Rice and mash potatoes until no longer lumpy 2. Combine riced potatoes, salt, olive oil, and flour. Knead into a cohesive ball 3. Keeping remaining dough covered as you work, section off, roll out into sausage length and. Cut into ¾” pieces 4. Roll each piece on the back of a fork and place on floured surface 5. Bring water to a boil and drop in gnocchi, cooking for 4-5 minutes or until they float Bolognese * ½ diced sweet onion * 2 TBS olive oil * 2 medium carrots, chopped * 1 stalk celery, diced * 6 cloves garlic, chopped * 12 ounces vegan beef * 1 tsp Italian seasoning * 1 TBS tomato paste * ½ cup red or marsala wine * 1 tsp agave syrup * 1 can tomato sauce * 2 cups vegetable broth * 2 bay leaves * 1/3 cup vegan parmesan * Salt and pepper to taste 1. Heat olive oil in pan and add onion, carrots, celery and garlic 2. Season with salt and pepper, sauté until onion is translucent 3. Add “beef”, breaking up with spoon until it's in small pieces, combine veggies and sauté an additional 5 minutes until browned 4. Add Italian seasoning, tomato paste, and red wine stirring to combine 5. Add agave, tomato sauce, veggie broth and bay leaves, stirring 6. Reduce heat, cover and simmer for 10 minutes 7. Stir in cheese, simmer an additional 10 minutes 8. Pour on top of gnocchi Caprese Salad with Bocconcini * 6 sliced vine ripe or heirloom tomatoes * 6 sliced bocconcini balls * Bunch of basil leaves * Balsamic glaze to taste * Salt and pepper to taste 1. Kimberly and Tommaso tasted and purchased various vinegars. They paired the vinegar with parmigiano and Brunello upon returning home. Ferrari Museum: The museum focuses on the life and work of Enzo Ferrari. The museum showcases noteworthy Ferrari automobiles. The design and color of the cars, as well as the devotion to each car, stood out. Thursday February 27 Balsamic to New Pisces Moon The Moon left Aquarius at 1:46 MT, this morning and moved into the boundless world of Pisces. Information can swim irratically through our minds during the early morning hours. The Moon's balsamic phase and the zodiac sign of Pisces can seem boundless, like being in the middle of a ocean. Yet sprays and clouds of images can float through our minds. At 5:45 pm, we have a new Moon at the tenth degree of Pisces, symbolized by an Aviator Flying Through the Clouds. Clouds, of course, relate to the water element of Pisces, and both the ocean and the sky are places which seem limitless, as does our imagination as well. I hope that you can check it out sometime and I hope this film reaches so many people. “Play Date is an attempt to comprehend not only the depth of loss incurred by the parents of school shooting victims, but also the mental contortions the rest of us have to perform in order to keep living in a world where a day at school or a night at the movies can mean the end of the world as we know it.” - Gavin Broady Writer's Statement Sazerac Dream Cocktail: Ingredients Absinthe, to rinse 1 sugar cube 1/2 teaspoon cold water 4 dashes Peychaud's bitters 2 1/2 ounces rye whiskey Garnish: lemon peel Directions Rinse a chilled rocks glass with absinthe, discarding any excess, and set aside. In a mixing glass, muddle the sugar cube, water and the Peychaud's bitters. Add the rye whiskey, fill the mixing glass with ice and stir 15–20 seconds, until well-chilled. Strain into the prepared glass. Twist the lemon peel over the drink's surface to express the peel's oils, then garnish with the peel. Tetris Cocktail (adultbar.com.au): Ingredients 30ml of Curaçao Red Senior Co 30ml of Curaçao Green Senior Co 30ml of Curaçao Blue Senior Co 150ml of Lemon Soda Directions (served room temperature) Add water into glass. Grilled Cheese Martini (thrillest.com): Ingredients 4 cups vodka 2 cups tomato juice 1 bunch basil, removed from stems 1 handful orange cherry tomatoes 6 slices