Around the age of 4, children develop a preference for using one of their hands to complete certain tasks, like drawing for example. 24-year-old doctor Jesse Bennett successfully performed a C-section on his wife, Elizabeth, saving both her life and their daughter Maria's: 14th January, 1794, in a log cabin on the Virginia Frontier. The attending physician's refusal to participate, leaving the scene altogether, left Bennett to make quick decisions - though this included spontaneously removing his wife's ovaries. The groundbreaking operation remained a local legend for nearly a century, as he never publicly reported it due to concerns about disbelief and the delicacy of the matter. For the next few weeks, we will be covering topics from the chapter, Safety 101. This is the second of a four part series.In part 1 of “I’ll Have The Poison on the Side Please,” we gave an overview on how and why American agriculture had devolved into a monoculture landscape of chemical fertilizers, herbicides and pesticides. We continue the discussion by introducing a poison used not only in commercial farms, but in home gardens.Have you wondered why “gluten-free” is all the rage these days? In North America and Europe, an estimated 5% are either diagnosed with Celiac disease or are gluten-intolerant. Symptoms include “nausea, diarrhea, skin rashes, macrocytic anemia and depression,” and is “associated with numerous nutritional deficiencies as well as reproductive issues and increased risk to thyroid disease, kidney failure and cancer,” according to a study published by the US National Library of Medicine. Guess what it’s largely attributed to? Glyphosate, the active ingredient in a product we all know: Roundup.Roundup, manufactured by Monsanto and recently acquired by Bayer, is the largest selling herbicide in the world. Many home gardeners use it to kill weeds unaware that its main ingredient, glyphosate, has been linked to cancer, specifically non-Hodgkin lymphoma, currently the subject of several lawsuits. But that’s not all. A team of French scientists from the University of Caen found that an inert ingredient in Roundup, specifically polyethoxylated tallowamine, or POEA was “more deadly to human embryonic, placental and umbilical cord cells than the herbicide itself,” according to an article published by the Scientific American. They concluded that the formulation itself-- the combination of various ingredients in Roundup, “could cause cell damage and even death [at the] residual levels.”In the US, many farm products have an inordinately high amount of Roundup. According to an article published by the Environmental Working Group:“Most glyphosate is sprayed on “Roundup ready” corn and soybeans genetically engineered to withstand the herbicide. Increasingly, glyphosate is also sprayed just before harvest on wheat, barley, oats and beans that are not genetically engineered. Glyphosate kills the crop, drying it out so it can be harvested sooner than if the plant were allowed to die naturally.”The use of Roundup as a pre-harvest dessicant increases the chances of residuals, making wheat, barley, oats and beans particularly noxious. Fortunately, there is some good news. At the end of 2019, Kellogg’s, the ubiquitous cereals manufacturer, made a commitment to phase out oats and wheat treated with glyphosate by 2025. Second only to General Mills, Kellogg’s holds enormous sway over farms and suppliers and one can only hope that this will have a positive ripple effect across the industry. Even if a disingenuous marketing move (would you serve your child a bowl of poisoned cereal when you have an option that isn’t?), it is still a step in the right direction. However, it does beg the question of how many children and adults were and are still being slowly poisoned by common food items containing glyphosate? In tests commissioned by several groups including the Environmental Working Group, Canadian Food Inspection Agency, Friends of the Earth and even the FDA, glyphosate was detected in most wheat-based products such as pizza, crackers, pasta and cereals. So yes, your typical American commercial food is pretty toxic and we’re all getting slowly poisoned every day.Herbicides with glyphosate, are already banned or restricted in many parts of the world including France, Germany, Argentina, India, Australia, and in some US cities like San Francisco, Seattle, Miami, Austin and Portland, ME. Why isn’t it banned everywhere? Capitalism, baby. The same reason the EPA under the previous administration allowed corporations to make our air and water dirtier by scrapping or relaxing regulations that limit pollution.After around 30,000 legal claims from customers who believed they developed cancer from glyphosate, there’s a bit of environmental good news: Bayer announced last year that it would no longer sell glyphosate-containing products, including Roundup, to home gardeners starting 2023. That’s a start. But unless it is banned completely, there’s still 280 million pounds applied annually to crop lands. You can bet a lot of that is making its way into our food system. While the sad reality is that we can’t currently rely on government or big business to safeguard our interests, specifically our health, we are not entirely helpless. How we choose to spend our dollar makes a difference and can influence how food is produced in the US. Buying organic or from local, sustainable farms is not just a hipster trend, it’s a commitment to consume healthy food, limit the impact on the environment and support farms and companies that are doing the right thing. If money were no object, everything we buy should be organic and/or local. But it’s expensive, initially. Over time, it’s much cheaper if you consider how much you’d be spending on outrageous medical bills and a reduced quality of life caused by a toxic diet. But for most of us, our brains don’t work this way. When you see organic bell peppers at nearly twice the price of conventionally grown ones, it’s easy to chuck good intentions aside and reach for the conventional ones. I’ve been there. And, it’s still an ongoing battle with my husband who has a difficult time resisting deals and sales. Thankfully, there’s the Dirty Dozen list.The Dirty DozenFruits, vegetables and other crops have varying degrees of pesticide, herbicide and other chemical residues based on their particular farming practices. Chemical residues, including petroleum-based wax applied to some produce for cosmetic purposes or to retain freshness, are mostly found on the outer layer of produce. So eating conventional spinach would be more toxic than a conventional banana where most of the chemical residues are on the discarded peel.Making sense of all this and recognizing that most of us can’t afford to buy everything organic, the Environmental Working Group releases an annual list of the twelve fruits and vegetables that have the most chemicals in them, and therefore are the produce that we should buy organic.The Dirty Dozen List (aka What You Should Buy Organic)(2021 list according to most toxic)1. But given what we now know of the high levels of Roundup in our wheat, barley, oats and beans, buying organic, including organic flour (pasta, cereals and other derivatives) and avoiding GMO products is also highly recommended.Then there’s the Clean Fifteen. The Environmental Working Group also releases an annual list of produce that don’t have as much chemicals in them. If you don't know how to bounce back from your mental demons, try building your resistance with mental workouts. Sarah Peyton provided a wealth of insight last week on moving from