The restaurant business is one of relationships. If we consider our team, our suppliers, and guest's partners and friends instead of employees, vendors, and customers, we have a true formula for success. In this episode of the Restaurant Rockstars Podcast, I'm speaking with Tom Krouse, the CEO of Donatos Pizza, a dynamic restaurant concept leading its segment with 460 stores. It's not the number of locations that counts, but the relationships they foster and the value proposition they offer their guests through great people. It all starts from the top. Tom learned hospitality at an early age shining shoes in a golf clubhouse, worked his way up through the Wendy's organization before taking a leap of faith with Donatos. Despite great stories and a lifetime of memories, he has only looked forward. Watch or listen as Tom talks about: - Early conversations with Dave Thomas, the Founder of Wendy's - How to not only compete, but dominate in a most competitive food segment - Delivering true value to guests and never skimping on quality - The true meaning of leadership and importance of company culture - Having a marketing mindset for business success - Maintaining margins while maintaining consistency of product and experiences - Doing the right thing, setting an example for the industry, and giving back And of course, my favorites, Tom's “one question to ask your employees”, and his words to live by: “Alignment”, “Plan” and “Execution”. You'll have to listen all through the episode to find out what this can mean for your operation. Don't miss this episode, then go out there and ROCK your Restaurant! Ved. Lavija Šurnaitė

At the age of 30, Spence Sheldon has already lived more than most. He played division 1 basketball, opened his first Donatos franchise at the age of 24, got married and had his first daughter a few months ago. In addition to being an entrepreneur, he is a public speaker, author, podcaster and philanthropist. He now owns 4 Donatos franchises and adores his job. This sounds like a fairy tale, but it wasn't easy for Spence to get here. Battling an identity crisis and multiple addictions in his early 20s, Spence realized something had to change. He began saying "yes" to God's call and started making small improvements each day. 6 years after opening his first franchise, he now understands what it takes to be a leader of people. He also uses his work to benefit others and make a positive impact in the communities in which he does business. This week I chat with Jane Grote Abell, a second generation franchise leader. Herstory is not about how franchising found her, it's how she was born into it the restaurant and franchise business along the way, had the golden opportunity to sell her company to the golden arches, that's right McDonald's and then double down about four years later and actually buy it back. We're talking Donato's today, with Jane Grote Abell, an amazing advocate for women in business, and philanthropy. Today, she is a founding family member and Chairwoman of the Board at Donato's Pizza. Jim Grote founded Donatos as a sophomore in college. His philosophy was simple: 'To make the best pizza and to treat others the way he would like to be treated.' Jim built trust with his customers and a sense of goodwill in the neighborhood. And, with Jim's very first restaurant connected to the Grote house, young daughter Jane, very much grew up in the family business.
How does a fintech professional end up owning multiple pizza units? Having a soft spot for the brand definitely helps. Meet Shwetabh Gautam, the NYC-based pro who took a risk on franchise ownership with four friends he grew up with, and who now own 6 Donatos Pizza units in Cleveland. The Wolf and Shwetabh get into why loving the brand played a big part in jumping on board, how they were offered five more locations even as they built their initial three, and why Donatos sits at the intersection of family pizzeria and massive franchise. You'll also hear how to effectively manage your local teams remotely and why incentivizing success is a key management tool. [13:20] When Jim was, as a teenager, given the offer to buy the pizza place he worked at, was he thinking about how it would affect his future? [23:20] How do you, in hindsight, reconcile the missed opportunities and times you were slighted? [25:45] Where did Jim's inherent sense of principle, his deep-rooted core strength, come from? [31:00] What was the trajectory of Donatos Pizza? How did it come into McDonald's radar? [38:00] How does a family impact the way you run a business? [45:35] Tell us about inventing the Pep-A-Matic, a patented machine designed to slice and apply pepperoni directly to pizza, and your thoughts on manifestation. [50:55] What is Jim's process for manifestation? [58:45] What metaphysical and spiritual practices have shaped Jim's personal practice over the years? Donatos is expanding using any method it can. This week's episode of the Restaurant Business podcast “A Deeper Dive” features Tom Krouse, the chain's CEO, in a conversation about its various growth strategies. Donatos was one of the country's fastest growing chains last year, with system sales up more than 14%. Krouse talks about the chain's interesting history, including the impact of its years under McDonald's ownership and the recession. But he also talks about its unique cobranding arrangement with the casual dining chain Red Robin and why that works for Donatos—and why it won't keep the chain from growing in other ways. He talks about such other expansion strategies as using ghost kitchens.

