These non-traditional grains allow craft distillers to differentiate their products and push the boundaries of classic whiskey profiles.Common Alternate Grains and Their EffectsDistillers choose specific alternative grains primarily for their impact on the final spirit's flavor profile and mouthfeel.Oats: Used to create an exceptionally creamy, oily texture and a dense mouthfeel. They add a mellow, oatmeal-like sweetness and are often used as a "balancer" to smooth out harsher grains like rye.Millet: Known for providing a gentle sweetness with distinct nutty and anise-like (licorice) undertones. It is historically used in African brewing and is prized by some for producing a smoother spirit than corn.Quinoa: Imparts a bold, nutty, and earthy character. This week on The Whiskey Trip Podcast, Big Chief takes listeners for a ride to San Antonio to sit down with Tim Crofton, the distiller behind Ranger Creek and a fellow Army Veteran. This episode goes beyond the glass. It is about service, transition, discipline, and building something meaningful after the uniform comes off. Founded in 2010, Ranger Creek was one of the first brewery and distillery combinations operating under one roof in Texas. They were putting barrels away before Texas whiskey had national momentum and before American single malt became a headline. They built this brand in South Texas heat that does not forgive shortcuts. Barrels expand, contract, and mature aggressively. You either stay disciplined or you lose control of the process. Ranger Creek chose discipline. Tim and Big Chief talk about how military service shapes leadership inside a distillery and how that mindset carries into daily operations. As fellow veterans, they also discuss the Department of Defense SkillBridge program and Ranger Creek's role in helping transitioning service members find purpose in the craft industry. Giving veterans a pathway from service to skilled trade is not just smart. It is leadership in action. The first pour of the episode was State and Republic Wheated Bourbon. Wheat brings a rounded sweetness and approachability, but Texas oak still drives structure and backbone. It represents the steady foundation of Ranger Creek's bourbon program and the control required to age whiskey in a climate that accelerates everything. Next came the Distiller's Vault Rye Whiskey. This pour shifted the tone. Rye carries natural spice and intensity, and Texas maturation amplifies it. Black pepper, baking spice, oak, and heat layered together with authority. The Vault series allows Tim to showcase barrels with bold character while still maintaining balance. This rye had grit. It demanded attention. In the second half, the conversation moved into American single malt, a category Ranger Creek has been serious about long before it gained mainstream attention. Texas Landmark The Original No. 2 American Single Malt delivered roasted malt, dark chocolate notes, and structure built for Texas aging. It is confident, direct, and distinctly Texan. Then came the 307 Tricentennial Series Single Malt. Aged in apple brandy barrels and then finished for 4.5 days in an Amburana barrel, it became something layered and memorable. The apple brandy influence brought fruit and sweetness, while the Amburana added cinnamon, baking spice, and warmth. Apple strudel in a glass. That 4.5 day finish required precision. Too long and it dominates. Just right and it transforms the whiskey. We closed with the Texas Landmark Cask Strength Mesquite Smoked Single Malt. This was the exclamation point of the episode. Mesquite smoke is bold and unmistakably Texas, but here it was controlled and intentional. The smoke wrapped around the malt instead of overpowering it. At cask strength, it delivered depth, intensity, and a finish that stayed with you. It might be the best single malt I have ever had. This episode is about Ranger Creek's history, evolution, and the work behind every barrel. It is about service, transition, heat, discipline, and building legacy in Texas. Good whiskey. Hard work. Real leadership. Take the ride.

Shelby Houston In Memory of Richard Houston On December 3rd, 2021, Richard Houston, a 21-year Mesquite PD veteran, answered a domestic disturbance call and tragic events unfolded and he did not make it home that night. Being a family member or a friend of a first responder can be very rewarding as you have a front row seat of a true servant, a role model, and a hero. However tragedy can watch from afar and show up and cause a loved to receive a life changing phone call that will shape everyone's future. Richard was a dedicated husband, incredible father to his children and a dedicated peace officer that left this world too soon.  Before he responded to that call and left this world he sent his daughter, Shelby, a sweet and reassuring text that he and her mom will aways have her back. At her father's funeral she gave a breathtaking eulogy that inspired so many as it truly showed the beautiful side of humanity as Shelby spoke of forgiveness. This is her story of resiliency, faith and the incredible journey she is now a part of. The ATO is honored to sit down with this amazing young woman as she tells her story of her new “Why” in life and how she honors her father. Happy New Year from The Bourbon Road! Jim and Todd ring in the New Year at the Bourbon Road bar with one final sample show to close out 2025. With the "Whiskey of the Year" episode just around the corner, the hosts are clearing the decks and diving into four distinct and intriguing pours that range from experimental finishes to classic Kentucky profiles. It's a diverse lineup that takes their palates on a journey from the coast of France to the American Southwest. The tasting begins with a luxurious offering from Bardstown Bourbon Company's Distillery Collection: the Normandy Calvados Brandy Barrel Finish. This blend of 12 and 13-year-old Indiana bourbons was finished for 28 months in apple brandy casks and an additional four months in toasted oak. Clocking in at 104.2 proof, it delivers a "flavor explosion" of honey crisp apple, vanilla cream, puff pastry, and a rich, compote-like texture that leaves the hosts searching for descriptors like "candle nose" and "apple pie." Next, they take a sharp turn to Oxnard, California, for Sespe Creek Distillery's Warbringer, a Mesquite Smoked Southwest Bourbon. This 98-proof experimental pour features mesquite-smoked corn and malted rye, resulting in a savory, polarizing profile. Todd and Jim pick up notes of "burnt all-beef hot dogs," barbecue smoke, and pumpernickel, describing it as a "smoky beast" that definitely ruffles some feathers but delivers on its