Line 25cm cake tin (I use springform) with baking paper in one piece folding down the sides (as shown). In a saucepan, place the water and sugar and stir on low to medium heat until melted. Turn up the heat to medium high heat and add the blood orange slices. Once boiling, simmer for 10-15 minutes until the peels become semi translucent. Remove the orange slices with a slotted spoon and boil the syrup so that it becomes slightly thicker. Cool the oranges until they are fine to handle with hands.Step 2 - Line the sides of the prepared tin using some of the syrup brushed onto the parchment to adhere them. Queen Viv suggested first putting down the ones that curve around on the side first and then tiling them around that. You can overlap them too and I wanted the orange slices all the way to the bottom so I cut some in half and placed these on the top edges (which when overturned will become the bottom edge). These were the peskiest to stick but persevere using the syrup which gets nice and sticky once cooled. Reserve the syrup to brush over cake once baked.Step 3 - In the bowl of an electric mixer, cream butter and sugar until light and fluffy and add eggs one at a time. Stir in almond meal, flour, baking powder and yogurt and mix until just combined (do not overwork)Spoon into the prepared tin making sure not to dislodge the orange slices. Bake for 60 minutes until a skewer inserted comes out clean.Step 4 - Cool in the tin for 5-10 minutes. The longer you cool it the sturdier the cake will be. Upturn carefully onto the serving plate and remove the parchment paper. Brush the top and sides of the cake with the reserved glaze. (From Yottam Ottolenghi’s Simple) SERVES FOUR AS A STARTER OR MEZZE Ingredients*350g cherry tomatoes*3 tbsp olive oil*¾ tsp cumin seeds*½ tsp light brown sugar*3 garlic cloves, finely sliced*3 thyme sprigs*5g fresh oregano*3 sprigs left whole and the rest picked, to serve*1 lemon: finely shave the skin of ½ to get 3 strips and finely grate the other ½ to get 1 tsp zest*350g extra thick Greek- style yoghurt (such as Total), fridge-cold*1 tsp Urfa chilli flakes (or ½ tsp regular chilli flakes)*flaked sea salt and black pepper Method Preheat the oven to 200°C fan. Place the tomatoes in a mixing bowl with the olive oil, cumin seeds, sugar, garlic, thyme, oregano sprigs, lemon strips, ½ teaspoon of flaked salt and a good grind of pepper. Mix to combine, then transfer to a baking tray just large enough to fit all the tomatoes together snugly. Roast for 20 minutes, until the tomatoes are beginning to blister and the liquid is bubbling. Turn the oven to the grill setting and grill for 6–8 minutes, until the tomatoes start to blacken on top. While the tomatoes are roasting, combine the yoghurt with the grated lemon zest and ¼ teaspoon of flaked salt. Keep in the fridge until ready to serve. Once the tomatoes are ready, spread the chilled yoghurt on a platter (with a lip) or in a wide, shallow bowl, creating a dip in it with the back of a spoon. Spoon over the hot tomatoes, along with their juices, lemon skin, garlic and herbs, and finish with the picked oregano and chilli flakes. Serve at once, with some bread. Flourless Chocolate Torte with Blood Plum Compote(From Feasting: A New Take on Jewish Cooking by Amanda Ruben) IngredientsOlive oil spray for greasing6 eggs100g caster (superfine) sugar100g light brown sugar300g dairy-free dark chocolate couverture, roughly chopped2 tablespoons good-quality ground coffee1 tablespoons Dutch (unsweetened) cocoa powder, to serve Blood Plum Compote1 kg blood plums, quartered, stones removed and roughly choppedJuice of 2 oranges6 long strips of orange zest, approximately 2cm thick85g caster (superfine) sugar1 teaspoon vanilla paste Preheat the oven to 180degrees C. Grease a 25cm (10 inch) round cake tin with olive oil spray and line it with baking paper. In the bowl of a stand mixer, whisk the eggs and sugars for about 5 minutes, or until light and creamy. Melt the chocolate in a double boiler and leave to cool to room temperature, then slowly pour the melted chocolate into the egg mixture, whisking continuously. Gently fold in the coffee powder. Pour the batter into the prepared tin and place in the oven. Bake for 30minutes, until the torte has risen and feels slightly firm. Remove from the oven and leave to cool completely in the tin. While the torte is baking, make the blood plum compote. Combine the plums, orange juice and zest and sugar in a large saucepan and bring to the boil, stirring occasionally. Reduce the heat to medium and simmer, stirring from time to time, for about 15 minutes, then mix in the vanilla paste and remove from the heat. The fruit should be softened but still holding its shape. To serve, turn the torte out of its tin and transfer to a platter. Dust generously with cocoa powder and serve with the blood plum compote.

INGREDIENTS 500g of chicken livers, trimmed and cleaned 2 tbs of butter ½ of fresh chicken stock (home-made is preferable) 2 to 4 anchovy fillets (to taste) 1 tablespoon of capers Cracked black pepper Fresh parsley Fresh crostini METHOD Melt the butter in a fry pan. Add the livers and cook for 2 mins stirring with a wooden spoon. Add chicken stock and cook for another 3 mins. Remove livers and place on a chopping board with anchovies and capers Chop the whole lot together then return to the pan with a little bit of extra butter. Cook for another minute – remove from the heat. Grill the bread on both sides, then top with the liver mix and fresh chopped parsley and serve warm.

(don’t pour it all in unless its needed) Keep an eye on this to achieve a smooth dough. Once it’s smooth, take it out, place it on a floured bench and fold it with your hands until you get the right consistency. Roll it out to a height of about 4cm and cut out the scones using a scone cutter. Spray your trays with canola spray and line them with baking paper. Place scones on the tray and brush them with egg wash. Put them in a hot oven on 180 degrees and bake for 12 minutes with no fan. Let them cool and serve with double cream and triple berry jam.

For more details about Crocmedia - head to the webiste - HERE Anna's Christmas recipe: Turkey Brine - essential for a (dare she says it) moist TurkeyIngredients:8 litres of water3 cups of apple cider vinegar2 cups of brown sugar1 cup of salt3 tbsp of peppercorns5 bay leaves5 cloves garlic, finely chopped4 sprigs of Rosemary, leaves stripped off The peel of 3 oranges 1 turkeyMethod: 1. Combine all the ingredients in a large pot with 8 litres of cold water. Stir until salt and sugar dissolved. Bring it to boil, then turn off the heat and cover. 2. Allow to cool completely (the recipe takes a while so give yourself time). Then put in the fridge to chill. Place washed, uncooked Turkey in the chilled brine solution and refrigerate for 16 - 24 hours (event overnight is fine).3. When ready for Christmas Day, remove the Turkey from the Brine, put it in another pot filled with cold water for 15mins, just to remove the excess salt. 4. Pat dry with paper towl and cook accoding to your normal roasting method.Voila!
