A sip of whiskey can "pick up" the capsaicin, providing temporary relief before redistributing the heat, which can lead to an "explosion of flavor" as it releases aromatic oils from the spices.Flavor Amplification: Higher alcohol content (ABV) acts as a flavor carrier, intensifying the perception of heat and making the spicy sensation last longer on the palate. The "Burn" Synergy: Both chili and whiskey provide a "warming" sensation. The heat from the peppers and the "burn" from the alcohol can create a combined sensory experience that many find satisfying.Pairing StrategiesBourbon for Balance: The natural sweetness, caramel, and vanilla notes in bourbon help temper the heat of a spicy chili, acting as a counterweight to the spice.Rye for Intensity: Rye whiskey often has its own peppery, spicy profile, which can be used to "double down" on the heat of a very spicy chili.Scotch for Smokiness: Peated Scotches have a smoky, earthy character that pairs well with the charred flavors of roasted peppers or smoked meats often found in chili.Irish Whiskey for Smoothness: The smoothness of Irish whiskey makes it an excellent partner for milder, bean-forward, or even creamy white chilies.Cooking BenefitsMany people also add whiskey directly to their chili recipes.Deglazing: Using whiskey to deglaze the pan releases caramelized sugars from the meat and vegetables, adding depth and preventing burnt flavors.Finishing Touch: Adding a splash of whiskey near the end of cooking provides a "spark and a lift," maintaining the spirit's character and adding unique depth to the stew. Here is a robust recipe for Bourbon Beef Chili that uses whiskey to deglaze the pan and add deep, complex flavor.Bourbon Beef ChiliPrep time: 15 mins | Cook time: ~1.5 to 2 hoursServings: 6–8IngredientsMeat: 1.5 lbs ground beef (80/20) and 1/2 lb ground pork or Italian sausage.Aromatics: 1 large onion (diced), 4 cloves garlic (minced), 1 bell pepper, and 1–2 jalapeños (seeded and diced).Liquid: 1/2 cup Bourbon (e.g., Buffalo Trace or Maker's Mark), 1 cup beef broth, and 12 oz dark beer (optional).Base: 28 oz crushed tomatoes, 2 tbsp tomato paste, and 2 cans (15 oz) kidney or pinto beans (rinsed).Spices: 3 tbsp chili powder, 1 tbsp cumin, 1 tsp smoked paprika, 1 tsp oregano, and 1–2 tbsp brown sugar. The "Secret" Boosters: 1 tbsp unsweetened cocoa powder and 1 tsp Worcestershire sauce..

Today we had the distinct pleasure of hosting Mark Lashier, Chairman and CEO of Phillips 66. Mark joined Phillips 66 as President and COO in 2021 and assumed the CEO role in July 2022. Prior to that, he served as the President and CEO of Chevron Phillips Chemical Company (CPChem), where he held several senior leadership roles, including Executive Vice President of Olefins and Polyolefins, Senior Vice President of Specialties, Aromatics and Styrenics, and Vice President of Corporate Planning and Development. Mark began his career at Phillips Petroleum and holds a doctorate in Chemical Engineering. Beyond his leadership at Phillips 66, he serves on the Executive Committee of the American Petroleum Institute and is a Board Member of the Greater Houston Partnership and several other nonprofit organizations. Mike, Arjun and I were thrilled to host Mark for this Special Edition to discuss Phillips 66's recent performance, his strategic vision for the company, insights into today's energy landscape, and the ongoing debate with Elliott Management. In our discussion, Mark shares background on his career and transition to CEO, his early priority of addressing improvements in Phillip 66's refining segment, and the cultural transformation to re-instill pride and competitiveness amongst refiners, which involved engaging employees at all levels and investing in strategic capital projects to fix operational bottlenecks and improve reliability and earnings. We discuss Bob Pease's addition to the board, who was originally nominated through Elliott's engagement, and how he shifted from being skeptical to supportive of the company's strategy, execution, and focus on shareholder returns. We explore the history and structure of CPChem, the benefits of Phillips 66's integrated business model during times of volatility and potential downturns, and the company's industry-leading safety performance, which ties safety directly to employee compensation. Mark shares his perspective on why maintaining a diversified portfolio across refining, midstream, and chemicals is strategically and financially advantageous, as well as the optimization and regulatory advantages of an integrated structure. We touch on Phillips 66's strong ROCE versus peers, activist pressure to sell midstream assets for a higher multiple, growth across their midstream business, and broader global trends toward integration rather than asset breakups. Mark highlights the company's refining performance improvement, the rationale behind merging PSXP and DCP assets, efforts to attract generalist investors back to the energy sector by demonstrating consistent earnings, Phillips 66's philosophy of keeping assets “for sale every day” to ensure focus on shareholder value, and much more. We greatly appreciate Mark for sharing his candid insights into a complex and highly public debate. As you will hear, we reference a few items in the discussion. Phillip 66's Investor Relations presentation entitled “Delivering Value & Demonstrating Commitment,” released Monday, April 28, is linked here. Veriten's COBT episode featuring Doug Terreson is linked here. Thanks to Mark for joining us for an insightful discussion and thanks to you all for your friendship and support!

