Matthias Trum is the sixth-generation brewer at Bamberg's Heller-Trum Bräu—better known as Schlenkerla—and he is as obsessed with local history as he is with producing world-class smoked lagers via their old-fashioned methods. Bamberg has a long history of brewing, and Trum is a great student of that history—and his family has played an important role in it. Documents show a brewery at the Břevnov monastery in Prague as early as 993. How to Bottle Cider at Home is Part 6 and the final episode of the Cidermaker Series "Oh September" for 2020 Learn How to Make Cider at Home in Part 1 of this Cidermaking Series. Part 5 To Rack or Not To Rack is a must listen too because it brings you through the conditioning of your cider before bottling. Now lets get into the basic of bottling cider at home! When to bottle When the Specific Gravity is at least 1.000 or lower.  What is Specific Gravity (SG)? Specific Gravity is always discussed as a measurement of “relative density” between the water in solution and all else. Apple juice is primarily water and the rest I consider luscious apple sugars. Fermentation is the process of yeast converting the sugars into ethanol and carbon dioxide. Tap water has a SG of 1.000. Apple Juice, on average, before fermentation has begun has a SG of 1.040 to 1.065. Apple Juice SG will vary depending upon the growing season that year, was it dry or wet year, are the apples fully ripe, the age of the apple tree, and the apple variety are some of the key factors affecting Specific Gravity. You might not see the airlock bubbling away, but your cider may still be fermenting. To be safe and avoid bottling cider that is still off gassing CO2 - Check the SG! How to measure SG? Measure Specific Gravity with a Hydrometer. The Hydrometer typically comes with a plastic tube that can be filled at least 3/4 of the way with fresh pressed apple juice. Make sure that the temperature of the juice is no cooler than 60 degrees Fahrenheit or 15 degrees Celsius and no hotter than 70F or 21C. What happens if I bottle my cider while it is still fermenting? The bottle of cider can explode. Bottle bombs are very dangerous and can inflict serious injury to anyone nearby. When in doubt - check the SG. During Bottling you get to choose whether you want: Still Bubbly Dry Semi Sweet Sweet How to make Still and/or Dry Cider? Siphon the cider directly into your clean and sanitize bottles and cap! How to make your cider “Bubbly” in the bottle is called Bottle Conditioning. Options 1,2,3 In order of ease. 1. For beginner makers starting out, the safest and most tried and true method is to add both yeast and priming sugar at the time of bottling. SG needs to be at or below 1.000 2. Pet Nat is bottling the cider before it has completely fermented and the yeast are still active, but not over active. Priming Sugar then added at the time of bottling helps reboot the remaining yeast and thus create delightful bubbles. Pet Nat best done after you have made a couple batches of cider and have the gist of bottling. 3. Méthode Champenoise is the classical way of adding bubbles and is a 2-step process. I recommend listening to my chat with Chuck Shelton of Albemarle Ciderworks in Virginia as he explained this technique quite well. Forced Carbonation is done when kegging cider to make it bubbly. Making Semi Sweet or Sweet Cider requires adding a bit of sugar to the cider, which is called “Back Sweetening “ Back Sweetening is done right before you bottle. You get to chose how sweet you want your cider, by adding sugar and tasting! Tons of fun!!! Any sugar will work. It is really a about your personal preferences, be it honey, store bought priming sugar, raw sugar, maple syrup. Experimenting and finding the right fit is part of the joy of Cidermaking. How racking affects the amount of yeast in cider. I usually rack my cider 3 times over the course of 7 months and then a day or two before bottling if I see Fine Lees on the bottom of the carboy. If you are bottling 3 months after primary fermentation has ended, chance are there will still be some yeast cells in the cider. Those cells will get kicked started when you add sugar to the cider right before you bottle. The key is to add the right amount of sugar so that you get s one bubbles, but not so much the cider froths over when you open a month later. Assisted Living - A community living situation generally for senior citizens who need some assistance with daily activities, but do not require care in a nursing home.   Skilled Nursing Facility - A dedicated facility or part of a hospital that provides short and long-term medical care from a team of staff that consists of nursing staff, assistants, therapists, and many more.   Norovirus - A really nasty viral gastrointestinal infection that is easily spread in close communities (Nursing facilities for exp) and very difficult to eradicate.   