Tom Colicchio is a gastronomic icon. He also likes his tomato sauce out of a jar. Colicchio, who is the head judge and an executive producer of acclaimed TV reality competition “Top Chef” and the owner of award-winning restaurant group Crafted Hospitality, is a partner in Colicchio Kitchen, a premium brand of sauces and condiments that are positioned as high-quality and convenient products for home chefs. Recently rebranded from The Jersey Tomato Company, Colicchio Kitchen debuted at the 2023 Summer Fancy Food Show held from June 25-27, and showcased a broad range of products, including its Colicchio Collection of ultra-premium cooking and pairing sauces. In this episode, Colicchio spoke about his involvement in the brand and his role in the development of its products, his perspective on adding an ethnic-themed line, how he defines “good food” and why he's less intimidating than you might think. From tomato sauce in jars to cocktails in cans, this episode also highlights a remarkable partnership between upstart beverage company Social Hour and iconic spirit brand George Dickel.  Launched in 2020, Social Hour markets premium RTD craft cocktails made with high-quality ingredients, including a Gin & Tonic, Whiskey Mule and Yuzu Sunset Fizz. In 2021, Social Hour aligned with legacy whiskey brand George Dickel to launch its seasonally-inspired Harvest Whiskey Sour, an expression made with Dickel's 13-year-old Tennessee whiskey and re-released the following year. The companies teamed up once again in 2023 to create the summer-themed Social Hour Bourbon Smash made with Dickel Bourbon, which was introduced in late June. Social Hour co-founder Tom Macy and Nicole Austin, the general manager and distiller of George Dickel whiskey spoke about the origins of the partnership, how the collaboration aligned the aims of both brands and how the relationship may develop down the line. Show notes: 0:48: Interview: Tom Colicchio, Partner, Colicchio Kitchen – Colicchio met with Taste Radio editor Ray Latif in New York City and spoke about his experience at the 2023 Summer Fancy Food, why growing up in New Jersey had a significant impact on his initial decision to develop a consumer brand and the companies expansion into condiments. He also discussed his evaluation of flavor and functional ingredients when it comes to great tasting food and Italian cuisine is the primary focus for Colicchio Kitchen. 14:04 Interview: Tom Macy, Co-Founder, Social Hour & Nicole Austin, General Manager/Distiller, George Dickel — Macy recalled his experience in BevNET Cocktail Showdown 2 competition and discussed how he has navigated an increasingly crowded RTD cocktail category. Austin spoke about her interest in creating a canned cocktail and why she jumped at the opportunity to work with Social Hour, how she and Macy attempted to reduce the red tape when creating the partnership between the two companies, why they chose to develop a Bourbon Smash and why they're not looking too far down the line for the next product. Acclaimed chef Spike Mendelsohn first made his name as a contestant in the cooking competition TV series “Top Chef” before establishing himself as a well-known restaurateur and television personality. As he becomes increasingly immersed in the emerging world of NFTs, however, he may end up being just as recognized as the co-creator of CHFTY Pizza, an online community that connects chefs with foodies and fans. Launched earlier this year, CHFTY Pizza was developed in partnership with Tom Colicchio, the longtime "Top Chef" host and founder of restaurant group Crafted Hospitality. In March, CHFTY sold its first collection of NFTs, which Mendelsohn described as avatars of “a ‘foolish' pizza slice.” The sale raised over $500,000 and established a funding base for CHFTY, whose stated mission is to “bridge the hole between the food-and-beverage neighborhood and web3.”  