This week we focus on Chapter 3 of "Living Your Yoga" by Judith Lasater titled, "Letting Go." We try to let go, we try so dang hard. But sometimes you try that surrender thing and it just doesn't work. There's not enough forward folds in the world to make this easier. I hope this episode can connect you more with what letting go, or detachment, truly means. We go much deeper than you think you know. I surely learned a lot reading this chapter last year and what detachment means, how to make it a daily practice, and more importantly how to recognize what the heck I'm holding onto, controlling, manipulating, feeling I have to be right, the decision maker, the researcher, the disciplinarian, the housekeeper, the perfect friend, the mom who doesn't make mistakes, need I say more?! After reading this chapter and TRULY putting this into my DAILY practice in my life I can truly say I am excited about my days, my motherhood, as a spouse, friend and living a life more intentionally. From: "Brownies in a Jar" by Jackie Gannaway   Links* Jar: https://amzn.to/46J8L6X   Double Chocolate Brownie Mix in a Jar What you'll need: -2 cups sugar -3/4 cup chocolate chips -3/4 cup chopped pecans or walnuts -1 cup flour -4 - 1" squares of unsweetened baking chocolate   What you'll do: 1. Layer ingredients in order given in a 1 quart "wide mouth" canning jar. Press firmly in place. 2. Place flour into a thin sandwich baggie to keep it from sifting through the nuts. 3. Cut chocolate squares in half to make 8 pieces 1" × 1/2" Place chocolate pieces on top of flour. 4. Use lid of jar to press chocolate squares firmly into place.   Instructions for your gift recipient: Double Chocolate Brownies 1. Remove chocolate squares from jar. Set aside. 2. Empty mix into large mixing bowl. Empty flour from baggie and discard baggie. Blend. 3. Add: 2 sticks butter or margarine, not diet, melted 4 eggs 2 tsp. vanilla (opt.) 4. Melt chocolate squares in microwave for 30 seconds. Stir well and continue to microwave 10 seconds at a time, stirring until completely melted. (Can melt in a pan over very low heat.) 5. Mix melted chocolate into batter. 6. Pour batter into sprayed 9" × 13" pan. 7. Bake at 350° for 25 minutes. 8. Cool. Cut into squares. Hi Bakers, This Double Chocolate Biscotti with Peppermint is the perfect gluten-free holiday treat to eat and giveaway. Twice baked for extra crunch and packed with deep chocolate flavor, it's the most chocolatey and crisp biscotti you could ever want. The peppermint white chocolate topping speckled with crushed candy canes is the perfect complement to the cookie base and will keep you reaching for one more bite. Enjoy this lovely and delicious cookie. ~Carolyn Gluten-Free Double Chocolate Biscotti with Peppermint Recipe modified from New York Time's recipe for Chocolate Biscotti Makes 35 large biscotti Dry Ingredients 1 3/4 cups Cup4Cup Multipurpose Flour 1/4 cup Almond Flour 3/4 cup + 2 tablespoons cocoa powder 1 1/2 teaspoons sweet rice flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon protein powder isolate (unflavored protein powder) Wet Ingredients 4 tablespoons butter, softened 1 cup granulated sugar 1 cup light brown sugar 3 large eggs 2 teaspoons vanilla extract 1 teaspoon espresso powder (dissolve in vanilla extract) 1 cup mini semi-sweet chocolate chips ~ 1/2 a large bag of peppermint white chocolate kisses 6 large candy canes, crushed into shards, pieces and crumbs Preheat the oven to 350F. Line a large baking tray with parchment paper. In a medium-sized bowl, whisk together the dry ingredients and set aside. In a large bowl, combine the butter and sugar until well mixed. Beat in the eggs, extract and espresso. Stir in the dry ingredients until almost combined. Scrape the bowl with a rubber spatula. Stir in the chocolate chips. Divide the dough in half. Using damp hands, shape into two wide loaves 1” high. Bake for about 30 minutes or until the loaves are firm in the center. Cool for about 10 minutes. Preheat the oven to 325F. Gently cut the loaves into 1/2” slices with a serrated knife and place cut side down on the baking sheet. Bake for about 15 minutes or until the slices are firm. As the biscotti cools, it will become more crisp. Let cool completely. Melt the peppermint kisses** and spread over the cut edge of the biscotti and sprinkle candy cane pieces on top. Favorite Taco Filling—Vegan, oil and gluten free 1 small onion, chopped 1/2 cup finely chopped carrots 1 jalapeno pepper, seeded and finely chopped (optional) 2 1/2 cups cooked brown or green lentils (I use the Trader Joe's Ready To Eat Steamed Lentils) If using canned lentils in broth, use two cans drained 14 oz can diced tomatoes, fire roasted is best 1 cup corn, I use frozen fire roasted 1/4 to 3/4 cup vegetable broth (depending on how thick you like your taco filling) 2-3 tbsp Taco Seasoning Blend—I use Trader Joe's, or Kinder's organic Taco Blend from Costco Start with 2 tablespoons and add more based on taste and desire for heat In a medium to large skillet, dry saute the onion, carrot and jalapeno to soften and brown slightly, adding water or broth to prevent sticking. Add the remaining ingredients and mix well. Cook for 15-20 minutes, stirring occasionally. Taste and adjust seasonings. Use for your favorite tacos, tostadas, or taquitos. Freezes well. After that we have another from the Barcode series. 8719992492916 (Barcode Black and Red) is an Imperial Stout with chocolate and vanilla aged for 14 months in Bourbon Barrels...yum!

