But rather than me interviewing Heather, this is actually an episode from the Backyard Ecology podcast. Shannon Trimboli, the creator of Backyard Ecology, and I have become fans of each other's shows. We decided it would be fun, and hopefully valuable for our audiences, to share an episode of each other's podcast. I love the concept of Backyard Ecology and want to promote the importance of backyard habitats, as I'm sure you all have picked up on. Shannon interviews authors and specialists on everything from fireflies to backyard vernal pools. We're back this week with Shannon Howell - a Spanish teacher, mom of two teenagers, and tremendous ultrarunner out of South Carolina! We get to hear about Shannon's multicultural background, what it was like being raised in a family that moved a lot, traveled all over South America and only spoke Spanish in the home, and how her childhood has shaped her motherhood. Find Shannon on Instagram Shannon's coach: Matt Hammersmith A race to put on your bucket list: Conquer the Rock 50k Shannon's favorite race: Leadville and Longest Day Shannon's favorite meal: Empanadas You'll need: 1 Package empanada disks, thawed in fridge (can be found in freezer section under international foods) 1 lb. ground beef (or meat alternative) 1 onion, finely chopped 1 bell pepper, finely chopped Taco seasoning Salt Pepper Cilantro, cleaned and roughly chopped (optional) 1/8 cup water Small bowl of water Fork Directions: Heat 2 tablespoons of olive oil over medium high heat. Add chopped onion and bell pepper, and sauté for a couple of minutes. Add ground beef to mixture, and cook until browned. Mix in taco seasoning, salt and pepper to taste. Mix in 1/8 c of water and bring mixture to a simmer. *Let mixture cool until almost room temperature before next step. Mix in chopped cilantro. For each empanada, put a heaping tablespoon of mixture in the middle. Dip a finger in the small bowl of water and spread a small amount around the outside of the disk. Fold disk over, beginning to pinch edges, being careful to not let any of the mixture fall out. Use fork to crimp the outside edges shut and make a half moon shape. In a small to medium sauce pan, heat 4-6 inches of oil. In order to test the oil for frying, pinch off a small amount of dough and toss in oil. Omayra Sanchez Garcon was a 13 year old girl when she was killed as a result of the Nevado del Ruiz volcano in Colombia. The eruption caused debris to be mixed with mudslides which overtook her village. Almost 23,000 people died in 1985 during this natural disaster. Omayra died a slow death over several days, the photo taken in her last hours went onto win awards and hopefully gain national attention to why this was able to happen in modern times. Charles Rutherford, Jr and Lana Stempien were last seen around 1230 pm on Lake Huron. The couple planned to cross the lake to Mackinac Island on their boat. Later the boat was found idling with no sign of Chuck and Lana. Lana's body washed ashore two weeks later and Chuck was nowhere to be found. One night after a trip, Korrina came back and had an argument with her husband. She left the house to cool down and her car was found the next day; her boss reported her missing when she did not show up for work. She left behind her 11 year old daughter from a prior relationship and two little boys under the age of 4. Almost a year later, in the same spot the car was found, her daughter would go missing.
