This blended Japanese whisky from the House of Suntory is the epitome of art in liquid form. We just don't ever get enough! Though Japanese whisky borrowed much of its foundational structure from Scotland, they've managed to create singular expressions through blending malt and grain that go beyond traditional Scottish forms. Long story short...this stuff is delicious, and worth your attention. Harmony is a non-age stated blend of malt and grain whisky with a unique sandalwood and rosemary nose with light and ethereal floral aromas. On the palate, candied orange peel and vanilla cream burst with complex but integrated fruit. Hints of the famed Mizunara oak linger through the finish.
Over 100 batches of malt and grain whiskey are used to create this complex blended Japanese whisky. Bottled at 102.8 proof, "from the barrel" then takes these batches and ages them in "marrying" casks to further integrate the malt and grain components. Hey folks, in this episode of The Embellish Pod, I had the pleasure of chatting with Lindsey from Barrell Craft Spirits. We covered a lot of ground, discussing the exciting developments happening at Barrell, including the opening of their blending facility and the launch of their new bottom price product, the Foundation series. Lindsey also shared insights into their New Year series and the upcoming release of a Mizunara cask finish bourbon. We started off by talking about the new facility and Lindsey mentioned the speakeasy area that they have, which sounds like a hidden gem for barrel picks and special tastings. She also mentioned that they are building out a retail store within the facility, where they will offer exclusive batches and special sales. Next, we delved into the recent recognition that Barrell has received, with their rye batch four and bourbon batch 35 making it onto Fred Minnick's top 100 list. Lindsey expressed her excitement about the recognition and highlighted the unique characteristics of these blends. We then shifted our focus to the new addition to Barrell's lineup, the Foundation series. Lindsey explained that this is a five-year, 100 proof bourbon that is designed to be more accessible and versatile for both neat sipping and cocktail mixing. She emphasized that despite its age statement, the Foundation bourbon drinks much older and offers a rich and balanced flavor profile. Moving on, we discussed the New Year series, which features a blend of bourbons from eight different states. Lindsey highlighted the complexity and fruit-forward nature of this blend, which is aged between five and 15 years. She also mentioned that Barrell plans to release two batches and two cask finish bourbons each year, with the upcoming release being a Mizunara cask finish. We wrapped up the conversation by reflecting on the success of Barrell in the past year and the direction they are heading. Lindsey expressed her satisfaction with the growth and maturity of the brand, as well as their commitment to transparency and innovation. What is Japanese whisky? For one, it enjoys a unique sweet and spicy flavor profile which can be attributed to the oak lactones ratio and high level of vanilla. Aromas evoked from the mizunara oak are kara, a type of oriental incense, sandalwood, and coconut. Research studies have shown that mizunara matured whisky contain more lactones (parts per million) than whiskies matured in either European oak or White oak. An even more riveting discovery was the prevalence of “trans-oak” lactones in Mizunara whisky. This was a remarkable find as it was thought that “cis-oak” lactones can possess a smell up to ten times stronger than “trans-oak” lactones. Change is a part of life. Change is inevitable. When it's time to change, you've got to rearrange. Whether it is a quote, a cliché, or lyrics from a Brady Bunch song, all of these things are true. As Cubs fans know all too well, change was on display last week as a championship era came swiftly and somewhat surprisingly to an end. We were forced to say goodbye to players we loved to watch play and that we feel we came to know. We wish them well with their new teams and we hope that the Cubs next championship era is on the way sooner than later. Now back to the beverage world as we return to one thing that hasn't changed; our appreciation for and desire to try Japanese whisky. We have tried several over the past year and each one we try fosters a desire to keep looking for more. On this week's show we will be trying the Kaiyo Japanese Mizunara Oak Signature Whisky. Keith Barnes Founder and Master Distiller of Bainbridge Organic Distillers joins us for this episode.Opening in 2009 with a focus of only producing only organic products. Bainbridge was the first distiller in Washington State to be USDA Certified. These casks are handmade due to Mizunara oak's delicate wood grain. They are among the rarest casks in the world and are considered the finest in which to mature whisky. After years of maturing our casks go on a final maturation at sea voyage for up to 3 months, leaving from Osaka Japan.This whisky is matured in the finest Mizunara oak casks. Our pioneering research into the effect of wood selection