Fourth-Generation Farmer, First-Generation Cidermaker Sophie Horstink of De Groote Wei, which means The Great Meadow in Dutch, is crafting Dutch cider as a value added project at her family's farm. Located in the eastern Netherlands near Arnhem, the farm spans 16 hectares and has long produced dessert apples and pears. Sophie Horstink The Horstink family market is well-known and is a go-to place for locals to shop and would be considered a grocery store. She released her first cider in 2022. The early response was enthusiastic, selling out quickly and prompting her to scale production. She now ferments around 5,000 liters annually in what is called the ‘cider cave” on the family farm. De Groote Wei's Ciders cider garden Appel Vink (Apple Finch) ABV: 6.5% Notes: Lightly sparkling with fresh acidity and a hint of sourness. Made entirely from eating apples including Elstar, Jonagold, and Belle de Boskoop. Groente Vink (Green Finch) ABV: 6.5% Notes: A blend of apples as used in the Appel Finch and 30% Conference pears. Justin Koury - A wine and spirits expert with over 25 years of hospitality industry experience. Justin has spent decades teaching culinary techniques whiskey pairings and consulting in the spirits and cider Industries.Todd Godbout -Todd has been exploring the world of wineries, breweries, distilleries, and cideries since 2003, the same year he created WineCompass.com, a tasting room compendium that now includes information on almost 20,000 craft beverage tasting rooms.  Zack Kaiser (Absolem Cider), Parick Chavanelle (Allagash), Larry Westler (Apres) sit down with Jimmy Carbone to talk Ciders from Maine, fermentation and how they all came to love the process.Zack is a Cidermaker, owner, and co-founder of Absolem Cider Company. In love with the craft, art, and science of fermentation. This passion developed through experiences at Neshaminy Creek Brewing, Millstone Cellars, Diamondback Brewing, and Perennial Cider Bar. Currently searching for tasty apples, grapes, and fruits. Patrick Chavanelle has been an employee at Allagash Brewing Company in Portland, Maine since 2011. He's currently the Research and Development Manager, responsible for coordinating new beer development, analyzing raw materials, and running the brewery's cider and wine program. He sits on the board of the Hop Quality Group where he is thoroughly involved in their public hop breeding efforts. Patrick is currently working towards his Master of Science in Brewing and Practice through the University of Nottingham, as well as the Winemaking Certification program through the University of California, Davis.Larry Westler went from apple enthusiast to photo editor to lead cider maker at Apres, and has jumped into cider making feet first in the last few years. Originally from NYC, the move to Portland eventually led to a career change as well, turning a passionate hobby into selfies with thousands of pounds of apples from Maine orchards, destined to be fermented. After initially bartending at Apres, he transitioned to becoming a member of the production team, and now runs the cider program. He strives to keep a diversified portfolio of cider that showcases modern and traditional methods while keeping the focus on Maine-grown apples and fruit in general.

