On this episode of Taste Buds with Deb, host Debra Eckerling speaks with chef and restaurateur Daniel Shemtob, whose home burned down in the Palisades fire. He is also one of many local chefs teaming with José Andrés' World Central Kitchen (WCK) to feed those displaced by the fires and first responders. 'It's been crazy, dealing with the consequences of losing your home, losing all your stuff, dealing with insurance, finding a new place to live and [having] a pregnant wife who is stressed out,” Shemtob says. “[I'm also] a business owner, [wanting] to give back to the community; I think that that's the necessary step in rebuilding.” Shemtob is the all-star winner of Food Network's “The Great Food Truck Race” with The Lime Truck, as well as the chef behind Downtown LA's Hatch Yakitori, co-founder of Snibbs footwear company and author of “Food Truck Mogul.” Four days after evacuating from the Palisades fire, Shemtob returned to his food truck, where he was greeted by Tyler Florence, host of “The Great Food Truck Race.” “Tyler's kind of the people's chef,” says Shemtob, who worked with Florences on the line, serving 500 people in 90 minutes that first day. “We were serving delicious food … and I just felt that good energy of taking care of others; that felt really nice.” Because of WCK and the chef corp, setting up around Los Angeles, people are getting nourishment, but also engaging, talking and commiserating. “We're laughing and we're crying; it's all the things that you go through when you go through a shared tragedy with others,” he says. Daniel Shemtob shares his experience with the fires and how he was able to bounce back. A friend who is a doctor suggested we do a podcast where we ask people on the flipside for some advice on how to counsel people about the trauma they've gone through the past week. Jennifer and I have been speaking to folks offstage for ten years now, and there have been many natural disasters in the past decade. In this case, both of us know people who have suffered the loss of their homes and are at a loss over what comes next. In terms of help, there are a number of organizations that can help, from Fema to local government agencies, from WCK.org with Chef Andres to local places for clothing or food. In this case, my friend Luana Anders, who passed away in 1996 gives some advice from her perspective - that there is always good that comes from tragedy. We talk about how many people in the throes of trauma aren't ready to hear advice about how to heal - and it's difficult to hear someone from the flipside say "It's just things" or "It's stuff." I like to say "It's props and costumes" - but that is little solace to someone without fire insurance having to depend on the kindness of strangers. But as Jennifer notes, she's seeing and hearing from many on the flipside about how they are concerned and trying to help their loved ones. Anyways, it's a more philosophical version of our podcast, not about asking specific people on the flipside about their journey - but asking for our guides, teachers, council members to weigh in on how to connect to them for help or advice. And as we've noted in the past, our guides and council members are never far from us - are available - through meditation, through prayer, through direct connection, through "picturing yourself in a boat on a river" and asking them to stop by and give us advice. We are never alone. We don't arrive onstage alone, and we don't leave alone. That's what the data, the research, the footage shows. Hope this helps whomever it's meant to help who is tuning in. In a special edition of the This Week in Global Development podcast recorded on the sidelines of the 79th United Nations General Assembly, chef and entrepreneur José Andrés spoke with Devex's Kate Warren to discuss his humanitarian work with World Central Kitchen and the challenges of addressing global hunger. For Andrés, having a set system for food aid doesn't work. This explains WCK's unique approach. Rather than shipping in prepackaged food aid to various humanitarian situations, WCK partners with local communities and restaurants to provide culturally relevant, cost-effective meals. This model, while seemingly obvious, is not the norm in the humanitarian sector. Andrés believes that the tendency to overcomplicate solutions often prevents effective action. "Sometimes big problems, they have very simple solutions, but [it] seems humans, we're very good at overcomplicating the problems," he said. "We don't respond [in] every place in the same way," he explained, citing examples of serving fresh fish in Gaza to avoid it going to waste, and bringing in food from European countries to support Ukraine's collapsed distribution systems despite the quantity of grain available. Andrés emphasized the importance of adapting to local conditions and empowering communities to be part of the solution. “The most important, is having boots on the ground,” he said. For Andrés, there is “nobody better than the local community to help you respond.” The risks faced by humanitarian workers are a sobering reality for Andrés, who has lost employees in Gaza and Ukraine. He expressed a deep sense of responsibility, noting that “if we were not there, this wouldn't be happening.” However, he believes that the potential to save lives outweighs the dangers, stating, “If not, those people on their own will be alone, forgotten and anyway, dying.” Andrés sees both the promise and peril of emerging technologies like artificial intelligence. While AI has the potential to revolutionize food production, distribution, and waste reduction, he also cautions against its misuse, calling for robust regulations and safeguards to prevent AI from being weaponized against civilians or humanitarian workers. Looking ahead, Andrés shares his skepticism about the world's ability to achieve the U.N. Sustainable Development Goals within the limited time frame to 2030, citing a lack of accountability and the disillusionment of young people with leadership. He emphasized the need for more support for youth to become agents of change and for real, tangible progress to be made, not just empty promises. “Doing good and promising good is not good enough. We must do a smart good,” he said.

