Caldwell B. Esselstyn, Jr., received his B.A. from Yale University and his M.D. from Western Reserve University. In 1956, pulling the No. 6 oar as a member of the victorious United States rowing team, he was awarded a gold medal at the Olympic Games. He was trained as a surgeon at the Cleveland Clinic and at St. George's Hospital in London. In 1968, as an Army surgeon in Vietnam, he was awarded the Bronze Star.Dr. Esselstyn has been associated with the Cleveland Clinic since 1968. During that time, he has served as President of the Staff and as a member of the Board of Governors. He chaired the Clinic's Breast Cancer Task Force and headed its Section of Thyroid and Parathyroid Surgery. He is a Fellow of the American College of Cardiology.In 1991, Dr. Esselstyn served as President of the American Association of Endocrine Surgeons, That same year he organized the first National Conference on the Elimination of Coronary Artery Disease, which was held in Tucson, Arizona. In 1997, he chaired a follow-up conference, the Summit on Cholesterol and Coronary Disease, which brought together more than 500 physicians and health-care workers in Lake Buena Vista, Florida. In April, 2005, Dr. Esselstyn became the first recipient of the Benjamin Spock Award for Compassion in Medicine. He received the Distinguished Alumnus Award from the Cleveland Clinic Alumni Association in 2009. In September 2010, he received the Greater Cleveland Sports Hall of Fame Award. Dr. Esselstyn received the 2013 Deerfield Academy Alumni Association Heritage Award In Recognition of Outstanding Achievement & Service, and the 2013 Yale University George H.W. Bush '48 Lifetime of Leadership Award.  Dr. Esselstyn has also received the 2015 Plantrician Project Luminary Award, the Case Western Reserve University School of Medicine 2016 Distinguished Alumni Award, and the American College of Lifestyle Medicine 2016 Lifetime Achievement Award.His scientific publications number over 150, “The Best Doctors in America” 1994-1995 published by Woodward and White cites Dr. Esselstyn's surgical expertise in the categories of endocrine and breast disease. In 1995 he published his bench mark long-term nutritional research arresting and reversing coronary artery disease in severely ill patients. That same study was updated at 12 years and reviewed beyond twenty years in his book, Prevent and Reverse Heart Disease, making it one of the longest longitudinal studies of its type. In July of 2014 he reported the experience of 198 participants seriously ill with cardiovascular disease. During 3.7 years of follow up of the 89% adherent to the program, 99.4% avoided further major cardiac events.Dr. Esselstyn and his wife, Ann Crile Esselstyn, have followed a plant-based diet since 1984. She has trekked in the Himalayas, Patagonia, Thailand; run 52 marathons in 18 U.S. states, 11 countries, on 5 of the 7 continents; cycled down the western coast of the U.S. and from the Pacific to the Atlantic.; climbed Africa's tallest mountain, Kilimanjaro (19,341 ft.), Japan's Mt. Fuji (12,388 feet) and Colorado's Pike's Peak (14,115 ft.); backpacked the 2200 mile Appalachian Trail (Georgia to Maine), as well as other trails in Europe and the US. Future plans include the 480-mile Colorado Trail in the Rockies in August 2023, continuing Ohio's Buckeye Trail and the Florida National Scenic Trail, and exploring the Laugavegur Trail in Iceland in 2024. OIL FREE HUMMUS Combine in food process and blend: ! can of chickpeas/garbanzo beans, drained and rinsed 2 cloves of garlic, chopped 3 T lemon juice 2 tsp. balsamic vinegar 3 T water or low salt, oil free vegetable broth* Pinch of cumin Good add ins to also blend in: 1-2 green onions, chopped ¼ red pepper, chopped 1 T nutritional yeast I have also blended in a cooked beet or small sweet potato *I make my own veggie broth by boiling veggie scraps (not cruciferous veggies) for maybe half- to one hour, then straining. A few weeks ago, we hosted a Facebook live event with Dr. Caldwell B. Esselstyn to discuss the importance of green leafy vegetables in preventing and reversing heart disease. 
During the broadcast, Essy shared the science behind chewing vs. drinking your leafy greens and he also spent time answering viewer questions. Truly, it's a peek into our family history with stories, photos, quotes, and recipes from three generations of Esselstyns. Mostly, this book pays homage to the people who started it all - my parents - for forging and navigating that undiscovered path of plant-based nutrition at a time when no one understood how vital it was (including me and my siblings). Here we all are decades later and I'm so proud to sit with Jane and Ann and share some of the inspiration and recipes with you today. Dr. John McDougall was drawn to medicine because of his own health “fate.” At 18, he suffered a massive stroke and was an anomaly to the doctors in Michigan who wanted to explore “why” and “how” this could happen to someone so young. This health scare inspired his own journey to become a doctor, which eventually led McDougall and his wife, Mary, to Hawaii to practice medicine on a sugar plantation in Hawaii and service over 5,000 residents. What he saw there changed the course of his medical practice forever. The healthiest people on the island, the first-generation elders who had come from China, Japan, Korea, and the Philippines, were the healthiest and most vibrant people…still active, with no medications, and still in bodies fit for movement. It was their children and grandchildren, however, those second and third generations, that were struggling. Why? They had adopted a western diet of meat, dairy, and processed foods.  The secret, Dr. McDougall discovered, was STARCH. Those healthy islanders subsisted on a diet comprised mostly of rice, potatoes, vegetables, and fruits and THAT inspired the work he does today through his McDougall programs and education. Beyond diet, the McDougalls are also dedicated to informing citizens about the positive effects of dietary therapy on chronic disease and our Planet. Animal agriculture, as we're learning, is also one of the main culprits contributing to climate change and we discuss all of his “four deadly dietary deceptions” outlined at mcdougallfoundation.org.