In an interview featured in this episode, Mendelsohn, who is also co-founder of better-for-you fast food chain PLNT Burger and sustainable snack brand Eat The Change, described himself as an advocate for chefs and restaurateurs and urged the importance of being ahead of the curve on NFTs and Web3. “[Web3] is no different, to me, than being in the kitchen at a young age,” Mendelsohn said. And my best advice is to keep your eyes wide open and ask as many questions as you can. And that's how you learn.” Our conversation with Mendelsohn chronicled his early years as a professional chef, how he leveraged his “Top Chef” fame to build a collection of restaurants in Washington D.C. and the development of PLNT Burger, which he launched with Honest Tea co-founder Seth Goldman. He also discussed the creation and mission of Eat The Change, which he also co-founded with Goldman, and the challenges associated with starting a packaged food brand. Mendelsohn also spoke about how the pandemic sparked his interest in cryptocurrency and the idea for CHFTY PIzza, his thoughtful strategy for amassing interest in the adopters of the project and what he views as the ultimate goals for CHFTY. Show notes: 0:49: Spike Mendelsohn, Co-Founder, PLNT Burger, Eat The Change & CHFTY Pizzas – Mendelsohn's expansive interview with BevNET founder/CEO John Craven began with the chef's family history in the restaurant industry and his work as a classically trained chef, his shock at the rigorous pace and schedule for “Top Chef” and how he worked with his sister to capitalize his fame from the show. Later, he discussed the origins of PLNT Burger and how the chain expanded from its first location as a kiosk in Whole Foods to nine stores during the pandemic, how the concept of Eat The Change was born and why working with co-manufacturers was surprising to him. Mendelsohn also discussed his early experience as a cryptocurrency investor, the impact that Atari had on how he perceived the metaverse and NFTs, getting Colicchio on board for CHFTY Pizza, how he has learned from missteps and how collaborations and an emphasis on building micro-communities has helped build a foundation for the project. Colicchio agrees and talks about the insights he gained from his wife's (Laurie Silverbush) groundbreaking film about hunger in America, A Place at the Table. “People aren't hungry in this country because of famine, war or drought. When wine became her main focus, she retired from dancing in 2002. Marquita received her Vinification/Viticulture certificate and pin in 2004 from the American Sommelier Association. She has worked at many restaurants including Indochine, Al di La, Jean Georges, Colicchio & Sons, Lure Fish Bar, Bowery Meat Company, and Waverly Inn. Marquita is currently Sommelier at Red Hook Winery in Brooklyn, and is working with Jeff Porter, the mind behind Sip Trip Italy, on his new wine distribution company Volcanic Selections. In this episode, MJ and Marquita discuss how she went from dancing to wine full time, her “spiritual” experience at her first wine training, how she started buying wine, and of course, being from Chicago, a quick detour on Chicago's Deep Dish vs. New York's Thin Slice. Democracy in Peril: Senator Bob Kerrey and chef Tom Colicchio on the Integrity of our Nation

Is our divided political culture energizing or suppressing democracy? Former Nebraska Governor and US Senator Bob Kerrey and renowned chef, restaurateur and food activist Tom Colicchio join Billy Shore to discuss the politics of hunger, public education and our eroding democracy. “The real problem in the food system is [it doesn’t] permit the kind of innovation that will produce a different outcome. You’ve got to create a system whereby the innovators who want to deliver healthy food have an opportunity to get in the door and be successful,” explains Kerrey. Colicchio agrees and talks about the insights he gained from his wife’s (Laurie Silverbush) groundbreaking film about hunger in America, A Place at the Table. “People aren’t hungry in this country because of famine, war or drought. We have enough food to feed people. We don’t have enough political will to feed people,” he notes. Kerrey sees parallels to our failing education system and worries that the American dream is out of reach for a large portion of the population. “It’s a big distraction looking at these people who bought their kids’ way into college. It’s a moral problem and it’s an economic problem,” he says, referencing the recent college entrance scandal. Colicchio wants to reframe the discussion around free tuition. “12 years isn’t enough anymore - we need to provide 14 years of public education,” he believes. Hear these two dynamic guests discuss why engaged citizens are the key to the survival of our democracy.

