Chef Brian Lewis is the founder and CEO of Full House Hospitality Group and a three-time James Beard Award finalist for Best Chef Northeast, with nominations in 2018, 2022, and 2025. A Culinary Institute of America and Johnson and Wales University graduate, he apprenticed under Jean Louis Palladin, Marco Pierre White, and Eric Ripert before becoming the founding executive chef of Richard Gere's The Bedford Post Inn, which earned Esquire's Best New Restaurant in 2009 and an Excellent review from The New York Times. In 2015 he founded Full House Hospitality Group, which now operates The Cottage in Westport and Greenwich, Connecticut, and OKO in Westport and Rye, New York, with 125 employees across four locations. This episode opens with a story about a job interview that most chefs would have walked away from. Lewis did not walk away. He secretly prepared an eight-course meal before anyone asked, controlled the entire tasting, and landed the role that gave him what he calls a PhD in opening and operating a restaurant from the ground up.How he built Full House Hospitality Group around a single principle: only expand when operations can thrive without you in the roomWhy empowering teams with genuine autonomy inside defined guardrails is the only leadership model that scales across four restaurants and 125 peopleHow strategy and psychology replaced technique as his primary tools when he made the shift from chef to CEOAndré Natera and Brian Lewis cover the identity shift required when a chef stops being the creative voice in the kitchen and starts leading other chefs to express theirs, the role of kindness as a non-negotiable management standard, navigating reviews and social media pressure across multiple concepts, and the research trip to Japan that preceded the launch of OKO. The episode closes with rapid fire kitchen gear, stocks and dashi minimalism, and the chef Mount Rushmore.GuestBrian Lewis on Instagram → https://www.instagram.com/brianlewischef/Full House Hospitality on Instagram → https://www.instagram.com/fullhousehg/Links Subscribe on Substack → https://chefspsa.substack.com/Shop Chef's PSA Merch → https://shop.chefspsa.com/Visit Chef's PSA Website → https://chefspsa.com/Lead Like a Chef App → https://studio.com/apps/andre/leadlikeachef

Every spring, Canadians convince themselves a lakefront cottage will "pay for itself" on Airbnb. Most won't. In this episode, Nick and Dan run the actual 2026 math — Royal LePage's $604K national median, Muskoka's slipping $950K, Atlantic Canada's 11.8% surge — and break down the $44K-a-year true carrying cost nobody mentions at the showing. They explain why the short-term rental thesis is dead in most of BC and Ontario (with a new 2026 wrinkle: Kelowna's exemption), how Muskoka's by-law 2025-049 now forces three dark weeks in peak summer. Plus the opportunity-cost comparison that makes most cottage buyers wince, and the five scenarios where buying one still makes sense. The takeaway: a cottage can be a great purchase. It's almost never a great investment. Know which one you're making. EDMONTON MULTIPLEX EVENT Try it NordVPN risk-free now with a 30-day money-back guarantee! We spoke to Jon Flower, Director of the play "The Cottage" by Sandy Ruskin, which is the Omaha Premier of this play by the Bellevue Little Theatre! This play hit Broadway in 2023 so now is your chance to see it! Similar to the energy of "Noises Off" it is a prop-heavy and fast paced show, set in 1923 Britain. Great for a date-night show, it is recommended for those 17 and over as it does deal with some adult subject matter, so bring your partner and come out and see his hilarious play! Episode 76 — The Haunting of Clover Cottage explores a deeply unsettling true paranormal story centred around what was meant to be a “forever home.” What begins with small, easily dismissed anomalies — a light left on, windows inexplicably opened — soon develops into something far darker. As the couple settle into Clover Cottage, the atmosphere begins to shift, and the quiet unease they initially ignore slowly builds into something impossible to deny. This listener story captures the unique fear of experiencing paranormal activity within your own home — a place meant to offer comfort, stability, and safety. From unexplained disturbances to an increasing sense that something unseen remains within the property, Clover Cottage becomes the setting for a haunting that challenges both belief and resilience.Unlike historic castles or public hauntings, this is real horror rooted in everyday life — where there are no tickets, no tours, and no easy escape. If you're drawn to true paranormal stories, real ghost encounters, haunted house experiences, mysterious phenomena, and scary stories told through raw witness testimony, The Haunting of Clover Cottage delivers a powerful and relatable account of a home that may not have been as empty as it seemed.Become a supporter of this podcast: https://www.spreaker.com/podcast/haunted-uk-podcast-ghosts-paranormal-and-the-unexplained--6759967/support.

Our next caller needs to replace the roof on her home but is unsure if she should go with fire-resistant or non-fire-resistant roofing material. Want to hear something I've learned recently?...Just because I can lift something doesn't always mean I should.Somewhere between cottage season, flower pots, and unloading trucks, I've realized that strength in our Me Now Years looks a little different — and honestly, a whole lot wiser. In today's episode, I'm talking about real-life strength — the kind that helps us carry groceries, lift luggage, paddle kayaks, garden, travel, climb stairs, and simply move through life with more confidence and independence. We'll be talking about why strength training becomes even more important after 35 and menopause; how muscle supports our metabolism, joints, bones, balance, and confidence; and why combining strength training with cardio is one of the best things we can do for long-term health and longevity.I'm also going to share the Canadian healthy aging recommendations for adults over 50 and why consistency matters far more than extreme workouts or perfection. Most importantly, this episode is a reminder that strength training in our Me Now Years is not about becoming smaller — it's about becoming more capable, resilient, and supported in the life we want to live.Lorrie xoxoxLoving the show? Today on The Peak Daily, we break down Airbnb's biggest overhaul yet and what it means as travel apps race to become “super-apps.” Then, we look at why more young Canadians are skipping shoebox condos and eyeing cottages as a first step into homeownership, and the financial trade-offs that come with it. Plus, in The Big Picture: Meta cuts 10% of its workforce, Canada's largest drug bust in Manitoba history, and OpenAI and SpaceX inch closer to IPOs.The Peak Daily is produced in partnership with reframevid.com

This calming process, paired with gentle breathing and the subtle act of opening and closing your eyes, helps draw your awareness inward and quiet the mind.As your body settles, you are invited to imagine yourself at a serene cottage by a tranquil lake. This vivid visualization paints a picture of natural beauty: a cozy lakeside cottage, a fire pit nestled in the yard, and a dock stretching into rippling waters under the fading light of day. Surrounded by trees and the sounds of birds and squirrels preparing for nightfall, you make your way to the dock and settle into a comfortable chair, watching the sun begin its descent across the water. The imagery evokes feelings of comfort, stillness, and being at one with nature. As the sun dips lower, shifting the sky from yellow to orange to deep red, the lake's surface calms, reflecting the vibrant colors like a mirror. The gentle lap of water, the call of a loon, and the scent of a nearby campfire create a sensory-rich environment that soothes the nervous system. You are guided to embrace this moment of solitude and serenity, where there is nothing to do but relax and drift deeper into rest. With every word, this meditation helps you disconnect from the day and ease into relaxing nap. You will then be awakened at the end of this guided meditation. Hosted on Acast.
