On this episode of Taste Buds with Deb, host Debra Eckerling speaks with chef and restaurateur Daniel Shemtob, whose home burned down in the Palisades fire. He is also one of many local chefs teaming with José Andrés' World Central Kitchen (WCK) to feed those displaced by the fires and first responders.   'It's been crazy, dealing with the consequences of losing your home, losing all your stuff, dealing with insurance, finding a new place to live and [having] a pregnant wife who is stressed out,” Shemtob says. “[I'm also] a business owner, [wanting] to give back to the community; I think that that's the necessary step in rebuilding.”   Shemtob is the all-star winner of Food Network's “The Great Food Truck Race” with The Lime Truck, as well as the chef behind Downtown LA's Hatch Yakitori, co-founder of Snibbs footwear company and author of “Food Truck Mogul.”    Four days after evacuating from the Palisades fire, Shemtob returned to his food truck, where he was greeted by Tyler Florence, host of “The Great Food Truck Race.”   “Tyler's kind of the people's chef,” says Shemtob, who worked with Florences on the line, serving 500 people in 90 minutes that first day. “We were serving delicious food … and I just felt that good energy of taking care of others; that felt really nice.”     Because of WCK and the chef corp, setting up around Los Angeles, people are getting nourishment, but also engaging, talking and commiserating.    “We're laughing and we're crying; it's all the things that you go through when you go through a shared tragedy with others,” he says.    Daniel Shemtob shares his experience with the fires and how he was able to bounce back. On this episode of Taste Buds with Deb, host Debra Eckerling speaks with chef/restaurateur Daniel Shemtob, The Lime Truck, TLT, and Hatch Yakitori. The all-star winner of Food Network's "The Great Food Truck Race," Shemtob is also co-founder of Snibbs, the world's most comfortable non-slip shoe.    About two weeks before opening Hatch, Shemtob had a nasty fall in the kitchen.    “I herniated and slipped my L5 and L4 disc, which is pretty much the lowest part of your vertebrae,” Shemtob explains. “I'm 23, 24 years old, and I'm watching someone else open my line, which, as a chef, is a very difficult thing to do.”   Shemtob went down a rabbit hole of wondering, ‘Why isn't anyone making good footwear? Why isn't there anything that actually speaks to the worker, to the chef?'   As a result, he partnered with renowned orthopedic surgeon Jason Snibbe and entrepreneur Haik Zadoyan, his high school best friend. Snibbs footwear was born!    Outstanding service sets a restaurant apart, and that is something that has translated well to Snibbs.   “Because we're hospitality people … whenever customers need something, we go above and beyond,” he explains.   While there are nuances, whether you are developing a recipe or a great pair of shoes, you start with a product and then you reiterate, perfect, test and reiterate again.    “My two loves have always been food and fashion and now I get to exercise both muscles,” Shemtob says. “I'm just having a lot of fun doing it. “    Daniel Shemtob shares his career journey from soup to Snibbs. This cafe is one of the better places in San Diego to eat clean, sure. It's also parents' love for their daughter. This damn good salad—loaded with all kinds of greens and seeds and micronutrients in various natural forms—was all for her. Every parent knows the feeling. When your kid is sick or hurt, you will do the wildest things you never thought you'd do, uproot your life, quit jobs, take four extra jobs, do whatever it takes to help them regain their health. Parakeet Cafe is what Carol Roizen could do. When she and her husband Jonathan Goldwasser found out their then-young daughter Michelle had tumors on her spine, Carol uprooted their lives and dedicated everything she was to creating the healthiest food she could possibly get her daughter to eat. And it turned into a healthy breakfast/lunch concept that started in La Jolla, then Little Italy, and now they're about to open four more locations across Southern California (Carlsbad, Beverly Hills, Brentwood, and Newport). After serving 10 years in the Air Force, she started baking for friends and family. In 2009 she rented a commercial kitchen space to bake out of for her clients. In 2013, ALBUQUERQUE the magazine featured her cupcake bouquet and red velvet cheesecake in their mother's day guide. Her business took off and she was named a top five bakery without having a physical bakery. In 2014 she opened her storefront. ​​Q is known for putting a unique spin on classic desserts. She has a line of “comfort food cakes” that incorporates classic comfort foods into cake form. She currently has 26 flavors to include, peach cobbler, green Chile caramel apple, and the churro to name a few. Her bakery has won numerous awards and she's been featured in national magazines such as Party Style and she was in the promo commercial for Bite Club on the food network with Tyler Florence. Facebook has also featured her bakery in billboards in Albuquerque, DC and via commercials on Facebook, instagram and YouTube. Additionally, she uses her bakery to give back to the community. She hosts a drive for Distributing Dignity which provides bras with tags and feminine hygiene products to homeless women, she also works with the local NSBE jr chapter and helps to raise funds for their regional and national conferences. She has been on the Great Food Truck Race and Good Morning America. She's also used her space as a business incubator for another upcoming bakery and an all natural body products line. When you work in a kitchen and the tickets are piling up, a mistake can cause a panic. For Count and Jessica Foreman, it was the start of a 23-year-long relationship. The couple met while working at a Don Pablo restaurant. She was working in the front of the house, waiting tables, while he was a cook in the back of the house. “Her tickets were falling behind,” Count Foreman said. “Something happened and didn't bring a quesadilla,” Jessica Foreman said. “I was like ‘Give me a quesadilla,' and I kid you not he had a quesadilla right there. I don't know he probably gave me somebody else's quesadilla. So, we fell in love with a quesadilla.” From there, the couple's relationship blossomed, not just romantically, but also into a business. “I started a cleaning service a long time ago and Chef used to help me,” Jessica Foreman said. " But I also did it as a concierge. So a concierge is basically — I used to run errands, do everything and then that's when I introduced chef and I say, ‘Well, my husband cooks' and I say ‘We can do personal chef (catering).'” The couple started catering for holidays and special occasions. They also started street vending “We would actually pop up a tent — all we had was our six-foot table and a grill,” Count Foreman said. “That was that's how we started with the vending. So that's also how we got our product to the streets.” Eventually, the couple was able to open a catering kitchen. “Actually, it was a two-car garage,” Jessica Foreman said. “I kid you not.” Despite that, the couple had high hopes and determination. “Everybody that are multimillionaires started from a garage. That's a sign,” Jessica Foreman said. The catering kitchen legitimized their business, but the Foremans wanted to give themselves some more exposure. They started entering cooking competitions around Florida. “When you participate in those type of local events, it gives you a good connection to your community,” Count Foreman said. Eventually, they were able to open a brick-and-mortar restaurant, Saute Kingz, in Daytona Beach — 200 S. Martin Luther King Jr. Blvd. Now, they are getting ready to expand their business with a food truck “We're gonna be out here hoping that Orlando opens up (Its) doors — we're looking into Tampa, Jacksonville,” Jessica Foreman said. “We're really ready to travel and bring our food out.” “To be able to travel around — and that's one of the reasons why we caterers, you're always in a different place, and you're experiencing different people and it's the same thing with a food truck,” Count Foreman said. “We're going to be able to meet some different people all over Florida and that's gonna be fun.” On the latest episode of Florida Foodie, the Foremans share some of the struggles they went through while trying to build their business. I don't think I mentioned it in the episode, but lousy reviews of Netflix movies can be misleading because SO many want Netflix to fail From the Gray Man ASSHOLE words. I have a list.
