The annual National Restaurant Association Show in Chicago concluded Tuesday, and both editors spent the last four days walking the Show floor, sampling food and drinks from the thousands of exhibitors, recording podcasts and video interviews and attending events.Bret Thorn, senior food & beverage editor of Nation's Restaurant News and Restaurant Hospitality, was on stage at the 2025 MenuMasters awards Saturday, handing out awards to this year's eight restaurant and chef recipients at a gala celebration held at Morgan Manufacturing. Michelin-starred chefs Dominque Crenn and Curtis Duffy were both honored, the former inducted into the MenuMasters Hall of Fame and the latter recognized as MenuMasters 2025 Innovator. Culinary directors from chains including Wendy's, Chili's, True Food Kitchen, Fuzzy's Taco Shop and Iron Hill Brewery & Restaurant also received awards for menu innovation. And restaurateur and social media expert Alexandra Lourdes won for Digital Innovation.Pat Cobe, senior menu editor of Restaurant Business, also attended the event and was impressed how all the awardees acknowledged the importance of team collaboration to menu innovation. She also enjoyed a number of bites and sips on the Show floor. Standouts included the avocado toast bar at Avocados from Mexico, an everything bagel-seasoned brie from the California cheese booth and a pistachio latte made with pistachio milk at the Campbell's booth. Speaking of non-dairy milk, Pat tried fermented oat milk that is processed into 2-D printed sheets that simply have to be rehydrated. It's a high-tech, sustainable solution by  Milkadamia, a plant-based milk company.Bret and Pat were judges for the National Restaurant Show's Food and Beverage Innovation awards and had the pleasure of honoring the recipients on Monday, as they all came up to the Beverage Room stage for recognition and photo ops.This week's operator interview is with Kyle Knall, chef-owner of Birch in Milwaukee, Wisconsin. Before moving to Milwaukee to be closer to family, Knall earned his culinary chops under celebrated chef Frank Stitt in Birmingham, Alabama, and at Gramercy Tavern in New York. Birch's casual vibe and inspired, locally sourced menu have turned it into a popular dining destination. Another restaurant is in the works in Milwaukee's Third Ward historic district. Tamara recently took a press trip to San Antonio, Texas, hosted by Visit San Antonio, to see what there was to do in San Antonio for families. She found that San Antonio has a lot of history and culture, great food, fun theme parks, and plenty of free or affordable attractions. San Antonio could make a great winter or spring break family vacation (when the weather is cooler). The city is also ideal for a girls' trip or couples getaway weekend. Top sites include: San Antonio is the theme park capital of Texas with four theme parks within a short drive. They have the largest SeaWorld of all the parks. There is also a Six Flags, Schlitterbahn water park, and Morgan's Wonderland. Morgan's Wonderland is an ultra-accessible amusement park but built so that everyone can play. Each ride and attraction has been designed from the ground up to be accessible and conscious of those with special needs. The San Antonio CityPASS can save you money if you want to visit quite a few museums and attractions (including the San Antonio Zoo). The Riverwalk extends for 15 miles and outside of the core downtown horseshoe section, it is a quiet and lush urban park. You can even kayak on the river. The Pearl is a dining and entertainment district with residences and the Hotel Emma. The food in San Antonio is great and it is a UNESCO City of Gastronomy. Some highlights: Eddie's Taco Shop, Best American Daughter, Burgerteca, Stix and Stone, The Jerk Shack, and La Panaderia In addition to the Alamo, there are four other Missions that are run by the National Park Service, which offer even more to see. The Witte Museum is great for kids with plenty of interactive exhibits and play areas. The Japanese Tea Garden in Brackenridge Park is beautiful and peaceful Hemisfair Park downtown also is great for family with young kids with splash pads and climbing structures. Tamara stayed at the Intercontinental San Antonio Riverwalk on the quieter section of the Riverwalk. There are also great resort hotels in Hill Country just outside of San Antonio. This week on the Extra Serving podcast, a production of Nation’s Restaurant News, NRN editors Holly Petre, Sam Oches and Leigh Anne Zinsmeister discussed the FAST Act in California. Signed on Labor Day, the FAST Act was set to be a new California law requiring restaurants with over 100 units and at least one unit in California to follow a set of guidelines including a possible $22 per hour minimum wage. The National Restaurant Association, along with other business leaders, organized a petition with over one million signatures, forcing a vote on the law in 2024. The editors discuss what this will mean during a presidential election year and what it could mean for the future of restaurants both big and small. Next, the team discussed the purchase of Fuzzy’s Taco Shop by Dine Brands earlier in the week. The three editors talked about what the year in acquisitions has looked like and how this fit into the bunch. Finally, the team talked about the first of the pandemic-era lawsuits to come to financial fruition. Uber Eats was ordered to pay the city of Chicago and restaurants $10 million in damages for listing restaurants without their permission. The team discussed what this means for the delivery segment and what it could mean if there are more lawsuits that have similar results. This week’s interview is the president of Applebee’s, John Cywinski. He spoke with Ron Ruggless about the brand’s recent earnings and the future of the casual-dining giant.
