We made four stops. The first stop was Dollar Tree. They have no more mackerel. We saw a few other "second-choice" options, but the only thing I got there was a cold drink. Second was Home Depot. The price of a 2x4 has dropped further, to $5.48. Ryobi Days is still ongoing, so if you have any interest in their 18V One+ line, now's the time. My wife and I have many of these tools, and none have let us down. The savings on the batteries is great right now. We found the 40 lb. bag of bird seed and 60 lb. bag of blacktop patch we wanted. Third was Aldi. A few prices had dropped: English muffins $1.29-->$1.15, bacon $4.35-->$4.29, eggs $2.26-->$2.21. Pork prices were unchanged, so I got a couple of loins for the freezer; I will can what was in there tomorrow. We found everything we wanted. The final stop was Food City for cat food. They had a decent amount of Friskies cans, and a good amount of various bagged kibble. Overall, stock levels looked good in all of the stores, with no glaring holes. Untainted regular has jumped though, to $4.699/gallon; that's up 14c from a week ago. What are you preparing for? Is it rumore of shortages? Normal things that happen to most people? Zombies? Nuclear War? Economic collapse? What is the thing you have in mind? This weekend, as I say in my garden doing my “Daily Thirty,” which equates to half a row of weeding and cultivation, I say what was doing well, and what was not. It got me to thinking about this question: What are you preparing for? You see my reaction could have been fear and panic as I saw some plants looking sad, or the blank places in the garden where nothing has germinated. Or I could look at the things that have taken off and ask myself WHY? Why are they doing well and how can I replicate that in this blank spot? I mean, this year, we are in drought conditions in TN which means the water is NOT wicking as well through the soil into my plants, in part because I did not cultivate the plot for five years and it is a little out of balance. Yet other places here have thriving plants completely ignorant of this drought. TELLING. As I sat there, listening to the sheep baaah, to the goats bray, to the bees buss and to the world filled with life, it triggered the next question: What are you preparing for? As gas prices climb above 4 and 5 dollars, more and more people reach out with questions. SO many questions. Some feel fear. SOme are just feeling lost - like what ELSE can I spend less on in order to still go to my job. They are seeing parts of their garden no longer germinate and fill with plants and they are focused on the problem. So I ask: What are you preparing for? What I am preparing for: A stable life on the homestead, teaching, learning new things, enjoying, caring, eating well, and carving some time for outdoor recreation Normal life events (Job loss, illness, family crisis, tornadoes, ice storms) Ongoing rolling shortages in our supply chain What I am NOT preparing for WWIII USA' descent into late stage facism or communism The ECONOMIC COLLAPSE Multi year shortages Nuclear war FEMA Camps BUT WHY?? What really happens when things get that bad? Adjusted expectations A bank account of skills and creative thinking Critical thinking capability You have one life to live - use it well Something we like to focus on here is lots of homesteading things. Why? Well, because I LIVE on a homestead. But another thing that is important to keep in mind is that not everyone wants to live like I do, but you can still have the kind of life you want. And building various bank accounts helios add stability: food bank accounts, cupply bank accounts, skills bank accounts, relationship and community bank accounts, your actual bank account, crypto bank accounts, regenerative bank accounts, energy bank accounts - the list goes on an on. Our product comes in two FORMATS and three different WEIGHT variations while every case of food is 30lbs. all formulas with “organic produce” are complete and balanced for all life stages. CHUBS Think of a “chub” as a hunk of meat – those round tubes you see in the grocery store. Our above formulas come in that format, in two sizes – 2# and 5#. Which one you choose would depend on the size or quantity of animals you are feeding. Defrosting a large five-pound chub for a small dog that will only eat 4oz/day would be impractical for most people (not to mention the food would spoil before the dog could finish it) but the same chub would work well for an owner of a large German Shepherd that is eating a pound of food per feeding. Getting deeper, a two-pound chub might be even more convenient for that German Shepherd owner, since there would be no weighing involved, they'd simply cut the defrosted chub in half and have two equal meals without the guesswork. PATTIES In the shape of a “hamburger patty”. Our formulas are pre-weighed then cut into 8oz patties and individually wrapped. This presents a ton of flexibility from being able to segregate the raw meat in your fridge since each patty comes in its own sealed vessel to being able to take as little as 1 patty on the road with you in a cooler. For small- medium size dogs , this is perfect. For example, a 20lb dog that eats 4oz / feeding, would just eat one patty per day. (ex: half a patty in the am, half in the pm) 2LB, 5LB, 10LB Now that you understand our formats, it is time to consider the weights of each inside our 30lb cases: 2lb Chubs – Each chub weighs two pounds for a total of FIFTEEN chubs per case. 5lb Chubs – Each cubs weighs five pounds for a total of SIX chubs per case. 10lb Patties – There are THREE, 10lb bags of patties in a case. Each bag contains TWENTY individually wrapped, 8oz patties for a total of 60 patties/case. Ultimately, the decision comes down to convenience vs cost. Since every case of food we sell is always going to be 30lbs, you will need to decide how much you want to pay for that same 30lbs of food by considering three things: time, cost effectiveness and application.