Admission - To be brought in to the hospital for specific medical care.  Entails obtaining a medical history, making a medical diagnosis, writing orders for treatment and other diagnostic procedures, diet, activity, etc.   Mortality - Referring to death as a result, or the state of death.   Pilot Program - Generally a small-scale, short-term trial or experimentation and implementation of ideas that helps an organization learn how a large-scale project might work in practice.   MA (Medical Assistant) - A health professional that works along side a medical team in an inpatient or outpatient setting that is considered an entry level medical position, but is very active with patient care from start to finish and a great job for anyone who would like to help patients.   AgilityUC - Electronic medical records software   Brookings - Beautiful! Go take a trip in the early summer or fall.   Littmann Telesteth Welch Allyn Otoscope X-Ray - A type of radiation called electromagnetic waves that creates 2D images of the inside of your body.   CBC (Complete Blood Count) - Lab used to evaluate a variety of factors.  White blood cell changes may reflect infection or cancer, platelet changes may reflect a bleeding disorder or cancer, hematocrit and hemoglobin reflect the concentration of red blood cells and their oxygen carrying capabilities (or cancer, yes cancer is always a top consideration for many abnormalities), and many more values to assess.   CMP (Complete Metabolic Panel) - Lab used to evaluate a variety of factors.  Electrolytes such as sodium, potassium, and calcium may reflect a nutritional change or disease state, liver enzymes are evaluated to assess possible infection such as hepatitis or alcohol abuse, and many more values are included.   Physical Therapist - A medical provider and part of the rehabilitation team to help assist with treatment, recovery, and overall well being of patients with chronic conditions, illnesses, or injuries.   Workcomp - Insurance and medical benefits for employees who are injured on the job.   SAIF - Oregon Worker's Compensation Insurance and Benefits   HIPPA (Health Insurance Portability and Accountability Act of 1996) - US law that provides data privacy and security provisions for safeguarding medical information that all medical providers must adhere to. “See one, Do one, Teach One” Consult - When asked to weigh in officially with your medical opinion from your specialty on a patient managed by another medical team or provider.   Rash - Temporary or permanent skin changes due to internal or external irritant/disease process.   Roman   Hims Pillpack OHSU (Oregon Health Sciences University) Providence Express Care Cannabis - The proper scientific name for the recreational and medical product now becoming legal.  The term Marijuana was used by Harry J. Anslinger to make it sound "more Mexican" for fear mongering during the early war on drugs that was essentially a class and race war.  #TrueStory   ED (Erectile Dysfunction) - Inability to obtain or maintain an adequate erection for sex.   Lipidemia - High levels of fats in your blood, requires lifestyle changes (diet, exercise) and at times medications to prevent heart attacks, stroke, and other consequences of long term elevated lipid levels.   Viagra - Original marketed drug used for ED that was, like many things, an accidental finding when looking to treat blood pressure.   UTI (Urinary Tract Infection) - More commonly in females due to a short urethra (where the pee comes out) and often caused by E. Coli (bacteria that is normally found in the gastrointestinal tract).  Symptom trifecta is urgency (“I have to go NOW!”), frequency ("but I just went!"), and dysuria ("ouch, it burns when I go or right at the end!").  Goes away with antibiotics and some studies have shown that cranberry juice (not cocktail) or pills may help in the early symptoms or to prevent onset.   UA (Urine Analysis) - Urine test used often to evaluate possible UTI.  Great resource on what to look for on a UA.   Medical History - The detailed and thorough questions you must ask of a patient to figure out the diagnosis and treatment.  "LOCATERS" is what I think of during each patient interview.  Location, Onset, Character of the pain (if present), what Alleviates it (if any), Timing, what Exacerbates it (if any), any Radiation or is the pain in one spot only, and Severity.   Then you have to ask Allergies and Meds, Past Medical History, Surgical History, Social History (smokes, drinks, what type of job, married, kids, etc), and Family History.  All easy to memorize once you get use to it.   CliaWaved Skype   BP - Blood Pressure   SPO2 (Peripheral Capillary Oxygen Saturation) - Percent of oxygenated hemoglobin (protein responsible for carrying the oxygen molecule on red blood cells.) Amazing stuff!   