The James Beard Award has been a kingmaker in the food business since the 1980s. Even getting a nomination can be life-changing. Chef Jay Blackinton – a punk musician and self-described wannabee skateboarder – has been nominated seven times. He’s self-taught and runs a buzzy two-man kitchen on Orcas Island. And this year, he’s been named a James Beard Award finalist in the Best Chef: Northwest and Pacific category. Seattle restaurants Archipelago and Atoma are also finalists in the Outstanding Hospitality and Best New Restaurant categories, respectively. Not a single eatery from Washington state has taken home the big prize in the past three years. If Chef Blackinton wins, it could change the fate of his restaurant, which is both nurtured and challenged by its remote location. If you walk down Euclid in the restaurant-filled Central West End, you might miss one of the city's most popular new restaurants. Mainlander is a bit hidden. Tucked away in an intimate space that transports you when you walk through the door. Chef Blake Askew and his partner Gordon Chen opened the restaurant in 2023, hoping to create an intimate dinner party vibe. With a prix fixe menu, they hope to take the decision-making out of the dining process and allow guests to sit back and enjoy. We dive into a lot in this episode from the inspiration, the fun twists on classic Midwest dishes and the restaurant's big move to a larger space in the coming months. Mainlander received a James Beard nomination for Best New Restaurant. Reservations open the first of the month and can go quickly. The Central West End restaurant is open Tuesday-Saturday.

Cheetie Kumar is the chef/owner of Ajja, a restaurant in Raleigh's Five Points neighborhood that draws inspiration from the diverse foodways and cultures, vibrant spices, and cooking techniques of the Mediterranean, the Middle East and beyond. Ajja opened in June 2023 and is a James Beard Foundation Award semifinalist for Best New Restaurant. Ajja was also named an Esquire Best New Restaurant and Eater's Best New Carolinas Restaurant.  An India- and Bronx-raised Southerner and musician, Cheetie earned two James Beard Foundation Award nominations (and five semifinalist nods) for “Best Chef: Southeast” for her multi-cultural menus that blended the flavors of South Asia and the surrounding regions with local agriculture at the beloved Garland, which closed in 2022. Ajja builds on the legacy of Garland and continues telling the rich story of North Carolina's growers, farmers and purveyors in a vibrant indoor-outdoor neighborhood restaurant. Cheetie is active in food advocacy and serves on the board of the Independent Restaurant Coalition, the Southern Foodways Alliance and several North Carolina-based organizations. When I first spoke with Chef Michael Toscano in 2017, he and his family were just getting settled in Charleston with the opening of Le Farfalle. Now, seven years later, the chef seems as if he's truly settled into a new rhythm between NYC and the Lowcountry. He and his wife Caitlin currently have four restaurants: the aforementioned Le Farfalle, da Toscano in New York's Greenwich Village, da Toscano Porchetta Shop in Charleston, and Fugazzi, a small spot inside Charleston's Revelry Brewing that serves what Michael calls unauthentic Italian-inspired American food. The last two are decidedly casual, a new turn for a chef that's been anything but when it comes to his career. He was a sous chef at Mario Batali's Babbo by the age of 21, was nominated three times for Rising Star Chef by the James Beard Foundation, and opened his first chef-owned restaurant, Perla, in 2012, which made Esquire's Best New Restaurants in America list. He's always pursued his passion for cooking, but now that passion is a team sport, where he looks to grow and support the rising stars in his own restaurants as well as the farmers he loves to work with. And one way he does that? African cuisine has always been well represented in the United States, particularly in dishes characterized as “Southern” in origin, like gumbo or hoppin' john. But even before chef Serigne Mbaye's New Orleans eatery Dakar NOLA was named the Best New Restaurant of 2024 at the James Beard Awards this week, the contributions of the African diaspora to the American diet had at last begun to enjoy a long-overdue reappraisal via reality television, Netflix docuseries and, most important, a number of widely praised dining establishments: If you want to book a table at Tatiana in Manhattan, Dept of Culture in Brooklyn or Kann in Portland, you'd better plan ahead, because their tables are often booked up well in advance.In this episode, Smithsonian contributor Rosalind Cummings-Yeates explains how the ascendancy of pan-African cuisine from “auntie” restaurants into the rarefied fine dining sphere is part of a larger and more meaningful campaign of cultural reclamation. Sometimes, it's the most fun to chop it up with friends. And when your friends include legendary sushi chefs and top DJs, all the better. This week we brought to Happy Half Hour Chris Cantore, a former voice across San Diego's radio airwaves, and his long-time buddy, North County sushi chef Tyler Mars. Troy goes way back with the duo, having been both a music and food journalist during his career. The pair just launched Needlefish, an omakase and record-spinning pop-up that they plan to take around San Diego, and hope to one day make a brick-and-mortar location. In fact, they held their first event for SDM staff just a few weeks ago to rave reviews. The idea is simple: fresh fish and good tunes, vinyl-only. Cantore says he likes to bring back the classics, like 90's hip-hop, punk, and stoner rock like Queens of the Stone Age. Tyler pairs that with his own sliced fish creations, served on warm vinegared rice and usually in combination with other condiments and ingredients you haven't experienced eating sushi before (think thin-sliced prime rib eye and chimichurri, for a non-fish example). Though Needlefish is new, the duo's idea is not. They both wanted to open up a spot together 25 years ago. But they were scared, and life happened. So did kids, and marriages, and careers, and the transitions of said careers, and Mars' eventual cancer diagnosis. The latter came in 2021 but Mars is now in remission. “It's really because of what happened to Tyler that we finally had the courage to pull the trigger on this,” Cantore says. “We realized that life is short, and you don't know how much time you have left. You have to do what you love to do, and this is what we love to do.” Stay tuned to our pages to find out more about where these guys will be popping up and when. Chef Nikko Cagalanan was born and raised in the Philippines. After immigrating to the states in 2011 and working as a nurse, he found himself inspired to pursue cooking with the desire to share his passion for Filipino food. He moved to Charleston, SC in 2018 and began Mansueta's, a series of pop-ups in the city and the region that helped him hone his craft, his culinary point of view, and build his community, and he's never looked back. His restaurant Kultura opened in 2022 and was promptly named best Filipino Restaurant in SC by Food & Wine magazine. Then he won on Food Network's Chopped. Next, Kultura was named one of Eater's Best New Restaurants in America. And earlier this week, Nikko was named a Finalist for Emerging Chef by the James Beard Foundation. So I'm far from the only person who thinks that his cooking is a special combination of skill, consistency, and a quality that is infinitely welcoming and delicious. He's very clear about the foundation of his work -- community -- and it shines through in everything, from chef collaborations and local sourcing to occasional impromptu signalongs in the restaurant if a Beyonce song comes on the sound system.
