Send us a textScaling a frozen food brand? It's not for the faint-hearted. Cold chain logistics, merchandising nightmares, and razor-thin margins make it one of the most challenging categories in the game. But Mrinali Kumar, CEO and co-founder of EatKinda, is flipping the script - proving that bold innovation, sustainability, and smart operations can carve out a winning edge.In this episode, Mrinali reveals how EatKinda - the world's first cauliflower-based ice cream - went from a small-town pitch comp in New Zealand to over 120 retail listings, and garnering international buzz, for its mission to reduce food and plastic waste. And now? They're exiting NZ (for now!) to go all to focus on the US market.Tune in to learn:

Today, we talk about the word of the year and more specifically MY word of the year: Enrich. Big lessons so far in 2025 for me. Also, we will cover our usual monday segments: Tales from the prepper pantry, a frugality tip and operation independence. Featured Event: The LFTN GSD Weekend is Upon Us! livingfreeintennessee.com/event/lftn-gsd-weekend/ Sponsor 1: EMPShield.com, coupon code LFTN Sponsor 2: AgoristTaxAdvice.com/LFTN Tales from the Prepper Pantry Launching a new video short series this week: Can You Do That with Mayonnaise? Freezers go in their permanent spot this week, and one becomes the "workshop food" freezer! This is how I stay organized so we can find everything for the workshop. Taco Soup Idea From Janna Gillard The Salsa Jar Hijink Frugality Tip from Margo Do you frequently cut the sleeves off of T-shirts? I do, because someone I live with only wears sleeves to work. I use the sleeves for rags and plant ties, but the other day I cut a sleeve off and for some reason I was like let me see if this fits on my head....guess what the sleeve of his XXL T-shirt makes a great headband for me. So yet another use for something you would normally throw away. I know I always am looking for a crappy headband when I am going to do a facemask, now I will keep a sleeve or two around. Happy Saving y'all Operation Independence Tomato Seedlings look GREAT - not buying any plants this year. Scored $150 on a left behind part of my car - Purging is also enriching my supplies budget! Mayo thoughts Main Topic of the Day: Word of the Year Update: Enrich A reminder: Choosing a word of the year is about setting an intention to guide your decisions and energy throughout the year. "Enrich" was chosen to focus on sharpening, refining, and deepening—not just doing more, but doing better. Lesson 1: Enrich the People It Serves Lesson 2: Purge What Doesn't Serve Lesson 3: Slowing My Roll Conclusion The key to enriching our world here at the Holler Homestead is not about how many memberships or Spring Workshop tickets can I sell today and much more about asking two key questions: How is this going to enrich the buyer or participants?  How does this enrich my life? Make it a great week! GUYS! I think there's a physics issue at play here, I mean how can ALL the freezers be full ALL the time? When you take something out to cook it, do you have more food to put in immediately? Tales from the Prepper Pantry Big thanks to Ryan Steva on the prepper pantry before this deep freeze Homegrown Cooking: Beef Heart - Next month is steak and kidney stew from Dawn and meatballs from me Travelling with a cooler Freezers are reorganized and ready for incoming lambs Weekly Shopping Report Based on some videos from a few prepping channels (eg. Poplar Report, Pinball Preparedness), I'm trying to be more attentive to shortages, but fortunately haven't seen anything remarkable other than the limit of 2 on Aldi eggs. Dollar Tree was first.  Stock is always changing there, but there were no vacant areas and I did not see duplication being used to hide low stock.  The drink selection remains good.  The food coolers are mostly full. We did not go in to Home Depot, but the online price of a 2x4x8 remains at $3.85. Aldi was last.  We found what we wanted.  Staple prices were: bread (20 oz. white): $1.39; eggs: $4.17 (+, limit 2); whole milk: $2.87 (-); heavy cream: $5.39; OJ: $3.69; butter: $3.79 (-); bacon: $3.99; potatoes: no tag; sugar: $2.99 (+); flour: $2.35 (+); and 80% lean ground beef: $3.79.  