Here is our version of that classic, fire-side story which will hopefully warm your heart – ‘Twas the Night Before Show Day.
In the latest episode of The Digital Restaurant podcast, we delve into the ever-evolving landscape of the restaurant industry, particularly focusing on the technological innovations reshaping dining experiences. Our discussion begins with the intriguing shift in the ghost kitchen segment, highlighting notable industry players like Kitchen United and Crave. We explore whether the concept of ghost kitchens was merely a pandemic phenomenon or a fundamental shift in the food service industry, examining the transition of these kitchens into more sustainable, tech-driven models. We then transition to a captivating discussion on the blurring lines between the front of house (FoH) and back of house (BoH). Illustrating this trend, we spotlight a new fine dining restaurant in Brooklyn, which merges these traditionally separate spheres, providing diners with a more immersive and transparent experience. This segment delves into the broader implications of such innovations for casual dining and traditional restaurants, emphasizing the importance of experiential dining, transparency, and involvement in modern culinary experiences.Another critical topic we cover is the surge in drive-thru and throughput optimization in the fast-casual sector, using Modern Market as a case study. We discuss how this trend is not only enhancing customer experience but also streamlining operational efficiency, reflecting a broader shift in consumer preferences and dining habits. The episode also features a thought-provoking segment on Walmart's technological advancements and their potential implications for the restaurant industry. We explore how Walmart's investments in AI, robotics, and digital marketing could set new standards for the restaurant sector, particularly in improving customer experience, store advertising and operational efficiency.Lastly, we delve into the recent anti-trust investigations within the EU concerning food delivery marketplaces. This discussion highlights the growing scrutiny over the balance of power between delivery platforms and restaurants, exploring the impact on competition, pricing, and consumer choice. This episode of The Digital Restaurant not only offers deep insights into current trends but also forecasts the future of dining, from ghost kitchens and fine dining experiences to the integration of technology in fast-casual settings. It's a must-listen for anyone keen on understanding the dynamic interplay of technology, customer experience, and operational efficiency in today's restaurant industry.Support the show

There are few thought leaders who work behind the scenes to create, develop, and deploy programs while simultaneously being the face of the brand. What does it take to find success on both ends? Today we've invited internationally recognized presenter, content developer, business leader and coach Curtis Bateman! He is currently the Vice President of International Direct Offices at FranklinCovey, and was previously the President and CEO of Red Tree Leadership before orchestrated a buyout to FranklinCovey. With few thought leaders working both the back and front of the house, Curtis gives us some insights into what it takes to be successful doing both. He tells us about the passion and extra hours that are required to practice what you preach. However creating doesn't have to be a solo job, in fact, Curtis shares how having Brain Buddies can help sharpen your skills. Having a knowledgeable team around you to help research stories and ideas as well as draft or polish content creates a high quality end product. Curtis tells us how being in the market place every day while creating content creates a constant cycle of feedback as content goes out to the audience, gets live reactions, and can be revised based on that input. This system has been used to pressure test everything from their framework to his newest book Change: How to Turn Uncertainty Into Opportunity. Having had a boutique company that exited to FranklinCovey, Curtis fully understands what it takes to position yourself for acquisition. While each instance is different Curtis shares how having principle-based content that matched up with the prospective buyer, having a Fortune 50 client, and thought leaders with significant industry experience that were capable of making contributions inside the new organization all played a role in a successful acquisition. Three Key Takeaways: · Content creation doesn't have to be a single player game. By working with others you can polish your skills and elevate your content. · Taking ideas to your audience and revising based on feedback can give you real time advice on where the market agrees or disagrees with your content. · Exiting a boutique firm for a bigger company means you don't get to touch every aspect of the business anymore. You have to learn to trust others.

The last 2 months have been a pressure cooker of change, ideas and Massive. Imperfect. Action. We launched the offer we've been cooking up all year (hello Freeceo!), hosted a TEDx event, and farewelled a bunch of longtime clients in order to make space for the new journey. I've had to draw on every lesson I've learnt in the last 6 years - and apply it. To truly own my CEO title and stand firm knowing that no-one else is coming in to save me. There's been a lot of uncomfortable conversions. With myself and others - lol. Serious deep thinking. And painful pruning. Letting go of what's good and leaping towards greater - in faith. The result - more time. More freedom. And the foundation to create even more Impact. What I had to do was to pare back everything. Start again in so many ways. The first step - getting the back of house in order. Super un-sexy. Until it's done. Then it's a total turn on because having the back end organised is absolutely LIBERATING. Need a little of that? Tune into this week's episode of the podcast! We're be back weekly now, Tuesdays.
