Gluten-free baking can be hard to perfect because so much baking relies heavily on the gluten in wheat flour for structure. But there are so many different flours you can use —coconut, chickpea, almond, rice, tapioca, and more— and once you get the hang of it, it's easy! Start with these lovely cheesy bites. They're like a mini cheese scone and entirely moreish. Chickpea flour forms the base, so they're packed full of protein and whilst not exactly light and fluffy and calling out for jam and cream, they ARE super cheesy, rich and delicious! Ingredients 1 cup chickpea flour 1 level tsp baking powder ½ tsp salt 4 tbsps. chilled butter 1 cup grated cheddar ¾ cup Greek yoghurt Method Heat the oven to 180C fan bake. Line a baking tray with baking paper. Mix the dry ingredients in a large bowl or a food processor. Grate in butter if using a bowl, or cut into rough chunks if using a food processor and pulse until resembles coarse breadcrumbs. Add cheese and toss to combine, then add in the yoghurt and stir or pulse until it comes together to form a scraggy lump. Turn the dough out onto a floured bench and knead lightly and briefly. Take large tablespoons of the dough and roll into a ball before placing on the tray. Bake for 15 minutes or until puffed and golden brown. Serve warm or cold. That is Essex, the villages of Dedham and East Bergholt, by the River Stour, which John Constable so famously painted.Having just spent a fortnight in Namibia, I've become attuned to stunning landscapes. Even so, I was blown away by the beauty of the place.Here are some snaps to get you in the zone.I went with a French friend who wanted to see the “real England”, but not too far from Stansted Airport.As we drove into East Bergholt, I began, as I always do as soon as I see them, to despair at the ugliness of modern buildings. No wonder we have so many NIMBYs, when what gets built around beautiful villages is so bland and ugly. Objection is both rational and natural.But then we turned a corner and everything was suddenly stunning.It's not a part of the world I knew. I had lazily assumed all of Essex looked like Basildon. It doesn't. It was glorious. You could really see the Dutch and Flemish influence in the architecture and the colours they were painted - so different to the equally beautiful Cotswolds, where I was last weekend doing gigs.We were only sixty miles from London, but it still felt like an England of old, unblighted.My French companion could not understand what I had been moaning about when I complain about decline. This was the England she knew growing up, and she got excited by everything. Scones. Tea. Churches. Beautiful landscapes. Polite conversation. Phone boxes. Properly kept gardens. Even the beer. “It's not cold,” she said, before promptly downing it.My oft-cited complaint that the England she knew is disappearing seemed nonsense. There was no evidence of it here.As we walked into Manningtree, the buildings got ugly again. Warehouses and industrial buildings, in particular. Nineteenth century warehouses were often things of beauty. Why can 21st century warehouses not be? (The answer lies in our system of measurement, but that's for another day).Then we learnt about Matthew Hopkins, the Witchfinder General, who operated here, exploiting the social upheaval of the English Civil War to have hundreds of women executed as witches. Among his methods of getting to the “truth” he used sleep deprivation to extract confessions; he tied victims to chairs and dropped them into the estuary. If they floated, they were witches. If they sank, they weren't. I guess the victims lost either way. He strip-searched women looking for signs of the mark of the devil. If he couldn't find any he pricked them with knives until he found the signs he was looking for. Just horrible. Maybe the English past isn't quite so idyllic after all.Here's what makes it worse. For every witch he successfully hunted down, the government gave him fee. He got very rich. Show me the incentive and I will show you the outcome. A lot of innocent dead women. An early gruesome example of the law of unintended consequences. Remind me why I'm a libertarian again.Today, if we are heading into the civil war many think we are, who knows what kind of witch hunts we are going to see in the name of some nuts ideology?We caught a train from Mistley back to Manningtree. More grim modern housing. Lots of it too. More walking then a short river boat tour. We mentioned we were staying at a village up the road, East Bergholt, and one of the locals declared this was the last chance to enjoy it before more new-build goes up. “We need 1.5 million homes,” he said. “The question is, do we have 1.5 million people who are going to buy them?”Articulated right there is the property crisis coming to a town near you.I have long argued that beautiful property will keep its value. Ugly new build won't. Beautiful is pretty much synonymous with period. It was built using traditional measures, where proportion is intrinsic. No such proportion is inherent to metric. We are already seeing the unravelling of the new-build market in London. That unravelling is coming to everywhere there is ugly new build, whether blocks of flats or