Untainted regular unleaded at Weigels was still $3.59 per gallon, but the 87 octane (regular) corrupted with ethanol is only $2.79. Frugality Tip from Margo Today is a short and sweet simple tip. Whenever we are out shopping or whatnot I pack a small cooler with drinks and a reusable ice block. I also keep an extra insulated tumbler full of water in the car at all times. Stopping to grab a drink adds up quickly, especially with someone that drinks soda. So stop yourself from grabbing that convenience store overpriced drink and just pack a small cooler. Happy saving y'all. ~Margo Operation Independence Value of four rams on homestead income: $1200 Main Topic of today's Show: Planning Your Kitchen Garden Two ways to plan: Replacing fresh veg in season then buying shipped in “fresh” veg the rest of the year VSr eating seasonally. What is your goal? (Replace most food by growing your own VS supplementing and sourcing locally or regenerative options) I dont care what you say - Unless you are wiling to dramatically adjust what you eat, your goal is to supplement Grain example - it's both regional and dependent on how much land you have in production: Wheat, oats, corn, beans That mid-winter banana, apples, fresh summer squash, etc Sugar Seasonal eating method Use what is here and ripe first (Bone broth story) Preserve what makes sense Then tap stored items when fresh is not available Develop/track a cycle of preservation  power pantry method of storing what you use and using what you store. (Pay attention to what you really use each year and do tap into waves of abundance - cornmageddon)  Assessing Needs: Calculate the amount of food needed per person and how to align this dietary preferences. Typical example - 2 heads of lettuce a week, means succession planting 2 heads a week, 5 lbs of tomatoes a week, means succession planting tomatoes. Also, there is an AI problem The reality of vegetable seasonality -  Tomatoes ripen in waves Lettuce will stop producing in very hot weather Location appropriate alternatives Preserving surplus for “off season” use (Carrots and other “Roots” Integration into the local community and compost  Meals replaced method: in season and out of season - this is how to estimate % food coming from land and local sources Green bean example - 65 jars - 65 meals covered, most of which will happen Fresh chard, squash, etc 99% meat is from here at this point Choosing plants - Dont plant what you dont eat Radishes story Yield per plant BS on seed packets Proioritize 3 things - Green beans, chard, tomatoes at the HH Garden Layout: Talk about zoning, herbs, and succession planting. How much space do you have - will you have and how close is it to your house? What takes the most interaction? Put high maintenance stuff closer (Tomato wall) INTERPLANTING, COVER CROPS and SUCCESSION PLANTING Soil Health: Your are first growing soil - HomeFoodSystems.com Interplanting, guilds, etc Succession planting and seed roulette Rotation - needed or not? Cover crops - again - homefoodsystems.com Sourcing seeds: Ask locally what people have success with - see if they have saved and will sell you some, participate in seed exchanges even if you have no seeds. I like Baker Creek, Mad River Seeds https://www.etsy.com/market/mad_river_seeds Have fun with this! Especially if it is your first year. Click HERE for 6 Tools You Need to Build a Profitable Farm You work so hard to create the best farm you can - whether it's meat, milk, flowers, eggs, fiber. Plus all the workshops and tours. I even know some of you are farming oysters and salmon and Air BnB's!   You bust your buns to get these products & services to people in your community.    I know this because I did it, too. I used to wake up thinking - “my product is amazing. People should be flocking to buy - and they aren't.”   And despite your best efforts, often you feel like your market just doesn't want what you have.   They didn't buy enough whole chickens, so you had them cut up.   They didn't buy the Flower and Vegetable Shares…   So you made a YouPick and weekly orders.   They didn't buy the beef shares…   So you created bundles and boxes and still have FREEZERS full of meat.   So the obvious thing to tell yourself is -  that the market is the problem.   But. This thought is KILLING your business.   And it's not true.   The market is NEVER the problem.   I know right now a lot of you reading this are tempted to think, “but Charlotte doesn't know MY market. MY market IS the problem. She doesn't realize it IS saturated with products just like mine, many cheaper.”   It's totally okay you think that - I hear you! I totally thought this, too, until I figured out the solution I offer today.    