Golden State Cider Unfiltered Breanne Heuss, Marketing Director for Sonoma Craft, is our guest on Brew Ha Ha with Steve Jaxon and Herlinda Heras. Sonoma Craft is the umbrella organization that holds Golden State Cider, Sonnenschein Cocktails and Seismic Brewing. This is Breanne's first time on Brew Ha Ha but co-owner Christopher Jackson was on this episode of the show on May 19, 2022, to talk about Golden State Cider. He was also on this episode in July 2019 to talk about starting Seismic Brewing. Breanne is responsible for marketing the three brands that share their company values of making high quality products using sustainable practices. Seismic Brewing has refocused as a craft lager brand, with distribution at the tap room and in selected locations in the Bay Area, but on draft only. They still make their different lagers, including Tremor and the Red lager. Breanne has been with Sonoma Craft for three years, and she worked for Golden State Cider before that. Herlinda mentions that spirits have overtaken beer in terms of annual sales in the US. Unfiltered After they taste their Unfiltered cider, they will taste a cocktail too. Golden State Cider has different tiers of cider. The base tier, called the core tier, includes the Mighty Dry, Brut and Jamaica. They have added one that is unfiltered, which is very dry and has big rich apple flavor. Ned Lawton appeared on Brew Ha Ha on this August 25, 2018 episode, promoting Cider Week that year. Herlinda is going to Italy next week to visit some friends who have bought a house near Lake Como, which they will be converting into a bed and breakfast. The Gravenstein apple is to cider makers what Pinot Noir is to local winemakers. It is the go-to fruit for their art. It is tart and sweet and ripens early. Ethic Ciders got started with their acquisition of an old apple orchard which was in need of renovation. Once that was done they were able to produce a crop and make the cider from that. Gravitude: Grateful for Gravensteins They are tasting a cider called Gravitude. Its name means "grateful for Gravensteins. It is sparkling and very food friendly. The tartness is what makes it combine with foods in the same way that a wine with strong acidity does. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. There they will also be launching a new product, Gravitude in cans. Some of their ciders are traditional and others are their creative recipes that combine flavors. Before OM and High On Fire, there was the marijuana infused, Sabbath worshipping, stoner metal power trio hailing from San Jose, California known as SLEEP. Just saying the name transports you to a land filled with THC infused riffs, the sweet aroma of sinsemilla, and enough smoke to indicate that the pyramid sized bong is fully loaded and ready to transport you to another dimension of audio stonerdom.    Imagine Black Sabbath (circa Master of Reality) time traveling to SLEEP's jam room in the early 90's and bestowing upon them the knowledge of “the riff filled land” over a freshly ignited bowl of greens. The Front Street Brewfest is a craft beer festival that benefits Sacramento's Front Street Animal Shelter. Several Sacramento breweries such as Alaro, Jackrabbit Brewing and Urban Roots along with more will be in attendance pouring some excellent craft beer. Along with the beer, there will also be Ciders, Seltzers, and Kombucha as well for those looking for beer alternatives. In this episode, I interview Laryssa and Johanna about the mission of Friends of Front, The Front Street Animal Shelter, what attendees can look forward to at this year's event and more. When I tell people that I'm really into beer, a quarter of the time someone mentions cider despite the two being vastly different. These interactions have always left me feeling helpless because I lacked the knowledge to educate them about the differences, and I certainly couldn't guide them to a beer style that would be similar to cider. The extent of my cider knowledge was extremely limited—until I read fellow GBH contributor and podcast host Beth Demmon's book “The Beer Lover's Guide to Cider.” In fact, she addresses this common mixup in the first line of her book “Cider is not beer.” Cider is more like wine than beer because it's created from fruit whereas beer is a combination of malt, hops, and yeast. Despite their differences, Beth is able to draw a connection between beer and cider to show us how vast the world of cider really is, encouraging us to look beyond what we might find in our local grocery store. Much like many of us had to do in the early days of craft beer when shelves were stocked with domestic Lager and other mass-produced beers.    In our conversation, we talk about Beth's inspiration for the book, which includes a trip to CiderCon, an annual conference organized by the American Cider Association. Beth also shares how she approached writing the book and how she was able to lean on her community for help. But what I love most about our conversation is how she draws parallels between those initial days of craft beer and the current state of cider here in the United States. For those of us who have explored all corners of craft beer, cider offers a new landscape of flavors, producers, and techniques to dive into, so let's jump right in.

In the world of cider, Nikki West says the nerdier you are, the cooler you are. That's probably the scientist in her talking, but she's not wrong. As an agriculturally-based product, cider is inextricably tied to the earth, which is one reason why West decided to move from an academic career in geosciences to launching Ciders From Mars in Staunton, Virginia. It wasn't a huge leap, scientifically speaking, but it was definitely one that changed the trajectory of their life. In our conversation, West and I discuss the pros and cons of a formal education in fermentation, and how the Cider Institute of North America helped her transform a garage operation into a tasting room in the Shenandoah Valley, the heart of Virginia apple country. We also talk about the seismic shift it took to jump from geology to ciderology, and the overlaps between the two endeavors, as well as why they decided to plant an orchard in order to (eventually) use apple varieties not readily found elsewhere. As someone with Celiac disease, West says cider is an ideal alternative to beer, as well as less filling, without the stuffy culture or high ABV of wine—basically, nature's most perfect drink, and one she hopes more people discover in the years to come.  It may be called Good Beer Hunting, but in this episode, we're Good Cider Hunting.

The Vodraska Brothers Chris & Matt of Bent Ladder In the midst of a rich farming legacy emerged Bent Ladder Cider and Wine, based in Doylestown Ohio. Chris and younger brother Matt Vodraska are following in their father Dale's footsteps. Chris is the orchardist and viticulturist and Matt is the cidermaker. The farm is the story. Chris Vodraska Dating back to 1995 their father Dale was eyeing farmland that was by all accounts destine for development. In 2004, he “finally wore down the seller” as his sons put it and bought the 128 acre farm. Today there are 3-4 acres of vineyards and 30-40 acres of orchards.