white bread 6 slice cheddar cheese Balsamic glaze 3 slices prosciutto Ice Coffee filters Directions On a griddle, butter one side of 6 pieces of toast and place them butter-side down. Allow them to crisp up, but not fully brown, and place a slice of cheddar cheese on each un-buttered side of toast. Allow cheese to melt slightly and flip sandwiches together to make 3 separate grilled cheese sandwiches. Continue to flip the sandwiches until they form a nice golden crust. Slice each sandwich in quarters and stuff into a mason jar. Fill the mason jar entirely with vodka. Allow grilled cheese and vodka to infuse overnight. Fill an ice cube tray with tomato juice and stick into the the freezer overnight. Strain out the vodka by placing 2 coffee filters into a strainer. Pour the vodka through carefully, assuring the filters are straining out any lipids. You can also fish out the sandwiches and squeeze the liquid soaked up by the bread. Set vodka aside. On a griddle, crisp up the prosciutto and break into small bits and place on a small plate. On another plate, pour a layer of balsamic glaze. Rim your glass first with the balsamic glaze and then with the prosciutto bits. Set aside. In a shaker, muddle the basil and cherry tomatoes. Pour in 4 oz of the vodka and ice and shake vigorously. Strain and pour the drink into the glass over a single tomato ice cube. Top with two mini grilled cheeses on a skewer and serve. So, a little while back, Team Common took over the WBUR kitchen so Deb could show us how to make one of her signature summer side dishes, while also dishing about her love of food, and her long journalism career. ____ Deborah Becker's vegan summer orzo salad Ingredients: Fresh cherry tomatoes, halved Cucumbers, peeled, seeds removed and diced Scallions, roughly chopped One jar pitted calamari olives One can of garbanzo beans Fresh basil and parsley, chopped (lots of it!) A good olive oil Balsamic vinegar 1/2 teaspoon sugar Orzo Salt and pepper to season Instructions Bring a pot of water to boil, season boiling water with salt. Add orzo. While orzo cooks, prepare vegetables and herbs, combine in a large bowl. When orzo is cooked, strain and rinse under cold water until cooled. Coat lightly with olive oil to keep pasta from sticking together. Combine balsamic, olive oil and sugar in a small bowl to create a dressing Combine strained and cooled orzo with vegetables in bowl. Sunshine Quinoa Salad **Ingredients:** - 1 cup quinoa (cooked according to package instructions and cooled) - 1 can chickpeas, drained and rinsed - 1 cucumber, diced - 1 cup cherry tomatoes, halved - 1/4 cup chopped fresh parsley - Juice of 1 lemon - 2 tablespoons olive oil - Salt and pepper to taste **Instructions:** In a large bowl, combine the cooked quinoa, chickpeas, cucumber, cherry tomatoes, and parsley. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine. Chill in the refrigerator until ready to serve. ### 3. Decadent Chocolate Torte **Ingredients:** - 1 cup unsalted butter - 1 cup sugar - 1 cup dark chocolate chips - 1/2 cup cocoa powder - 1 teaspoon vanilla extract - 4 eggs **Instructions:** Preheat your oven to 350°F (175°C) and grease a 9-inch round baking pan. In a saucepan over low heat, melt the butter and chocolate together until smooth. Remove from heat and stir in sugar, cocoa powder, and vanilla. Beat in the eggs, one at a time, until well combined. Pour the batter into the prepared pan. Bake for about 25 minutes. The center will seem slightly soft. Cool completely before slicing. Serve with a dusting of powdered sugar or whipped cream. ### 4. Buffalo Chicken Dip **Ingredients:** - 2 cups cooked chicken, shredded - 1 package (8 oz) cream cheese, softened - 1/2 cup buffalo wing sauce - 1/2 cup ranch dressing - 1/2 cup shredded cheddar cheese **Instructions:** Preheat your oven to 350°F (175°C).