What my experience with thousands of farmers now shows me time and again is it's NEVER the market that's the problem.   There's ONE reason your market is not buying from you. And that lie you tell yourself (you didn't know it's a like, it's okay) is keeping you stuck.   Today on the Profitable Mindset Podcast I outline how this dangerous like will cost you thousands of dollars.   And, I'll share the three things you have to do to fix this problem.   When my clients in the 5x Your Farm Sales coaching program discover the solution to this lie in the first two weeks after joining, and implement the solution I offer today, they start to make consistent sales.   They find their market was never the problem.   This is the best news ever.   Because if the market is the problem - it's out of your hands to fix it.   I show you how it's 100% within your control to solve this problem and start making consistent sales at the price you need to charge.   Click HERE to tune in and hear how to solve for lack of sales.   Enjoy!   Charlotte

Stine Aasland's dream of creating a Nordic Waffle Wafflelution has come true, and that means we get to delight in sweet and savory, handheld, heart-shaped waffles all day long.  Stine, known as Norway's Waffle Queen, came to America in 2015 with two suitcases, a waffle recipe, and a dream. On today's show, Stine and Nordic Waffle's CEO, Jeremy Ely, talk about everything from selling cozy, soft and thin waffles at Valleyfair to the Minnesota State Fair, to what happened when a pandemic shut down their main revenue stream, her advice to people with a business dream, and why they like to partner with companies close to home.  Stine, Jeremy and I talk about what we add to our Nordic Waffles to make them extra special.  And then Stine unexpectedly advises us on the only one ingredient she says is not very good on a Nordic waffle. And if you want to make the Scandi snack at home, Stine shares her basic Norwegian waffle recipe, which includes her two most special ingredients—cardamom and love. Vickie Kloeris is a food scientist with an out of this world career. She worked at NASA in space food systems for 34 years. She served as the NASA manager of the Shuttle first and then the International Space Station food systems. She and her teams worked through the complex challenges of creating tasty, nutritious, long-lasting, easy-to-prepare meals that support the dietary and psychological needs of astronauts living on the space station. Vickie has worked with 100s of astronauts to plan their favorite meals and holiday specialty meals for space travel. We talk about the history of feeding our astronauts; working with the US military; evolution of food systems at NASA to feed our astronauts; depending on the Russian space agency in the initial days and also working with other space agencies. Vickie shared the challenges for the future manned mission to Mars; and how food science and technology has been at the core of so many food preparation and packaging technologies we take for granted. We also talk about how we might be able to use these technologies to address hunger and reduce food wastage. Microwave is hard to beat for sheer convenience. But the most significant food tech innovation of the 1940s wasn't welcomed with open arms. It took decades of struggles before it rocketed to success in the 1980s. Red to Green is a food tech podcast focused on the future of food and food sustainability. We cover topics like cellular agriculture, cultured meat, food waste, food packaging, and more. More info and links to resources on https://redtogreen.solutions/ For sponsorships, collaborations, volunteering, or feedback write Marina at change@redtogreen.solutions Please leave a review on iTunes https://podcasts.apple.com/de/podcast/red-to-green-food-sustainability/id1511303510 Connect with Marina Schmidt https://www.linkedin.com/in/schmidt-marina/ The first microwave 'electric range' for the home kitchen was launched in 1955, retailing at $1295. It took more than a decade for a more affordable model to arrive, still costing nearly 500 bucks. 