self-sabotage to self-care. You can change the contract you have with yourself once you remember that the struggle is the feeling you get when you are on the right path. Just like exercising your physical muscles, you can exercise the neurons in your brain to build stronger connections and cognitive performance. Sarah Peyton A Scientific paper you may be interested in is in the US National Library of Medicine - "New neurons are produced each day in the hippocampus through the process of neurogenesis. Both mental and physical training can modify this process by increasing the number of new cells that mature into functional neurons in the adult brain. However, the mechanisms whereby these increases occur are not necessarily the same. Physical activity, especially aerobic exercise greatly increases the number of new neurons that are produced in the hippocamal formation. In contrast, mental training via skill learning increases the numbers that survive, particularly when the training goals are challenging. Both manipulations can increase cognitive performance in the future, some of which are reportedly mediated by the presence of new neurons in the adult hippocampus. Based on these data, we suggest that a combination of mental and physical training, referred to here as MAP training, is more beneficial for neuronal recruitment and overall mental health than either activity alone." Mental and physical training increase hippocampal neurogenesis and facilitate learning. Neurogenesis is required for some, but not all, cognitive enhancing effects of training. Mental training has its greatest effect when difficult, but attainable. Larger effects may be observed following a combination of both mental and physical (MAP) training. It can even make you kinda nostalgic about how easy it was to make friends as a kid. One second you spot someone on the swing set, and the next you're splitting a juice box and playing hide and go seek. So why does trying to figure out how to make friends as an adult feel so awkward sometimes? Whether you soak up the energy of a room, or feel the need to recoil for some down time after a big social event, almost everyone struggles with the awkward reality that is…professional networking (dun, dun, DUN). Even if you're a socially anxious extrovert, gregarious introvert, or somewhere in between as an ambivert, you will certainly learn something from this free chapter of ‘The Confident Introvert‘ on how to actual enjoy making friends as an adult. Here's how to make building friendships as an adult feel as easy and fun as it was your school days: 1. Find and Own Your Voice If you're not yet convinced of your own confidence, it can show up in the sound of your voice. Do you ever initially speak in a whisper without meaning to? Does your voice trail off before your sentence is finished? Do you find yourself making statements that sound more like questions? This is called rising intonation, or uptalk, and it can make you sound less credible than you actually are. Practice speaking from your diaphragm with breath exercises, and build up your strength by enunciating consonant sounds such as “Puh-Tik-Uh” before an event in the privacy of your own home. Also, be sure to stay hydrated so your vocal cords are able to carry a full-bodied, engaging sound. 2. The Sweetest Sound: Repeat Their Name Always lead by embellishing your “hello,” with the person's name. Hearing “Hello, Tom,” feels better (assuming their name is Tom!) than a blanket, one-size-fits-all greeting. A study from the US National Library of Medicine found that participants experienced more brain activity and engagement when they heard their name repeated in conversation. 3. Take Pause: Hold on the Hug Not everyone you meet will be a hugger. For example, in France and Japan, hugging isn't a standard greeting and rarely done in public. In France, a kiss on each cheek is acceptable, whereas in Japan, a handshake will do. America can be hug-friendly but is also a melting pot of cultures. So it is safe to greet for the first time with a “hello” and a handshake, and after your conversation, you can ask, “Are you a hugger?” before initiating the gesture. 4. Should You Relate or Dominate? When first meeting someone it's easy to dive into work and business talk, focusing on what gender sociologist Deborah Tannen calls “report” when what would serve us better is first establishing “rapport.” Report is necessary for business goals and alignment, while rapport—developing familiarity—is necessary for relationship building. To begin a conversation, you can ask how someone's week has gone, how their holiday was, or if they have anything exciting coming up. 6. Are You Toasting with Water or Vodka? Some industries and cultures find it acceptable to bond and build rapport over alcohol while others don't. It's really up to you to gauge your comfort level and not exceed a drink or two, or whatever amount will leave you relaxed but not intoxicated in a professional setting when making a first impression. Also keep in mind that some people don't drink alcohol at all for personal reasons. If this is the case, a coffee or tea shop will be a more comfortable choice since your meeting mate may feel less comfortable if there aren't mocktails readily available at the bar. I recommend getting comfortable networking without the social lubricant of alcohol in order for true confidence to be honed and shine through. Typically, headaches caused by sleep apnea are called morning headaches. They are present on awakening and tend to improve over a few hours. They can look like tension headaches or migraines. In one study, 20% of people diagnosed with sleep apnea had morning headaches. In this final installment of Kitchen Dangerous, we’ll talk about First Aid for Cuts and add to our arsenal of home remedies. First Aid for Cuts Minor cuts and burns are occasional nuisances for every cook and are often treatable at home. As always, seek medical assistance if injuries are serious. For minor cuts or scrapes, here’s what to do: 1. Control bleeding by applying pressure for at least 5 minutes2. Clean and Cover Wash hands then rinse wound with running water to remove dirt and debris. Apply a topical home remedy (see below) or over the counter antibiotic to minor cuts and scrapes that do not need medical attention. Cover the wound with clean bandage, gauze pad or tape to prevent infection and further injury. Applied topically, turmeric reduces pain, inflammation and promotes faster wound healing. How to use Garlic and Turmeric - apply as a poultice. For garlic and turmeric, peel first, smash or mince and apply directly to wound. You can also mix with a bit of water to make it more like a paste and wrap a bandage around it. If you only have turmeric powder, you will need to make a paste first. For cuts and scrapes only; do not use on burns. Note: curry powder is a spice blend which may include turmeric and garlic, but because of the unknown impact of other ingredients in the mix, it should not be used for first aid.Broadleaf plantain and Moringa- apply as a poultice. Wash leaves, mash to make into a paste/poultice, then apply directly to cut or burn. While it may be easier to use a pestle and mortal to mash the leaves, chewing provides maximum efficacy as saliva also stimulates wound-healingHoney- apply directly to cut or burn. Aloe Vera- cut a leaf and peel to access the gelatinous surface and apply directly to cut or burn. Tomato- slice and apply directly to burn. Notes: Broadleaf plantain, moringa, honey and aloe vera can be used topically for both cuts and burns. Data for turmeric or garlic