Today we had the pleasure of hosting Lynn Calder, CEO of INEOS Automotive, for an engaging discussion on vehicles, decarbonization, and the future of transportation. As you may have heard, INEOS Automotive has just launched a new vehicle called the Grenadier. Lynn is a fellow energy enthusiast and brings a fascinating background, having previously served at Lime Rock Partners and Talisman before joining INEOS and leading their Shale (CEO), Phenol (Commercial Director), and Composites (CEO) businesses. Lynn was appointed as CEO of INEOS Automotive in December 2022 and has taken on the challenge of building a new automotive company from the ground up. We were delighted to visit with Lynn and greatly appreciated hearing her unique perspectives about the automotive industry and so many of the energy and regulatory issues it touches. One overarching topic that we've noticed, and that emerged in our discussion with Lynn, is how interesting large private companies are and their unique approach to decision-making. INEOS is a great example as a global chemical company with 36 diverse businesses including Hydrogen, Aromatics, Energy, Trading & Shipping, Hygienics, and Solvents among others. As you'll hear in the discussion, Lynn feels she can make decisions quickly and that her team has the freedom to think outside of the box. As we are all car people at heart, we were already fascinated by the challenges of starting a car company but the more we talked to her, the more we thought that what Lynn and INEOS Automotive are doing is a microcosm for what's going on in the world. She had to work with 45 different governments to get approved for sale, is exposed to all the dialogue around EVs, EV adoption, hybrids, and automotive tariffs, as well as where governments want to take the world vs. where consumers want to go. Lynn also makes interesting comments about being an industrial company in Europe right now, the decisions that are being made in Europe, and how they could affect industry at large. In our discussion we also explore INEOS Automotive's vehicle lineup and what makes the Grenadier unique, their sales model and market strategy across the US, Europe, Africa and Asia, supplier relationships, plans for future growth, government policies and attitudes, potential shifts in powertrain strategies in the future, and the advantage of INEOS as an energy and chemical producer. Lynn shares her perspective on Europe's competitiveness in global markets, China's advancements in EV technology and its impact on trade regulations and EV adoption, the role of entrepreneurship in driving economic growth and much more. It was a fantastic discussion and we are excited to follow up with Lynn as INEOS Automotive continues to grow. Mike Bradley kicked us off by highlighting that over the last week or so, markets seem to be taking on a different tone, one of economic stagnation/slowdown. He noted the 10-year bond yield has recently sunk to ~4.3%, mostly due to a handful of weaker-than-expected economic reports, including today's JOLTS Job Opening report, which are refueling speculation the FED will cut interest rates this year. Over the last five trading days, WTI price has plunged to ~$73/bbl and broken through “key” technical trading support levels. This week's plunge in crude price was mostly related to disappointing/confusing news of a potential gradual unwinding of OPEC oil production cuts at a time when global demand growth looks to be slowing. Energy equities are holding up much better in this current downdraft than crude oil. He ended by noting the substantial year-to-date performance gap between EV & ICE auto companies as ICE companies seem to be moving increasingly towards hybrids. Todd Scruggs added to Mike's comments with data on US and European automotive sales, highlighting the predominance of SUVs and trucks in the US versus a much lower SUV to EV ratio in Europe, indicating a po

