STIs and STDs are increasing substantially over the last few years, but that's not the only concern. The greater concern is why, especially since people having sex has not substantially increased. At the beginning of the Covid lockdown, people who were on the dating scene or sexually active were halted and forced into a dry spell, and the world of finding partners slowed down greatly. Then, when the lockdowns were over, people went into high gear, searching for partners and making up for lost time. All this did was rebalance the previous lockdown dry spell. Meanwhile, worldwide sexual actively stayed relativity the same on the average. So why the rapidly increasing STIs and STDs? The crash of the antibiotic and anti-viral era. Antibiotics and anti-virals are weakening and the sexually transmitted bacteria and viruses are strengthening, and lately the bacteria is making a strong comeback. Antibiotics are not holding their title as being the cure all for bacterial infections. Sepsis is also on the rise from bacterial infections taking over and attacking blood, lymph and organs. Bacteria is getting smarter, and not just Chlamydia and Syphilis, but all bacteria such as Strep. The Industry has bombarded the sickness world with epic amounts of antibiotics for every illness without the understanding or caution towards what this can—and has—led to. We just had a class with Cara & Justin King of King's Family Distillery in Tennessee so that is our featured distillery for this episode. Although they are "sourcers" they are "sorcerers" in my eyes. They come from a grain merchant family and Justin even worked at MGP so they have access to pretty amazing barrels all over the country. They also have the relationships to really get what they want. They also aren't playing with the normal mashbills and have proved their finishing skills are spot on. Episode 2 of our Interview Series! This time we get to chat with the former CEO & Director of the Institute of Brewing & Distilling, Douglas Murray. If you want to have the best technical knowledge of whisky production and spirits production in general, the institute is where you MUST go. I had to sit down and interview them so us folks in the USA could learn all about this UK-based program. Charles and I also have a lot to discuss before we get into the interview though. He just got back from two weeks in Japan and has a lot to share. We also talk about some new bottles in the shop since he's been away and he blind tastes me on something that he got while in Japan. But, is it Japanese Whisky?? This episode was such a blast for me and I feel honored that Douglas took an hour out of his day to chat with me. Not only do we talk about the IBD (Institute of Brewing & Distilling) and all of the courses they offer but we also chat about Talisker, Dalwhinnie, and some of the other Diageo distilleries he's worked at. He was a part of creating the Talisker Storm release and was also one of the folks who realized they needed to put the worm tubs back in at Dalwhinnie when they were renovating and changed to shell & tube! In this episode I interview Christopher Smith, who is an extraordinary person doing some really important work in the herbal community in Australia. Christopher is a herbalist, horticulturalist and herbal educator He draws on over 40 years of horticultural experience to grow a line of rare and endagered herbs at the herb farm he runs called Tinderry Mountain Herbs, at Tinderry Mountain near Canberra. These herbs are supplied to herbalists in Australia, and Christopher has the noble vision of assisting Australia to become self-sufficient with it's herb supply- in particular Arnica, Goldenseal and Solomons Seal.. Christopher strongly believes that herbal medicine is the medicine of the people and needs to be alive in people's homes and kitchens so he is passionate about sharing the world of plants and medicinal herbs with people. He runs regular workshops and classes through the Heirophant in Canberra teaching people how to make an array of herbal preparations. He also runs online workshops and classes. All of my communications leading up to and after this interview was really beautiful. Christopher has such a kind heart and pure intentions- he wants to see as many people growing rare and endangered herbal medicine as possible, and is developing a mentorship program for advanced methods of growing herbs. This interview was really enjoyable for the both of us and we are already planning the next one. We head back over to Japan with a look at Mars Distilleries including Shinshu and Tsunuki. Both Charles and I have visited Shinshu and had different experiences but all in all, this is a distillery worth the 4 hours one-way on public transit.
