Tefteli sind russische Fleischbällchen und deutlich mehr als nur Frikadellen mit einem fremden Namen. In dieser Folge bereiten wir saftige Russian Meatballs mit Reis, reichlich geriebenen Zwiebeln und Knoblauch zu. Der Reis ersetzt dabei das klassische eingeweichte Brötchen und sorgt für eine besonders lockere Konsistenz. Die geriebenen Zwiebeln verteilen sich gleichmäßig in der Hackfleischmasse und halten die Bällchen schön saftig. Dazu gibt es eine cremige Soße aus Tomatenmark, Möhren, Zwiebeln und Crème fraîche. Diese Soße kommt ganz ohne Dosentomaten aus und erinnert geschmacklich an osteuropäische Hausmannskost. Auch Parallelen zur schlesischen, polnischen und klassischen DDR-Küche lassen sich deutlich erkennen. Der Geschmack weckt bei mir Erinnerungen an lange Sommerferientage und deftige Mahlzeiten bei meinen Tanten. Außerdem erfahrt ihr, was Parboiled-Reis eigentlich bedeutet und worin sich Mehl und Speisestärke beim Andicken unterscheiden. Am Ende entsteht ein warmes, cremiges und herzhaftes Gericht, das satt macht und trotzdem überraschend viel kulinarische Geschichte erzählt.

Daryan Knoblauch runs the eponymous architecture practice founded in 2024 in Berlin. His approach follows socio-cultural investigations of the present day, articulated in the form of cultural buildings, pavilions, and scenographies. Since graduating in 2021 from the Architectural Association in London, Daryan has been teaching as a Studio Master at the AA, the Royal College of Art, and Porto Academy 2025, among others.
