Vinegar can balance or amplify other flavors—it can cut through fat, enhance sweetness, and brighten dull dishes. Its acidity kills bacteria, making it a natural preservative long before refrigeration. Brighten Up Salads! Mix olive oil, balsamic or red wine vinegar, mustard, and honey to create a classic vinaigrette. Try rice vinegar in Asian-style salads with sesame oil and soy sauce. Vinegar tenderizes the meat and infuses flavor. Balsamic vinegar + strawberries + a touch of black pepper = an unexpectedly delightful dessert.

In this episode, Kimberly and Tommaso recount their visit to Modena, Italy. They describe the city's attractions, from balsamic vinegar to Ferrari. They also discuss travel safety tips and the upcoming changes to the podcast schedule. Key Points: Podcast Schedule Update: Beginning the first Wednesday of April, the podcast will switch to two episodes per month for a few months. This change is due to scheduling constraints. Travel Safety Advice: Travelers to the Napoli area should be aware of recent earthquake activity. Visitors should note the location of their country's consulate. A grab-and-go bag with essential documents is recommended. Recent heavy rains caused flooding in Florence, Pisa, Lucca, and parts of Emilia-Romagna. Modena's Centro Storico: Kimberly and Tommaso visited Modena, known for its balsamic vinegar and Ferrari. Kimberly recalls fond memories of buying balsamic vinegar during her time in Milan. The city was decorated for Christmas, with a unique style of lighting the streets. The hosts admired the lack of crowds in Piazza Grande. Modena was originally a Roman colony called Mutina. UNESCO World Heritage Sites: Modena has three UNESCO-recognized architectural masterpieces. The Duomo is a Romanesque building that took 220 years to build. The Bell Tower of the Duomo is known as Ghirlandina. The Piazza Grande is the third UNESCO site. Famous Modenese Figures: Luciano Pavarotti, the famous tenor, was from Modena. His home slightly outside the city is now a museum. Chef Massimo Bottura, who runs Osteria Francescana, is also from Modena. Giuseppe Giusti Balsamic Vinegar: The Giusti family has been producing balsamic vinegar since 1605. The shop on Piazza Grande has a very alluring interior. Kimberly and Tommaso tasted and purchased various vinegars. They paired the vinegar with parmigiano and Brunello upon returning home. Ferrari Museum: The museum focuses on the life and work of Enzo Ferrari. The museum showcases noteworthy Ferrari automobiles. The design and color of the cars, as well as the devotion to each car, stood out. The exit features a quote from Enzo Ferrari: “The best Ferrari ever built, is the next one.” Follow us on Social Media Instagram Facebook

Thursday February 27  Balsamic to New Pisces Moon  The Moon left Aquarius at 1:46 MT, this morning and moved into the boundless world of Pisces.  Information can swim irratically through our minds during the early morning hours.  The Moon's balsamic phase and the zodiac sign of Pisces can seem boundless, like being in the middle of a ocean.  Yet sprays and clouds of images  can float through our minds.  At 5:45 pm, we have a new Moon at the tenth degree of Pisces, symbolized by an Aviator Flying Through the Clouds.  Clouds, of course, relate to the water element of Pisces, and both the ocean and the sky are places which seem limitless, as does our imagination as well.  This new Moon tells us our aspirations can be boundless.  This Moon cycle can reveal how we allow them to be, or not.

The Moon entered her Balsamic phase at 7:05 am, MT.  As we assess past efforts, it may be helpful to identify recent problem areas which were avoided and what effect that had on one's overall state of mind.  To what extent does whatever we neglect add to or subtract from an image of oneself.  Are we feeding the power of our imaginations with pictures of what we want to birth?  The Moon goes void of course at 8:28 pm, MT, for almost two hours of blurring our achievements before entering Aquarius at 10:40 pm.

