Toronto's pop-punk powerhouse The Mendozaz are set to unleash their most ambitious and hilarious work to date, the eight-song concept EP The Completely Fictional History of This Great Nation of Canada, out November 3 on Cartridge Heart. Fronted by guitarist-vocalist Jonny alongside Michael on vocals and bass and Dic on drums, The Mendozaz have carved their name into Toronto's punk scene with relentless touring, wild live shows, and anthems built for gang shouts, beer spills, and grinning through the chaos. They've long been known for wrapping sharp hooks in self-aware humor, but on this record they go bigger, faster, and louder, with a clear mission to turn every basement, bar, and festival stage into a frenzy. The EP is bookended by a pair of songs so preposterously profane that reinforcements were needed. Members of Joan Smith and the Jane Does and The Meringues were brought in to provide extra fuel for the f-bombs. All songs were written by The Mendozaz and recorded between This Place Needs A Name and Arc Recording Studio by Matt Gauthier (Handheld, Wasting Time), who also handled mixing and mastering. The result captures the reckless charm of their live show while pushing their storytelling and arrangements into sharper, stranger, and funnier territory. The accompanying video-single “A Piercing Shriek of Death” sets the tone perfectly. “This was the first song written for this record,” says Jonny. “It's based on a very-true Canadian legend that we made up about an expedition of ice fishers being eaten alive by a school of great white sharks near Hudson Bay. I had an old recording of an instrumental jam we did six or seven years ago that I really liked. I channeled my inner Serj and came up with something unlike anything we've ever done. When recording the demo our engineer almost fell out of his chair laughing during the blood curdling scream. He's okay (I think). I needed to be authentic while channeling the plight of the victims of this totally-legit horrible tragedy. Meringues 3 egg whites 175g castor sugar 1 teaspoon white wine vinegar 1 teaspoon cornflour Set the oven to 120oc and line a baking tray with parchment paper.Whisk the egg whites in a clean bowl to stiff peaks. Slowly add the sugar, whisking all the time. Whisk in the vinegar and cornflour. Spoon into a piping bag and pipe circles onto the tray and then pipe up on each to make a nest. Bake for about an hour or until set. Turn off the oven and allow the meringues to cool in the oven. Crushed berry and coconut cream 100g frozen mixed berries 35g castor sugar 200ml double cream 25g desiccated coconut toasted in a dry pan until goldenSprinkle the sugar over the berries and leave until defrosted. Crush with a fork. Whip the cream to stiff peaks and fold in the berries and all but a teaspoon of the coconut. Lime Curd Zest and juice of 3 limes 3 egg yolks 100g castor sugar 25g cornflour mixed with 35ml water 75g butter, cut into dice Place the lime zest and juice in a pan and bring to the boil. Whisk the egg yolks with the sugar and cornflour mixture then add to the lime mixture. Whisk until smooth and thick – be careful the eggs don't curdle. Remove from heat and add the butter a little at a time whisking until melted between each increment. Cover with cling, cool and chill/ To assemble – Remaining teaspoon of coconut Zest of 1 lime Spoon the crushed berry cream into the meringues and pipe some of the lime curd around ( the rest will keep in a clean jar in the fridge for a couple of weeks) Sprinkle over the coconut and lime zest.

On this episode of Taste Buds with Deb, host Debra Eckerling speaks with food and lifestyle writer Ariel Kanter, whose Substack is called Rel's Recs, and who fell in love with food by accident. Growing up as a ballerina, food was not part of Kanter's lifestyle. Then in high school, she discovered the original Japanese version of “Iron Chef” on the Food Network. Kanter loved the experimentation and all of the wild ingredients. Mostly, though, it was the warmth, something Kanter was missing in ballet. “The ballet studio is beautiful, but I always felt like it was cold, whereas in the kitchen, there is warmth, fulfillment, experimentation,” Kanter explains. “I think that's why I love cooking so much now, and writing about it.” After college at NYU, and working in an editorial department, Kanter attended the Institute of Culinary Education. Armed with a background in food science and food preparation, she dove deep into writing about food. She has written for “The New York Times,” “Vanity Fair,” “InStyle,” “Serious Eats,” and more. There were not a lot of food moments in Kanter's youth. However, there was one exception: the Kanter family meringues. “We had a family recipe passed down on my mother's side,” she explains. “These were the cookie that we made for every birthday, every Jewish holiday.” Meringues are magical, fluffy and fun. Meringues 4 egg whites 225g castor sugar 1 teaspoon white wine vinegar 1 teaspoon cornflour Set oven to 120oc and line a large baking tray with parchment paper. Whisk the eggs in a clean bowl to stiff peaks and fold the sugar in slowly, whisking all the time. Add the vinegar and cornflour and whisk for a minute. Spoon into a piping bag and pipe mounds onto the parchment. Take the back of a teaspoon and make a dent in the middle. Bake for about an hour or until set. Turn off the oven, open the door ajar and allow the meringues to cool. White chocolate cream 500ml double cream 175g white chocolate chopped Take 125ml of the cream and bring to a simmer. Add the white chocolate and stir until melted. Cool for 20 minutes. Whisk the rest of the cream and fold in the cold white chocolate mixture.Gooseberry compote 350g gooseberries, topped and tailed 75g sugar 2 tablespoons elderflower cordialPlace the gooseberries, sugar and cordial in a pan and cook gently until gooseberries are just cooked. Remove gooseberries and boil the remaining liquid to a thick syrup and add back to the gooseberries. Cool.Spoon some gooseberry compote into the dents in the meringue and then pipe or scoop some cream on top. Serve.

