Noble Village, known for the popular Noble Fish sushi restaurant and White Wolf Japanese patisserie, will be opening two new Asian food halls in Metro Detroit. The first, a 12,000-square-foot location, will be in Clawson at the site of the existing Noble Fish and White Wolf locations. This hall will incorporate the existing brands, expand seating and offerings, and include a ramen counter and a cocktail bar. The Clawson food hall is expected to open in phases beginning in March and include an adjacent grocery section and a larger grab-and-go selection. The second project, a massive 34,000-square-foot food hall in Novi, will be at the current location of One World Market, a Japanese grocery store owned by the same group. This location will be significantly larger and include more food concepts including a cocktail bar, an Asian fried chicken concept, a sandwich concept, an Izakaya restaurant, an expansive second floor theater space, and an expanded marketplace including an Asian spirits section. It is projected to open within a couple of years. Doran Brooks, director of business development for Noble Village Group, joined us on the show to talk about not only the two major upcoming expansions, but his story and things he's learned over the years as a restauranteur. Host Bree Davies and producer Olivia Jewell Love dig into the uncertain future of the food hall trend, plus another addition of landlord watch featuring a mess left behind by X Denver — the “coliving” apartment complex and private social club that made big promises but now has tenants crying foul. Over the holidays, we're sharing our favorite episodes on the hottest topics of 2023. And this year, a new food trend really took over our town. Lately, buffets seem to be shuttering left and right, and it seems like food halls are rising up to take their place: New food halls have popped up at Durango Station, the Cosmopolitan, downtown's Fremont, and even off-Strip centers like the Uncommons. So why are food halls all the rage now, and is this the death knell of the iconic Vegas buffet? In this episode from February, our colleague Vogue Robinson talks with food influencer Phil Tzeng, A.K.A. Las Vegas Fill, about the rise of food halls, the best ones to visit in Vegas, and where the Vegas buffet is headed. Are you team food hall or team buffet? Stine Aasland's dream of creating a Nordic Waffle Wafflelution has come true, and that means we get to delight in sweet and savory, handheld, heart-shaped waffles all day long.  Stine, known as Norway's Waffle Queen, came to America in 2015 with two suitcases, a waffle recipe, and a dream. On today's show, Stine and Nordic Waffle's CEO, Jeremy Ely, talk about everything from selling cozy, soft and thin waffles at Valleyfair to the Minnesota State Fair, to what happened when a pandemic shut down their main revenue stream, her advice to people with a business dream, and why they like to partner with companies close to home.  Stine, Jeremy and I talk about what we add to our Nordic Waffles to make them extra special.  And then Stine unexpectedly advises us on the only one ingredient she says is not very good on a Nordic waffle. And if you want to make the Scandi snack at home, Stine shares her basic Norwegian waffle recipe, which includes her two most special ingredients—cardamom and love.