In this episode, Kenneth sits down with the 2015 World Barista Champion Sasa Sestic to talk about his innovative Paragon brewer. He explains what inspired him to develop this brewing method and why it makes coffee taste better. KEY TAKEAWAYS Most of what we taste is related to what we smell. The more aromas there are, the more complex the taste is. It is possible to enhance certain aroma compounds so that the coffee tastes different. The hotter you brew the more aromas you access, but the more of it evaporates in the steam. Paragon captures these volatile aromas, keeping them in your coffee. BEST MOMENTS‘80 to 90% of what we taste comes from the nose. ´ ‘Sometimes we need 2 or 3 even 4 volatile compounds to give us a specific tasting note.' Smudging with Sage, burning Frankincense in a censer, lighting incense to visualize and symbolize your thoughts rising to the heavens through smoke. These are only some of the botanicals and ways aromatics help us connect with the divine. What is the divine, the sacred? There may be debate about that, but I think we can all agree it is something that is bigger than us that also includes us. Incorporating aromatic botanicals--not synthetic fragrances--such as essential oils, hydrosols and raw plant material help us connect and commune with the present and sacred time. This episode shares thoughts on why and how essential oils are powerful chemo-sensorial connectors. Amy touches on distillation, quintessence, the multivalent qualities of essential oils and how they connect mind-body-spirit-soul via the unseen (i.e., tiny, volatile lipid loving molecules). Further into the episode, explore how aromatic botanicals span and connect continents, cultures, ancestors and time. Even deeper is the sacredness of sex and its connection to scent reception and communication through DNA. Aromatics are molecules of communication. As I'm writing this it occurred how they are also yin and yang at play: penetration and reception. The airborne scent molecules float around until they dock on nerve endings and receptor sites. Smell, scent molecules, help attune with deep knowing. Aromatic botanicals are keys to help us connect with the divine. I hope you enjoy the episode. i traveled into the Dry Creek Valley recently, and visited with Mr. Don Wallace. Don and I talked about many of his great wines that are produced by Dry Creek Vineyard. In this feature we will check out the tasting notes and history from their great website, and have completed an audio feature which you can listen to with the link below. We will start with a look at the great history of this Dry Creek Valley winery. The story of Dry Creek Vineyard and the Stare Wallace family isn't one of fairy tales. There is no corporate mogul writing checks every month, or a day job in a lucrative industry to fund the winery. Our story is this: one dedicated family working day and night for five decades to turn what many considered an idealistic pipedream, into a reality that revolutionized the California wine industry. Agriculture is a natural way of life for Don Wallace, the product of four generations of a hard-working California farming family. Don's interest in machinery took him away from the farm for fifteen years while he pursued a career in international construction. While he was on a project in Sonoma County in 1980, Don met Dry Creek Vineyard founder David Stare's daughter, Kim Stare, whom he married in 1982. With his father-in-law and wife in the wine business, Don's next move was a stint among the vines at Murphy-Goode Estate Winery to “test drive” his new family's industry. After one year, Don accepted his father-in-law's offer to manage ranch operations at Dry Creek Vineyard in 1990. Don's sphere of influence gradually grew to encompass every aspect of the business, including winery operations and sales, as well as vineyard development and acquisitions. Don took on the role of General Manager in 1999 and in April 2006, he was appointed President of Dry Creek Vineyard. In 2012, Don decided to take a well deserved sabbatical to pursue some outside interests as well as an extended list of honey do's at home! more later but now our first wine feature!Tthe 2021 Dry Creek Chenin Blanc. We are proud to have produced Dry Chenin Blanc each and every year since our family winery was founded in 1972. Extremely versatile and food friendly, it is the perfect aperitif and one of our most beloved wines. Fermented in 100% stainless steel barrels, this beautiful wine is wonderfully bright and consistent vintage after vintage. At first swirl, aromatics of honeydew, watermelon and mango spring forward from the glass with floral notes of jasmine and orange blossom. On the palate, the wine has refreshing flavors of peach, Meyer lemon and cucumber with hints of geranium, white tea and white pepper. The mouthfeel is soft but inviting, with a voluptuous texture. This classic, Loire Valley-style wine is excellent when paired with fresh oysters, seafood, or just about anything! We have two wines in this great feature. The second wine is The 2022 Fume Blanc Sonoma County. Since 1972, we have produced Fumé Blanc — a wine at the heart and soul of our family winery. Modeled after the classic wines from the Loire Valley in France, our stainless steel fermented Fumé Blanc is