This week’s guest is a fascinating one for me. I first came to know Alex Tweet, one of the founders of Fieldwork in Berkeley, California, during his run-in with Shaun Hill of Hill Farmstead over the use of the word Vermont to describe one of Fieldwork’s farmhouse-style beers. The argument that followed between the two resulted in a Sightlines story on GBH, not so much because there was a disagreement, but because it brought up really interesting thoughts about what constitutes an appellation in beer making, especially in the U.S. We’re used to thinking of Belgian beers being from Belgium, but could Vermont have a similarly important and respected origin in the future of American craft beer? Should it? To that end, so much about what makes Fieldwork interesting is the anachronistic qualities of its brand and voice, much of it coming through Alex himself. Fieldwork makes old-world styles of farmhouse-inspired, yeast-driven beers, but they also make New England IPAs and Pastry Stouts. The vibe is rustic and simple, but the business plan is ambitious and newly sprawling with a system of taprooms scattered around the Bay Area, taking advantage of California’s generous licensing for craft brewers. And, of course, there’s Alex himself, a somewhat anxious, energetic, always-thinking kind of guy wrestling with duality as many brewers do, between what he likes and what he sells, and his place in the world, trying to decide if he cares too much, or too little about a variety of aspects of brewery ownership. I admire his candor and his interest in talking it all out, which is what’s made this podcast so rewarding. And I’m glad I get to share it with you all. Listen in.

Dan Saladino investigates current pressures on chefs and the darker side of the restaurant kitchen. From breakdowns to addictions, is it a profession with more problems than most? Dan hears from a range of chefs who open up about the way their chosen profession has affected their lives, including Mark Hix, Rene Redzepi, Matty Matheson, Paul Cunningham, Shaun Hill and Philip, who works through an agency cooking in the kitchens of pubs, chains and restaurants on our high streets. Giving an over view is Kat Kinsman, a journalist who came out about her own experiences with depression when she was working for CNN in the United States. After meeting a succession of chefs who spoke to her in confidence about their own mental health problems she set up a website "Chefs With Issues". She's now head from thousands of chefs around the world who have spoken out about the impact the restaurant world and kitchen life has had on their mental health. Mark Hix talks about his friend, the late chef Jeremy Strode who took his own life after decades of cooking in Sydney. Jeremy had invested much of his time raising awareness of mental health issues and had supported a suicide prevention charity, RUOK. Mark opens up about the impact Jeremy's death has had on him, as well as the wider pressures facing people in the hospitality industry. Chef Paul Cunningham, describes how he woke up one Sunday afternoon and realising he couldn't move his left arm. A stress related blood clot was the cause and he ended up spending five weeks in hospital recovering. He describes the addictive quality of kitchen work, and also the stresses and strains it can bring. Penny Moore, Chief Executive of Hospitality Action, the benevolent organisation set up in 1837 to provide help for people working, or have previously worked in the hospitality industry, explains that the hospitality workforce of more than 3 million, has higher rates of alcohol and drug abuse. The main issues they also deal with is bullying and harassment in the workplace. Penny believes a culture shift is underway in the industry with chefs, including Sat Bains, reducing working hours and opening times to improve the work-life balance of staff. Philip, a 63 year old agency chef describes his working life in the kitchens of pubs and restaurant chains, saying a just-in-time work culture is making the profession a tougher one to survive in. Shaun Hill, the celebrated chef at the Walnut Tree Inn in Abergavenny provides a reminder of why so many people love to work in kitchens and why he's loved spending his working life in restaurants.

Longtime GBH readers may recall the article I wrote about Hill Farmstead back in January 2014. For GBH, and myself as a beer writer, it was a bit of a turning point. That article remains our most-read brewery profile ever. And now that it has two years running on it, I doubt that'll ever change. The reach it’s created for GBH opened a lot of doors for me and the team, and it was shortly after that that I first began bringing other writers into the fold. The entire reason many of those writers sought me out was because of that article. It changed something for them. It gave them a reason to think about beer writing very differently—and that was their words, not mine. But I can attest that even for me, it changed things. I’ve written about many many breweries over the years—almost a decade now. And most breweries have a sense of place and personality. But until that visit to Hill Farmstead, no brewery I’d visited had that sense of place. Or that kind of personality. Indeed, it took me almost a year to gather my feelings on the subject, and to share that story with my readers.  It’s a bit ironic for me that so much of my thesis was focused on the story beyond the hype for Hill Farmstead at the time. Don’t get me wrong, Shaun Hill's reputation was warranted, and the beautiful setting of the place certainly told an accurate story. But it was ironic because my experience actually made me value Hill Farmstead even more, but for very different reasons. I was attracted to Shaun's focus, the simple-but-expressive beers being made at a time when there was no real vocabulary for a mixed fermentation Saison in our typical craft parlance. The beers harkened back to my first and enduring loves, like Saison Dupont, for which I’d not found anything comparable in the states. And something about the place reminded me so much of the upbringing I had in rural Pennsylvania. The terrain, the isolation, the struggle to produce something valuable so far away from where those things are typically valued. After reading the article himself, Shaun admitted to not remembering my visit much that day. In fact, he reluctantly gave me about 10 minutes of his time and went back to work. And most of the piece came not from the things that Shaun said, but the things that he did. I witnessed not just the beauty and rare quality of it, but the work, frustration, and anxiety of it all—and it stuck with me. It was mostly a portrait built on observation, and a bit of self-reflection for my own life experience. That article tied Shaun and I together.  Years later, and we’ve become friends of a sort. I’ve gone back to visit a couple times a year, like many of you have. And I’ve been lucky enough to steal away some time on each of those trips to listen and learn from his experiences up on that hill in Greensboro, Vermont. Some of it has been trying and frustrating. And some of it has been revelatory and edifying. That’s just a way of living in that part of the world.  The weekend we recorded this episode, he was in town for our friend Ryan Burk’s wedding in Chicago. Ryan is the cider maker at Angry Orchard’s Walden project. You may have listened to his episode a few weeks back. You’ll find a lot of parallels here in my conversation with Shaun. The three of us learn a lot from each other these days, but of course, so much of it will be unique to his experience as the creator of Hill Farmstead—which, to my mind, is still one of the most singular things in the world.

In the British Library there is an archive of life story sound recordings which tells the true story of how our food has changed over the past century. Until now, this collection has been accessible only by visiting the British Library. Now, for the first time, the 'National Life Stories project' is being made public online. Featuring hundreds of voices, and thousands of hours of interviews, it is one of the most comprehensive and revealing resources we have on food in the UK. Contributors range from chefs like Shaun Hill and Albert Roux, to biscuit factory managers, from butchers to apple growers. In this edition, The Food Programme is collaborating with the British Library to bring you highlights from the 'National Life Stories' archive. Historian Polly Russell picks voices which shed light on hidden parts of the food industry, from restaurant kitchens to the high street. And in recounting these histories to today's chefs, restaurateurs and shop owners, she finds how working in British food has changed. Adam and Brandan are reasonably sure they could feel Seattle fans jumping up and down two states away in Missoula, MT, during the 79-yard run by Marshawn Lynch. The guys talk about the win and what it means for the playoffs looking ahead. There's one final regular season matchup at home before Seattle heads to the playoffs and it's a matchup against the St. Louis Rams who are always a physical team when playing Seattle. The guys talk about how Shaun Hill gives the team a different look this time around. In this show's interview, the guys welcome William Cornell, creator of the Rain City Redemption series to the show, to talk about the latest edition. William talks about what it takes to put together an epic series and his reasons behind the effort.