use on burns is either insufficient or suggests that it is not advisable. While data is scant for tomato’s efficacy on burns, my personal experience and much anecdotal evidence suggests otherwise. Not only is it good as first aid for burns, but as a superfood, its lycopene and vitamins A and C contents are proven to assist in wound healing. Addendum to Rule number ten: Include cuts in your first aid plan.My personal practice: As I mentioned when discussing burn remedies in Kitchen Dangerous part 3, I often default to a home-made salve of broadleaf plantain, a common plant that grows in my yard, as first aid to all skin irritants—from burns, cuts to insect bites and stings. Not having used the other remedies for cuts, I can’t offer a recommendation of one over the other. But it is always good to have alternatives in mind. You’ll never know when you might need it.On a final note, the Kitchen Dangerous series might seem like a downer, discussing scary fire scenarios and kitchen accidents from cuts or burns. I admit, it’s not sexy discussing rules either. But cooking joyfully means we are able to face our fears (in my case, it was fear of frying) and having the peace of mind that our kitchen practices are safe not only for ourselves but for those we live with. I have averted at least one fire disaster because of information I somehow knew. My hope is that this series can help others down the line. The other important take away is that mistakes and accidents will happen. That’s integral to learning. But with some knowledge, not only can we minimize or keep them from becoming full blown disasters, but we’ll know how to deal with them too. Here’s a summary of Kitchen Dangerous safety rules to help you prevent and deal with fires, burns and accidents from knives and sharp objects. For the next few weeks, we will be covering topics from the chapter, Safety 101.Read Kitchen Dangerous: part 1and part 2 In part 2 of Kitchen Dangerous, we talked about what to do when a fire occurs and how to avoid oil splatter burns from frying. In this post, we’re covering more hot stuff and first aid for burns using ingredients you probably already have at home. More Hot StuffDraining pasta noodles in the sink, pouring scalding liquids into containers, removing the lid of a simmering pot, touching the metal handle of a hot skillet, removing a baked dish from the oven, handling a metal spatula left in a hot sauce pan, bumping against the handle of a hot wok and causing it to tip over—these are some of the ways you can burn yourself. But first, a few more rules.Rule number five: Always use oven mitts or pot holders whenever you handle something hot. Rule number six: Use tongs and long-handled cooking implements to keep your hand away from heat, such as when grilling or scooping out hot food.Rule number seven: Avoid wearing clothing and accessories such as scarves, neckties, long necklaces or blouses with long flowing sleeves that can catch on pot handles or dip into hot liquids and food.Rule number eight: Keep pot and skillet handles of cooking vessels on front burners turned sideways or inwards.Pot and pan handles can easily be bumped or get caught in articles of clothing which could lead to burn splatter and spills. You also don’t want curious children grabbing exposed handles. Turn pot handles inward to prevent accidental bumpsRule number nine: Be familiar with some easy kitchen science that governs hot things. You’ll be able to come up with your own safety procedures when you remember some of these guidelines:Metal is a heat conductor. That means anything metal connected to something hot—such as the handle of a skillet or saucepan lid or metal spoon left in cooking food, will also be hot. Which also means,Don’t leave cooking implements such as ladles and spatulas in a pot or pan while cooking. If it’s metal, you may burn yourself; if it’s not metal you may also burn or melt the implement.Hot liquids produce hot steam and hot air rises. No, this is not a facial, it can burn you. So when pouring hot liquid into containers or into the sink such as when draining pasta noodles: avert your face, be gentle and pour away from your body. Get as close as possible so you don’t splatter.For hot food and liquid, only use containers that are graded for heat such as tempered glass, metal, bake or oven-proof ware.Extreme temperature changes can cause containers to break such as glass or ceramic bowls, even if they are oven-proof. Before washing, make sure the vessels are allowed to cool. Conversely, putting cold food straight into a hot oven may cause containers to break.Do not process very hot food or liquid in blenders and food processors. High temperatures plus high speed processing increase pressure and may cause blender top to pop and splatter scalding food and liquid everywhere. Allow soups or other food that’s been cooking to cool for at least 10 minutes before processing. Follow capacity limit (do not overfill), release steam by opening blender shoot, and start on low before building to desired speed.Rule number ten: Have a first aid plan for burns. See a doctor if burns are serious. Aloe Vera’s medicinal properties have been known for centuries First Aid for BurnsKitchen burns though common are often minor, which means they are easily treatable at home. The first step is to reduce the temperature of your burn by running it under cold water. After making sure the burn surface is clean, apply topical home remedies like aloe vera, moringa, honey, broadleaf plantain (plantago major) or tomato to reduce inflammation, alleviate pain and/or minimize blistering. You can also use over-the counter burn creams or ointments.Much anecdotal evidence exists on the efficacy of natural burn remedies. I learned about the use of aloe vera, moringa and tomatoes growing up in the Philippines, but these are common herbal remedies found in many cultures. Aloe vera as a medicinal plant was used as far back as 1500 BC in Greece and China, and many Filipino households, including my own, grew them. We also frequently had moringa and tomatoes at home because they were part of our cuisine, even before anyone realized they were superfoods with a multitude of benefits.There’s scientific data to back the healing properties of all these home remedies for topical treatments to burns, except for tomatoes. While I have personally experienced the soothing relief of a tomato on a burn, I don’t have the studies to support it. Absence of western scientific data is not proof of ineffectiveness. Either the studies haven’t been done or I just haven’t found them yet. That’s not the case for consumption of the fruit, however. While data may be scant for topical applications, there’s lots of evidence this South American native helps with burns due to its high vitamin, nutrient and Lycopene load. Lycopene is the carotenoid responsible for the red pigment, credited with antioxidant properties, protection from infection and wound healing. Lycopene production is increased by cooking and the most concentration can be found in tomato paste.How to use:Honey- apply directly to burn. According to an article from the US National Library of Medicine, “The free radical control by honey, due to its anti-oxidant effect, limits damage and subsequent multi-organ dysfunction. Honey's anti-bacterial action, low pH, high viscosity, hygroscopic effect, and its hydrogen peroxide content all play a combined role in honey's effectiveness in burns treatment. Honey provides a moist environment for optimum healing conditions.”Though commercial wound dressings and products tend to use medical-grade Manuka honey, the