Madeira ist nicht nur eine malerische Insel im Atlantischen Ozean südwestlich von Portugal, sondern auch Heimat für wahnsinnig vielfältige Weine, die weltweit für ihre Qualität, aber vor allem auch für ihre herausragende Langlebigkeit geschätzt werden. Der Grund dafür: Der einzigartige Herstellungsprozess, auch bekannt als Estufagem-Verfahren. Keine Angst, Lou erklärt ganz genau, was das eigentlich ist. Mehr dazu in der Folge und auch Lous Einschätzung, was die Rebsorten Sercial, Verdelho und Tinta Negra im Glas alles können. UND warum Madeira (ähnlich wie Sherry) nicht nur zum Kochen taugt, sondern auch einen hervorragenden Companion zu Pralinen, Käse und vor allem vegetarischen Gerichten darstellt. Wein der Woche: Finca de la Vega Crianza Rotwein https://bit.ly/3Tpa9bn Dieser kraftvolle, trockene Rotwein aus dem Herzen Spaniens duftet nach Kirsche, Lorbeerblättern und Tabak und präsentiert sich am Gaumen mit Aromen von getrockneter Feige und Dill. Tempranillo gilt als die bedeutendste Rotweinsorte Spaniens und schmeckt hervorragend zu Fleisch, aber auch gefüllter Paprika, Couscous und Linsen. Weinlexikon: E wie Estufagem Estufagem ist ein traditionelles Verfahren, das spezifisch für die Herstellung von Madeira-Wein verwendet wird. Es handelt sich dabei um einen einzigartigen Reifungsprozess, bei dem der Wein einer kontrollierten Hitzebehandlung ausgesetzt wird. Damit sollen die Effekte der langen Seereisen aus vergangenen Jahrhunderten simuliert werden, auf denen Madeira-Wein damals zu seiner charakteristischen Aromatik fand. Es gibt zwei Hauptmethoden der Estufagem: Estufa-Verfahren: Hierbei wird der Wein in Edelstahltanks gegeben, die auf Temperaturen von bis zu 50°C erhitzt werden. Diese Behandlung dauert in der Regel mindestens drei Monate und zielt darauf ab, den Zucker im Wein zu karamellisieren und ihm seine typischen Geschmacksnoten von gerösteten Nüssen, getrockneten Früchten und Karamell zu verleihen. Canteiro-Verfahren: Beim traditionelleren Canteiro-Verfahren reift der Wein in Fässern, die unter den Dächern der Weinkellereien gelagert werden, wo er natürlichen Temperaturschwankungen ausgesetzt ist. Dieser Prozess dauert deutlich länger, oft viele Jahre, und fördert eine langsamere Oxidation und Evaporation, was dem Wein eine größere Komplexität und Tiefe verleiht. In recent years, there has been a lot of buzz around “volcanic wines.” The term makes it sound as if these are wines that are spawned from a volcano, but in reality these are wines that many people believe have special qualities because they grow on volcanic soils. In this show, I define the types of volcanoes before discussing the ecosystems they form. I then talk about the specific regions known to have volcanic wines, but I also point out that these areas have other factors that may create similarities in the wine – proximity to oceans, old vines (unaffected by phylloxera), and high elevations and cooling breezes. The Hunter Valley is the OG -- the first place where Australian grape growing took place.  For 200 years there has been continuous winegrowing and winemaking among the rolling hills and green valleys, which are peppered with iconic wineries, many of which have been around for more than 100 years. Although other types of wines are made, the Hunter has one crown jewel -- Semillon. In this show I give detail on the history, background and terroir of the Hunter before discussing the Semillon and why it is so special and is truly a GREAT!!I give an overview of the Hunter Valley, which is one of Australia's most popular wine destinations. It is just over a two hours' drive north from Sydney in New South Wales – about 160 km/100 mi north. It is very near UNESCO World Heritage National Parks, which are popular tourist destinations.With its low latitude (32°S), viticulture would not be possible without some mitigating factors The Hunter Valley is SMALL - it's 2% of Australian vineyard area. The region focuses on quality, premium wines, not bulkPlantings are 47% red (mostly Shiraz), 53% white (mostly Chardonnay and Semillon, with Verdelho of Portugal. Denne gang har vi været en tur i skuffen efter guld og har fundet et afsnit frem til jer fra sidste sommer. Emilie har været til eksamen i hedvine og vi udnytter at hun har masser af viden i frisk erindring. Vi skal derfor et smut til Madeira - en frodig, subtropisk ø midt i Atlanterhavet, hvor hedvinen af samme navn fremstilles. Produktionen er lille og der findes kun 8 officielle producenter på hele øen! Emilie er svært begejstret for de gyldne dråber og det varer ikke længe før hun har overbevist Kristine. Episode 10 is with Mark Stephens of Deep Rooted Wines based in Walker Bay, South Africa. Mark is a regenerative viticulturist-turned-winemaker and is a prominent figure in the Cape South Coast's new wave. The South Coasters - as they call themselves - are an exciting group of winemakers whose energy and enthusiasm resemble that of the Swartland revolution a number of years ago. Another one in this group whose name you might recognize from our book is Natasha Williams of Lelie van Saron. Mark is a new addition to our portfolio and he's unique in that he's one of our only producers who makes strictly zero added sulfur wines. This choice is a personal one for Mark as he's got a pretty strong sensitivity to sulfur, but he was fed up with going to natural wine fairs and being served unequivocally flawed wines and being told “it's ok, it's natural.” So he set out to make clean, low pH, sulfur-free wines under his own label. We've got two of his wines, a skin-contact Verdelho called “Touch Me” with a pretty unique label (keep listening to hear that story) and a textural Fumé Blanc. In this episode, you'll hear Mark's story of how he came to understand the connection between feeling good and zero sulfur. If you've never heard of Banele Vakele or Tembela Wines, listen to this episode. He's such a charismatic guy, with a smile that stretches from ear to ear, and a soulful chuckle. Tembela Wines is the newest South African producer to join the Vine Street Imports portfolio. He makes a Chenin Blanc and a Syrah, sourced from regions you wouldn't necessarily expect (Durbanville for the Chenin, an area better known for Sauvignon Blanc, and a nice yin-yang mix for the Syrah from Constantia and the Swartland). In the words of wine critic Tim Atkin, “Banele Vakele is an exciting young winemaker who is rapidly making a name for himself.”  