*) Bodies found in Gaza mass graves suggest 'organ theft' by Israel Paramedics and rescue teams involved in retrieving civilian bodies from the mass graves discovered at the Nasser Medical Complex in Khan Younis have reported organ theft by Israeli military and claimed some Gaza victims were buried alive in the recently discovered graves. At least 392 bodies, including 165 unidentified individuals, were unearthed from three mass graves following the withdrawal of Israeli military from Khan Younis. Rights groups expressed concerns over the discoveries around Nasser Hospital where a mutilated body of a young girl in a surgical gown was found, suggesting she may have been buried alive, alongside another victim similarly attired. *) China warns US of 'downward spiral' in ties during Blinken visit China has urged US Secretary of State Antony Blinken to address rising disagreements or risk a "downward spiral" between the two powers as talks opened in Beijing. Blinken, paying his second visit to the rival country in less than a year, voiced hope for progress but said he would directly raise areas of difference, which are expected to include Russia, Taiwan and trade. Chinese Foreign Minister Wang Yi, receiving Blinken said relations between the world's two largest economies were "beginning to stabilise" after leaders Joe Biden and Xi Jinping met at a November summit. *) WCK founder voices frustration over Israel's explanation for killing staff The seven World Central Kitchen aid workers killed by Israeli air strikes represented the "best of humanity" who risked everything "to feed people they did not know and will never meet," Jose Andres, the celebrity chef who founded the organisation, told mourners who gathered in the US capital to honour the dead. Speaking at Washington National Cathedral, Andres said the official [Israeli] explanation of their killing is not good enough, and there was no excuse for it. "I know we all have many unanswered questions about what happened and why," Andres told mourners, demanding an investigation. *) Students in France join pro-Palestine rally, mirroring US campus protests Students in Paris have protested again after police broke up a pro-Palestine solidarity demonstration the night before at one of France's most prestigious universities. Students at Sciences Po [Paris Institute of Political Studies] accused management of calling in police to break up a pro-Palestinian protest by dozens of students gathered on a central Paris campus on Wednesday night. "The director has crossed a red line by deciding to send in the police," Ines Fontenelle, a member of the Student Union at Sciences Po, said as 150 students gathered again. *) Philippines blocks 'genetically modified rice' production over safety fears A Philippine court has blocked the commercial propagation of genetically modified golden rice after it was found unsafe for health and the environment. Philippines was the first country to approve golden rice, enriched with Vitamin A to combat childhood blindness. However, the Court in Manila revoked a biosafety permit for commercial rice production after opponents filed a challenge.

World Central Kitchen (WCK), one of the few aid groups distributing food in Gaza, has suspended its work there, along with others. The move comes on the heels of an Israel Defense Forces (IDF) strike that killed seven WCK workers after they left a warehouse in two armored cars. And, Israel's airstrikes on WCK workers and the Iranian Embassy annex in Syria are drawing criticism from the international community over a potential violation of the rules of war. We hear how the IDF selects its targets and whether its standards over civilian protections may have changed.