Today’s lesson is 551 words, a 2 min 12 sec reading time. It is the eighth lesson of How to Hack Your Freezer.📍 IntroductionA small stock of frozen meat, poultry & fish can come in seriously handy. Lasting a few months in the freezer (as opposed to a few days in the fridge), these items put your precious space to work. By freezing, you can capture unique purchasing opportunities (e.g., farmer’s markets, butcher shop visits, sales), and ensure you have proteins at the ready when you need them most (e.g., mid-week dinners).With that said, these products need a little TLC to maintain their texture & flavor. Stored & defrosted properly, the items will taste as good as new. Mishandled, however, and the ingredients can develop freezer burn, become mushy, or lose flavor. 😬Given the relatively high cost of these ingredients, we believe it’s worth investing in some upfront knowledge. 📝 Notes, Tips & Tricks: BuyingPre-portioned packages make for faster defrosting (& eliminate your need to repackage) If possible, purchase pre-frozen cuts. Tougher/more economical cuts (e.g., pork shoulder, brisket) last longer than more tender ones. Packing & FreezingFreeze meat and fish immediately upon returning from the store to prevent any unnecessary degradation in flavor or taste. Freezing does not reset the expiration date. If something is a day away from going bad, it will still be in that state upon defrosting.Freeze meat in relevant portions (e.g., 2-4 servings each) Stride ahead by freezing thinner or pre-portioned items. To avoid freezer burn, double wrap. Learn more here.Ground meat: create a deep indentation in the center to expand the surface area and speed up defrostRoast chicken: remove meat from bone & tear into bite-sized pieces for economical storage & fast defrost. Bite-sized pieces sauté quickly & deliciously. DefrostingDefrost delicate proteins (e.g., tender meat, fish) within a few weeks. They lose texture over time (e.g., become mushy). Defrosting in the fridge is safest. Don’t rush this & plan ahead whenever possible. It takes ~24 hours for larger items (e.g., whole chicken). ~12 hours for smaller ones (e.g., chicken breast). For a faster thaw, submerge in cold water. Change water every 20 min —plan for 1-2 hours. Microwave in a pinch. Set power to low (see more guidance here). Check & rotate every ~30 seconds. Do not thaw on the counter. It’s an open invitation for bacterial growth. When microwaving ground meat, scrape away thawed meat at the halfway point. If defrosted via the fridge, an item may be refrozen. Stride ahead by freezing pre-marinated items.Cook poultry to 160° (in the center) to protect against bacteria.To thaw faster, set fridge closer to 40°F than 35°F.Fish & SeafoodIf you plan to freeze, try to buy pre-frozen (this avoids an unnecessary thaw which impacts texture). Commercial producers flash freeze and thus better preserve flavor and texture. Fish keeps well for ~3-6 months, depending on how fresh it is upon freezing. These concentrated bursts help you reduce waste & save time by adding a punch of flavor fast. They take little time to prepare and require only an ice cube tray and zip bag to create & store. Feel free to get creative with what you prep, freeze & save for future use. ⚙️ Gear Ice cube trayZip bag (optional)📝 Notes, Tips & Tricks: Ice cube trays with lids offer stackability. They also protect the cubes from freezer burn & absorbing smells.Silicone makes for easier cube popping, but can absorb some smells/flavors (e.g., garlic) Smaller trays like this one are ideal for highly concentrated flavors (e.g., minced ginger) Defrosting at room temperature is best (~15 minutes), but you can microwave in a pinch. Check every 15-30 seconds to avoid accidental cooking.👆 Varieties: Pesto: Can be used for sandwiches, pasta, dressing veggies & meat, topping a grain bowlHerb cubes: Dice hearty herbs (e.g., rosemary, thyme, oregano, sage) & cover with olive oil. Alternatively, blend with softened butter for a spin on “compound butter.” Citrus juice: Lemon, lime, orange & grapefruit make great additions to cocktails, salad dressings, or bubbly water. Minced garlic/ginger: Great for adding to stir-fries, soups, salad dressing, and dips. You can also buy them pre-made. Today, I want to talk about how focusing on a few things can help you get many things done. That's right. We have touched on this concept in other episodes, but today, I thought we could dive a little deeper. And what sparked this idea? Well, it is the new Facebook group, Living Free in Tennessee Coffee Break. This is where lots of listeners are starting to post up to 3 do or die items that they will get done that day to move themselves forward toward their long-term goals. Some of the things are small, like taking a walk every morning. Some are big: like put up 6 bushels of corn — or some crazy amount — that took that person three days, but she got it done. And people are posting pictures of their progress and sharing ideas. But why three? Why now? We will talk about that after our segments.
