A top bit of Lillian for an acting legend. We're delighted to host Ray Winstone at Dish for a meal fit for acting royalty. Ray, born and raised in East London, has starred on screens since his breakthrough role in Scum in 1979. Other credits from a storied career include That Summer!, Quadrophenia, Sexy Beast, The Departed and Nil By Mouth, alongside Kathy Burke and Gary Oldman.  Ray has a strong connection to Sicily, and regularly spends time at his Italian retreat, where he lives with a degree of self-sufficiency growing fruit, vegetables, nuts and even making his own olive oil. As we find out, Ray has immersed himself completely into Sicilian culture, and takes time to swap notes with Angela about its benefits and idiosyncrasies. We also hear about Ray's sweet tooth, his love of a rib of beef and slow cooked meats, and the joy of sharing sloppy pig trotters with pals.  Angela serves up a Dover sole with buttery capers & shallots, inspired by this pan-fried plaice recipe, with sides of Jersey Royals and green helga beans. There's also some of Angela's own focaccia to help mop up any delicious buttery juices. The wine flows through the episode, beginning with a bottle of Recchia Amarone della Valpolicella, with M de Minuty Côtes De Provence Rosé the suggested pairing for the meal. W/C 20th July 2026I ended up having a bit of something to eat at Pizza Pilgrims this week, a funky little chain that I was aware of, but never actually frequented. It all turned out fine, the staff were friendly and attentive and the pizza was more than acceptable.In preparation for the weekend to come I opted for the Amalfi Coast, which meant Anchovies, Capers, Olives and at least two types of cherryish tomatoes. The reason I tell you this is that it is another marker on the road to anchovy-addiction. Maybe addiction is a little strong, but certainly the same (or similar) culinary fascination that pushes me to olives, blue cheese and sushi whenever I get the chance.None of this is particularly groundbreaking, other than they are all foods that in my younger days I wouldn't have gone anywhere near.Nevertheless questions remain, how and where do these new cravings come from, and I guess more importantly what am I going to be drawn to next?Stay safe.River - Jason Isbell and the 400 UnitTherapy For Me (or TFM as I now refer to it) is a bit of an audio curiosity. President Donald Trump awarded Major James Capers, Jr. with the Medal of Honor on June 18th. Here's what Capers did to deserve it and what you can do to honor his service. GUEST: Josh Firestine

Fresh Flounder with Capers and Horopito Butter Horopito is a native shrub, which is also known as the pepper tree, and it lends a lovely spicy flavour to flounder in this dish. Serves 6-8 Ingredients 3 fresh flounder 4 tablespoons butter, softened 3 tablespoons finely chopped parsley 2 tablespoons, capers ½ teaspoon horopito 1 teaspoon sea salt 1-2 lemons, sliced thinly Method Heat the oven grill to high. Lay the flounder onto a large shallow baking tray and make a few cuts in the grey side of each of the flounder. Mix together butter, parsley, capers, horopito, and salt, and rub this into the cuts and skin. Scatter over lemon slices. Grill on high for 12-15 minutes or until butter is bubbling and fins crisp a bit. Change the oven from grill to bake at 180C, and cook for a further 7-10 minutes or until flesh is cooked through. Squeeze some of the cooked lemon over and serve at the table! Nici's note: Horopito is great for relieving stomach aches and toothaches, and it is available from various specialty or online food stores. Try this one. Kūmara hashbrown with nasturtium salad I use the purple/red kūmara for this recipe as it's less watery and crisps up beautifully. Wild nasturtium leaves and flowers make a beautiful salad to go with this hashbrown. Serves 6-8 Ingredients 1kg red kūmara 1 large onion, grated ½ cup finely chopped fresh herbs – parsley, rosemary, sage etc ½ teaspoon each sea salt and horopito (or use black pepper) ¼ cup cooking oil ½ cup sour cream Juice from one lemon 2 cups small nasturtium leaves and flowers Method Heat oven to 200C. Grate the kūmara onto a clean tea towel or chux cloth, gather the edges and wring to squeeze out the excess moisture. Transfer the kūmara to a large bowl and add in grated onion, fresh herbs, salt, and horopito, and half the cooking oil. Stir to combine. Pour the remaining oil into an ovenproof pan or dish. Tumble in the hashbrown mixture to form an even layer. Don't press down, it will settle as it cooks. Bake for 30 minutes or until crispy and cooked through. Mix sour cream and lemon juice and spoon this over the cooked hashbrown. Top with nasturtium leaves and flowers and serve in wedges. LISTEN ABOVE See omnystudio.com/listener for privacy information.