A Red Robin Gourmet Burgers with Donatos pizza on the menu typically outperform other restaurants, recording higher sales. That's good news for Red Robin, whose turnaround plan called for adding Donatos' iconic edge-to-edge topping pizzas at up to 425 restaurants by 2022. The partnership started off with a bang in early January but briefly paused during the pandemic. Now, Red Robin will soon be adding Donatos to 31 restaurants in Seattle and Tacoma, Wash. That would bring the total to about 80 Red Robin restaurants by the end of October. But what does Donatos, which sports about 165 traditional locations, get from this new partnership? Tom Krouse, chief executive of Donatos, tells the Extra Serving podcast exactly what the partnership is doing for the Columbus, Ohio-based chain. And, his answer might surprise you. “The Red Robin experience taught us that we can operate and produce a tremendous amount of product in a very small space,” Krouse said. Does that mean a ghost kitchen operation is in their future? Tune in to our podcast to find out. Krouse will talk about the company's strategic partnership with Red Robin, as well as the brand's challenges with hiring delivery drivers, gains made in the pizza space, and new growth – both virtual and brick and mortar. Our dime piece episode! Episode 10 is a 10! Two of the dudes ARE RECORDING LIVE (on tape) from the grand opening of Donatos, Jacksonville’s newest, hottest, most electric pizza place. There’s no question that the beers are flowing, the audio quality is questionable at best, their attention spans are even more questionable, and the pizza is unquestionably awesome. The 3rd Dude, while in attendance via electronics, is not in person and has some explaining to do. In honor of the grand opening, the fellas share some of their more memorable restaurant moments of their lives. The boys also speculate in a hypothetical world, what might they get fired from a job for. Tim and RC sales pitch John why the other dude she be given custody of his children should, God forbid, something happen to he and his wife. And of course, everyone’s favorite segment, News of the Weird, presented by Kanga Coolers. The guys’ last episode in the single digits! Episode 9 hits just right. The boys rally from a little too much fun over Memorial Day weekend to deliver another fire episode that includes the announcement of their first-ever live recording, Tuesday June 2nd at the brand new Donatos in Jax Beach. Come by, say hey, and grab some Za! They recap the enormous success that was Capital One’s The Match between Tiger Woods, Peyton Manning, Phil Mickelson and (glory handicapper) Tom Brady. Two brand new segments feature a riveting game of two lies and a truth and some artistic readings of some very strange Amazon reviews. News of the Weird presented by Kanga Coolers, as always, is a major hit. RC sounds off, while Timmy continues to show how little he knows about bras. And John tries to figure out how he is going to get permission to actually attend the live recording scheduled for Tuesday. It's a literal bone-cruncher in this weeks confession. The Toast tells Ulrich all about the many ways he has hurt himself over the years. From licking hot radiators, playing soccer, imitating Star Ship Troopers, and more, we see just what lengths The Toast will go through to get out of doing something he doesn't want to do. If you're eating ice cream, you'll want to slow down after you listen. And just what is under the tape of the Donatos bag? No matter what it is, it's going to be some horrible sh*it.
As National Pizza Month comes to a close, we are ending on a high note by talking to three people who create pizza toppings that are out of this world. From a mussel pizza (with mussels still in their shell) to one based on Showtime's "Dexter," we discovered how they come up with these pizzas and how they market the oddball concoctions. Welcome to "The Great Food Debate," where we talk about the best food, drinks and more in central Ohio. Three weeks ago, we made a laundry list of the 'best ofs," from favorite deep dish to best high-end pizza found in central Ohio. Two weeks ago, we interviewed pizza shop owners from Bexley Pizza Plus, Borgata Pizza Cafe and Mama Mimi's Take N' Bake Shop about how to make great pizza and where they go to find a good slice in central Ohio. Last week, we toured the Donatos test kitchen and made three pizzas, including their most popular pepperoni pizza and the Founder's Favorite (the top choice of managing editor Lee Cochran). This episode's panelists are: • Jason Biundo, part owner of Mikey's Late Night Slice (locations in the Arena District, Clintonville, Short North and downtown Columbus) • Heidi Oliver, director of promotions at Mikey's Late Night Slice • Peter Danis, owner of Figlio Wood Fired Pizza (locations in Grandview, Upper Arlington and Dayton) Where do they go to find the best pizza in central Ohio? • Jason's pick: Flying Pizza (Former location: 1812 N. High St., Columbus) and Buckeye Slice (Former location: 5216 Bethel Road, Columbus). • Heidi's pick: Pizza Hut (Editor's note: Heidi mentioned that her pick was somewhat persuaded by her pregnancy. Congratulations!) • Peter's pick: Harvest Pizzeria (Locations in Bexley, Clintonville, Dublin, German Village and Grandview Heights) Other pizza places mentioned in this episode: • Sizzle Pie (locations in Eugene and Portland, Oregon, and Seattle, Washington) • &Pizza (pronounced "And pizza") (locations in seven states; the closest to central Ohio would be Washington, D.C.)
