This cake is gorgeous! Lime & coconut are great friends and bring in the pineapple, guava-like flavour of feijoa and wow, it's a winner 150gbutter, softened 3/4 cup caster sugar 3 large eggs 150gself-raising flour 2 tbspsyoghurt or milk Slug of rum 3/4 cup desiccated coconut 1 cup feijoas, chopped Zest and juice from 2 limes, plus 1 extra lime Icing 250gcream cheese 2 tspsvanilla extract ½ -1 cup icing sugar Preheat oven to 170°C fan bake. Line a 23cmcake tin with baking paper. Cream the butter and sugar together until fluffy and pale. Add the eggs and beat until well combined. Don't worry if it curdles at this stage, it makes no difference to the end result. Fold in the flour, stirring until just combined. Add in the yoghurt, rumand coconut, mixing well, then fold in the chopped feijoas, lime zest and juice. Scrape the batter into your prepared cake tin. Bake for 35-45 minutes or until it springs back to the touch. Cool for 15 minutes, then remove from the tin to cool completely. Make the icing: Beat the cream cheese and vanilla extract until smooth. Stir in enough icing sugar (I only use ½ cup as I prefer a strong cream cheese and less sweet flavour) until the icing is thick and spreadable. Using a shot glass, measure out the other ingredients. A shot glass usually holds 2oz. Fill the entire glass with ice. In a separate cup, mix pineapple juice and rum. In another cup, mix water and blue curacao. Pour the pineapple juice/rum mixture into the glass with the grenadine syrup. Pour the blue curacau mixture into the glass on top of that very very slowly - it helps to use a spoon. Garnish with an umbrella or lemon slice - or both! COCONUT RUM SHRIMP Ingredients 13.5 ounce can coconut milk 1/2 cup light brown sugar (packed) 1/4 cup spiced rum (can use non-spiced rum, if you prefer) 2 tablespoons lime juice 2 pounds large shrimp (peeled and deveined) Instructions In a large bowl, combine the coconut milk, brown sugar, rum, and lime juice. Whisk until sugar is dissolved. Set aside half of mixture for the glaze. Add shrimp to remaining mixture still in the bowl. Gently coat all shrimp with the marinade. Cover and refrigerate for 1 hour. While shrimp is marinating, make your glaze by placing reserved mixture in a small saucepan over low-medium heat. Bring to a simmer and while stirring constantly, allow mixture to thicken slightly, reduced to about 1/2 – 1/3 cup. Remove immediately from heat. Remove shrimp from refrigerator and thread onto metal skewers or wooden skewers that have been soaked in water. Discard any remaining marinade. Grill shrimp over medium heat, about 2 minutes per side or until shrimp have turned pink. Remove from grill and brush shrimp with glaze. Turn skewers over and brush the other side with glaze. Serve and enjoy!
I had honestly planned on taking a bit of a break to plan for season three and to get several episodes recorded, and I might end up taking a break after I release the first four episodes (which you will understand why as you see what the films are). My friends wanted to do an episode on M. Night Shyamalan's Signs. I'll be honest, this is my least favorite film of his that I have seen and I give details why during this episode, but it was more enjoyable this second time watching it. If you haven't seen it, it is available to watch on Amazon Prime. Signs stars Mel Gibson, Joaquin Phoenix, Rory Culkin, Abigail Breslin, and Cherry Jones and is about a family living on a farm finds mysterious crop circles in their fields which suggests something more frightening to come. This episode brought out a lot of emotion and the importance of mental health, nothing was held back. They went down different rabbit holes because of how touched my guests were by Mel Gibson's portrayal of dealing with a traumatic incident. Our guest today is a young man who has made a name for himself in the music industry. He is a self-taught producer, audio engineer, musician, singer and songwriter. “Complementary”, his first EP was released May of this year and people are raving about it. Let's welcome all the way from Maryland, Vicu! His songs “BTTFL” (Back to the Future Love), “Blame it on Me”, and “Something About Her” to name a few showcase Vicu's unique sound, fantastic guitar techniques and skills that perfectly combined with his modern edge songwriting and creative phrasing. Moreover, his songs have brought love, hope, and inspiration to a lot of people. Being one of the top promising producers, Vicu has worked with some of the amazing artists in the industry. Most recently, he has worked with Matt Viers, his production partner, on none other than Rihanna's upcoming album. As a musical producer and an artist Vicu's passion is to bring out the best in people. Consequently, he finds it joyful to help artists along the way. As a matter of fact, Vicu has developed a lot of artists, groups, and even rappers especially in his state, Maryland. Not only does he have a pursuit to produce and develop artists, but also Vicu wanted to be an artist himself. Through cultivating his fellows, it really helped him get sharp with production and songwriting. He is also a self-taught artist and very hands-on. Growing up he would sit and watch Youtube to learn how to play songs on a guitar. Balancing producing, artistry, and life Having a lot on his plate right now, running his production company with his friend Matt Viers, working with other artists, and at the same time being an artist himself, Vicu still manages to balance everything that is happening in his life. On the other side of the spectrum, in these difficult times when people in general lost a lot this year, whether it be happiness, rough situations, or even people. Vicu was one of those people; he actually lost four of his loved ones this year. He even opened up about a detail in his personal life - that he is adopted from Romania.