crisp, balanced and immediately drinkable. Our Fumé Blanc emanates the classic Dry Creek Vineyard “house” style of Sauvignon Blanc. Aromatics of lemon, lime and grapefruit leap forward from the glass with both fruit and floral nuances of nectarine, peach, jasmine and orange blossom. On the palate, the wine is intense and bright with passionfruit, tangerine and cucumber. Underlying minerality and hints of lemongrass, parsley and mango contribute to this wine's refreshing, crisp finish. In the next few weeks we will be joined by local chefs and pair these wines with amazing dishes from great Sonoma County restaurants. Tonight Don Wallace and I will be meeting at Valette Healdsburg for the food and wine pairings of a lifetime, with chef Dustin Valette, and GM Harry Byran. We will add those features asap. now please join us by clicking on the link below, and we will pour you a glass of each of these great wines. WE saved you a seat! Cheers !! Pengerang Energy Complex or (PEC) is developing one of the largest and most competitive Aromatics complexes in the world, to be strategically located within the Pengerang Integrated Petroleum Complex in Johor, Malaysia. Completion is only slated for 2026 where it aims to cater to the growing fuel-related commodities across the Asian market. It is forecasting an export turnover of US$5bn. But is this a realistic target with more competition on the horizon and if a recession in 2023 lasts longer than expected. We speak to its CEO, Alywn Boden for answers.

Join Clare Licher of PhiBee Aromatics to revel in the passion, practice, expertise and distillation-know-how of native plants of the Southwestern United States. This episode is a deep reminder of the time, patience and great care it takes to wild harvest and distill plants, and how this expansive practice is a continual reminder how "plants make the world bigger than us", much bigger. Look forward to hearing Clare expound upon the following topics during this episode: The implications and responsibility of legally wildcrafting plant material. Appreciating a plant and its oil for who and what it is Going beyond "liking" and disliking a plant based on its inherent aromas (listen to Clare's experiences with Arizona Juniper!!!! Wow!) The dedication to time, and practice it takes, to get to know a plant and the distillation process. The power of sharing distillation techniques across borders, highlighting Clare's work in Iceland and continued work with organizations in Haiti/ Teaching and supporting people helps improve quality of life and humble us knowing that working with plant medicine show how the world is so much bigger than an individual/us. Honing your skills: The importance of taking distillation notes and aging essential oils We hope you walk away from this episode feeling elevated, revived, elucidated, and dare I suggest, humbled. Joan is a level two NAHA Certified Aromatherapist with decades of experience working with animals and plant medicine combined with massage. In this episode, Joan shares some of her colorful field experiences and encourages safety awareness. She specializes in work with horses enabling self-medicative behavior by offering plant extracts that contain similar constituents to those found in their evolutionary history. Joan Sorita, born in Los Angeles, California, in a Salvation Army Hospital, is a lover of animals and music. She worked as a vet tech, riding instructor and managed Olivia Newton John's farm. She moved to the High Desert in Southern California to open a re-hab and riding facility. There she became committed to herbs, therapies, aromatics, and animals' recovery emotionally and physically and studied with the elders in the horse world that were doing horse massage. There was not much in this field at the time when she started this work. Joan was the Animal Aromatic Science Course director at Northwest School of Animal Massage in 2017. She co-founded NWSAM in 2001, adding her 25 years of experience in the equine performance world with bodywork and aromatics. Joan has studied with other pioneers in Animal Self-Medication; Caroline Ingraham, Ingrid Martin, Jade Shutes, Kelly Holland Azzaro, Catherine Bird, Nayana Morag. Along with her husband Robert, she owns a farm in Montesano, Wa. They grow and harvest some of the ingredients for their products under the name Therapy Corner Store. Her daughter Casey Sorita now runs the store so that Joan can concentrate on making her aromatic animal products and teach ethics and safety with animals and aromatics. Joan seeks out like-minded thinkers in this field so she can spread the word.