report makes no distinction in efficacy among unprocessed undiluted honey from various sources. Tomato- slice and apply directly to burn. Broadleaf plantain and Moringa- apply as a poultice. Wash leaves, mash to make into a paste/poultice, then apply directly to burn. While it may be easier to use a pestle and mortal to mash the leaves, chewing provides maximum efficacy as saliva also stimulates wound-healing. My personal practice: I use all but the moringa interchangeably for burns, and only because moringa is not readily available where I live. Tomatoes, which provide immediate cooling and soothing relief can be messy to apply, so I only use it occasionally, as with honey which I’ve only used in the form of commercial wound dressings. For convenience, I often default to a home-made salve of plantain, a common plant that grows in my yard, as first aid to all skin irritants—from burns, cuts to insect bites and stings. A salve is quickly accessible and easier to apply than poultices. Broadleaf plantain, well-known to Native Americans, has tremendous medicinal properties and deserves its own future post. I also grow aloe vera in pots and simply cut a leaf and rub the gelatinous juicy side to burns, including sunburns. This is the end of part 3 of Kitchen Dangerous. What is CBD? ...and what's it used for?What is CBD?CBD, short for cannabidiol, is a chemical compound from the Cannabid sativa plant, whish is also known as marijuana or hemp, according to the US National Library of Medicine.It's a naturally occurring substance that's used in products like oils and edibles to impart a feeling of relaxation and calm. Unlike its cousin, delta-9-tetrahydrocannabinol (THC), which is the major active ingredient in marijuana, CBD is not psychoactive.but is it legal?First, a little background. Industrial hemp was legal in the United States until Congress passed the Marihuana Tax Act in 1937. Nearly 80 years later, the 2014 Farm Bill took the position that states can regulate the production of hemp and, as a result, CBD. Then last year, President Trump signed a new Farm Bill that made it federally legal to grow hemp.This means that "consumers everywhere, if they're compliant with their state, can grow hemp and use hemp products," Parrish explains, "and among those will be CBD."In other words, the latest bill removed hemp from the Drug Enforcement Administration, or DEA's, purview. "Hemp can now be grown freely under federal law, which, of course, is huge," Parrish says. "But while it's legal under federal law, it's up to each state to set their own policy."These policies vary widely. Marijuana and CBD are currently fully legal for both medicinal and recreational purposes in Alaska, California, Colorado, Maine, Massachusetts, Michigan, Nevada, Oregon, Vermont, Washington, and Washington D.C. In 23 states, it's legal in some form, such as for medicinal purposes. Another 14 states permit just CBD oil. But both are illegal in Idaho, Nebraska, and South Dakota.

John Mcfly Is not only the partner of Lola’s good Judy Thom Foolery, he is also a brilliant, funny, and wonderful friend. He is currently finishing his studies at Ball State University in social work and psychology. He serves with the U.S. armed forces and currently works as a Mental Health Technician for Riley Hospital. John has built his life around caring for others and is a vocal advocate for the rights of people of color and the LGBTQQIP2SAA communities. He is also a big fan of Lola’s. Cornelius Hocker Is an Indianapolis based journalist who met Lola while working on a story about a favorite Indy hotspot. He is a strong advocate for black queer and trans individuals. His travels in his work as a journalist give him a well rounded perspective on many topics. Try not to be surprised if he shows up on the podcast again. Joe Lewis (Jo MaMa) is a Chicago, IL based Drag entertainer and activist. Joe was the creator of the Drag March for Change that happened in Chicago on June 14, 2020. Other than being Lola’s MCM, Joe has worked hard to connect and network with the Chicago queens of color to spread the word of inequality, and inequity of both the black queer community and the black trans community. Terms To Know Black Lives Matter – initially as a social media response to events such as George Zimmerman’s acquittal in the shooting death of Trayvon Martin. Growth – Quickly left the internet and became a “real world” movement. Intersectionality – Kimberlé Williams Crenshaw in 1989 To describe that as humans, we are each more than one thing. For example: a black man experiences oppression for being black, but a gay black trans woman experiences a multi-layered oppression stemming from her gayness, her blackness, and her femininity. Identity politics is a political process that brings people together based on a shared aspect of their identity. History of Black Oppression (Outside of Law Enforcement) Center for American Progress Wealth Gap In 2007, immediately before the Great Recession, wealth among people of color was 14% that of whites. Currently African Americans on average own a disproportionate, 1/10 of the wealth of white Americans. Poverty has many natural consequences (Other than being poor). People of color are more likely to experience negative income shocks but are less likely to have access to emergency savings. As a consequence, they are more likely to fall behind on their bills and go into debt during times of emergency The wealth gap persists regardless of households’ education, marital status, age, or income. For instance, the median wealth for black households with a college degree equaled about 70 percent of the median wealth for white households without a college degree. Black households have more costly debt. In 2016, blacks with debt typically owed $35,560—less than 40 percent of the $93,000 in debt owed by whites. However, because blacks owed larger amounts of high-interest debt—such as installment credit and student and car loans—the debt they typically owed was more expensive. Education (Brookings Institute) Americans often forget that as late as the 1960s most African-American, Latino, and Native American students were educated in wholly segregated schools funded at rates many times lower than those serving whites and were excluded from many higher education institutions entirely. The end of legal segregation followed by efforts to equalize spending since 1970 has made a substantial difference for student achievement. On every major national test, including the National Assessment of Educational Progress, the gap in minority and white students’ test scores narrowed substantially between 1970 and 1990, especially for elementary school students. Jonathan Kozol s 1991 Savage Inequalities described the striking differences between public schools serving students of color in urban settings and their suburban counterparts, which typically spend twice as much per student for populations with many fewer special needs. Contrast MacKenzie High School in Detroit, where word processing courses are taught without word processors because the school cannot afford them, or East St. Louis Senior High School, whose biology lab has no laboratory tables or usable dissecting kits, with nearby suburban schools where children enjoy a computer hookup to Dow Jones to study stock transactions and science laboratories that rival those in some industries. Or contrast Paterson, New Jersey, which could not afford the qualified teachers needed to offer foreign language courses to most high school students, with Princeton, where foreign languages begin in elementary school. Even within