promise of uniqueness. Returning to the Bluegrass State, the hosts sample the inaugural release from Jackson Purchase Distillery: the Full Proof. Produced in Hickman, Kentucky, by Master Distiller Craig Beam and Assistant Master Distiller Terry Ballard, this 4-year-old bourbon (roughly 117.8 proof) punches above its age class. It offers a definitive, classic bourbon profile with notes of buttery caramel, brown sugar, and a viscous, oily mouthfeel that Jim calls the "Wikipedia picture of bourbon." Finally, they explore the New Riff High Note Confluence Project Volume 1, a 100% Wheat Whiskey. This 6-year-old expression uses a complex mash bill of Red Turkey Wheat and various malted wheats. At cask strength, it surprises the table with a dark, complex profile featuring notes of cotton candy, mint tea, medicinal cherry, and a "Good & Plenty" black licorice finish that showcases the depth of heirloom grains. The episode wraps up with a "Winner Winner Chicken Dinner" segment where Jim and Todd attempt to rank these four very different whiskeys. Nearly a decade ago, a pension crisis in the police and fire retirement system put Dallas in a precarious financial position, making the city a national cautionary tale. The city's worst years in the past decade were 2016 and 2017, when Dallas had a $528 million deficit amid an exodus of police officers stemming from the pension crisis. Thirty-two year old Matthan Lough of Crandall was arrested last week after Mesquite police obtained a warrant on child grooming charges after investigators received a report in October about possible child grooming at the Christian Center of Mesquite. Lough worked as a teacher and coach at Pioneer Technology and Arts Academy, a charter school, in Mesquite; an office tower in Dallas' Arts District has traded to a new owner. An affiliate of TRT Holdings, a Dallas-based investment firm that owns the luxury Omni Hotels & Resorts chain, purchased St. Paul Place from Pacific Elm Properties. Learn more about your ad choices. He had thirty sons, and thirty daughters he gave in marriage outside his clan, and thirty daughters he brought in from outside for his sons. And he judged Israel seven years. Then Ibzan died and was buried at Bethlehem. After him Elon the Zebulunite judged Israel, and he judged Israel ten years. Then Elon the Zebulunite died and was buried at Aijalon in the land of Zebulun. — Judges 12:8-13 After Jephthah's short and turbulent reign, two quieter judges followed: Ibzan and Elon. Their stories don't include major battles or dramatic miracles. Instead, their legacies were marked by stability, family growth, and years of peaceful leadership. Sometimes the greatest gift God gives His people is not a warrior or a spectacle—but a steady, faithful presence. In a world addicted to drama, it's easy to overlook the beauty of quiet faithfulness. We chase excitement, headlines, and "big moments," but God often works most powerfully through ordinary obedience lived out day after day. Ibzan and Elon may not be household names, but for seventeen years, Israel enjoyed stability under their leadership. Families flourished, communities grew, and peace prevailed. That's not flashy—but it's priceless. Your life doesn't need to be loud to be significant. Faithfulness at home, consistency at work, serving in your church, investing in your children, showing up for friends—these are the building blocks of a godly legacy. Don't despise quiet seasons. Embrace them. Drama fades, but faithfulness endures. God honors steady obedience more than fleeting excitement. ASK THIS: Do I overlook the value of quiet, steady faithfulness in my own life? Am I chasing excitement instead of embracing ordinary obedience? How can my consistency build peace and stability for those around me? DO THIS: Commit to one act of steady faithfulness today—pray with your kids, encourage a friend, serve in your church, or follow through on a promise. Ordinary obedience makes an extraordinary impact over time. PRAY THIS: Father, thank You for the gift of steady faithfulness. Teach me not to chase drama but to embrace obedience. Mark Kellner and I discuss his October 24, 2025, article in The Epoch Times where he states that more "Americans now say religion is gaining influence in national life than at any point in the past 15 years," which comes from a Pew Research Center report on October 20, 2025. Mark and I have been friends for 30 years and have discussed many topics related to faith and the Churches of God.  He is a well-known author and a great person to talk to.  This is our third podcast.   Career highlights Kellner began writing about issues of faith and freedom in 1983.   From March 11, 1991, to January 18, 2014, he wrote some 1,200 weekly—and for about 18 months, semi-weekly—technology columns for The Washington Times.   He authored a religion-news column for The Washington Times titled “Higher Ground,” which debuted January 25, 2013.   From February 2014 to September 2015, he served as national reporter for the Deseret News in Salt Lake City.   From 2021-2024, Kellner was a national “Faith & Family” reporter for The Washington Times.   He is now based in Mesquite, Nevada.  Areas of focus & contributions Kellner has covered technology topics (especially earlier in his career) and later moved strongly into religion, faith institutions, family issues, religious liberty, and cultural trends.   He has also contributed to other outlets such as Religion News Service, Christianity Today, and various magazines/newspapers.  1 Kellner is a philatelist (stamp collector) and is a member of philatelic societies including the Royal Philatelic Society London, the Collectors Club of New York, and a life member of the American Philatelic Society.   Notable publications He is the author of God on the Internet.   He also wrote a book in the “For Dummies®” series (about WordPerfect or other software) during his technology-writing era.  Significance in journalism Kellner's career reflects a breadth of reporting: from technology journalism to deep engagement with faith and family issues in the public square. His long tenure at The Washington Times (both in tech and faith reporting) gives him significant institutional memory in those realms. Because of his religion and family-focus work, his writing often intersects with cultural, social and values-based dimensions of journalism. Current status As of his website update (2024–25), Kellner remains a freelance journalist available for assignments and has experience covering swing-state elections (for the New York Post in Nevada).  He continues to maintain his portfolio of stories on faith, family, culture and technology.