Hi Bakers, I am sorry it took so long to get you this episode. These cookies are worth the wait! If you love very sweet treats with a cloud-like exterior and a chewy chocolate chip center these are your cookies. Meringues made at home are nothing like the kind you buy because they taste a lot better and have a totally different texture. With some helpful tips and tricks, these are easy to bake with delicious results. I got a bit adventurous and made half the recipe with chocolate chips but the other half with purple sweet potato powder…stay tuned to the end to see how that turned out. I've included the full recipe and the two half versions I made on the episode below so you can try either or both of these cookies. Have fun with this unusual and memorable bake ~Carolyn Whole Recipe Meringue Chocolate Chip Cookie 6 large egg whites 3/8 teaspoon salt 3/8 teaspoon cream of tartar 1 teaspoon vanilla extract 2 1/4 cup granulated sugar 1 cup mini semi-sweet chocolate chips Preheat the oven to 300F. Line a baking sheet with parchment paper or a brown paper bag cut to fit the baking sheet. In a large bowl use a hand mixer, to beat the egg whites, salt, vanilla, and cream of tartar until soft peaks form. Gradually add the sugar while beating until the batter is pure white and marshmallow cream consistency. Stir in chocolate chips. Drop by spoonfuls onto a lined cookie sheet. Swirl a design on top if desired. Bake for about 30-35 minutes or until cookies are browned and have a firm crust on the outside. Let cool for five minutes and peel off paper. Eat within a day. Half Recipe Purple Sweet Potato Meringue Cookie 3 large egg whites heaping 1/8 teaspoon salt heaping 1/8 teaspoon cream of tartar 1/2 cup + 2 tablespoons granulated sugar 1 tablespoon purple sweet potato powder, freeze-dried 1/2 cup granulated sugar Preheat the oven to 300F. Line a baking sheet with parchment paper or a brown paper bag cut to fit the baking sheet. In a large bowl use a hand mixer, to beat the egg whites, salt, vanilla, and cream of tartar until soft peaks form. Gradually add the sugar while beating until the batter is pure white and marshmallow cream consistency. Whisk the sweet potato powder into 1/2 cup of sugar. Gradually add sugar with potato powder. Drop by spoonfuls onto a lined cookie sheet. Swirl a design on top if desired. Bake for about 35-40 minutes or until cookies are browned and have a firm crust on the outside. Let cool for five minutes and peel off the paper. Eat within a day. Half Recipe Chocolate Chip Meringue Cookie 3 large egg whites heaping 1/8 teaspoon salt heaping 1/8 teaspoon cream of tartar 1 cup + 2 tablespoon granulated sugar 1 cup mini semi-sweet chocolate chips Preheat the oven to 300F. Trees. They shade us, they clean the air, they provide food and they look pretty. For as long as there have been humans we have been writing poetry, stories, myths and more all centred on trees. In the era of a changing climate, trees have taken on new importance as an easy way to absorb greenhouse gases and mitigate the impacts of climate change. Kingston has a department within our Public Works focused on trees and in this episode, Marty Mayberry joins us to tell us more about what forestry does and how the city is working to expand the tree canopy. Aujourd'hui, nous découvrons un mercredi technique tout meringué. On va parler meringue en général, et plus précisément de la différence entre l'italienne ou la française qui est un terme qu'on entend souvent mais qui n'est pas toujours acquis. La meringue est une préparation à base de blanc d'oeufs fouèttés avec du sucre. Vous fouettez pendant un temps plus ou moins long et vous obtenez des blancs en neige, vous fouettez encore et vous avez une meringue. La chimie derrière tout ça est que le blanc d'oeuf contient des protéines tensio-actives qui vont permettre de lier l'eau et l'air entre eux. On pourrait, en le disant vite, parler d'une émulsion aérienne. Imaginez des petites molécules dont un côté est attiré par l'eau, donc hydrophile et l'autre côté qui la repousse, hydrophobe. Ce côté a aussi tendance à être attiré par le gras. C'est l'action de fouetter qui va emprisonner l'air dans l'eau et former une mousse, les blancs en neige. En fait, les petites molécules dont je vous parlais vont retenir l'eau du côté hydrophile, logique et le côté hydrophobe va retenir l'air. Plus on fouette, plus les bulles d'air sont divisées, deviennent plus petites donnant une mousse plus ferme, j'ai nommé, la meringue. Avant qu'on aborde les différences géographiques de la meringue, si il reste un peu de jaune dans le blanc quand vous voulez monter votre meringue, ça va