Wine critic Neal Martin names Banele as one of the many winemakers who are “breaking down barriers, inspiring others and eroding the stigma that wine is supposedly made for one sector of society and not another.”  In this episode you'll hear all about Banele's journey to becoming a winemaker, from his humble upbringings in Khayelitsha to stints in Burgundy, Oregon, and beyond. Oakover vineyard in the Swan Valley has started its earliest ever harvest of Verdelho and Semillon. The early harvest is due to an unusually warm and dry winter in 2019 which brought about an early budburst in our Swan Valley vineyards. It led to some of the earliest flowering the vineyard has ever seen, with some blocks starting in late September.

Just 40 miles/65 km north of Cape Town lies a large area that makes the most exciting, sought after wines in South Africa. Swartland (Dutch for 'black land') is full of young, passionate winemakers making wines that respect the hot, dry land from which they derive and are able to create wines of such depth, flavor, and nuance that it’s hard to believe so few know about them. In this show, we tell you about the Syrah, Rhône and Mediterranean varietals, the Chenin Blanc and other stunning white blends coming from this area and why you need to seek it out ASAP!   Overview of the region… Swartland was oncea rural backwater, better known for wheat fields than vineyards Vineyards traditionally grew where wheat couldn’t -- on the northern side of Paardeberge Mountains in the south, the plains of Piketberg in the north, and the smaller Ward of Riebeekberg and Kasteelberg Mountains in the east Lots of old vines on slopes where nothing else grows, hand harvested The climate ishot and dry with very low summer rainfall but with consistent afternoon and evening breezes off the Atlantic Ocean. Growers have less concern about fungus and other diseases. They use the ecosystem to keep the vineyards healthy with integrated pest management, bush training of vines, and dry farming   We dork out on plate tectonics! Swartland has ancient geology. The terroirresulted from a combination of tectonic collisions, ancient volcanic activity and continental separation The soils are the oldest in the world and are a mix of shale, arenite sandstone and granite, schist based terroirs. Malmesbury shale on Kasteelberg Mtn is the dominant soil. vertical layering structure caused by tectonic shifts. We discuss the early history in the 1660s, with the arrival of the French Huguenots who planted vineyards. We tell the story of how, in late 1990s, Charles Back of Goats do Roam fame went to Swartland to source grapes and wound up transforming the area by  buying land and hiring Eben Sadie to run his “Spice Route” wines in 1998. First we talk with Jeff Mangahas of Williams Selyem about what makes wine from the various micro-climates within the region taste so different. Next, we meet Michael Thompson who bought the land to build his and his wife's dream in Sonoma's Russian River Valley with an address he feels makes all the difference for Thompson 31 Fifty Wines. Then, we talk with Molly Meeker of Meeker Wine where they know their way around the noblest of grapes including their famous Handprint Merlot. António Maçanita is involved with several wine projects throughout Portugal, including Fitapreta in the Alentejo, Maçanita Vinhos in the Douro Valley, and the Azores Wine Company on the Azores Islands. António discusses the rapid change that is happening on the island of Pico, as hundreds of hectares of vineyard are being replanted after over a century of decline. He explains the winemaking history of the area, and points to the reasons why there is a resurgence in interest in grape vines on Pico, an island in the Azores. António also uses his knowledge of old texts to provide commentary on the changes. He further discusses the Alentejo region, and the winemaking history of that zone, while detailing the characteristics of some of that area's signature grape varieties. And António divulges the unorthodox approach that he is taking to winemaking in the Douro Valley of Portugal. This interview provides both an overview of important Portuguese wine regions, and an analysis of how they have changed over time. I recorded this podcast at the Peterson Winery tasting room while I was visiting Sonoma in support of the Sonoma Underground event I co-founded (www.undergroundwineevents.com).  This is a fascinating conversation with the force and Dry Creek Valley icon that is Fred Peterson, his son and Peterson's winemaker Jamie, and his daughter and head of sales and marketing, Emily. As Fred discusses, following time in the military, he studied viticulture and winemaking and graduated with honors from UC Davis. After working in and around Santa Cruz for prestigious wineries as a vineyard manager, Fred came to Dry Creek Valley in 1983 to find and develop world-class vineyard properties.