urban school districts, schools with high concentrations of low-income and minority students receive fewer instructional resources than others. Housing the federal government established several programs in the 20th century that were designed to promote homeownership and provide a pathway to the middle class.37 However, these programs largely benefited white households while excluding Black families. In 1933 and 1934, in the midst of the Great Depression, President Franklin Delano Roosevelt signed the Homeowners’ Loan Act and the National Housing Act into law to prevent foreclosures and make rental housing and homeownership more affordable. To carry out these missions, the newly minted Homeowners Loan Corporation (HOLC) created maps to assess the risk of mortgage refinancing and set new standards for federal underwriting. The Federal Housing Administration (FHA) used these maps to determine the areas in which it would guarantee mortgages. But HOLC maps assessed risk in part based on a neighborhood’s racial composition, designating predominantly nonwhite neighborhoods as hazardous, and coloring these areas red. This process, known as redlining, denied people of color—especially Black people—access to mortgage refinancing and federal underwriting opportunities while perpetuating the notion that residents of color were financially risky and a threat to local property values. As a result, just 2 percent of the $120 billion in FHA loans distributed between 1934 and 1962 were given to nonwhite families Today, approximately 3 in 4 neighborhoods—74 percent—that the HOLC deemed “hazardous” in the 1930s remain low to moderate income, and more than 60 percent are predominantly nonwhite In 1944, President Roosevelt signed into law the Servicemen’s Readjustment Act—commonly referred to as the GI Bill—which provided a range of benefits, such as guaranteed mortgages, to veterans of World War II. However, according to historian Ira Katznelson, “the law was deliberately designed to accommodate Jim Crow.” For instance, the GI Bill allowed local banks to discriminate against Black veterans and deny them home loans even though the federal government would guarantee their mortgages. Employment Both the Economic Policy Institute (EPI) and the Federal Reserve Bank of San Francisco reports suggest that the unobserved or unexplained factors that play a role in the black-white income and employment gap include: employment discrimination, weak enforcement of anti-discrimination laws, or racial differences in unobserved skill levels as opposed to measurable factors such as educational attainment or work experience. A Challenge to Fox's Medical Expert Dr. Marc Siegel Gary Null PhD, May 4, 2020 Last Friday evening, Fox's Tucker Carlson Show invited his favorite physician, Dr. Marc Siegel from New York University's medical school, on his program. Dr. Siegel is a regular contributor on the COVID19 pandemic for Fox. He made an emphatic statement that Vitamin C plays no role in the prevention and treatment of coronavirus despite evidence to the contrary. Instead he emphasized the need for new medications and a vaccine. It is expected that a COVID19 vaccine will be fast tracked through the FDA so it becomes available more rapidly. CNBC News has already reported that White House advisor Dr. Anthony Fauci and other US health officials are collaborating with the drug company Moderna to fast track its COVID19 vaccine that is now in development. In order to expedite medical interventions that are determined to be critical, the FDA permits fast tracking, which lightens the otherwise rigorous clinical trial process and lessens the requirement of long-term assessment to properly evaluate a drug's or vaccine's efficacy and safety. According to DrugWatch, many fast tracked drugs have resulted in black box warnings, an FDA flagging of a product as carrying serious adverse risks after its approval and licensure. Therefore, we want to challenge Tucker's guest Dr. Siegel. Either they are both uninformed about the peer-review medical literature in the National Library of Medicine and the countless positive patient results from physicians using complementary medicine and Vitamin C therapy for over 5 decades to treat infectious illnesses, including HIV and respiratory infections or they are in denial. This may be intentional neglect – making a concerted choice to refuse to acknowledge something in order to avoid contradicting personally held beliefs. We hope that Tucker and Siegel will be open to interview doctors and patients who have defeated viral infections by non-drug regimens and without vaccination. There are over 2,600 studies listed in the National Institutes of Health PubMed database specifically addressing Vitamin C therapy and supplementation to prevent and treat infectious diseases; most of these concern respiratory infections. Below are some of the more important studies, especially regarding the importance of Vitamin C for strengthening the innate and adaptive immune systems. Both of these immune systems are essential for protecting ourselves from COVID19, whereas a vaccine will only act on a single immune system that triggers antibody production. Vitamin C appears to be able to both prevent and treat respiratory and systemic infections by enhancing various immune cell functions. You won’t have to worry about the cream lasting a long time. Your cream won’t last long because the ice cream recipe uses it up. Ice Cream Base Recipe Homestead Life Updates Garden The garden is done. Well, there are a few sweet potatoes to be dug up, but other than that, it’s all gone. Whew. Now we can rest until the spring. Well, not quite. There are clean up tasks and winter preparation of the beds, adding compost to improve the soil over the winter and covering the beds to keep the moisture in and the weeds out. Quail We are ready for another batch of quail eggs in the incubator. Not so many as last time. Due to the reduction of daylight, they are laying much fewer eggs. Last time it was 47. This time less than 30. Whatever comes in today will be the last of this period of collection. Eggs can be collected for 7 to 10 days and kept in a cool environment but not in the refrigerator. Most of our quail are brown coturnix. They are tan and brown with spotted plumage. We have one white one from the original batch of eggs that we purchased and one white one from that first batch that we hatched out about 2 months ago. They are already mature. The males are fertile and the females are old enough to begin laying eggs. We will take out enough females to fill out our breeding stock and the rest will go to freezer camp. Cows We are down to one bull from this year’s calves and we have just offered up Egwene for sale as well. She is our purebred Jersey heifer calf. Her mom is certified A2A2 and her sire is also certified A2A2. If you are interested please let us know. She is a lovely calf and quite affectionate if she thinks you have a bottle. We are weaning her and she has only a day or so left where she will get milk. At 5 ½ months old, she is developed enough to live on grass. Homesteading requires tough choices and letting go of favored animals is one of them. I will miss her but we have to be true to our plan. Seasonal Affective Disorder (SAD) The cooler weather we have had recently has been such a blessing. I hope it has been for you as well. I’m not a fan of summer. I like it okay in the beginning but it just seems to drag on and on. I’m the same way about winter. My favorite season is a toss up between spring and fall. Right now, fall is my favorite season, but I can guarantee