Una storia che mette insieme tradizione (ancora oggi si distilla con lo stesso alambicco dell'epoca, uno dei più antichi ancora in funzione) e innovazione (strumenti all'avanguardia). Una storia che ha visto momenti di svolta, ma anche momenti complicati come la nevicata nel 1985 che fece crollare il tetto: per dieci anni la distilleria ha lavorato a cielo aperto. Oggi Poli Distillerie è un'azienda con un fatturato di circa 19 milioni di euro e una produzione di 500mila bottiglie all'anno, nella quale l'export rappresenta una quota importante. Ed è possibile conoscere la storia della distilleria e della grappa grazie a due musei a ingresso gratuito creati dalla famiglia Poli, così come è possibile vedere gli alambicchi in funzione anche durante il periodo della vendemmia e della distillazione.
