Tout commence par un gâteau d'anniversaire pour un petit garçon. La photo du gâteau est postée sur les réseaux suscitant des réactions et des partages. Suite à la demande de ses amis, Irina réalise le Gâteau qui va tout déclencher : la licorne, entraînant la création de son entreprise. Toutes ses pâtisseries sont issues de son imagination. Elle crée à partir d'un thème demandé par le client. Son credo : il doit être beau et bon et surprendre petits et grands. C'est pourquoi, il lui faut un certain temps pour élaborer ses desserts et un minimum de 15 personnes. Ainsi on y trouve des sujets variés comme des classiques Disney, du sport, des number cake (chiffres)… Elle fait elle-même ses moulages en chocolat provenant de grands chocolatiers. Elle collabore également avec des restaurateurs, des châteaux bordelais et des mariages. Margaret’s boundary-breaking work which fuses the food arts with the fine arts has taken her to the Middle East where she created 2,000 cakes for a Royal Wedding, to Venice with a tiered sugar mosaic for a Masquerade Ball at Palazzo Grassi, and to a castle in Ireland for a Rock Star's wedding. Based in New York, Margaret had an 8-month residency at The Museum of Arts and Design where she completed an installation of 2,000 hand-hewn sugar cups. She is the author of Cakewalk (2001, Rizzoli), and her work has been featured extensively in film and print.