Through a dentist friend of hers, Heather became aware of a niche in dentistry that was not being filled. There was a lack of resources and education available for dental practice administrators.  She casually began putting people in touch to help them fill this need (kind of like a hobby) but her entrepreneurial spirit kicked in and soon AADOM was born. When AADOM reached over 1,000 members in less than two years, Heather sold her cafes to devote herself full-time to AADOM.  It is now the largest professional association for dental business teams in the country, with 3,500+ members and host of the country's largest dental office management conference.   Heather is frequently recognized for her visionary role and has served as an inspiration to many in business and in dentistry. She is particularly proud of how AADOM has empowered so many women in their professional development over the years. Heather was named one of the "Top 25 Women in Dentistry" in 2010. She lives in New Jersey with her husband, two children and her Bichon, Sage (who thinks she's a wolf). Heather claims she has the greatest job in the world. She loves Pete Townshend and practices Kundalini Yoga regularly.   www.DentalManagers.com

Tom Colicchio keeps adding to his impressive, albeit daunting, schedule as a father, husband, chef, restauranteur, entrepreneur, TV personality, pitchman, guitar afficianado, film producer and policy wonk. Tomorrow, Thursday, October 16th, Colicchio will spend World Hunger Day, as co-founder of Food Policy Action, reminding (read: lobbying) Congress to help the 14.3 percent of American homes which are “food insecure.” The glaring statistics about hunger in our country leave out people who are homeless and otherwise un-dcoumented and cant afford to buy food, never mind eat healthy. In our interview, you'll hear why he isn’t running for political office, and I ask him what effect high priced restaurants have on driving up the price of food. Whip-smart and good natured, Colicchio offers genuine insight into everything from tipping to why kale is so hot. In our incredibly fun conversation, Colicchio’s honesty, humor and, yes, heart...

Growing up on the coast of Maine, Ryan Mills-Knapp worked in restaurants during summers in high school and college during the busy tourist season. Through these summer jobs, he became passionate about food and wine, which eventually led him to his current position as beverage director of Colicchio & Sons. In 2004, after spending the summer in Maine working in restaurants, he moved to New York City to pursue his interest in the wine and spirits industry. His first job in Manhattan was as a server at Amuse, an American restaurant in Chelsea, where he helped the wine director assemble the wine list. The restaurant also hosted American Sommelier Association classes in the space, so he was able to further his knowledge of wine. He moved on to become the beverage director at chef Waldy Malouf’s Beacon Restaurant where he curated the wine selection, and was put in charge of the liquor and beer programs. At Beacon, he began his real wine education, learning about producers, vintages and styles. In 2006, he was hired as beverage manager at Jean-George Vongerichten’s Spice Market and oversaw the cocktail, beer and wine lists, before joining Drew Nieporent’s Myriad Restaurant Group as head sommelier at Corton and Tribecca Grill. Throughout his years in the restaurant industry, he met members of the Craft restaurant family. These relationships led him to join the team at Colicchio & Sons as beverage director in 2012. At the restaurant, he aspires to create a diverse and approachable wine list with selections at every price point that will appeal to both aficionados and novice wine drinkers alike. His interest in aged wines is reflected on the list as well. Mills-Knapp has traveled to more than 20 wine regions exploring the diversity of wine growing around the world. Recent trips have included Tokaji in Hungary, Greek Macedonia and Southern Styria in Austria. On today's hour-long special edition of The Food Seen, we treat our time with Tom Colicchio (rhymes with “Radicchio”), not as an interview, but more so, as an apprenticeship to learn from his summers cooking in 1000-person weekend “churn and burn” establishments, to haute dining in Manhattan. He's built an empire around the idea of culinary Craft. How does this Top Chef define success? How does he stay relevant? Two 3 star reviews by the NYTimes, 10 years apart, both cite the complex simplicity that he makes looks easy. Still, Tom believes, “you're only as good as your last dish”. Even more important than feeding his diners, Tom now sets his sights on eliminating hunger in this country. The film, A Place At The Table, produced by Colicchio and co-directed by his wife Lori Silverbush, seeks to foster the “food insecure” past the subsidies that have made calories cheap and nutrition expensive. Get hungry to end hunger! This program was sponsored by Heritage Foods USA. “I don't have anybody I would consider a mentor because I never stayed in one place long enough.” [24:25] “When you're cooking for 30 years – you start wondering whether you're still relevant and how to maintain relevancy. You don't want to go out.” [42:15] “50 million Americans are struggling to put food on the table – they don't know where the next meal is coming from.” [55:15] “I believe that most chefs believe that food is a right we should have like air and water.” [61:02] “We have to make hunger a voting issue. If our politicians are not going to help solve this problem – I think they need to be labeled as ‘pro hunger'” [62:50] –Tom Colicchio on The Food Seen
