientists and how does that action impact their teaching opportunities, research and the overall attitude of society towards the scientific community as a whole? These thoughts are why Ep. 29 - An Agent of Change’s guest is Kim Cobb, a climate scientist at Georgia Tech and director of the new Global Change program at the same organization. On the episode, you’ll learn what it is like to be a climate scientist in the American South. Cobb talks about what she’s learned during the 19 years she has done research on coral reefs in the South Pacific. She also gives tips on how to reduce your own carbon footprint and talks about the future of climate science. It actually goes back to the Ancient Greeks and burning candles in religious ceremonies, including to pay tribute to the goddess Artemis who is associated with the moon. They baked cakes to symbolize the shape of the moon and added candles to represent moonlight. Though cakes are delicious, they can't really be used as a weapon for MURDER.