capoter. Car en effet, le jaune d'oeuf contient du gras et le côté hydrophobe des molécules préférera retenir le gras plutot que l'air et votre meringue, ou vos blancs en neige monteront très mal, voire pas du tout. Italienne, Française, voire suisse, autant de dénominations ridicules que pittoresques. Ce qui les différencie et le sucre utilisé. Blanc d'oeufs et sucre en poudre donnent une meringue française. Sans doute la plus facile à travailler. On fouette jusqu'à obtention d'une pommade compacte qui tient presque toute seule. Ensuite, on forme et hop au four à 80-90 degrés celsius. Typiquement utilisé pour les pavlova, les vacherins ou les petites meringues en forme de goutte d'eau à manger directement. La meringue suisse utilise du sucre glace, du sucre impalpable et est fouettée au bain marie avant de cuire au four. Cette meringue est plus résistante et est typiquement utilisée pour les décorations de bûche de noël. Et enfin, la meringue italienne, la plus raffinée mais la plus difficile est faites à partir d'un fouettage de blanc d'oeuf et d'un sirop de sucre à 120 degrés celsius. La température du sirop est suffisante et elle ne doit pas cuire par la suite. On la retrouve sur la tarte au citron meringuée, l'omelette norvégienne mais aussi les macarons ou encore la crème chiboust, on se rappelle. Kicking things off with our baking plans! Mincemeat tartlets, pop tarts, Christmas cookies, fudge, and blueberry muffins... need we say more? Well, we will. Little article on Matt leaving... some are happy, we are not. Then we get into a brand new era of Bake Off - the AMERICAN Bake Off! Paul and Prue are the constants here, two NEW American hosts. Actress Ellie Kemper (The Office, Unbreakable Kimmy Schmidt) and Zach Cherry (of Apple TV's Severance) are your new hosts for this show that will be launching its first full season next year on the ROKU channel (which is free by the way!). We give our thoughts on the show overall. Does it hold up to traditional Bake Off? We also give our assessment of the hosts in general - we've seen a lot of hosts in our time so we have thoughts! Then we look at our slate of American celebrity guests: Chloe Fineman (SNL), D'Arcy Carden (The Good Place), Liza Koshy (YouTube), Joel Kim Booster (Fire Island), Nat Faxon (writer / comedy actor), and the one that was a surprise favorite of us all... NFL Star (and Actor) Marshawn Lynch. We just have to say upfront - Marshawn Lynch stole the show. Charming, funny, and not a terrible baker. Every one of us found ourselves pulling for him and loving the interactions he was having with the others guests, hosts, and judges. He was a delight. Having 6 bakers was unusual for a holiday episode... we could not determine why they went with the number they did. Spoliers below so stop now if you haven't see the episode! For a Signature, the guests were asked to make cream puffs. This was a bit surprising that celebrity (non-baker) judges were asked to make a choux pastry as it's not a baking standard for most, but they all kinda did alright. Each had a theme and the judges were impressed... Paul handed out THREE handshakes... but we are saying one of them was almost coerced from him... so more like two and a half. In the Technical, another not so easy feat. Meringue baskets formed into a wreath with sugared berries, mascarpone cream, and blueberry coolie.... needless to say, many had never heard of these things yet alone made them before. Highlight of the segment - Marshawn asking "is this 'whisking'?" Most of the bakers did a decent job though. Meringues looked decent, though many underbaked not knowing how long it actually takes to make right, and there was a good job done using the fruits. People who performed well in the first round also did well here. One baker split their pants ... sos there's that. In the Showstopper, the bakers were asked to make a cake that had a 3D element and told their favorite Holiday story. The stories were heartwarming and the cakes that they made were also incredibly well done. Paul had D'arcy's and said "the is the best cake I've had in a long time". Lots of great flavors and for the most part, solid work. A couple underbaked, but the decorations were good. again, surprising the group was Marshawn and his PawPaw (his grandfather) cake. Fantastic story and while it wasn't the prettiest ... a delicious cake!! Marshawn rattling off a dozen ways to say "money" to Prue was what this was all about. Paul even says at the end as far as celebrity bakers go, the American's may be better. All three of us agreed that this was one of the best (if not THE best) episode of Bake Off we have seen (UK or US).