Specific Gravity - Density of the solution.  Water is usually around 1.000  A pale ale may start around 1.060 before fermentation.  When the urine is more towards zero (less then 1.005) I assume the patient is very hydrated and the sample is diluted.  The higher the number (1.020+) may reflect a degree of dehydration or another disease process.   STI (Sexually Transmitted Infection) - Dear Reader, we use to call this a STD (!), but disease refers to a more permanent state and some "STIs" are curable with medications, thus not a disease. Yeast Infection (Candidal Vulvovaginitis) - Overgrowth of naturally occurring yeast in the vagina resulting in common symptoms of white thick vaginal discharge (drainage), itching, and sometimes painful intercourse (dyspareunia). Sonoma County Cider Week is coming soon and Ellen Cavalli from Tilted Shed Ciderworks visits Brew Ha Ha today to talk about it. Also in are Ned Lawton from Ethic Ciders and Brad Yarger with Leaky Barell Cider Company. We'll hear all about Sonoma County Cider Week, August 3-12, 10 days, 10 cideries, 100% awesome! Mark Carpenter likes to tell how he would make a science project for his kids using cider. He would take a bottle of apple cider at the store, add some yeast, put a balloon on the bottle and show the kids how the fermentation produced CO2 in the balloon. Brad talks about the apple varieties that go into his cider, including one rare one called Black Twig. Herlinda mentions that cider is taxed like wine, not beer. Even if many people think cider is sweet, not all of it is so. Ellen tells about the variety of name varieties she grows. Some apples are not for eating at all, but make great cider. It’s not always just the variety but the care that goes into the process that makes great cider. Sonoma County has a 200-year history of apple growing and Ellen Cavalli wants to invite people to taste the huge array of ciders that reflect local personality, ethos and quality of the land. There are 10 cider makers promoting Cider Week, and apart from the three in the studio today, there are Ace Cider, Agrostic, Golden State, Horse and Plow, Specific Gravity, Troy Cider and 101 Cider House Redwood Chapter. They are also staging dinners, with cider pairings. The last day of the Cider Week is the Gravenstein Apple Fair and they will be there too. Mark is happy that cider is coming back. There were many apple orchards removed to plant grapes. Ned talks about how he and Brian Johnson are working on reviving orchards, even small ones of 3-5 acres. The hard parts are finding labor and finding what to do with the apples, knowing where the market is. Mark asks about the origin of Gravenstein apples and Ellen says that one theory is that the Russian fur traders in the 1800s brought them. Ned gives credit to Ellen Cavalli for organizing the Sonoma County Cider Week. Other cider producing areas in the US, such as New York state, are also having their cider weeks now. Ned talks about dry farming Golden Delicious apples. He thinks they were propagated as a grocery apple, in Ohio. Ellen says the dry farmed ones are great. Ned explains that dry farming means there is no irrigation on the trees. If trees get watered, the fruit is big and fresh but the flavors are not as strong. Mark says it gets a nice crisp clean flavor Ned notes that most ciders are blended and this one is about 80% Golden Delicious and the rest other varieties, chosen for flavor. Herlinda tastes a cider called Inclinada from Ellen Cavalli's Tilted Shed Ciderworks. She says it is made like a Basque recipe. One is a still bottling, uncarbonated. This is 100% organic Sebastopol grown Gravensteins. It's a wild ferment, so it uses only the natural yeast that was on the apples. It's all nature's work with a little help, says Ellen. She can't show the long pour on the radio, but they pour the cider in a long stream, which aerates it and adds a little bit of heightened acidity. You're supposed to drink it right away. One is still and the other is naturally sparkling. Ellen says they used to make fermented foods but they didn't like cider, at first. They had apples and discovered that they liked the cider if they made it well. They found that if they put a lot of time into it, they liked the result. Herlinda mentions that Ellen Cavalli has started a cider magazine. She is an editor, professionally, and she started a Cider Zine called "Malus" which means apple in Latin. It's all print and can't be had on line. Ned says that they came into cider because they are foodies, so they always think of what food would go well with their product. Sliders, oysters, fish, salads, you name it. They want people to think about cider and food.
