A common problem in our homes, especially in the cooler areas of Aotearoa: gazillions of flies settling into your spare room, on the ceiling of a quiet place, or in the roof cavity. The flies arrive at your place in autumn and find a good spot to hibernate – just like they do in their countries of origin: Sweden, Finland, Netherlands, Germany, the UK, the USA, and Canada. Pollenia pediculata is the cluster fly species we discovered on the North Shore for the first time in 1984. It may have arrived in some containerised luggage or cargo (we were not sure when we found it), it's now well-spread, often in the cooler spots of our country. It is quite a gorgeous fly species, with golden hairs on its back – easy to spot as it often sits quietly. Flies have just one pair of wings whereas other insect orders usually have two pairs of wings in the adult stage. The second pair of wings is turned into small “halteres”: modified hind wings that provides stability when in flight. Flies are real acrobats: they can fly up-side-down onto the ceiling Our cluster fly lives a peculiar life as a parasite of earthworms. The female fly lays eggs in dense grass habitats (paddocks and lawns) and often near or in earthworm tunnels. The larvae (aka "maggots") hatch, find themselves some way of getting into the soil (gaps around plants or through established earthworm tunnels) and gain entry into the body of an earthworm. Inside the worm it feeds on the internal body fluids and organs. Gross? Yep! But these flies do minimal damage to earthworm population densities. Most animals on the planet have "parasites" that can cause damage (humans have parasites too). In spring and summer, I often see them pollinating flowers (the name “Pollenia” is a nice indicator!). When temperatures get cooler in autumn, the cluster flies usually look for a suitable hibernation place: holes in the ground, under bark of trees, under mulch layers, etc. But if there's a nice warm human house nearby, they will try to gain entry – by the thousands! They crawl through small holes (ill-fitting window frames, etc) and mark their entry by leaving a residue of pheromone scent – this means that other Pollenia flies simply follow the trail and join the others. The pheromone is rather sticky and smells somewhat of Buckwheat honey (hence the name buckwheat fly in the USA). Cluster flies are not of medicinal importance (like some blowflies) but are hard to remove due to their messy pheromones. Best “prevention” is to ensure there are no entrance holes around the home. A very residual aerosol can (available from SafeWorx – safety company) sprayed at the flies' entry and exit holes, will stop them from getting inside. This is a simple, foolproof way, possibly the best way, to cook salmon. One of the things that I get asked a lot when people find out that I do this show is 'well, why are queer spaces important? bars and clubs close all the time, why should we care about them just because they're queer?'. And there are lots of answers to that, but the one that I keep coming back to is that they aren't just businesses - they're community hubs, they're late-night befriending services, and they are places where people get to explore and push themselves. I got to talk to Edward Cowley, who you may know by his drag alter-ego Buckwheat, about The Staircase, a legendary space (or, spaces, rather, as it moved to a few different venues over its time) in Auckland where Edward first started going when he was underage and before homosexuality was even legal in the country. It was here that he first found his tribe, started drag, and shook his thing on the dancefloor. In fact, he has such an affinity to the space that he even went on to be a co-owner - and, as co-owner he made sure that the space was more than just a business, but a community hub. Sue Becker reintroduces a little seed that we will want to include in our whole grains and whole foods menu - Buckwheat. Buckwheat can be used in similar ways to grains. It can be milled into flour, boiled whole, and even enjoyed raw to add a little crunch to salads or granola. In addition, Buckwheat flour is also an excellent choice for making pancakes, muffins, and crepes. Crepes made with buckwheat flour are less delicate, and this allows them to work very well when used as wraps and tortillas. Our guest is Shuichi Kotani, a New York-based master soba chef with over 25 years of experience. After working at prestigious restaurants in Tokyo, including Gonpachi and the Michelin-starred Edo Soba Hosokawa, he came to New York in 2008 and successfully served as the executive chef at Soba Totto in Manhattan. Go ahead and grab the ingredients below (Julia starts listing them at :47) before starting the episode.Gluten-Free Buckwheat Groat PancakesServes 5 to 71 1/2 cups (270 grams) hulled buckwheat groats1 teaspoon apple cider vinegarDried or dehydrated blueberries (optional)2 dates, pitted1/2 cup (120 milliliters) plain full-fat yogurt1/2 cup (120 milliliters) milk, buttermilk, or almond milk4 whole large eggs2 large egg whites2 ripe bananas1 teaspoon kosher salt1/2 teaspoon almond extract2 teaspoons baking powder1/2 teaspoon baking sodaGhee or coconut oil, for cookingDo aheadAdd the buckwheat groats to a bowl with the apple cider vinegar and cover with 3 inches (7.5cm) of water. Let stand for 8 hours of overnight. In the morning, drain and rinse until the water runs clear.Make the pancakesIf using dried blueberries, soak them in warm water in a small dish to rehydrate for 10 minutes. Remove them from the water and squeeze them dry just before cooking.Preheat the oven to 200°F (90°C) and place a baking sheet inside to keep your pancakes warm.If your dates are leathery and tough, add them to a small dish and cover with hot water. Set aside for 5 minutes to soften and then discard the water (or add it to your iced tea as a natural sweetener). In a high-speed blender, combine the soaked and rinsed buckwheat, the yogurt, milk, eggs, egg whites, bananas, drained dates, salt, and almond extract and blend until smooth. Add the baking powder and the baking soda and pulse just to combine.Place a 10-inch (25 cm) cast-iron skillet over medium heat. When the pan is hot, add the ghee or coconut oil and swirl to coat the pan. Pour a ladle full of batter into the pan and reduce the heat to medium. Cook for 2 to 3 minutes, until bubbles form on the surface of the pancake and the batter begins to dry out (if using blueberries, add them to the pancake now). Flip the pancake and cook on the second side until golden brown. Adjust the heat as necessary and use additional ghee as needed to keep your pancakes cooking evenly.
