For Miles, he's become a leader on Mars while trying to live a normal life. We also saw the dynamic between Aleida and Margo resume while Kelly continues to look for life on Mars. Dan Brouillette has always worked in creative fields—he was a professional photographer before launching Lumen in the waning days of the pandemic—but he's always been particularly attracted to the technical aspects of creation. Like every IPA-focused brewer, he's on a neverending search for the most expressive, layered, and interesting hops. But he's also found that the information upon which many brewers rely when choosing hop lots often tells an incomplete story. Total oil numbers can be misleading, as they include oils that don't survive the brewing process; hops that smell good relative to others at selection may not have high enough oil concentration to punch through in finished beer. Brouillette has found that using past chemical data paired with his own sensory can be far more effective when seeking out hops that are going to give him the impact he seeks. Episode 25 of Matt Likes Beer tackles one of the most polarizing modern beer styles of the past decade: the Cold IPA. The featured beer comes from Wayfinder Beer in Portland, Oregon, the brewery that not only created the recipe concept but also coined the term “Cold IPA” in 2018. For Matt—who actively seeks out the style—this makes Wayfinder the definitive benchmark. Matt opens by reflecting on the intense backlash Cold IPA received when it first appeared, noting that the hostility rivaled—and even surpassed—the early resistance to Hazy IPA. He contrasts that early reaction with the sudden, almost overnight acceptance the style enjoys today, raising questions about how and why beer communities choose what to embrace or reject. Drawing directly from Wayfinder's own published definition of the style, Matt explains what sets Cold IPA apart: heavy use of rice adjuncts, lager yeast, a very dry finish, and an emphasis on clean fermentation that allows American hops to shine with clarity and precision. He also points out that Wayfinder has effectively written their own style guideline—complete with vital statistics—despite the BJCP not yet adopting Cold IPA as a standalone category. Because no official BJCP style exists, the beer is evaluated as a 34B Mixed-Style Beer, declared as American IPA + American Lager, which Matt agrees is the best available option—even if it doesn't fully capture what Cold IPA truly is. Using this framework, he conducts a full judging breakdown, noting a medium-yellow appearance with persistent foam, expressive citrus-forward aroma, light herbal and dank hop character, subtle grain notes, and a distinct but restrained lager yeast presence. Flavor-wise, the beer delivers orange zest, grapefruit rind, floral and herbal hop notes, light toasted grain, and a crisp, slightly dry finish. However, Matt finds the bitterness lower than expected for the style—particularly from the brewery that defined it. Mouthfeel is light-bodied and highly carbonated with surprising softness beneath the fizz, contributing to excellent drinkability. The final score lands at 35 out of 50, placing it squarely in the “Very Good” range. With no online reviews to read—of any rating—the episode pivots into an extended and impassioned soapbox segment. Matt unpacks the early hatred directed at Cold IPA, arguing that much of the criticism was aimed at the name and concept, not the beer itself. He connects that reaction to a broader problem within craft beer and homebrewing: resistance to innovation, gatekeeping, and a reflexive hostility toward anything new or unfamiliar.

They've been around for a couple of years and are just getting started. Sun Trip DDH Hazy IPA is a collab with Spanish brewers Malandar. Coming in at 6.2%, this IPA is filled with citra, mosiac, nelson sauvin and manalita hops. Malmö based Perfectly Squared has been expanding across the city more and more. We're keeping the Danish theme alive this week with a new brewery and a closed brewery. Tiny Hill in Copenhagen just has 4 beers listed on UnTapped. Merrimack is one of their first beers. It's a 5.5% ABV hazy IPA. Björn drops some serious Civil War knowledge on us about the Merrimack and its ties to Sweden. Baghaven was one of our favorite brewery and probably the last best thing Mikkeller has done. Sadly, it is no more but their wild ales are here to remind us of better times. Art Decadence Blend 1 is a Danish wild ale with cherries, red vineyard peaches, cabernet cortis grapes and vanilla beans. Montreal's Messorem (https://messorem.co) strikes an urban pose—the old factory building in a gritty industrial zone is covered with graffiti, and looks more likely to hold underground raves than contemporary brew days. But that's part of the charm that the founders sought out, as the brand makes no claim to appeal to everyone. There was a time in Boréale's (https://www.boreale.com/en) not-so-distant past when they might have released a new beer every other year. The brewery is one of Quebec's oldest craft breweries, dating back to the late 1980s, and over its history it has seen waves and trends come and go. But the changing dynamics of craft brewing in the 2010s posed a different kind of challenge that required a new way to approach innovation and risk-taking. Then head brewer, now vice president of innovation, Gabriel “Gab” Dulong played a big part in that adjustment, getting the brewery into the unfolding world of production-scale hazy IPA in 2016, then pushing hard into nonalcoholic NA beer through the pandemic. Today, the brewery remains one of the largest craft breweries in Quebec—and only in Quebec—producing about 100,000 barrels of beer per year. But innovation is now core to their DNA. Before he took the leap and started his own, BreWskey (https://www.brewskey.ca) cofounder Derrick Robertson was a process engineer who helped design breweries. That background was invaluable when building out a brewhouse and cellar in a building that's a historic landmark in Vieux-Montréal. With multiple spaces and sprawling patios, BreWskey is popular among travelers who drink plenty of pale lager in warmer months—with many who also appreciate BreWskey's creative and contemporary approach to hazy IPA. Robertson has an unquenchable thirst for experimentation, treating each batch on their two- and 10-barrel systems as an opportunity to tweak variables, test ingredients, and dial in processes. He's not afraid to brew beer with a point of view informed by his own tastes—witbier without phenolic Belgian yeast, for example—and he's always up for experiments, such as pushing 34/70 to see just how much heat it can endure. When it comes to hazy IPA, however, he can't bear the astringent burn that certain hops exacerbate, so he's dialed in processes to turn beers at brewpub speed with robust body and just enough haze—because, as he says, there is such a thing as too much haze. In this episode, Robertson discusses: balancing brewpub and taproom beer menus with an on-the-fly creative process adjusting the beer program week to week, based on tourism trends brewing white beer with London Ale III while replacing certain yeast-driven flavors with targeted ingredient additions using New Zealand hops strategically for light color without the burn the fungibility of many hazy IPA grain bills selecting hop varieties, such as Rakau, that improve the expression of others why Riwaka is like smoked malt avoiding “Galaxy paste” when brewing with the Australian hop accepting inefficient extraction techniques when using certain hops, to avoid picking up off-flavors dialing in his hop palette to eight to 10 hops, while expanding the number of lots of each dry-hop bench-testing for lot selection, to understand how the rub connects to the actual flavors and aromas in finished beer And more.
