Food sciences, technology, and globally sustainable food systems Dr. Jonathan Allen and Rebekah Brown, Food Bioprocessing and Nutrition Sciences, NC State University Website | Twitter @fbnsncstate Where the food science and nutrition communities have come and may be going in defining sustainable food systems with examples from research in the NC State Food, Bioprocessing and Nutrition Department. Abstract Achieving sustainable food systems has been a growing agenda item among scientists, food and nutrition associations, and the food industry. Examples of goals and actions for some of these groups can be contrasted with the projects that individual scientists try to wedge into the sustainability umbrella. Similar examples from past NC State food and nutrition research will show that trends in research funding for specific projects to meet industry needs can now be rewritten to show progress toward a sustainable food system, even when that might not have been the original intent of the research. The research interests of international and domestic students and the groups that provide their funding also create an interesting contrast in this field. Additional progress can be made as we address the teaching and research of our current students to create the future scientists who will evolve the understanding of a sustainable food system. Additionally, Ms. Brown will be reporting briefly on the National Sweetpotato Collaborators Group meeting as it pertains to her research and food science study. The National Sweetpotato Collaborators Group is comprised of stakeholders across industry, academia, and government which meets annually to discuss emerging research. The fields of study present at the meetings include, but are not limited to plant physiology, plant breeding, molecular biology, pathology, entomology, cultural practices, food science, and marketing. The objective of the meeting is the rapid dissemination of information to improve the growth of sweetpotatoes and sweetpotato products in the United States for the benefit of the multiple stakeholders. Ms. Brown's research involved a preliminary consumer survey of health, purchasing habits and acceptance/awareness of biotech in the sweetpotato sector. Related links: National Sweetpotato Collaborators Group Speaker Bios Dr. Jonathan Allen is a professor in the Department of Food, Bioprocessing and Nutrition Science at North Carolina State University and Director of the Food Science Graduate Program. He teaches undergraduate and graduate courses in milk and dairy products, lactation, exercise nutrition, and energy metabolism. His research projects cover glycemic control as impacted by food processing and bioactive components in foods such as sweet potato, peanuts and milk, nutrient fortification of flour, and processing strategies. Allen has gained an international reputation for the understanding and potential amelioration of such chronic diseases as infant growth retardation, metabolic bone disease, diabetes, and hypertension. He has trained students who hold food industry, government, academic, and NGO positions in more than a dozen countries. A Fellow of the American College of Nutrition, and the Institute of Food Technologists, Dr. Allen has been active in the IFT Dairy Foods Division and new Sustainability Division with technical research paper reviews and graduate student competitions, and was on the IFT Dietary Guidelines for Americans Task Force. He is a member of the Climate/environment, Health, Agriculture and Improved Nutrition (CHAIN) Research Interest Group of the American Society for Nutrition. Rebekah Brown is a Cohort 3 AgBioFEWS fellow and PhD candidate in the Food, Bioprocessing, and Nutrition Sciences Department at North Carolina State University. Some of her research involves stakeholder engagement regarding the use or acceptance of biotechnology in sweetpotatoes and sweetpotato products as well as the health and sustainability of different processing techniques. Loss and Resiliency: Exploring Agricultural Complexity in Eastern North Carolina AgBioFEWS Cohort 3 Website | Twitter #AgBioFEWS Focusing on environmental pressures and changing social dynamics within agriculture, the 2022 AgBioFEWS Fellows reflect on their immersive summer field experience with farming communities in eastern North Carolina. Abstract North Carolina's geographical and biological diversity present crop-growers with both exciting opportunities and immense challenges. Following an immersive field experience in NC's Central and Northern Coastal Plains, AgBioFEWS Cohort 3 will provide a first-hand account of these complexities, giving close attention to recurring themes of loss and resilience. The discussion begins with farmers' perspectives on environmental pressures, including climate change, salt intrusion, insect resistance, and the adoption of emerging biotechnologies. Secondly, it will consider the changing social dynamics within farming communities, including issues surrounding land acquisition, market constraints, trusted expertise, farmer-to-farmer relationships, and labor concerns. Taken together, these reflections demonstrate how, in the face of constant change to both the environment and their communities, NC farmers demonstrate resilience and adaptability worthy of deeper consideration. Speakers AgBioFEWS Fellows are Ph.D. candidates across multidisciplinary fields of study collaboratively examining the science, policy, and public engagement aspects and impacts of Agricultural Biotechnology on Food, Energy, and Water. Rebekah Brown is the founder and chief guinea pig of MPowder, the world's first plant-based supplement powder range crafted to target the three distinct biochemical stages of the menopause. Rebekah's personal struggle was the starting point for this entrepreneurial adventure, as she started to suffer in her early forties from varied symptoms that neither she or her doctor could make sense of. As a researcher and planner in the creative industries, she threw herself into a