Being at Disney's Grand Floridian Resort we did think that more people were dressed up than at other Disney World restaurants, which was nice to see. Our Top Dining Pick for Citricos is the Scallop Risotto This has Butternut Squash, Black Truffles, Butternut Squash Purée. We also really enjoyed the Tuna. This is Oak-grilled Yellowfin Tuna and it comes with Fingerling Potatoes, Fennel, Haricot Verts, Artichokes, Olive Tapenade. For dessert we had the Warm Chocolate-Banana Torte with Vanilla Ice Cream and Handcrafted Belgian Couverture Chocolate Crown, which was nice but we liked the Tasting of Gelato featuring Italian Vanilla Bean, Mocha Espresso, and Double Chocolate better. Hidden Gem at Disney's Grand Floridian for Dining, the Grand Floridan Cafe We really enjoy the Grand Floridian Cafe and actually ate there many times over a few week period. We all had breakfast, lunch and dinner at the Grand Floridian Cafe and all three are wonderful. What we like about the Grand Floridian Cafe is that it's a hidden Disney gem. The service is always spectacular, it's at Disney's Grand Floridan Resort which is a joy to visit, and the prices are very reasonable for a Disney restaurant. Also there is usually no wait or it is easy to book a dining reservation here. All that adds up to one of our favorite Disney restaurants. The Garden View Tea Room at Disney's Grand Floridian Lauren went with a friend to the Garden View Tea Room at the Grand Floridian Resort and Spa. You get to pick the type of tea, cordials, dessert and cheese. It's a fun different and unique experience. Tiffin's at Disney's Animal Kingdom we ate here four times, yes four! Tiffin's is a newer Disney World restaurant at Disney's Animal Kingdom and it's not theme park food. This upscale addition to Animal Kingdom is unique and offers fun dishes like the appetizer we had, the lobster popcorn Thai curry soup. The soup is the Lobster-Popcorn Thai Curry Soup - Lime-Basil Emulsion, Popped Sorghum. We also loved the Selection of Artisanal Cheeses at Tiffins - Cardamom Marcona Almonds, Manjar Blanco, Cape Gooseberry. We also tried the salad - Apple-Walnut Salad - Bib Lettuce, Heirloom Apples, Candied Walnuts, Apple Cider Vinaigrette. Octopus is not usually our favorite thing but we loved that appetizer also. Pandora, the World of Avatar, Rivers of Light and Tiffins all make Animal Kingdom a must do Disney World park on your next Disney World Vacation. We continue our quantum mechanics exploration by looking at one of the most famous historic examples of quantum weirdness. Abby laughs at the word "slit" a bunch, and then we go get ice cream. The end. Factual corrections: Reid mentions the visible light spectrum is violet to blue; that would be a pretty monochromatic view. He knows it's violet to red (as in ultraviolet and infrared). Young's experiment was actually done a solid 100+ years before anyone was thinking about quantum mechanics. And people were all like "WHAAAAAAT" and then had to just sit on it for a century. Rough. My wife is the baker of the family, and she agreed to help us out with some baking tips and yummy chocolate recipes. All Sugar is Not Created Equal One thing I was surprised to learn is that not all sugar is created equal. When you prepare for your holiday baking extravaganza, you need to be using the right type of sugar. You go to the store and pick up a bag of granulated sugar, you would expect that to be the same across brands. In reality, it isn't. Some sugar is made from sugar beets, and some is made from sugar cane. For baking, you absolutely want to be using pure cane sugar. Here's an interesting article explaining why. Chocolate There are several different types of chocolate that you can bake with. Here is a very quick run down of the most common types you'll run into in the kitchen. A Word About Parchment Paper If you aren't baking your sweets on parchment paper lined baking sheets, you should be! Using parchment paper has a ton of benefits; it makes clan-up a snap, it helps your treats bake more evenly on the bottom, and they won't stick to the pan. And you can prep your batches on parchment paper to easily slide onto the baking sheet when ready. Parchment paper is inexpensive and really a must-use when it comes to baking.