From Teenage Skater Kid to Chef Extraordinaire: Chef Shon Foster's Wild Ride This episode features a conversation with Chef Shon Foster, executive chef and owner of Sego restaurant in Kanab, and Pete Codella, Go Utah's managing director of business services. The restaurant serves a selection of regional New American cuisine focusing on what makes the country unique and eclectic through its social plate dining concept. Foster shares his story of slowly starting a business by selling one sandwich at a time and building a long-term game plan, turning a job into a career, and gaining an appreciation for the finest ingredients. He also shares the importance of making mistakes, his food philosophy that food should tell a story, and why food is important to a community's culture. Foster comments on Utah's foodie scene, the state's recent gain in notoriety as a must-experience dining destination, the countless mentors that made him the chef he is today, and much more.

We're still coming to you from our hotel room in Costa Rica, and our time here has inspired us to talk about the difference between front and back-of-house. These are hospitality terms, but the principles can be applied to all product businesses. Front-of-house is when you're facing the customer. Think receptionists in a hotel or wait staff in a restaurant. In a product business, this could be your branding, customer service, or even your brick-and-mortar store. The front-of-house role has a human element to it, meaning that you are interacting with the customers, and making sure they are satisfied with your product and company. Back-of-house is more the operational side of things. In a hotel, this would be the cleaning staff, or, in a restaurant, it would be the chef working in the kitchen. In your business, “back of house” refers to pricing and financials, research and development, production and inventory, or shipping and fulfillment. When you start a business, you're likely wearing all of the hats within your company. As you start to scale and grow, you'll need to start delegating to reach that next level in your business. When you've reached this point, it's time for you to decide what your zone of genius is within your company. By doing so, you're able to really focus on what you're doing instead of struggling to keep up with all the hats. Back of house vs. Front of house... fight. Anyone else get a mortal kombat throw back? Haha. In this episode we talk about the front house's perception of back of house. This seems to be the age old conversation that everyone in the restaurant industry has... The question of who does more? Who's more important? Whos job is more difficult? The reality is we all have our roles to play and we're all in it together.

Working as a dish-washer all the way up to executive level management, Patrick has developed a service-centered style where knowledge, passion, and a drive to excel are paramount. After almost a decade of learning the trade by working in New York City, Patrick, bound to his North Carolina roots, moved his family back South and was hired as Butter NC's General Manager. Under his leadership, Butter NC became established as the premier nightclub establishment in the Southeast and received numerous awards for excellence in service. Guided by his entrepreneurial spirit, Patrick was in search of a strategic, collaborative partnership to open a new type of restaurant that complements his passion for good food and his detailed business acumen. Friends and former colleagues Alejandro Torio and Mills Howell expressed similar thoughts and their combined strengths led to the creation of 5Church Restaurant. How will you promote yourself? 2 Sharp Chefs met Chef Joana Rodriguez while they were all feisty line cooks working the opening at Bazaar Meat by Jose Andres on the Las Vegas Strip. The young cook displayed so much skill and potential already. Rodriguez was a badass, but she kept her “head down and worked hard” as many will tell you to follow in the professional kitchen. She moved on to help open Carbone at Aria, Chef Daniel Humm's Nomad at Park MGM, and Chef David Chang's Majordomo Meat & Fish - where she's now the Executive Sous Chef. Did we mention Rodriguez also did a stint at multiple Michelin starred Joel Robuchon? So what does she want to tell all of us about getting ahead in the hospitality business? Speak the F up! The chef tells Lorraine Moss and Louiie Victa how she gets cooks to be team players, why she's hiring most candidates who want to work right now, and what she does when guys walk right by her when looking for the boss. In institutional environments, there is a clear distinction between spaces that are ‘front of house' and spaces that are ‘back of house'. But as we move away from institutional approaches, this distinction starts to blur very quickly. Join Jennifer and Max as we talk to 3 great guests – Jude Rabig, Carrie Chiusano, and Damian Utton about their experiences educating leadership, frontline staff, family, and communities about how operation and design can make their communities feel more like home. Our first interview is with Jude Rabig, a nationally recognized leader, speaker, and change agent who served as the first Executive Director of the National Green House Project. She assisted in shaping the model of care and leading the implementation of the first Green Houses in Tupelo, Mississippi. Through her company RabigConsulting, she provides customized change consultations to help communities