Welcome back to Pizza Quest! NYC is a treacherous place to open a new pizzeria.  The competition is fierce and public is vocal and not always diplomatic. But the lure of reaching for holy grail of pizza is hard to resist, and now Chef Ian Coogan, formerly of Eleven Madison Park and the Jean George lineage of great chefs (among other top-tier mentors), and currently the culinary director at the popular Motel Morris in Chelsea, has taken the plunge a few blocks away with the opening of KID.  To assure success, Ian brought in Roberta's and Tartine alumnus, Max Blachman-Gentile to nail down the dough and the fermentation game plan. In this episode we are graced by having them both here to share with us the rest of the story, including their creative process that resulted in a highly inventive yet relatable menu and whimsical ambience. They also share the how-to of training their team to deliver the KID experience on the highest level on a daily basis. It's all here on this week's episode of Pizza Quest!

I was listening to Hal Hammons "Citizen of Heaven" podcast when he was sharing about a game called, "New York Slice". At the beginning of this game, one person "cuts" the slices, but must be careful, because they are the last to choose. The "I cut, you choose" method is effective, and teaches someone to not consider their desires, but others. Well...Jesus established this long ago when we gave us the golden rule. To serve others, even when you get nothing back from it, will change our relationships for the better. Actually, it winds up even being in your best interest to put your interest aside.

His name is Kirk. He is the co-founder of a slice of New York now turned Co Op. but you know, Kirk and I go way back to last year when I tried to work with him. It was his wife Marguerite, who actually reached out to me when I was looking for a new way to get into pizza. And I was introduced to Kirk through her and we decided to talk about the position. Ultimately it did not fit, but as you can see that would not be the last time we talked. And fortunately, he agreed to come on this podcast. And I think after getting to know him a little bit more, he and his wife do great things for the community. And the mission that they are trying to pursue with this Co Op is amazing, which you will hear about in part two of the interview. And, they make amazing New York style pizza. Like you're not only going to get a product representative of New York, you're gonna get a bomb pizza that does it justice. Thank you very much for tuning in and please enjoy the show. So it kind of sounds like you are a solutions engineer. Kirk: That's what I do. My card says just problem solver. That's what I do, you know. Whether it's at the shop level, whether it's day to day, real time or long term, that's just kind of what I like to get involved in, stuff that's uncharted territory. The kind of nebulous stuff. If it's uncharted territory is that means you don't have boundaries. You don't have limits, preconceived limits of what you can and can't do. And you can determine what you need to do based on what your requirements are and what you want to do and what you think is right.

In part three of my pizza nerd-cast with Adam Kuban and Scott Wiener, we go seriously deep into New York pizza, specifically the state of the NYC slice in 2018. Scott observed that some of the best pizza in town is being made by a new generation of pizza makers, ones that have no connection with older pizzerias. As he puts it, "They're not someone who learned their recipe from somebody else. They're people who are taking it upon themselves to figure out how to do it and do it right." When I mentioned that the quality of some of the old-school slice joints had become markedly worse, Adam reluctantly agreed. "That's tough 'cause I came here from Oregon...and we had no slice culture. The first six months I was here, I probably ate a slice everyday, 'cause I could," Adam said. "But eventually I burned out on it, and then...the next time I ate a slice again, I was like 'What did I think was so good about this? This is like rubbery cheese.'" Of course, I had to ask both of them for their definition of the New York slice. Adam said, "Thin crust, it's crisp, yet flexible, it's got tomato sauce and cheese, but they're balanced and they're balanced with the crust. Like, you don't have too much sauce, you don't have too much cheese." Scott's was slightly different: "A New York slice is low-moisture mozzarella, gas oven, served on a paper plate, but the slice is bigger than the plate." Since we were talking slices, Scott also had some thoughts about getting a slice reheated, which was accompanied by a bit of hard-won wisdom about pizza in general. "It's not going to be the same after the reheat," Scott said, "but that's sometimes part of the game. It's like toasting; sometimes you want a slice of bread, and sometimes you want toast. They're different. It's not just like breadier bread. You know what I mean? So, you gotta know your pizzeria. If their fresh pies come out the way that you like it, great, but some places you will want the reheat. You just gotta know your place." We talk about a whole lot more in this week's episode, including our favorite slices in all the five boroughs and the pleasures and perils associated with the metal pizza stands you find at some of the city's great pizza places. But to hear our picks and our collective pie wisdom, you're just going to have to listen.
