Kay-Lene Tan is a renowned pastry chef celebrated for her innovative desserts that combine storytelling with bold flavours. Before embarking on her culinary career, she worked as a documentary maker, with a background in mass communication from Ngee Ann Polytechnic in Singapore. A turning point came during a “quarter-life crisis,” which led her to pivot toward her passion for food, eventually enrolling at At-Sunrice GlobalChef Academy to pursue pastry and bakery arts. Her talent took her to some of the world's best kitchens and earned her accolades, including being a semi-finalist on MasterChef Australia: Dessert Masters in 2023. On the show, she impressed with desserts inspired by her heritage and personal memories, such as her "Milo Dinosaur" dish and a "New Beginning" creation symbolising seasonal change. While she didn't take home the title, Kay-Lene described her experience on Dessert Masters as transformative, reigniting her confidence and reaffirming her unique culinary voice. Kay-Lene is now using that voice at Omnia Bistro and Yugen Dining in South Yarra. Kay-Lene is articulate and realistic and glorious in the way she describes dessert creation but also her own journey, and she also has the best laugh. I learned a lot from our conversation and came away the better for having spoken to her.

Hiya! Join us this morning as we chat with legendary Commonfolk Co-founder, Sam Keck. Commonfolk Coffee is a roasting and brewing company with locations in Frankston, Mornington and South Yarra. More than just a cafe, Commonfolk have created ‘The Cup That Counts' initiative, purchasing a coffee farm in the Ugandan highlands to ensure all their coffee is ethically sourced. Sam discusses the importance of partnership with coffee producers, as well as the risks of deregulated trade. Since 2013, Commonfolk have supported thousands of farmers in Uganda, providing training for locals and nurturing sustainable coffee practices. Sam's most recent project, documentary ‘Every Cup Counts' follows the relationship between Commonfolk and the farmers of Mt Elgon, Uganda. In coffee news: Robots are coming for the jobs of baristas and bar staff via the botrista, and Nestle develops a higher yielding coffee plant. Le Yeahllow is a happy place. It's bright and light and the display cases, like a jeweller's, are full of gleaming treasures. Owner Samsky Yeung who also founded White Mojo coffee shops, opened Le Yeahllow in 2021 when he took over the former Adriano Zumbo Patisserie space in South Yarra and started baking and delivering cakes around Melbourne. Sam says, “Le Yeahllow was born from a simple idea: to create celebratory cakes that bring happiness to people's lives,” and he explains the name as being inspired by the colour yellow, embodies joy, energy and playfulness. I spoke to Le Yeahllow's pastry chef Steven He at their CBD venue to hear all about the creative process behind the glorious, playful and inventive cakes. Le Yeahllow also sells other patisserie favourites including canelés, Paris-Brests, and financiers, but it is the surrealist creations such as le Mandarin, the Love Letter and the Ballon Puppy cake which have the wow factor and go viral on social media.

I have a special place in my heart for Bar Carolina in South Yarra because I wrote about it for Concrete Playground when it opened in 2017 and I also had a Conversation with a chef with the chef at the time, Paolo Masciopinto. But I hadn't been out the back before and when new head chef Pieter Buijsse suggested going out through the kitchen to his office, I was thrilled. Walking out through the action is my idea of a good time. Happily wedged into the tiniest office I have ever seen with a cup of espresso and a chef who started working in restaurants at the age of 12, I was hanging off Pieter's every word. Pieter grew up in Holland, five minutes from the Belgian border, eventually working his way through a two and then three-star Michelin restaurant before meeting Aussies in South America and deciding Melbourne would be the next adventure. 10 years on with senior roles at Point Leo Estate and Jackalope under his belt, as well as being part of the 2022 Melbourne Food and Wine Festival's 30 under 30, Pieter is firmly part of the Melbourne culinary landscape. This was a great chat. Pieter is articulate and knowledgeable and I had a lovely time.

I caught up with Murat Ovaz at I Carusi II in St. Kilda and I felt as though I was catching up with an old friend. I spoke to Murat when he opened Yagiz in South Yarra about six years ago and that was a fun conversation about the adventures that had got him into hospitality and becoming a chef. The food at Yagiz was next level. Murat was putting up clever interpretations of the food he grew up with in Turkey and his creativity and talent earned him a loyal following. The person I had a coffee and chat with today was a much more relaxed version of the Murat I first met. Stepping into the kitchen and becoming co-owner of southside pizza institution, I Carusi II, was the change Murat needed and we talked about how he got there, what he has learned about pizza, as well as next week's Four Hands dinner with friend and celebrity chef, Colin Fassnidge to celebrate I Carusi II's 20th anniversary. This chat was everything I love about Conversation with a Chef; getting to sit down and hear such great stories about peoples' lives and passion is a privilege, and I am endlessly grateful.