on whisky maturation has led to the development of bespoke barrels, crafted from slow growth, air-seasoned wood from hand-selected trees. These casks are handmade due to Mizunara oaks delicate wood grain. This spirit is gently matured in traditional style for many years before it embarks on its unique sea voyage.Mizunara oak casks are the most expensive casks in the world.The use of mizunara oak for whisky barrels was not what one would declare serendipitous, at least not in its early years. During World War II, Japan, like several other countries, was unable to receive imported goods, making the delivery of European or American oak barrels for whisky maturation impossible. Though it was not a priority to produce whisky, the demand for it increased greatly during this time period and became the primary drink consumed by the Japanese army. With this, Japanese coopers and whisky makers sought a domestic alternative to mature whisky in and found it in Japanese oak, more popularly identified as mizunara oak, which had been used in the craftsmanship of exclusive, luxury furniture.Mizunara oak for casks however, did not come without its own difficulties and obstacles. Time and supply was a great factor as a Japanese oak tree has to be at least 200 years old before it is a proper size to create a cask; a tree of this size and age was indeed a rare commodity. The shape of the tree also proved a hindrance as the oak trees do not grow straight but rather with a fluid curvature. Japanese oaks also possess less tyloses and more knots than European or American oaks increasing the difficulty to cooper watertight. As the oak is soft and thereby more difficult to shape, it is obviously more susceptible to leakage and prone to damage. The vulnerability to leaking is further aggravated by the naturally high moisture content Japanese oak has in comparison to its other oak cousins. Its name speaks for its incredible permeability: mizu, meaning water and nara, meaning oak, and hence added to the Japanese coopers and whisky creators' lack of enthusiasm in the Japanese oak.Manufacturing the mizunara oak casks were not the only dilemma whisky makers faced; with whiskies being aged only a few years during the war time period, the flavor mizunara oak casks infused into the whisky provided a rather unwelcome surprise to whisky drinkers – an explosion of an intense, overbearing woodiness onto the palate. As a result, Japanese oak was snubbed and deemed substandard to American and European white oaks until further studies were done of longer maturation and finishing. Mizunara Oak is now regarded as the finest vessel to mature whisky.WHY IS MIZUNARA OAK DIFFERENTWhat makes mizunara oak distinct from European oak and White oak? For one, it enjoys a unique sweet and spicy flavor profile which can be attributed to the oak lactones ratio and high level of vanilla. Aromas evoked from the mizunara oak are kara, a type of oriental incense, sandalwood, and coconut.Research studies have shown that mizunara matured whisky contain more lactones (parts per million) than whiskies matured in either European oak or White oak. An even more riveting discovery was the prevalence of “trans-oak” lactones in Mizunara whisky. This was a remarkable find as it was thought that “cis-oak” lactones can possess a smell up to ten times stronger than “trans-oak” lactones.Time was a crucial ingredient previously omitted in mizunara oak matured whiskies making another distinction from European and White oak. Many suggest that a whisky needs to mature in order to truly experience the infusion of mizunara oak's distinct flavors and aromas.It is perhaps a bit of Mother Nature's work and serendipity that the mysterious spirit and character of mizunara oak was exposed. Co-owner and Brand Manager, Donal O'Gallachoir, joins Pedro in the Whiskey Society this week to chat about Glendalough, an Irish Whiskey helping leading the charge in this new wave of Irish Whiskies that are coming to America.--From The Glendalough Website:The Glendalough Distillery was set up by a group of friends from Wicklow and Dublin with a passion for reviving the heritage of craft distilling in Ireland. In the 18th & 19th centuries there were over 200 licensed distilleries in Ireland and along with countless unlicensed ones produced diverse styles of poitín, whiskey, gin and even absinthe. Until recently that dropped to a small handful. After many an evening's banter and debate over why there weren't more craft distilleries in the birthplace of distilling, the friends convinced each other to leave the safety of their day jobs, head into the mountains and take a chance on something more meaningful (much like the man on the bottle, St Kevin). Together they built a craft distillery near their favourite spot in those mountains, Glendalough.Whiskey & Wood:A key influence on the flavour of our whiskey comes from the wood it has spent time in. There are countless nuances in how that wood effects and injects flavour, from the straightness of the tree or fineness of the grain to the size of the barrel or depth of the char. Somewhere between a lot, and most of the dominant flavours in whiskey