Play Date was a film that I am glad I got to watch for HollyShorts, but so glad I was able to interview Amberlee Colson and Laura Campbell to dive deeper into the film. According to their website (playdate-film.com), the short film is about two estranged mothers reunite to make sense of their daughter's last play date. I hope that you can check it out sometime and I hope this film reaches so many people. “Play Date is an attempt to comprehend not only the depth of loss incurred by the parents of school shooting victims, but also the mental contortions the rest of us have to perform in order to keep living in a world where a day at school or a night at the movies can mean the end of the world as we know it.” - Gavin Broady Writer's Statement Sazerac Dream Cocktail: Ingredients Absinthe, to rinse 1 sugar cube 1/2 teaspoon cold water 4 dashes Peychaud's bitters 2 1/2 ounces rye whiskey Garnish: lemon peel Directions Rinse a chilled rocks glass with absinthe, discarding any excess, and set aside. Strain into the prepared glass. Twist the lemon peel over the drink's surface to express the peel's oils, then garnish with the peel. Allow them to crisp up, but not fully brown, and place a slice of cheddar cheese on each un-buttered side of toast. Allow cheese to melt slightly and flip sandwiches together to make 3 separate grilled cheese sandwiches. Continue to flip the sandwiches until they form a nice golden crust. Fill an ice cube tray with tomato juice and stick into the the freezer overnight. Strain out the vodka by placing 2 coffee filters into a strainer. Pour the vodka through carefully, assuring the filters are straining out any lipids. You can also fish out the sandwiches and squeeze the liquid soaked up by the bread. Set vodka aside. On a griddle, crisp up the prosciutto and break into small bits and place on a small plate. On another plate, pour a layer of balsamic glaze. Rim your glass first with the balsamic glaze and then with the prosciutto bits. Set aside. In a shaker, muddle the basil and cherry tomatoes. Pour in 4 oz of the vodka and ice and shake vigorously. Strain and pour the drink into the glass over a single tomato ice cube. Top with two mini grilled cheeses on a skewer and serve.   Play Date Drinking Game: Drink when... you're uncomfortable. you see pink. you see food or drink. you see Tetris. Hey there, party people and potluck pros! Welcome back to our little corner where we swap tales and tips that make every kitchen escapade a breeze. Today, we're diving into a topic hotter than a July barbecue—potluck panics! Yes, it's that time of year when invites to gatherings are popping up faster than daisies, and the pressure to bring something wow-worthy can really stir the pot. So, buckle up, buttercups, as we tackle how to be the star of your next social soirée without breaking a sweat!   **Potluck Perils Be Gone:** Let's be real, the idea of whipping up something fabulous enough to travel and charm a crowd can be a bit daunting. But fear not! I'm here to help you navigate these waters with grace and a dash of flair. Here are five tips to soothe any potluck anxiety and boost your culinary confidence.   ### 1. Smoky Pulled Pork Sliders   **Ingredients:** - 3 lbs pork shoulder - 1 tablespoon salt - 1 tablespoon paprika - 1 tablespoon garlic powder - 1 cup barbecue sauce (plus extra for serving) - 1/2 cup chicken broth - Mini buns - Coleslaw (store-bought or homemade)   **Instructions:** Rub the pork shoulder with salt, paprika, and garlic powder. Place in a slow cooker and pour the chicken broth around it. Cook on low for 8 hours or on high for 4 hours. Once cooked and tender, shred the pork using two forks. Mix in the barbecue sauce. Serve on mini buns with a spoonful of coleslaw and a drizzle of extra barbecue sauce.   ### 2. Sunshine Quinoa Salad   **Ingredients:** - 1 cup quinoa (cooked according to package instructions and cooled) - 1 can chickpeas, drained and rinsed - 1 cucumber, diced - 1 cup cherry tomatoes, halved - 1/4 cup chopped fresh parsley - Juice of 1 lemon - 2 tablespoons olive oil - Salt and pepper to taste   **Instructions:** In a large bowl, combine the cooked quinoa, chickpeas, cucumber, cherry tomatoes, and parsley. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine. Chill in the refrigerator until ready to serve.   ### 3. Decadent Chocolate Torte   **Ingredients:** - 1 cup unsalted butter - 1 cup sugar - 1 cup dark chocolate chips - 1/2 cup cocoa powder - 1 teaspoon vanilla extract - 4 eggs   **Instructions:** Preheat your oven to 350°F (175°C) and grease a 9-inch round baking pan. In a saucepan over low heat, melt the butter and chocolate together until smooth. Remove from heat and stir in sugar, cocoa powder, and vanilla. Beat in the eggs, one at a time, until well combined. Pour the batter into the prepared pan. Bake for about 25 minutes. The center will seem slightly soft. Cool completely before slicing. Serve with a dusting of powdered sugar or whipped cream.   ### 4. Buffalo Chicken Dip   **Ingredients:** - 2 cups cooked chicken, shredded - 1 package (8 oz) cream cheese, softened - 1/2 cup buffalo wing sauce - 1/2 cup ranch dressing - 1/2 cup shredded cheddar cheese   **Instructions:** Preheat your oven to 350°F (175°C). In a bowl, combine all ingredients except the cheddar cheese. Transfer to a baking dish and sprinkle with cheddar cheese. Bake for 20 minutes or until hot and bubbly. Serve with chips, celery sticks, or carrot sticks.   ### 5. Caprese Skewers   **Ingredients:** - Cherry tomatoes - Fresh basil leaves - Mozzarella balls - Balsamic glaze for drizzling - Skewers or toothpicks   **Instructions:** Thread a cherry tomato, a fresh basil leaf, and a mozzarella ball onto a skewer or toothpick. Arrange the skewers on a platter. Drizzle with balsamic glaze before serving.   These recipes are all perfect for a potluck because they can be made ahead of time and are easy to transport.
