La viande cultivée, produite à partir de cellules animales en laboratoire, pourrait bien transformer notre rapport à l'alimentation, à l'élevage et à l'environnement.Cette technologie, appelée agriculture cellulaire, suscite un intérêt croissant à travers le monde. Pour comprendre de quoi il s'agit, nous avons interrogé Sébastien De Jonge, directeur opérationnel de l'organisation de défense animale GAIA.Le principe est relativement simple : quelques cellules animales sont prélevées puis placées dans des cuves de culture où elles se multiplient naturellement. Le procédé est souvent comparé à celui utilisé pour fabriquer du yaourt ou de la bière. À l'arrivée, on obtient une viande qui possède les mêmes caractéristiques qu'une viande issue de l'élevage traditionnel : même texture, même goût, même valeur nutritionnelle.Contrairement au faux gras ou aux nombreux produits végétaux qui tentent de reproduire les saveurs de la viande, la viande cultivée reste un produit animal. Elle s'adresse notamment aux consommateurs qui apprécient la viande mais souhaitent réduire l'impact de leur alimentation sur les animaux ou l'environnement.Les défenseurs de cette innovation y voient plusieurs avantages majeurs. D'abord, elle permettrait de réduire considérablement le nombre d'animaux élevés et abattus pour l'alimentation humaine. Aujourd'hui, plus de 80 milliards d'animaux terrestres sont tués chaque année dans le monde pour répondre à la demande alimentaire.Ensuite, les bénéfices environnementaux pourraient être significatifs. Plusieurs études estiment que la production de viande cultivée pourrait nécessiter jusqu'à 90 % de terres en moins que l'élevage conventionnel. Les besoins en eau pourraient également être fortement réduits, tout comme certaines émissions de gaz à effet de serre liées à l'élevage intensif.Cette technologie n'est plus un simple concept. La commercialisation de viande cultivée est déjà autorisée dans certains pays comme Singapour, les États-Unis ou Israël. Plus récemment, une première ferme dédiée à la production de viande cultivée a vu le jour aux Pays-Bas, preuve que cette filière commence à sortir des laboratoires pour entrer dans une phase industrielle.En Belgique, la commercialisation n'est pas encore autorisée, mais plusieurs procédures réglementaires sont en cours au niveau européen. De nombreux observateurs estiment que ces produits pourraient arriver sur nos marchés dans les prochaines années.Pour les agriculteurs eux-mêmes, cette évolution pourrait ouvrir de nouvelles perspectives. Certaines exploitations pourraient un jour se reconvertir partiellement vers la production cellulaire, en complément ou en remplacement de certains élevages traditionnels.Reste évidemment de nombreuses questions : l'acceptation par les consommateurs, les coûts de production, le cadre réglementaire ou encore la place que cette innovation occupera dans notre alimentation future. Kwam dat op mijn pad, dat iemand dat zei. Toen dacht ik, meteen mijn gedachte was, ja, dat wil ik geen idee wat het kostte of wat erbij kwam kijken. Maar ik dacht gewoon, ja, dit wil ik gewoon. Ik weet niet, nou jij snapt dat misschien, want dat staat ook op jouw lijstje. Ik dacht, nee ja, dat is gaaf, want dan heb je een akker en daar kan je dan natuur van maken. En ook letterlijk vormgeven met handschoenen aan boompjes planten. En boompjes zijn dan boompjes van... Het is een beetje een onhandige uitleg. Op wat beeld zie je, dat zijn gewoon sprietjes. En dat wordt dan een boom. En dat is nu natuurlijk. Zijn het ook bomen? En ik heb in de achterliggende jaren enorm veel geleerd over de natuur daardoor.