develop innovative strategies for change in long-term care. She has worked with scores of organizations nationally and in Canada to develop small house communities. In addition to providing Small House consulting nationally, she also founded and leads Lifespace Senior Services based in Schenectady, NY to provide home and community-based clients with support for their holistic well-being with an emphasis on thriving despite limitations or frailty. She has served in many roles including Director of the Office for Aging and Continuing Care in Oneida County New York and Professor of Gerontology at Utica College. In each of these positions, she has worked tirelessly, exhibiting a commitment to fighting ageism, and championing programs and practices that support autonomy, dignity and enhanced quality of life for older adults. She is a former Atlantic Philanthropies, Hartford Foundation Practice Change Fellow, and a Center for Medicare and Medicaid Services Innovation Adviser. She holds a Ph.D. in gerontology and a business certificate from Stanford School of Business. Then, we speak with Carrie Chiusano. She has 36 years of long-term care experience with Presbyterian SeniorCare Network, many of which were spent helping to shape and implement the Woodside Place philosophy of specialty care for persons living with Alzheimer's disease and other related dementias. Prior to being appointed Executive Director for the Presbyterian SeniorCare Network Dementia Care Center of Excellence in January 2016, Carrie served for five years as the Administrator for Woodside Place of Oakmont, which opened in 1991 and was one of the nation's first dementia-specific residential community specifically designed to meet the holistic needs of older adults living with Alzheimer's and related dementias. In her leadership of the dementia Center of Excellence, Carrie is responsible for the integration of dementia care services across the various settings that comprise the Network as well as the family caregivers coping with the disease. In addition to her service on numerous, industry association boards, Carrie has become a certified trainer for the National Council of Certified Dementia Practitioners in dementia care. Our last conversation is with Damian Utton, who has been with Pozzoni Architecture since 1997 and is now a Director, bringing his wealth of experience in design for older people to his coordination and leadership of research and development at the firm. In the late 2000's, he spent a sabbatical touring and researching more than 100 dementia environments around the world, and the findings became his book: ‘Designing Homes for People with Dementia'. He subsequently has authored and co-authored books on designing for older people and people with dementia and writes frequently for the care press. Long ago there was a young street graffiti artist that came to Los Angles from Oceanside California. Unknowing that one day he would grow and work so hard in the Culinary industry, he lived thru the hard truths and glorious victories that cooking professionally would bring. With time in the food truck scene and years in Fine Dining this kid is now cooking for himself and others who think and cook like him... No boundaries and No rules. Diners and industry veterans alike are familiar with front and back of house. In this episode we look at a new concept designed to make restaurant workers' pay more equitable - regardless of their position on the staff. It's called heart of house. Jesse Cool designed and implemented the concept at her Bay Area restaurant, Flea Street. She dives into the disparity between front and back of house workers that stems from the tipping system and explains why she abandoned that for an equally distributed service charge. Pay has shifted dramatically and her staff members' roles have changed too. Jesse is most inspired by the sense of unity she feels at Flea Street after implementing heart of house, but defends the model from an economic standpoint as well. Have a question you want answered? From the moment Ciro Fodera, chef de cuisine of Capo South Boston, joined the team as sous chef three years ago, he's been hell-bent on demolishing the front- and back-of-house divide, and on building a cohesive, happy team. Thanks to his efforts, he hasn't had to replace a cook in over a year. Thanks for listening to The Garnish! The guys discuss the back of house roles and how they interact with the front of house to keep things moving.
For the first time this season, we assemble a few trusty members of our Chef's Council for an All Shop Talk episode about one of the least considered members of the kitchen team: The Dishwasher. Many of the best chefs in the USA accidentally began their careers doing this important job, including our guests: The Finch's Gabe McMackin and Sous Chef author Michael Gibney. Gabe and MIke talk about dishwashing as a gateway to the kitchen lifestyle, the role of a dishwasher in the pro kitchen, and what makes a great one. A surprisingly fascinating topic tackled in depth.
On the same day the new American president announced his plans to force undocumented immigrants out of the country, the USA won the Bocuse d'Or for the first time in the event's 30-year history. How do you square the deadly serious with the seemingly frivolous, and what do these developments mean to cooks and chefs? Jimmy and Andrew attempt to make sense of it all, and also take a look inside the 25-year-old tradition known as Restaurant Week.
