Some of you may be aware of my affection for BBQ. Over the years, that affection led me to learn to grill and smoke various kinds of meat. I will tell you that my family and I have enjoyed the journey for the most part. One of the challenges of learning to season the meat the way I want it is that I regularly experiment with different flavors. The reason for this is that I find that there seems to be something lacking in the flavor profile for me. In other words, I am chasing something close to perfection. Where my BBQing is concerned, I am somewhat trapped by my lack. But that is what lack does to us. It traps us. It points to a deficiency that quietly permeates the things we claim we want. Our hearts are held captive by our lack. The question for us is...What is your lack? Crazy Gringo BBQ began well before 2019, without me even realizing it. Various experiences in my life led me to discover what brings me peace: cooking for people! I particularly enjoy cooking outdoors on grills, although I'm not limited to that. My culinary journey started when I was a young boy. I joined Cub Scouts around the age of five, and I began cooking shortly after that, particularly during camping trips. I remember planning the menu for our weekend camping excursions and cooking meals with my patrol. We often used a camping stove, a hiking stove, a Dutch oven, or a BBQ. I treasure the memories of these events and the camping trips I took with my dad. One dish that stands out is a Cornish game hen and wild rice recipe we prepared in a Dutch oven, always paired with a berry, peach, or apple cobbler for dessert. As I grew older and moved on from Boy Scouts, my father continued to love cooking and BBQing as a way to bring our extended family together. He truly had the right idea—food does bring people together! I vividly recall one occasion when all our aunts, uncles, and cousins gathered at our home. My dad bought all the ingredients and printed out recipes for everyone, and we all cooked together in my parents' kitchen. That experience ultimately shaped my goal: I love helping those who want to learn or are interested in cooking. When my wife and I purchased our home in 2012, my parents gifted us a BBQ. My dad's passion for outdoor cooking was obvious, and this gift confirmed my own love for it. We cooked together several times at our house and at my parents' place. My dad particularly enjoyed grilling ribs or burgers. Like me, he would also cook the Thanksgiving turkey or the Christmas ham on the BBQ. In 2016, my dad was diagnosed with acute myeloid leukemia and was admitted to the City of Hope. He managed to come home for about a month during his treatment, and I remember cooking ribs on the grill for our family in the backyard while everyone gathered. Although they weren't the best ribs I've ever made, seeing how happy he was to be home and enjoying them was unforgettable. Little did I know, that would be the last time I cooked ribs for my father. He passed away in September 2016, and I felt lost for some time after that. I continued to BBQ as an ordinary person might, but I struggled with moderate depression and found it challenging to navigate life. In 2018, I discovered a clearance pellet smoker at Walmart and decided to buy it. I assembled it that day and tried my hand at cooking on it. Like many newcomers, the first thing I made was pulled pork. From that first cook, I developed an addiction to this hobby. It allowed me to connect with my father, who had passed, and to bring joy to others through delicious food. Over the years, my passion for cooking has grown, and I've learned to use a variety of grills and smokers, including charcoal ceramic grills, drum smokers, offset smokers, and one of my favorites, my Cedar Creek Asadera. I have competed in cook-offs, placing fourth overall with the Cedar Creek team while cooking over an open fire. Additionally, I've been fortunate to cater for events with as many as 1,000 guests using a 500-gallon offset smoker. I am grateful for every opportunity to learn and to elevate Crazy Gringo BBQ to the next level.

The last one I did was from Chicago to Florida and then back when I lived there for six months and while fun due to the company, it was a tiring time. Marris added that any trip under 5 hours and Angi said any under 3 work for either of them. Though they could both work with running it solo or with others, Marris said it's better and more tolerable with others. His longest solo trip though was 7 hours and he was not a fan. As for who likes to get behind this nonsense, Gen Z likes it for the bonding, Millennials like it for the adventure, Boomers enjoy the scenic views and Gen X just doesn't really care at all (that's right!) As for where to trip to, the Midwest likes to go to Florida, California and Georgia. The South flock to Michigan and Florida. The East coast is apparently fond of Massachusetts. As for what the point of the road trip was, going to the beach, staying at family/friends houses and visiting national parks topped the list. It was suggested that the longest trip should be 10 hours max that Angi and Marris both said no way to. It's really just too much sitting upright and if you need to nap while switching drivers, it's awful. However, the best part of the road trip is our Daily Discussion Topic this morning. Grab the aux cord and tell us what is on your road trip playlist. Marris picked Tool because he wants energy laden music and you can coast along to the songs while you journey to like outer space. Angi, on the other hand, likes to chill and usually listen to albums front to back (as opposed to how she...nevermind.) Her choices were Fleetwood Mac, Eagles and Boston. This reminds her of driving with her parents (insert any number of jokes here.) For myself, I'm the resident dance/house/EDM guy in my group so I'm playing Eric Prydz's "Opus" the entire way through on a night drive. With our choices locked, let's turn to the roadies. Brian chose Sublime's "40 Oz. to Freedom" album. Chris added Tom Petty's "Running Down a Dream." Mark said any Bruce Springsteen which immediately caused Angi to jump out of the speeding car. Matt wants to be rockin 'with Dokken. Another Matt added station favorite Metallica and then if he his traffic, Limp Bizkit's "Break Stuff" comes out. Frank capped us with The Offspring but if whittled down to a choice, then "Gone Away." The original idea was to post this around my birthday in March, after getting about halfway through I realized March wouldn't happen because... well, I was only about halfway through. I parked it to focus on other things. Then came incredibly sad news about friend and Space Cowboy, Danny. He was always a fan of the BBQ sets, and frequently asked when I'd get to another. Yesterday was Danny's birthday, so I carved out time and finished it up. Not perfect, but long af, and hopefully suitable for BBQing. RIP Danny, hope he bumps this at the big grill in the sky. XO, 8b
