Enjoy this lovely and delicious cookie. ~Carolyn Gluten-Free Double Chocolate Biscotti with Peppermint Recipe modified from New York Time's recipe for Chocolate Biscotti Makes 35 large biscotti Dry Ingredients 1 3/4 cups Cup4Cup Multipurpose Flour 1/4 cup Almond Flour 3/4 cup + 2 tablespoons cocoa powder 1 1/2 teaspoons sweet rice flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon protein powder isolate (unflavored protein powder) Wet Ingredients 4 tablespoons butter, softened 1 cup granulated sugar 1 cup light brown sugar 3 large eggs 2 teaspoons vanilla extract 1 teaspoon espresso powder (dissolve in vanilla extract) 1 cup mini semi-sweet chocolate chips ~ 1/2 a large bag of peppermint white chocolate kisses 6 large candy canes, crushed into shards, pieces and crumbs Preheat the oven to 350F. Line a large baking tray with parchment paper. In a medium-sized bowl, whisk together the dry ingredients and set aside. In a large bowl, combine the butter and sugar until well mixed. Heather's One Thing- Live in the Prayer Room by Jeremy Riddle Michelle's One Thing - Soul of Shame, Dr. Curt Thompson Sister Miriam's One Thing - Double Chocolate Walnut Biscotti Recipe Double Chocolate Walnut Biscotti Yield Makes about 30 biscotti Ingredients 2 cups all-purpose flour 1/2 cup unsweetened cocoa powder 1 teaspoon baking soda 1 teaspoon salt 3/4 stick (6 tablespoons) unsalted butter, softened 1 cup granulated sugar 2 large eggs 1 cup walnuts, chopped 3/4 cup semisweet chocolate chips 1 tablespoon confectioners' sugar Preparation Preheat the oven to 350°F. Add butter and flour on a large baking sheet. Whisk together flour, cocoa powder, baking soda, and salt in a bowl. In another bowl with an electric mixer, beat together butter and granulated sugar until light and fluffy. Add eggs and beat until combined well. Stir in the flour mixture to form a stiff dough. Stir in walnuts and chocolate chips. On a prepared baking sheet with floured hands, form dough into two slightly flattened logs, each 12 inches long and 2 inches wide, and sprinkle with confectioners' sugar. Bake logs for 35 minutes or until slightly firm to the touch. Cool biscotti on a baking sheet for 5 minutes. On a cutting board, cut biscotti diagonally into 3/4-inch slices. Arrange biscotti, cut sides down on the baking sheet, and bake until crisp, about 10 minutes. Cool biscotti on a rack.
