For many of us with disabilities, travel is not easy. We know that leaving home and going somewhere else has its own set of challenges. It can be difficult to visit a theme park or go to a baseball game, even one near our home. Our guest for this episode is Cory Lee, a wheelchair user and self-described “travel addict” who will share with us how and why accessible travel is possible and also fun! He shares his journey, starting with a trip to Walt Disney World at age four and his first international trip to the Bahamas at 15. In 2024, he traveled for 152 nights, working with destinations to promote accessibility. Corey emphasized the importance of early planning, often starting 6-12 months in advance. He highlighted the challenges of air travel and the need for positive attitudes. His website, Curb Free with Corey Lee, features 630 travel guides from 52 countries. He also co-authored a children's book, "Let's Explore with Core Core," to inspire accessible travel.

A three-star Michelin chef has opened a burger joint in San Diego. It's called Tanner's Prime Burgers. Exclamation point. Another one. Some hyperactive emoji. Pass the fries. The chef is Brandon Rodgers, who cut his teeth in San Diego years ago. He originally moved here to work with Tony DiSalvo, a nationally known chef who was heading up the former Jack's in La Jolla. Rodgers then joined Gavin Kaysen at El Bizcocho (now Avant). He cooked on Iron Chef with Kaysen, and their team defeated Michael Symon in “Battle Octopus.” Rodgers then went to Napa, where he spent a year at the French Laundry and met fellow chef Corey Lee. He helped Lee open Benu, and the restaurant would get three Michelin stars with Rodgers as chef de cuisine. Brandt Beef is the force behind this exclamation point. The family owned beef company in San Diego, with their headquarters above Ranch 45 in Solana Beach (their ranch is two hours east in Brawley). They're pretty renowned in chef circles because of the ethos—a multigenerational family operation, treat their animals right, no drugs, no antibiotics, single-source beef, no B.S. Just a highly respected, small-ish operation in an industry that's dominated by four major multinational beef companies. Tanner's is named after Eric Brandt's son. So this week on HHH, David and I sit down with Brandon and Eric and hear the story. And we crush a burger made with New School American Cheese (you can hear about this project in last week's episode with chef Eric Greenspan), some beef tallow fries (the best kind), an ice cream sandwich made with beef tallow and Brandon's wife's cookies. It is a phenomenal burger. And Rodgers, Brandt, and Greenspan will be serving that burger, plus another specialty of Eric's at the Del Mar Wine + Food Festival this weekend.

He has been actively involved in the real estate industry for nearly 25 years, and his company focuses on helping property owners unlock the value of their properties through zoning, entitlement, and redevelopment. He works closely with his wife, Bhavna, who runs her own successful real estate general contracting development and owners representation firm, and they live in the Forest Hills neighborhood of DC with their two youngest children, Sara and Ian, who are in middle and elementary school. While Corey and Bhavna met in grad school at UNC Chapel Hill, they still find a way to remain proud of their oldest daughter, Ida, who recently graduated from Duke, as a member of the Class of 2023. Corey earned his Political Science and Systems Engineering degree at the United States Military Academy at West Point and completed his JD and MBA in Real Estate Concentration at the University of North Carolina, Chapel Hill. The nexus of climate change, public health, and animal welfare present a challenge to the hegemony of the Irish state and neoliberal European governance. Efforts to resist animal rights and environmentalism highlight the struggle to sustain economic structures of inequality in a society caught between a colonialist past and a globalized future.  Animals in Irish Society: Interspecies Oppression and Vegan Liberation in Britain's First Colony (SUNY Press, 2021) explores the vegan Irish epistemology, one that can be traced along its history of animism, agrarianism, ascendency, adaptation, and activism. From its zoomorphic pagan roots to its legacy of vegetarianism, Ireland has been more receptive to the interests of other animals than is currently acknowledged. More than a land of "meat" and potatoes, Ireland is a relevant, if overlooked, contributor to Western vegan thought. Corey Lee Wrenn is Lecturer in Sociology at the University of Kent. That's always my go-to, and my favorite. It's so easy. It's so delicious. There's nothing like blending the pesto up in the blender and then taking off the lid and got all hot and steamy smell. It is one of the best smells I've ever found in the kitchen. And then if you want to be a little bit more challenging to yourself, there's always that Egg Yolk Ravioli you can make. It takes a little bit more time and precision. Try to fold in egg yolk into your pasta, and keep it whole where you get this amazing sauce from the egg yolk after you break it open. It was at The French Laundry where Sandra met her future husband Nick Arnerich, (episode 403). In 2013 discussion of opening their own restaurant began to reverberate. Shortly after Renata was born. Today Sandra and her husbands are the owner/operators of two restaurants with the addition of Figlia.

Danielle Alvarez studied art history, but luckily for us, she realised that it was food that monopolised her thoughts - after all, she can happily identify the “eggshell crust” on a Cuban sandwich and was always prioritising her next cooking project. So she decided to spend her life in kitchens. Danielle's first-ever gig was at The French Laundry, Thomas Keller's three-Michelin-starred Californian institution, where she was challenged by a complicated egg dish that often ended up in the bin. The head chef at the time was Corey Lee, who went on to open Benu (one of the best restaurants in the US, according to David Chang), and she got to know the “shaking in and shaking out" ritual that ruled that establishment. Then she spent four years at another legendary restaurant in California: Alice Waters' Chez Panisse, where there were no official recipes and the kitchen was often run by painters, businesspeople or creative types who had no formal cooking background ("Alice really wanted that in her kitchen, she didn't want chefs"). The restaurant was famous for presenting just a perfect peach for dessert.  A fateful trip to Australia eventually led to her being signed to Merivale and, after two long years (and gigs at other Merivale restaurants, such as Coogee Pavilion and The Paddington), Danielle finally opened Fred's in late 2016. It's a place unlike anything else in Sydney – it's inspired by her time in California as well as her relationships with unique producers (like Fabrice Rolando of Farm First Organics in the Blue Mountains, who grows bronze fennel and olive herb, rocket that tastes like peanut butter and asparagus that people have fought “wars” over). In this podcast, Danielle also talks about fighting fire to create her menu (which involves everything from mastering coals and wood and letting stringed lamb spin by the fireplace), the challenge of making the perfect bread - and what it's like when you work in an incredibly open kitchen and there's nowhere to hide from diners and critics.  Plus, what it was like collaborating with Nadine Levy Redzepi on a guest dinner for March Into Merivale, the Cuban food that she grew up with and her favourite places to eat and drink in Sydney.

Ammoye was born in Jamaica, moved to Toronto, Canada and formed a church group called “Sisters In Christ”, formed an organization called "The Voices of the Underground Artist Movement"(The Voices), an organization designed to give artists with similar mind sets the opportunity to perform and promote their music. Influenced by Reggae, Rock, Hip Hop and Soul, Ammoye worked with Dubmatix and the album ‘Renegade Rocker', performing the chune “Push”. Other artists on the album include Sugar Minott, Micheal Rose, Alton Ellis, Willi Williams, Pinchers, Linval Thompson, Wayne Smith and Ranking Joe, she has also worked with Sassales and Version Excursion who produced her E.P. entitled “Kicking Rocks” (available at www.versionexcursion.com). Currently being managed by Kaya Entertainment, Ammoye consistently travels across Canada and the U.S.as she works with greats such as Kreesha Turner, Michael Buble, Corey Lee, Anjulie and a host of others. In between tour dates, Ammoye is working on her debut album which will include musical productions from Eric Vani aka Rise Ashen. A fusion of reggae mixed with dance, soul, R n B and consciousness.
