Aiuti umanitari trasformati in trappole d'esecuzione. Intanto Meloni balbetta, certa stampa progressista minimizza, i partiti europei cincischiano.

Is Jordan Kahn's Meteora on track for a second Michelin star? On this episode of The LA Food Podcast, we dive deep into LA's most ambitious fine-dining jungle—Meteora. After falling for Chef Jordan Kahn's futuristic tasting menu at Vespertine, we head to his Melrose Avenue follow-up to see if the hype (and the hefty price tag) is justified. Is this lush, high-concept, nature-driven restaurant actually deserving of a second Michelin star? We break it down, course by course.Plus, it's Part 4 of our Opening Cafe Esca series with chefs Luke Reyes and Reilly Cox. This week, they walk us through the creative (and chaotic) process of building a food and beverage menu from scratch for their upcoming coastal Italian spot in LA's Arts District. And don't miss our rapid-fire Chef's Kiss / Big Miss segment, featuring TikTok-famous olive oil squeeze bottles, Apple TV's new chef series, and maybe the most aggravating pizza guy on the internet.Helpful Links:Meteora https://meteora.la/TASTE on those pesky squeeze bottles https://tastecooking.com/the-big-squeeze/Careme preview, per The New York Times https://www.nytimes.com/2025/04/29/arts/television/careme-french-chef.htmlEater on Texas Strip https://ny.eater.com/2025/4/25/24416858/texas-renaming-new-york-strip-steak-bill-texas-stripOpening Cafe Esca Part 1 https://open.spotify.com/episode/19HDiV4o0i2dP9ZZ7B7E9BPart 2 https://open.spotify.com/episode/7DoKDMtS74ngrVzjBBkzXIPart 3 https://open.spotify.com/episode/7J8MZ7HGuMIdRvq6zYezUy?si=hXmPzXKrQ9uwKktH3tIEuw–Go check out The Lonely Oyster in Echo Park! https://thelonelyoyster.com/–Get 10% off at House of Macadamias using code "LAFOOD" https://www.houseofmacadamias.com/pages/la-foods

After a dark start to the New Year, a little light at the end of the tunnel this week as 18 Los Angeles chefs, bars and restaurants were named James Beard semifinalists. With Angelenos earning spots in the categories of Outstanding Chef, Outstanding Restaurant and Best Chef: California, Father Sal is with us today for one of our trademark, frankly psychotic dissections of what it all means. We attempt to answer questions like, is this a downward or upward trending year for LA? What are Angelenos' chances of turning their semifinalist nods into actual victories? Which restaurants most surprised us by earning a spot, and which snubs left us scratching our head? We also discuss a great article by the LA Times' Jenn Harris on LA chefs' wishlist for 2025, and after the break we're joined by friends of the pod Luke Reyes and Reilly Cox for Part 3 of our Opening Cafe Esca series. As a reminder, this is our series in which we're accompanying Luke and Reilly in their journey to open up an ambitious new coastal Italian restaurant in the Arts District this Spring. In this conversation, Luke and Reilly talk to us about bringing their ambitious design concept to life. What do the Eater layoffs mean for food media in Los Angeles? Did Bill Addison's review of Vespertine get us more or less excited to visit the two Michelin-star juggernaut? And what to make of Melissa Clark's underwhelming experiences at Thomas Keller's Per Se and The French Laundry? Father Sal's with us today to discuss all of the above, plus a controversy at Long Beach's Roscoe's Chicken and Waffles, a bold proclamation of the best fast food item in America, and quote-unquote intrepid food influencer whose rating every steakhouse chain from the comfort of his own Tesla. In Part 2, we're joined by Reilly Cox and Luke Reyes for the second installment of our Opening Cafe Esca series. If you missed Part 1, this is our series where Luke and Reilly are bringing us along in their journey of opening an ambitious new Italian restaurant in a stunning Arts District development come March of 2025. For today's conversation, I met up with Reilly and Luke at their very much under-construction restaurant space, to hear about how they've been working with their designer on a design concept that presents a modern Italian dining experience able to convey warmth while also standing out amidst the sea of Italian restaurants in Los Angeles. Today's convo will focus on the concept of the design, and our next installment coming up in a few weeks will center around the nitty gritty of bringing that vision to life by way of materials, permitting, budget constraints, and more.

Part 1 of our brand new series, Opening Cafe Esca. We're joined by accomplished hospitality pros Luke Reyes and Reilly Cox, the dream team behind the upcoming Coastal Italian gem slated to open in the Arts District in March of 2025. Luke and Reilly have agreed to visit us on the pod once a month to take us behind the scenes of all that's gonna go into opening their ambitious LA restaurant. Why are they doing this? Well, typically when restaurants open you just see a blurb in Eater or stroll by it on your morning walk, but there's tons of work that goes into opening a restaurant that often goes untold. Reilly and Luke are going to take us under the hood, sharing the good, the bad, the ugly, and of course the delicious. Think of this like a podcast version of The Bear Season 2, but with more City of Angels and far less family trauma. But first, Father Sal is with us to talk New York versus LA food, whether Kamala Harris' status as a foodie can actually help her win the election, and of course, to play a round of Chef's Kiss Big MIss with us. He also makes a BIG, MASSIVE announcement that you're not gonna wanna miss. All I've gotta say is, look out LA, there's a new daddy in town.

On this week's podcast, Pat Cobe, senior menu editor of Restaurant Business, and Bret Thorn, senior food & beverage editor of Nation's Restaurant News and Restaurant Hospitality, talk about the post-summer flurry of restaurant activity in New York City. Bret was treated to a pre-opening preview of Alessa, a new Italian restaurant where the chef created a menu spotlighting mushrooms in many sizes and shapes. His first bite was a white pizza topped with assorted mushrooms and lots of garlic, then he moved on to crab-stuffed cremini mushrooms and risotto with hen-of-the-woods and truffle butter. Mushrooms and fall are a perfect pairing, although the pistachio gelato for dessert was devoid of mushrooms. Bret also got to try a new Korean restaurant from Hand Hospitality called Odre, where the food is cooked in cast-iron pots. It's kind of a rustic style for what he thought was a refined tasting menu, but he thoroughly enjoyed all the different courses. That night, he sampled asparagus with cured shrimp in a pine nut sauce with grapefruit, squash pancakes, little pork dumplings with shiso leaf, and braised beef shank with shishito pepper and yes—mushrooms. The tasting menu is a reasonable $42 for dinner. Also on Bret's restaurant itinerary was the revamped Central Park Boathouse, a venue in the middle of NYC's Central Park that has long been known as a special occasion place. It was recently taken over by Legends Hospitality—the same company that does the food at Yankee Stadium—and there's a new chef-driven menu that makes it a great destination for lunch and dinner. David Pasternak, a chef known for his former seafood-focused restaurant Esca, is a consultant, so Bret tried some of the fish dishes, including a salmon crudo and swordfish. Pat was on vacation and was dining around in the South of France instead of New York City, but she did get a chance to interview Brad Hedeman and Mo Frechette of Zingerman's, the destination deli in Ann Arbor, Michigan. Brad and Mo both worked behind the counter and in the retail section of the famous deli, but now head up Zingerman's thriving mail-order business. They talk about how they travel the world to meet farmers and producers and procure the specialty foods that have built Zingerman's reputation. Service and hospitality are built into Zingerman's DNA, and Brad and Mo share how they extend that to online customers that they never interact with face-to-face. People in any part of the restaurant industry can learn a lot from their many years of combined experience and fascinating stories. Give a listen.
