Former intelligence officer and Democratic senate candidate from Kentucky Joel Willett joins Chuck Todd for a wide-ranging and deeply personal conversation — from his post-9/11 path into military service to the experiences that pushed him toward the Democratic Party. They highlight the parallels between his own story and JD Vance’s, offering candid thoughts on Hillbilly Elegy and how addiction, inequality, and disillusionment shape modern politics. He argues that the fentanyl crisis can’t be solved by policing supply alone — the real solution lies in investing in treatment, healthcare access, and rebuilding opportunity in communities like his home state of Kentucky. The conversation turns sharp as Willett critiques senate Democrats’ handling of the recent shutdown deal, calling it a “betrayal of the public,” and weighs in on the Democrats’ leadership struggles, the GOP’s subservience to Trump, and the erosion of national security norms. From the dangers of AI-era inequality to the growing politicization of the intelligence community, Willett warns that without courage and reform, even the institutions built to protect democracy could falter. Everyone eats. It's the one thing we all have in common. And yet, nutrition has become one of the most confusing, divisive, and misunderstood sciences in modern life. Low-fat. High-fat. Keto. Vegan. Paleo. Superfoods. For every study, there's a headline that seems to say the opposite. In this episode, we turn to one of the most trusted voices in nutrition research to cut through the noise: Dr. Walter Willett, MD, DrPH. Dr. Willett, Professor of Epidemiology and Nutrition at Harvard T.H. Chan School of Public Health, has spent more than four decades studying how what we eat affects our health, longevity, and brain function. His work has helped reshape dietary guidelines around the world, replacing fear and fads with clarity and evidence. Together, we unpack what the science really says about diet and the brain: how food choices shape inflammation, cognition, and long-term disease risk, and what practical lessons decades of data can teach us about eating for life and longevity. In this conversation, we discuss: • How nutrition became so confusing (and what the data actually shows) • Why the quality of fat matters more than the amount • How refined carbohydrates fuel inflammation, insulin resistance, and brain fog • The power of fiber and the microbiome for mood and memory • Why plant-based proteins come out ahead for health and sustainability • How global dietary guidelines are changing (and what's still misunderstood) • The intersection of nutrition, planetary health, and human wellbeing Dr. Walter Willett has authored over 2,000 scientific papers and several landmark books, including 'Eat, Drink, and Be Healthy'. You're probably reading the title to this podcast going, what? a podcast from 2018? Yes, this is a never before aired episode that Ryan and I recorded at Bourbon Bonanza back in 2018. So here's the story. Bourbon Bonanza was an offshoot event that would happen during Kentucky Bourbon Festival but wasn't associated with the festival. It was tied in with Willett so there were a lot of influential people at the time that came to this event. Ryan and I took our equipment, plus our very first release of Pursuit Series, into what was Harrison-Smith House at the time which is now the new Chicken Cock visitor center and we sat down with Bill Thomas of Jack Rose in Washington DC and Mike Miller of Delilah's in Chicago, who still to this day run the most successful whiskey bars in the country. There is also a small appearance by Tatsumi at the very end and you will hear his story as a part of this episode. The sound environment was challenging and I wasn't happy with how the audio turned out. Let's fast forward almost 7 years and audio cleanup software has gotten so good that it's now time to release it. We talk about the festival, barrel picks, community, and trends they were seeing at the time. So here you go, a blast from the past with an unreleased archive episode.