you that in March my favorite season will be spring. I tend to get seasonal affective disorder. Anyone familiar with that? As the winter drags on and there is less sun, vitamin D can be in short supply and depression may not be far behind. Usually by the end of January I’m feeling it and by the end of February I can be almost immobile. My level of motivation has fallen through the floor. These days I just accept what is and don’t try to fight it. I revel in my – shall I say – laziness and enjoy it while it lasts. Come spring the world will spin out of control with so much to do and no time to do it all. It’s a familiar cycle for me. I’ve learned to ride it like a roller coaster. Let’s get to today’s topic. How Long Does Raw Milk Last? The short answer is nearly forever. The only thing that will stop you from consuming it is an aversion to the taste. First it becomes sour. Next it will thicken into yogurt. However, it will be a very strong yogurt. That yogurt will last a month or more. Along that time line you can drink the milk, use it in cooking, make cultured butter and buttermilk, and so on. Contrast that with pasteurized milk. Pasteurized milk does not sour, it rots. It truly goes bad and is not safe for consumption. You do not want to put it in your mouth under any circumstances. On the other hand, when raw milk ages and starts to sour, this is good! Great, in fact. What Makes Milk Sour and What Do I Do with It? The reason raw milk starts to sour is because beneficial, probiotic bacteria amounts are increasing and using up the lactose sugar, making it taste sour, again, like a nice unsweetened yogurt. So, how long should your raw milk last when you get it home? Sandra Clark whose website is www.healthfoodnaturally.com, has this to say: “If you get the milk the day it is milked, it will stay fresh up to 2 weeks. If it sours, no worries, it will become yogurt with no help at all (with a little sour cream on top).” Without a starter, the sour cream on top usually bitters, so you can just scrape it off and compost it if you don’t like the taste.” As for the yogurt, when we have left over milk at the end of the week, we just throw it in a ball jar and leave it in the fridge for if we get low on milk (because it has an amazingly long shelf life after turning into yogurt.)” When we do run out of milk, we just throw some honey and fruit (usually berries) in and blend the yogurt into a tasty yogurt drink.” I have some jars in there as old as two months and the yogurt tastes fine (well not like store-bought yogurt – to get that particular flavor you need to manipulate it with a bacteria starter like for cheese making – but with honey and fruit added it tastes wonderful!).” So according to Sandra it should last up to 2 weeks in your fridge. In my experience, I have kept milk for nearly a month before it soured. Because in the spring we have tons of milk, this happens often. We just keep drinking it until the flavor goes off, then use it for other purposes. What’s our Secret? What is our secret to milk lasting so long? It’s two-fold. First, cooling it quickly. The faster it gets below 40 degrees, the longer it is going to last. The second key is keeping it very cold. The colder you keep the milk, the longer it will last. Our milk refrigerator is set to 34 degrees. The problem that people have these days is having access to this great raw milk. I will do another podcast on how we got to this point. Today, I’ll just talk about where we are. There are lots of scary stories out there about how dangerous it is to drink raw milk. I say it’s hogwash and propaganda put out by some people in power with lobbyists to placate. The human species would have died out long before the pasteurization process was invented in the previous century if it was so dangerous. There are dangers in every food we consume. There are risks in every aspect of life. Assess your comfort level with the risk and make your choice. Raw Milk Choice The problem today is that in many states, there is no available choice for raw milk products unless you own your own cow. That’s why we started our herd share program. You can own part of a cow herd and receive the benefits of what your cows produce. More on that later. It’s so amazing to me that you can buy unpasteurized milk in the grocery store in 12 states, but the rest restrict it in various ways. It has to be labeled as pet milk in 4 states. 15 states allow it to be sold directly from the farm but not in the store. And of course, the herd share program is available in Virginia and 10 other states. In 9 states all sales are illegal and so are herd shares. So, 12 states think it is okay to for us buy raw milk and to consume it freely and the others are so certain we are all going to die of horrible illnesses that it has to be restricted or illegal altogether. I just cannot fathom the logic in this. If people were dying right and left, it would have been outlawed in all of those states wouldn’t it? Who is telling the truth? Recent Studies Show Raw Milk Related Illnesses are Decreasing While Access is Increasing You have to make up your own mind of course. And I will say again, there is risk in consuming any food. To help you with that decision as it pertains to raw milk, here is an article from the US National Library of Medicine Department of the National Institutes of Health (link in the show notes). It is titled Recent Trends in Unpasteurized Fluid Milk Outbreaks, Legalization, and Consumption in the United States. There is a ton of really great information in this study. Lots of data, as you might expect, and lots of charts and graphs. It’s really good stuff. I’ll quote from the Abstract. “Introduction: Determining the potential risk of foodborne illness has become critical for informing policy decisions, due to the increasing availability and popularity of unpasteurized (raw) milk. Methods: Trends in foodborne illnesses reported to the Centers for Disease Control in the United States from 2005 to 2016 were analyzed, with comparison to state legal status and to consumption, as estimated by licensing records. Results: The rate of unpasteurized milk-associated outbreaks has been declining since 2010, despite increasing legal distribution. Controlling for growth in population and consumption, the outbreak rate has effectively decreased by 74% since 2005. Discussion: Studies of the role of on-farm food safety programs to promote the further reduction of unpasteurized milk outbreaks should be initiated, to investigate the efficacy of such risk management tools.” So, there you have it. This study was initiated because they were pretty sure that the incidence of raw milk illnesses would increase as access was increased. They were wrong. There is now a push toward finding out if on-farm food safety programs are helping. I don’t need a study to tell me that they most certainly are. I’ve learned a lot of what I know because we have been studying cheesemaking for years. Others are just starting out and need to know about how to keep the environment sanitary and the milk clean. They need to know that it is really important to cool the milk quickly. Many still don’t use bulk milk tanks and have other ingenious methods of cooling the milk. A favored method is putting it in a freezer for 2 hours and then transferring to the refrigerator. I’m glad we have a bulk tank else frozen milk in broken jars would be a regular disaster. I get busy and forget stuff. Heck, I can walk into another room and forget why I went in there. Ever done that? Raw Milk in Virginia In Virginia, the way to have access to raw milk is via the