His restaurant, South Yarra's Atlas Dining, is well-known for every three months completely changing the country and cuisine its menus take their inspiration from. In order to consistently pull off that feat, Carrington makes several international research trips each year. Little Havana is Charlie Carrington's love letter to the Miami district of the same name. On previous visits to the Cuban-inspired area, he was drawn to its art, music, hole-in the bars, cigar-rolling stores and standout Cubano sandwiches. Scoop the seeds out. Use the pumpkin hollow as a bowl to make a paste with the sugar, salt and 2 tablespoons of olive oil, then rub into the pumpkin halves.Pull the hot baking tray out and carefully line the base with a sheet of baking pater. Drizzle another 2 tablespoons of olive oil across the middle of the baking tray and lay the pumpkin halves, face side down, across the oily bits.Transfer to the over and roast for 40-50 minutes, until a fork can be poked through the top of the skin.With 15 minutes to go, wrap the macadamia nuts in a clean tea towel. Use a rolling pin, pestle or the bottom of a bottle to crush the nuts up a bit.Tip the crushed nuts into a cold frying pan. Add the butter and remaining 1 teaspoon olive oil and place over medium heat. Squash the olives between your thumb and forefinger to split them in half and pop out the pits. Toss the pitted olives and the sage into the butter mixture and gently sizzle for about 2-3 minutes, until the butter has turned as nut-brown as the nuts.When the pumpkin is ready, pile the nut mixture into the pumpkin hollows, drizzling any left-over buttery sauce around the pumpkin. Garnish with extra sage, season and serve.

Sprinkle almonds over the top of the pears.Cream butter and caster sugar. Add eggs then flour and almond meal. Spread mixture over the pears.Bake for 45-60 minutes.When cool, turn out carefully onto a serving plate. Serve with cream or ice cream. Movida's Beef Cheeks Slowly Braised with Pedro Ximenez and Cauliflower Puree Ingredients:· 1.5 kg Beef Cheeks· 125 ml (½ cup) olive oil· 3 carrots, roughly chopped· 1 garlic bulb, halved· 1 brown onion, sliced· 500 ml (2 cups) Pedro Ximenez sherry· 500 ml (2 cups) red wine· 3 bay leaves· 3 tablespoons thyme leaves· 1 teaspoon fine sea salt· 1 head of cauliflower, broken into florets· 185 ml (¾ cup) cream· 40g butter Method:1. Trim the beef cheeks to neaten them up and remove any sinew and silver skin. Season well. Pre heat oven to 150º.2. Heat half the olive oil in a large heavy-based, oven proof casserole dish over high heat. Brown the beef cheeks for 2 minutes on each side, or until golden, then remove from the pan.Add the remaining olive oil, then add the carrot, garlic and onion and sauté over high heat for 12-15 minutes, or until well browned. Stir in the sherry, wine, bay leaves, thyme, sea salt and 500 ml (17 fl oz/2 cups) water.3. Add the beef cheeks back into the dish, cover and cook in the oven for 4-6 hours, or until the cheeks are beginning to fall apart.4. Meanwhile, put the cauliflower, cream and butter in a saucepan, season to taste with salt, then cover and cook over low heat for 35 minutes, or until very tender. Place the cauliflower mixture in a blender and process until smooth. Keep the puree warm.5. The sauce from the beef cheeks should by now be reduced and glaze-like. If it needs further reducing, remove the cheeks from the pan, cover with foil to keep them warm and simmer the sauce over high heat until nicely reduced. Strain the sauce through a fine sieve and return to the pan; gently reheat the cheeks in the sauce if necessary.6. Serve the cheeks and their sauce on warm plates with the cauliflower pureeon the side.

I like to make a salsa to go with this, with chopped tomatoes, red onion and lots of fresh herbs, finished with a dash of rice wine vinegar and a sprinkle of sugar and salt. Add it on top of the yoghurt – it lifts the whole flavour profile. This is also a tasty sauce to place under pan-seared seafood such as scallops or prawns, or even a nice piece of white-fleshed fishIngredients1 cup green lentils½ tsp ground turmeric1 bay leaf1 bunch spinach, leaves picked, washed well and shredded1 tsp sea salt½ tsp red chilli powder1 tsp cumin seeds, toasted and lightly crushed1 cup tinned chickpeas, drained2 fresh long red chillies, cut into thin rounds1 tbsp Greek-style yoghurtjuice of 1 limesteamed rice, to servechopped tomatoes and chopped coriander, to serve (optional)Method1. Place the lentils in a saucepan, cover with cold water and bring to the boil. Take off the heat, drain immediately and rinse.2. Place the blanched lentils, turmeric, bay leaf and 1 litre (4 cups) water in a heavy-based pan with a tight-fitting lid over medium heat. Stir and bring to a simmer. Reduce the heat to low, cover and cook gently for about 1 hour or until the lentils are tender.3. Add the spinach, sea salt, chilli powder, cumin and 80ml (⅓ cup) water. Stir to combine, then return to a simmer. Cover and simmer gently for 30 minutes, stirring from time to time. Add the chickpeas and heat through, then remove from the heat.4. Stir in the fresh chilli and spoon into a serving bowl. Add the yoghurt on top, then the lime juice, and serve with steamed rice. Top with chopped tomatoes and coriander, if using.

Astrid is a specialty pharmacy, pioneering in cannabinoid medicine and plant-based therapies, located at the heart of South Yarra in Melbourne. With a focus on patient centred care, Astrid is the first female-led dispensary in Australia, founded by a clinical pharmacist with extensive experience in the medicinal cannabis industry. Bee was also the first CEO of ScriptWise, a non-profit patient advocacy organisation dedicated to prevent the harms associated with prescription medication overdose and addiction, so she has a long history in the field of harm minimisation.