quest which led her to experiment with functional foods, and then into creating her own nutritional supplement, a powder she first ground herself in her own family kitchen - a time she says other family members would rather forget. She likes to say that MPowder is on a mission to reframe midlife as a superpower. Then the peri-menopause arrived. Turned away by her GP because she was ‘too young' to have symptoms, she found herself trawling the aisles of the local health food store, staring at a vast range of products and ingredients she knew nothing about. Curiosity cut through the brain fog. She looked further into the bio-chemical changes the female body goes through in menopause and what vitamins we all need at each stage, regardless of symptoms. She explored the impact and practicality of dietary changes. She researched what herbs and vitamins have seen results in trials and, critically, what dosages have an impact. Armed with insight, and a growing sense of frustration that women were under-served with honest information and better options, MPowder was born.This is her story of how self-care underpinned the decisions she made to make an enormous shift in her career and in how she viewed work, and herself.In the session you'll also hear how Rebekah's experience of going to her GP resulted in a feeling of frustration and she has asked me to say that if that is your experience, please go back. Don't feel as though what you have to say is not valid. GPs work hard to support their whole community of patients and sometimes we just need to be persistent to ensure we receive what we need. Everyone's experience of menopause is different and we all need to find our own best route through.Rebekah has also passed on a top tip for discussing your menopausal symptoms with your GP.She has recommended using the Menopause Symptom Tracker, developed by Diane Danzebrink - a menopause specialist and the creator of Menopause Matters Campaign. You can download the tracker here, and use it to take to your GP to explain your symptoms in language that really resonates with the medical community. She has also highlighted that you can seek out menopause clinics and specialists - and a number of these (not enough!) are on the NHS and would require a referral letter. But, if you choose this route, you can be certain that the person you speak to has had additional training to support this lifestage. Rebekah Brown is the Director of Development for the Maryland Association of CPAs and the Business Learning Institute. Rebekah frequently presents to groups both locally and nationally on the future of the accounting profession and, as a certified Insight to Action facilitator, she has guided firms, nonprofits, and accounting professionals in the United States and Canada in their strategic planning process.   On top of all the work that Rebekah does, she’s just downright passionate about the profession, taking a “rising tide raises all ships” philosophy to everything she does to train and educate her fellow and future accountants.   Rebekah focuses on what she calls the three P’s:   People – “I develop people! I am passionate ... about helping people find their strengths and find their place in the accounting profession. So, on an individual basis, with each of our members, I want to help develop them and develop their careers.” Pipeline – MACPA is over  100 years old, and in that time they’ve learned that we have to be constantly thinking about and developing future CPAs. So a lot of Rebekah’s work involves talking to college students, high school students, and even elementary school students about the accounting profession. “So, I’m always thinking about who is our next generation CPA, who's our next generation member, and preparing them for the profession.” Profession – The MACPA isn’t solely focused preparing accounting and finance professionals in Maryland. “We really believe that the rising tide raises all boats. So, we want the profession to grow to be successful, to be anticipatory, to be future-ready. And so, as we do that all over the world, we believe we are benefiting Maryland, and we believe that Maryland CPAs are even better positioned to be future-ready because of that.”   Speaking of the future of the profession, there was an article in Accounting Today titled “Melancon: It’s time to reimagine accounting” covering a presentation that Barry Melancon, the President and CEO of the AICPA, made this year at the AICPA ENGAGE Conference.   My favorite quote from this article is when Barry says, "We've changed significantly just in the past year, and we're never going to see the pace of change that's slower than what we're seeing now. And, you know, we won't be obsolete, particularly, if we embrace these changes."   Just let that sink in. How does that affect you and your business, and how does that affect you as an accounting financial professional as we move forward?   I highly recommend reading the article and listening to Barry's podcast interview with Bill Sheridan on Future-Proof, a podcast for accounting and financial pros.   After doing so myself, I have decided to invest my CPE time and dollars into learning more about blockchain and artificial intelligence. Rebekah Brown is a foodie. She's also a football superfan. And very involved in her church community. No matter where she is, whether it's work or one of these other activities, Rebekah always brings her whole self. She loves talking about restaurants, sharing recipes, and cooking meals with her family and friends. And because everyone needs to eat, she's always got something to talk about with others. In this episode, Rebekah and I talk about how important it is to take time to learn about yourself. We also talk about how she has the confidence to bring all of herself to everything she does. She finds that it's easy for work to get stressful, so talking about your hobbies and passions a little makes work more fun and allows you to have strong bonds with coworkers to make it through the tough times.