Shoulder chops make for an economical lamb meal and by slow cooking them you get tender, succulent meat every time and the lemons and capers provide a great foil for any fattiness in the lamb. Serves 4 Ingredients 4-6 lamb shoulder chops ½ cup white wine ½ cup stock or water 1 tsp dried oregano ½ tsp season salt and grind of pepper 1 lemon, skin on, thinly sliced 1 bunch baby carrots, washed 6-8 garlic cloves 2 tbsps. capers Method Preheat oven to 170C. Lay the chops flat in a roasting dish. Add wine and stock (or water). Season with oregano, salt and pepper, then scatter over lemons slices and garlic cloves. Add carrots in one corner of the dish. Cover tightly with foil and bake for one and half hours. Remove the foil, scatter over capers and cook for a further 20-30 minutes, uncovered, until the lamb is nicely browned and falling from the bones. Before serving, tilt the dish and skim the fat, leaving only the cooking juices to drizzle over meat. Serve the lamb with either mashed potatoes or pumpkin and/or boiled peas. Nici's Note: I like to cook fatty meat dishes ahead of time, then cool it down and skim the excess layer of solidified fat off before reheating and eating – it's a little bit healthier and less heavy this way. President Trump hosts a Congressional Medal of Honor ceremony for three recipients spanning Vietnam, the Easter Offensive of 1972, and Afghanistan. Marine Corps Major James Capers Jr. receives the honor he was recommended for in 1967, delayed nearly six decades after his commanding officer was killed before the paperwork could be signed. Colonel John W. Ripley is honored posthumously for single-handedly destroying a bridge to stop 30,000 North Vietnamese soldiers and 200 tanks over five straight hours under direct fire. Army Major Nicholas Dockery receives the award for a 2012 Afghanistan ambush where he rescued two teammates, administered CPR to a soldier who had stopped breathing, and signaled enemy positions from an exposed rooftop to bring in American gunships. Trump opens with a brief aside that the stock market just hit another all-time high and oil is dropping, then gets back to the business of honoring people who actually deserve medals.

Major James Capers spent years after Vietnam running ambushes behind enemy lines, surviving an assassination attempt in Hamburg, and serving as a bodyguard to President Nixon before a general sent him home after receiving intelligence that his wife and son would be killed on a Saturday morning. But the moment that defines this episode happened after his bloodiest mission — when he was loaded onto a helicopter with his wounded men and his dead dog King, flown through a storm, and placed in a hallway with the bodies. Someone walked by and said this one is dead. Then another person stopped, looked closer, and said this one is breathing. They pulled him out and brought him back to the operating room. Major James Capers ran 50 missions in Vietnam as a Force Recon Marine — combat swims in shark-infested waters, a POW rescue that earned him his first Purple Heart and Bronze Star, and a four-day battle that left him wounded with his legs broken and his dog dead. He was one of the few African Americans in Force Recon, and fought his way into Combat Swimmer school when the commanding officer tried to send him home before he even started. He spent three months at Khe Sanh facing a Chinese division, and when the helicopter finally came in on his bloodiest mission, he put every man on board and stayed on the ground alone. President Trump called him personally to invite him to the White House to receive the Medal of Honor. Jodie, who was born in West Yorkshire but now lives in London, arrives at Dish with the perfect mindset; hungry and up for trying anything. So, a menu full of surprises it is, as we sit down to chat about Jodie's latest project: Dear England. The TV series is an adaptation of the hugely successful play that looks at Gareth Southgate's time as England manager.  We start things with a Hugo spritz, while learning about Jodie's favourite cuisines and the restaurant trip that brought her to tears... in a good way. Angela then serves a bowl of tagliatelle with asparagus, peas, shallots & capers, a Diana Henry recipe that Jodie could cook at home... but probably won't. Flounder with burnt butter, capers and parsley Cook time: 10 minutes Prep time: 10 minutes Serves: 6 12 flounder fillets 1 cup seasoned plain flour with salt and white pepper 4 tbsp sunflower oil 100 gm unsalted butter, cut into small cubes 2 lemons 4 tbsp capers 1/2 cup Italian parsley, chopped roughly Flaky salt and cracked pepper 1 dried chilli, crushed Heat two cast-iron pans over a low heat, before adding in the sunflower oil. Run the flounder fillets through the seasoned flour. Carefully place into the heated pan and cook until lightly coloured on one side before turning. Once you have flipped the fish, divide the butter into each pan and continue to cook, spooning the butter over the fish. This is a very fast process as you don't want to over cook the thin fillet. Once cooked, carefully remove the fish onto a preheated platter. Return the pan back to the heat and turn the heat up until the butter is becomes a rich golden brown. Add in the capers, parsley and chilli. Turn the pan off before squeezing the juice of the lemon to stop the butter from over cooking. Season with salt and a crack of pepper. Send us a textThis week on the podcast, Heather tackles a recipe for ratatouille, the classic French vegetable casserole. The recipe she uses is from none other than Julia Child, and if you've read one of her recipes, you know that can sometimes be a challenge in itself. Let's go! Ratatouille is usually made with eggplant, squash, tomatoes, onion and peppers. It's obviously going to be better when these are in season, but we had it mid-winter and it was still delicious. You can even use canned tomatoes if that's your best option. Heather discovers the key to this recipe is cooking each of the veggies separately (well, the eggplant and squash together, and the onions and peppers together). It's also important to cut them into similar sizes. Oh, and salt the eggplant and squash in advance so they sweat out extra moisture and keep their structure. In the end, following Julia's long-winded instructions was well worth it. We'd tried ratatouille before that was all baked together at the same time, and it wasn't nearly as satisfying as this method of cooking each thing separately and then assembling it at the end. Major James Capers Jr. is a distinguished Marine Corps veteran renowned for his groundbreaking contributions to U.S. military special operations.
