Vi äter gärna lamm. Men fårkött går knappt att få tag på. Det vill kocken Stefan Eriksson ändra på. Det är så otroligt hög kvalitet på fårkött! Lyssna på alla avsnitt i Sveriges Radio Play. Stefan Eriksson, Årets kock 2005, skapade Nobelmenyn 2008, driver restaurangen Brutalisten i Stockholm.Han håller en kotlettrad från en tre år gammal finullstacka. Hängmörad i tre veckor. – Det är som en kotlettrad på biffen från kossan, fast från tackan. Och mycket mindre, säger Stefan.Köttet har en mörkt, djupröd färg, är marmorerat och har en fettkappa på nån centimeter.– Tyvärr är får inte så vanligt som det borde vara, med tanke på hur otroligt bra råvara det är.Det är få restauranger som har det, och det är svårt att hitta i butiker. Störst chans har man hos producenter med gårdsbutik. Slakterier och butiker har ingen avsättning för köttet. Där säljs ett helt får för 300–400 kronor. Och går till korv.– Under de senaste åren är får en av de största upptäckterna för mig som matlagare, säger Stefan Eriksson.Han är med i föreningen Exceptionell Råvara där kockar och folk från hela matbranschen utvecklar det bästa av svenska råvaror. 2018 fokuserade man på får och testade ett hundratal prover från 15 svenska raser.– Jag har aldrig känt nån smak av kofta. Jag förstår inte var det kommer ifrån. Kanske var det var så förr. Kanske hanterade, styckade och tillagade man på ett annat sätt.Stefan steker fårköttet i sitt eget fett tillsammans med krossad vitlök och några kvistar timjan. Resultatet blir ett mört och väldigt välsmakande kött med fin konsistens. Det påminner mer om ett fint nötkött än lamm. Och det finns absolut ingen smak av kofta.Alla kockar som testat köttet har älskat det. Stefan är också råvaruansvarig i Årets Kock och har introducerat fårköttet i tävlingen.– Det här kommer bli en råvara som efterfrågas, säger han. För det är så otroligt hög kvalitet på det.Stefan Eriksson spår att fårkött kommer dyka upp krogar, och nöjda gäster kommer fråga efter det i butiker.