herd share. You support the business by buying a share of the herd and get a designated rate of return on your investment. It is a commitment to be sure. It’s kind of like that wine buying club. You are committing to a certain amount of product per month for as long as you are a member. If you’re looking for an affordable cow herd share program in southern Virginia or the Piedmont Triad area of North Carolina that has quality, healthy, and long-lasting raw milk, cheese, butter and yogurt, this is it. We are situated in Patrick County, Virginia just northeast of Mount Airy, NC. Here are four reasons our cow herd share program is so good. We offer 100% heritage breed Normande and Jersey milk, cheese, yogurt, cream and butter from cows with certified A2A2 genetics. I have a podcast on what A2A2 genetics means and I’ll include the link in the show notes. Briefly, there was as genetic mutation that happened a while back that changed the structure of the milk. Most milk today is NOT A2A2 in nature. One of the reasons we chose our heritage breed Normande cows was the purity of the ancient genetics. We use antibiotics only at great need and absolutely NO growth hormones. Because we care for our pastures, our cows get only the best nutrition. Occasionally, there is a need for antibiotics. It’s no different than a human woman getting mastitis while breast feeding. Sometimes it happens and you take care of it. If it is necessary, that cow’s milk is harvested separately until the treatment and subsequent waiting period is long past. And the idea of forcing our cows to produce more milk with hormones is abhorrent to me. There is no regard for the health of the animal at all with hormones. There is only the focus on production. I don’t think those that use these artificial means of increasing milk even see that the cows are living beings. They treat them like machines. When they inevitably burn out due to over-taxing their bodies, they are shunted off to the sale barn and replaced with a younger model. It’s disgusting. Our cows are out on grass all the time, and only come in for milking. They receive a small amount of non-soy, non-GMO grain supplement. This has two purposes. First, to entice the cow into the milking parlor and second to make sure she maintains her body condition. Our Normande cows can get by with absolutely no supplemental feed and maintain their body condition until late in the season. We choose to make sure they maintain body condition from beginning to end. The Jersey cow requires a great deal more supplemental nutrition. It is very easy for her to lose condition. I recently did a podcast on this as well (Normande vs Jersey – the Cost). The Jersey cow breed is a wonderful choice for many. But they do come with problems that we have not experienced with our Normandes. I won’t go into other details but, the days of Jersey cows on our homestead are numbered. To join their herd share program, it only costs $60 AND one share is only $44 monthly! You can also purchase a half share for $30 and $22 per month or multiple shares if you have a larger family. The herd produces milk from the first week of May through the last week of October. Yogurt and sometimes cream is also available in that time frame. In the spring, there is always a glut of milk and we makes lots and lots of cheese with that. Our cheese are all raw milk cheeses. The legal requirement is that they be aged at least 60 days. However, none of our cheeses would be worth a darn at that young age. We age all of our cheeses well past that minimum. Some only come into their flavor after many, many months. Remember the old wives’ tale about drinking warm milk to get to sleep? That is likely due to the tryptophan in the milk. However, it doesn’t really work anymore unless you have a raw milk resource. Pasteurization destroys the tryptophan. And that’s it for today’s topic. Let’s finish up with a late summer recipe for home made ice cream. Ice Cream Base When it’s warm outside, a cold refreshing dish of ice cream can really hit the spot. This is a basic ice cream recipe that can be used as a base for many different flavors. I’ve included a download link to the flavorings. This silky, luscious and very classic custard can be used as the base for any ice cream flavor you can dream up. These particular proportions of milk and cream to egg yolk will give you a thick but not sticky ice cream that feels decadent but not heavy. For something a little lighter, use more milk and less cream, as long as the dairy adds up to 3 cups. You can also cut down on egg yolks for a thinner base, but don’t go below three. What You Need 2 cups heavy cream 1 cup whole milk ⅔cup sugar ⅛ teaspoon fine sea salt 6 large egg yolks Your choice of flavoring What To Do In a small pot, simmer cream, milk, sugar and salt until sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer). Strain through a fine-mesh sieve into a bowl. Cool mixture to room temperature. Cover and chill at least 4 hours or overnight. Churn in an ice cream machine according to manufacturer’s instructions. Serve directly from the machine for soft serve, or store in freezer until needed. Notes Download the recipes for flavorings Final Thoughts I’m so glad that summer is winding down. It was a long, rough summer. And I missed about half of it because of the appendicitis. Again, not a huge fan of heat of summer. Unless you’ve been making a superhuman effort to avoid the news recently, you’ll know that the ocean is vital to life on Earth. But why, exactly, is this the case? Here are five reasons why we need to safeguard its future. 1. It helps us breathe Phytoplankton – tiny plant-like organisms that live in the sea – are responsible for at least 50% of the oxygen on Earth. Just like land-based plants, they contain chlorophyll to capture sunlight and use photosynthesis to convert it into the energy they need, producing oxygen as a byproduct. They also consume carbon dioxide, transferring about 10 gigatonnes of carbon from the atmosphere deep into the ocean each year. 2. It helps regulate the climate The ocean absorbs huge amounts of heat from the sun. “More than 90% of the warming that has happened on Earth over the past 50 years has occurred in the ocean,” according to the US National Oceanic and Atmospheric Administration. That heat tends to be at its most intense nearer the equator, with the water nearest the surface warming the most. Sea currents then transport that heat around the world; north and south, towards the poles. As some of the sea water evaporates it becomes denser and heavier, due to its relatively higher salt content. That causes it to sink, taking some of the warm water deeper. Some currents are directly responsible for specific climatic effects. One example is the Gulf Stream, which takes warmer water from the Gulf of Mexico across the Atlantic to Europe. If the Gulf Stream were disrupted, much of the western part of Europe – including the UK, Ireland and France – could become colder. 3. It’s an important source of food Fish is on the menu for billions of people around the world every day. It accounts for almost 16% of all animal protein consumed globally. Of course, there’s more to seafood than fish, crustacea and other edible creatures. A range of algae and sea plants are also commonly used in cooking. The UN Food and Agriculture Organization lists sodium, calcium, magnesium, and iodine among some of the important nutrients in seaweed. Iodine deficiency has been identified as the “most prevalent and easily preventable” cause of impaired cognitive development in children. Pressure on resources and the environment have led to calls for food production and for people’s diets to change. A cow, for example, produces 2.8kg of greenhouse gas per kilo of live body weight and needs 10kg of feed for every kilo it weighs. Plus, to get just one gram of protein from cattle, you need 112 litres of water. The oceans, if properly managed and maintained, could form an important part of a more sustainable approach to feeding the planet’s growing human population. 