houses. We did find one modern close in East Bergholt that was actually beautiful by the way. So it's possible. But it's the exception, not the rule.This is one of the reasons I invest so much of my capital outside the UK. I don't like sterling, so I hold gold and bitcoin, and I don't like gilts. A weakening property market, which is happening right on cue, will create problems for both.If you live in a third world country such as the UK, I urge you to own gold or silver. The pound will be further devalued, as will the euro and dollar. The bullion dealer I use and recommend is The Pure Gold Company. They deliver to the UK, the US, Canada and Europe. More here.Idyllic corners of England do still exist. Many of them. UK shares already offer value. There is a lot to like in the UK, as my French companion kept pointing out. Hi Bakers,If you want an unusual scone, you need to try this one! Delicious, tender almond scones are drizzled with cherry blossom glaze for a light, floral flavor you can't find anywhere else. Enjoy! ~CarolynGluten-Free Almond Scones with Cherry Blossom IcingMakes ten 2.25” sconesDRY2 cups Cup4Cup Multipurpose Flour (Original blend with milk powder)1/2 cup blanched almond flour1 teaspoon Koda Farms Sweet Rice flour1/2 teaspoon salt1 1/2 teaspoons baking powder1/2 teaspoon baking soda4 tablespoons granulated sugar1/2 cup cold butter, cut into chunksWET1 large egg*2 tablespoons unsweetened applesauce1/3 cup half and half1/4 cup buttermilk1/2 teaspoon almond extract1/4 teaspoon vanilla extractOptional: 1/4 cup cream or egg wash for brushing the tops of scones before baking1/2 cup sliced blanched almondsCherry Blossom Icing 1/2 teaspoon dried cherry blossom powder1 cup powdered sugar2 tablespoons water 1/2 teaspoon cherry juice or food coloring Preheat the oven to 400F and place the rack in the middle position. Mix the flours, baking powder, baking soda, and sugar in a large mixing bowl. Add the cold butter and cut it into the dry mixture until it resembles crumbs with a few larger bits of butter remaining. In a medium-sized bowl, whisk the wet ingredients together. Add just enough of the wet ingredients to the dry to make a stiff dough. Scrape the dough out onto a lightly floured counter and pat it into a large circle. The height of the dough should be about 3/4” tall. Cut out using a 2.”25 biscuit cutter. Place the scones on a lined cookie sheet and then brush with cream and sprinkle with sliced almonds. Bake for about 10-14 minutes or until browned on top and springs back when pressed in the middle. Cool on a rack for about 15 minutes while you make the icing.In a small mixing bowl,, combine powdered sugar and cherry blossom powder. Add cherry juice and water gradually to achieve a thick icing you can drizzle. You don't want it too watery or the scones can get soggy. Enjoy! Scones are best enjoyed the day you make them, but they will last in the fridge or freezer and can be carefully reheated in the microwave or toaster oven on low.

Today's guest is Danielle Sepsy, baker and founder of The Hungry Gnome, a New York–based wholesale bakery. Danielle has become known as “The Scone Queen” and was a contestant on Dan Levy's culinary competition show, “The Big Brunch.” She's also the author of the upcoming baking book, “The Scone Queen Bakes: 100 Recipes for Scones, Muffins, Cookies, and Cakes from the Founder of The Hungry Gnome.” Danielle joins host Jessie Sheehan to talk about growing up in a big Italian family on Long Island and baking alongside her grandmother. She shares how receiving a stand mixer (and a Martha Stewart Living subscription) at eight years old fueled her love for baking and led her to start a scone business as a teenager. They also discuss the early days of The Hungry Gnome and what it was like to compete on TV. Then, the duo walk through Danielle's signature chocolate chip scone recipe. Recipe Parsnip Chowder 100g diced streaky bacon or pancetta 25g butter 1 stick celery diced 2 medium onions, finely chopped 1 clove garlic minced 1 heaped tablespoon plain flour 750g parsnips, peeled and cut into 2cm dice 1 litre chicken stock 50ml double cream Handful chopped parsley Cook the bacon in a dry saucepan until crisp. Add the butter, celery, onions and garlic and cook gently with a lid for about 15 minutes stirring occasionally. Add parsnips and cook to coat. Mix in the flour then add the stock. Bring to a simmer and stir well. Cook for about 20 minutes on a gently simmer or until the parsnips are cooked. Finish off with the cream and parsley. Check seasoning and serve with the griddle scones. Rosemary, cheese and onion griddle scones250g plain flour 1 teaspoon baking soda Good pinch salt 1 tablespoon chopped fresh rosemary 1 medium onion, finely chopped 1 tablespoon oil 75g grated sharp cheddar 225ml buttermilkCook the onions in the oil until soft and golden. Cool. Mix the flour, salt, baking soda, rosemary, cooked onions and cheddar in a bowl then mix in the buttermilk to make a stiff dough. Place on a floured surface and bring together gently then flatten to about 2cm thick. Cut out rounds and place on a medium hot griddle or heavy frying pan. Cook for about 3 minutes each side and turn on their sides to cook through.