come from the wood it has spent time in.There are countless nuances in how that wood effects flavour, from the straightness of the tree or fineness of the grain to the size of the barrel or depth of the char.Two of the main factors in how we choose our wood are: the breed of oak (where the wood is from), and the predecessor liquid (if it's a pre-loved barrel, what's been in it).As with most Irish whiskeys, ours matures in Bourbon barrels. But where we break with tradition is that we finish all of our whiskeys in a second, very different cask. These are selected especially to accentuate the flavours already inherent in a given whiskey.AMERICAN BOURBON BARRELSAs mentioned, our whiskeys do the bulk of their time in first-fill American white oak Bourbon barrels. These 200 litre casks lay the flavour foundation that has become the backbone of the Irish whiskey taste.Felled in Missouri at about 80 years old, they are milled, seasoned and coopered in Kentucky and filled with Bourbon.American oak casks impart a lot of flavour. Besides the fact that they've held Bourbon before we get them, the charred wood truly transforms new-make Irish whiskey. We use a level 4 "alligator char" which really brings the wood alive in terms of flavour.This adds that charcoal mellowness, the sweetness of vanilla and caramel that perfectly compliment the flavours already present in the spirit. They bring to the whiskey a beautiful golden hue, and smoothen it to a creamy mouth-feel.However we're always seeking out new flavours, the best oak around the world and other interesting casks.SPANISH OLOROSO SHERRY CASKSTo finish our Double Barrel, we use 500 litre Oloroso sherry butts made from European oak, felled in the ancient deciduous forests of Northern Spain. A tree must be about 120 years old before it's good for barrel making.The casks are lightly toasted rather than charred. So we get clearer wood flavours. Then there's the Oloroso. A dark, fruity and nutty fortified wine from Montillo, Spain, the Oloroso that seasons our casks is made from the famed Pedro Ximenez grape. After about 2 years of holding Oloroso, we then inspect and choose the casks.The intense flavours they bring get into our whiskey fast. Raisins, sultanas, candied peel, cinnamon, nutmeg, and Christmas pudding are all clearly discernible in the whiskey within 6 months, as the liquid turns from gold to amber.DUBLIN PORTER BARRELSFor our 7 year old single malt, it's Dublin porter barrels. Although these barrels are also ex-bourbon, they become a different beast once craft porter spends a year in them.We use barrels from the 5 Lamps brewery in Dublin. Their "Black Pitts Porter" is a rich, black beer with deep, dark flavours. Made with chocolate malt and roasted barley, the porter is rich and creamy with complex aromas and a smooth velvety texture.All of this gets into the oak and comes back out into our whiskey to accentuate the robust malts of both liquids. Flavours of cocoa from the porter mix with the citrus notes of the whiskey to result in dark chocolate orange flavours, with toffee and even coffee notes on the finish. It's an unusual and noticeably different whiskey, that you want to return to, often.JAPANESE MIZUNARA BARRELSFor our 13 year old single malt, it's the legendary Mizunara oak. Found in forests on the rugged, volcanic island of Hokkaido, the wood is very soft and porous with a tight grain, which is good for flavour but hard to cooper and prone to leaking. It has very high levels of vanillins that impart luxurious woody flavours fast.Ours is then brought to the south of Japan to air dry in Miyzaki before coopering at Japan's only independent cooperage. Here we personally inspect the wood before it's worked by Japan's oldest cooper. The casks are lightly charred and shipped as virgin barrels over 6,000 miles to us.Mizunara packs a punch of unique, exotic and exquisite woody flavours. Some say sandalwood, we'd agree, but that's just the beginning. It amplifies flavour and brings the mouth-feel to velvety proportions, it layers on extra vanilla, honey and even coconut.It makes for a pretty unique take on Irish whiskeyIRISH OAKProbably the rarest of all casks is Irish Oak. Before Ireland was known as "the emerald isle", it was known through out the old world as "the wooded isle". They say a squirrel could cross the whole country touching nothing but oak.In particular, Glendalough oak was famed for boat building as far back as Viking times (The largest Viking ship ever built was "The Sea Stallion of Glendalough"). Even the mountains that cradle the valley are named for the oak forests that covered them - Camaderry Mountain (Sliabh Céim an Doire, meaning "the mountain pass of the oak wood") and Derrybawn Mountain (Sliabh Doire Ban, meaning "the mountain of white oak")We're very excited and proud to play a part in bringing Irish oak back into use for aging Irish whiskey, helping to manage these ancient forests, and doing our bit for the regeneration of these beautiful, broad-leaf, deciduous woods.We are sourcing trees from within walking distance of the distillery to get to a truer taste of Wicklow Whiskey, using Wicklow barley and Wicklow water.
