Much has been written, and done, about the impact of Scotch Whisky production on climate change over the last decade. Much less has been written about the potential impacts of climate change to Scotch Whisky makers, from distillery water sources drying up in periods of drought to reduced crop yields for barley farmers. As world leaders are gathered in Glasgow for the UN's COP26 climate change summit, a new study by University College London researchers looks at those potential impacts. We'll talk with Carole Martin, one of the lead researchers, and Daniel Sherry of Glengoyne and Ian Macleod Distillers, which funded the study. In the news, there's finally an end in sight for the European Union's retaliatory import tariffs on American whiskies following this weekend's G-20 Summit in Rome. Diageo is breaking ground on its first malt whisky distillery in China, and Scotch Whisky industry leaders are looking warily at the UK Government's new plans for taxing whisky and other spirits starting in 2023. We'll have those stories, and in this week's Behind the Label segment, a look at how one American distillery makes the most of every drop of water it uses.

I love adventures as you might have guessed from the name of this podcast so try to seek them out whenever I can. I have travelled to many different countries and experienced lots of things but one of my most enjoyable adventures happened right here in Scotland when I walked the West Highland Way. In this episode I'd like to tell you about this famous walk. The West Highland Way is a very famous long distance walking trail that starts near my city, Glasgow. This walking trail goes all the way from the lowlands to the West Highland town of Fort William. It is 96 miles (154km) long and takes around a week or so to walk although some people actually run it in around 35 hours! Every year around 40,000 walkers of all ages, come from far and wide to complete the walk, many people love it so much they do it several times during their lifetime and this year the walk is proudly celebrating its 40th anniversary. The walk starts in the small town of Milngavie and the first section is relatively flat, taking you past small villages and rather conveniently, close to the Glengoyne whisky distillery where you can enjoy a dram of whisky and a tour of production! By day 2 you are in Loch Lomond national park, and the first hill climb, Conic hill provides breathtaking views. The walk continues along the banks of the loch, that's our Scottish word for lake and this is one of my favourite parts of the whole walk as it's fairly gentle and it's always nice to be beside the water. Towards the northern part of the loch you can enjoy a wonderful waterfall and step back in time by stopping off for a drink at the Drovers Inn, an 18th century hotel and restaurant with an atmosphere like no other. Leaving the loch behind the scenery changes as you get closer to the mountains. It's another 28 miles to the next shop so this is one of the most remote parts of the walk with only dramatic scenery, other walkers and wildlife to keep you company. Finally, the welcoming lights of the Kings house hotel come into view and you've reached Glencoe where parts of James Bond's Skyfall was filmed. This remote hotel is another memorable moment of the walk for me, a truly wonderful location facing one of our most photographed and distinctive mountains, Buachaille Etive Mor. The final 2 days are the toughest of the whole walk, There's more climbing to do from here as the walk climbs up to 550m before gradually descending again. During the final day of walking you can see the UK's highest mountain, Ben Nevis before arriving into the centre of the town of Fort William and the finish line. The scenery throughout is spectacular and ever changing as along the way you journey across mountains, past lochs (lakes) through glens, into forests and past waterfalls. It is a truly unforgettable trip but hard work! Along the way there are places to stay, campsites, hostels and hotels. Some parts of the walk are quite busy and you can enjoy the company of other walkers but often you are alone and can enjoy the views and atmosphere in peace. You can either carry your rucksack yourself or make use of a baggage delivery service which will drop off your bags at your next overnight stay. I made good use of this service and it made a big difference not having to carry a heavy pack all day long. However, there are some annoyances, during the summer there can be a big problem with midges! These insects are like mini mosquitoes and during some parts of the walk you have to wear protective netting over your face as there are so many of them all eager to bite you. I've even seen people running to try to escape from them! They don't like windy weather but are especially active at dawn and dusk. A good insect repellent will help to keep them at bay. While some entrepreneurs are trying to cash in on the Bourbon boom by starting new whiskey brands, others are looking to history for heritage brands that built a history but faded away over the years. That's the approach Manti Antilla of Grain and Barrel Spirits took, and it led him to Chicken Cock, a brand with a unique name and a century's worth of history to build on. He's now working with Kentucky's Bardstown Bourbon Company to lay down stocks for future Chicken Cock whiskies, while releasing four bottlings over the last year using whiskies sourced from another distillery. We'll talk with him about the work involved in reviving a heritage brand on WhiskyCast In-Depth and taste the Chicken Cock 10-Year-Old Double Barrel Bourbon. In the news, Diageo plans to invest $130 million to build another new distillery in Kentucky, while American Single Malt supporters are disappointed that their proposal for an official standard didn't make it into proposed changes in federal regulations. We'll also talk with Fred Noe about the new 30th Anniversary edition of Booker's Bourbon and the arrival of a new "Baby Booker" just in time for the holidays.

Jan Beckers joined us to share the Old Particular line, which according to their website "is a particularly unique series of individually hand-selected aged Single Cask Malts' and Single Cask Single Grains from all over Scotland. Each is bottled exactly the way the Distiller intended: Without colouring, or chill-filtration. If you've ever been to the races, you may have seen a race where one of the horses goes off slowly. He doesn't stumble out of the gate; rather, he lollygags, taking in the sights, smelling the fresh cut of the infield, letting the pack get a dozen or so lengths ahead for the first part of the race. After a bit of this our boy decides to kick it into gear so he can see what all the fuss is about at the front of the pack. With luck he gets there before the race is done. Well, this is kinda what we do in episode 98. We kick things off with one of our new-ish segments, which isn't fine-tuned to our usual perfection (ahem). Balblair Distillery sits on the Dornoch Firth in Edderton, and it's been getting a lot of attention these days. Distillery manager John MacDonald was instrumental in helping re-launch the Balblair range from age-dated expressions to vintages, and the Balblair 1989 was recently picked by Scotch lovers as the best whisky at the Whisky Fringe in Edinburgh. WhiskyCast hits the road again, this time to the luxurious New York Yacht Club. Glasgow is sponsoring one of the ships sailing in the Clipper Round the World Yacht Race, which reached New York City on Friday, and the Glasgow City Marketing Bureau sponsored a reception to celebate. Glengoyne Distillery's table was the highlight, with a whisky blending competition for guests to try their hand at nosing and blending their own whisky. We'll follow one amateur blender through his turn at the table, and it's a perfect time for us to look at a "conventional wisdom" of the whisky world -- that there are 32 primary aromas the human nose can detect. As Kevin Erskine and Charles MacLean tell us, science has rendered that theory obsolete.