4. Its biodiversity is incredible It’s not just a source of food. The ocean is also home to an abundance of life. While estimates on the number of species that live in the sea exist, no one knows with absolute certainty what that number is.According to the US National Library of Medicine’s National Institutes of Health, “91% of species in the ocean still await description.” That’s due in no small part to the vastness of the oceans, which cover around 70% of the planet’s surface and are up to 11,000 metres deep. The number of yet-to-be-discovered creatures living in the sea could easily run into the millions. One example of how mysterious the deep oceans can be is the coelacanth. Found in fossils and believed to be extinct, a living coelacanth was pulled out of the ocean in 1938 off the coast of South Africa. This fascinating deep-water creature could yield invaluable insights into how marine animals were able to adapt to life on land, as the way they move their fins resembles the way many four-legged creatures walk. The struggle against the prevalence of diseases in African Americans must incorporate cultural sensitivity, community organization, and empowerment.----There are many unprecedented factors that cause us to suffer worse than any other demographic group in America. While I would love to cover them all, our guest for today is going to uncover one of the key principles to helping us combat this plague. Dr. Baruch is a naturopathic doctor that teaches on the socioeconomic factors that prevent African Americans from maintaining health. Researchers have found that adopting a vegan diet for diabetes has the potential to prevent and even reverse Type 2 diabetes. A healthy plant-based diet could also help improve symptoms for anyone suffering from the many types of this disease. And one of the best ways to manage diabetes is to learn as much as you can about your condition. Diabetes is now a disease that affects 371 million people worldwide, and 187 million of them do not even know they have the disease, according to the International Diabetes Foundation. People who have diabetes can have numerous challenges. Including not knowing what to eat and conflicting nutrition information. If you don't have diabetes, please note that the US National Library of Medicines predicts that the prevalence of diabetes will increase by 54% between 2015 and 2030, so many people are at risk. It is never too early to protect your body from becoming pre-diabetic. Symptoms of pre-diabetes are easy to miss. This stage is referred to as the "grey area." Without drastic lifestyle changes, people with pre-diabetes could progress to full-blown diabetes. The scary thing about this type of diabetes is that it may have no signs or symptoms, and you won't find out unless you have a blood test. Type 2 diabetes is the most common diabetes, and over 85% of people with diabetes suffer from Type 2. This type is considered a lifestyle disease and associated with the way a person lives. The main factors contributing to lifestyle diseases include diet, nutrition, lack of exercise, and drug or alcohol abuse. With that said, it doesn't mean it's your fault that you have this disease. We have been duped by food advertising, food pyramids, food trends and misguided information about diet and food. In today's podcast, I will share what's new in diabetic research and what it means to you. You will learn how to make nutrition therapy a part of your treatment plan. (Breather) We’re wrapping up with the final, fourth part of this series by focusing on stress, sex, and biohacks for increasing testosterone. *STRESS.* Reducing stress is crucial, as too much of it (negative stress, as opposed to challenge-related stress) or worrying will depress the immune system and reduce testosterone production. Try to get away from depressive and anxiety-inducing thoughts simply by calling them out - Dr. Ron even suggests saying out loud, “There I go ruminating again!” to yourself, just to make sure you can catch the moment you start to spiral into a loop of thinking and worrying about past or future events. Think of it this way: when cortisol (the flight or fight hormone) is regulated, that gives testosterone a fighting chance at becoming optimized. Cortisol and testosterone antagonize each other, so monitoring your stress is key because when you have high cortisol levels, nothing you do to help regulate your testosterone will work. A female’s “deepest biological drive” is to feel safe and protected by her male partner. The dominant male biological drive is, unsurprisingly, to be that hero and keep their partner safe and protected. But, as John notes, while our culture and society has changed greatly since our early days as humans, our biology has not changed. So now, females need to be primarily protected from their partner’s anger, not other, external sources of environmental danger. And how do you protect females from your own anger? How do you avoid those terrible fights that seem to spring out of the smallest issue and stop your relationship from becoming a war zone? *SEX.* Here’s the deal: having a healthy sex life can either boost or trash your testosterone - it all depends on how you do it. Frequent sex is a good idea, as it is healthy and can boost testosterone. From a physiological perspective, having sex increases testosterone levels, which promote libido, strength, energy, aggression, and competitiveness. From a relationship perspective, it helps you feel bonded and connected to your partner, and also creates a positive feedback loop, because high sexual frequency creates higher desire. German scientists actually found that having sex or even just having an erection causes your circulating testosterone to rise significantly - and having one in the morning can goose your natural post-dawn testosterone surge. However, keep in mind that an excess of anything can have harmful effects. There is a big discussion about whether too frequent ejaculation is healthy in the long term, something John Gray also brought up during our conversation ( https://www.bradkearns.com/2019/02/15/johngray/#1537804290528-70f55232-6bc6 ) , as there is compelling authority that ejaculation control and discipline improves men’s health, vigor, longevity, and sexual vitality. You only need to do this for 10-20 minutes. * *Sun exposure:* Recent research has found that Vitamin D increases androgen receptor activities in men (see my previous episode explaining this concept here ( https://www.bradkearns.com/2020/03/13/lifestyle-tips-to-increase-testosterone-naturally-part-2/ ) ), and male reproductive tissue also has Vitamin D receptors, so make sure to go outside to get some sun, even if it’s for 10 minutes! Ben Greenfield ( https://www.bradkearns.com/2018/11/28/bengreenfield/ ) has also got some crazy, next-level things you can try: * Electro muscle stimulation on your leg muscles: this helps up regulation of androgen receptors. * PMF therapy (pulse electromagnetic therapy): At a low frequency, this counters the adverse effects from your cell phone and frequent WiFi use. Studies show sperm count is lower when your phone or laptop is near your genitals.