30 years after the first commercial model, microwave ovens had made it into less than 10% of American kitchens. Ad campaigns selling "the greatest cooking discovery since fire" with futuristic and science language may have backfired. As the cold war heated up, fears around any radiation grew. Positioning microwaves as something novel, cutting-edge and techy possibly didn't appeal to the actual users at that time - homemakers. Despite the introduction of safety standards in the 70s and multiple studies showing microwaves don't mess with the nutritional qualities of food, conspiracy theories about them continue to pop up today. Early ads for microwaves also promoted how homemakers could cook what they already made, but faster – a roast chicken, done in 30 minutes! However, despite claims of speed and convenience, it could take a home cook hard work to get good results. Microwaves can only penetrate about 2.5 cm into foods, so they tend to cook food unevenly unless they are cut small enough. They also typically don't produce the caramelization and Maillard reactions, which are delicious browning of foods that make baking cookies and roasting meats smell mouth-watering. If you try onions in a pan with oil, they become nicely brown. If you put them in the microwaves, they will soften up in a puddle of fat. Also, they tend to dry food out, making a chicken chewy - in the wrong way. As a result, speedy, homemade microwave meals could be inconsistent and uninspiring compared to their oven-baked or stovetop cousins. However, a revolution in convenience and consistency was already underway in another part of the kitchen – the freezer. Frozen ready meals had been around for a while - Swanson's famous TV Dinners were introduced in 1953 and frozen on the tray used for cooking and serving. Meals like this saved time on planning, shopping, and washing up – They were hugely popular by the 1970s, and late in the decade, food companies and microwave oven manufacturers spotted a chance to team up. Frozen meals could be incredibly uniform. You might not beat a home cook in quality by formulating recipes and designing packaging specifically for microwave cooking, but you could get a consistently alright meal fast.

Grand Bahama Island Reality Check   We had a Skype call w/ Ian Rolle from the Grand Bahama Island and concluded that due to flooding and lack of meat for the cats, it doesn't make sense.  Alex still wants to pursue it with the Prime Minister, but I think it's not going to happen.   QUESTIONS FOR INITIAL CONVERSATION WITH IAN:   • Describe what you currently envision this looking like? • Are they thinking a drive through park where animals are roaming around a large area vs enclosures like ours that allow for a walking tour? • What is you primary purpose, what you hope to accomplish? • Attract tourists, which could drive them to Doc Antle vs. Rescue & Conservation education? • How did it come about that they contacted us? • How envision feeding carnivores? • Local sources - Cost of shipping food in and any other constraints • We describe our model - Cats in enclosures, educational walking tour.   DETAILED STRATEGIC AND OPERATIONAL QUESTIONS FOR OURSELVES AND THEM   • How does this enhance our ability to care for our cats and globally end the trade in them as pets, props and parts? • Reaching cruise ships with our message would help stamp out cub handling in other ports but there is probably a more cost effective way to do that. • Investment incentive - This would be a huge investment of our time and resources, at a time when we are trying to focus those on ending the private possession of big cats.  Why would we do this? • A million visitors per year come to Freeport (pop 250,000) http://www.cruisemapper.com/ports/freeport-port-30 Things to do include shopping, casinos, snorkeling, a 12 ac botanical garden, and a nature reserve with caves.  No real competition. • Could we have a casino to generate income for the cats? • Could we offer cabins to overnight visitors for the full safari experience? • Could we offer food service to guests? • How does charging for these services work w/ us not being Bahamian citizens?  Taxation (both by Bahamas and US?) • Investment security - Would we own the land (how much?) or would it only be a lease (how long? Secured how?) • Any improvements we add are probably not going to be movable. • Cats - Food - 500 lbs of fresh meat per day, including beef, turkey, chicken, rats, rabbits and sometimes specialty meats, such as pork, quail and organs (not in ratio to number of animals that could be raised on the island)  https://en.wikipedia.org/wiki/Agriculture_in_the_Bahamas • If we were to source this locally, can they also kill (humanely), butcher and keep frozen until delivery? • Vitamins: Currently our primary diet is beef based w/ all vitamins mixed in and brought in from Colorado by truck. • Freezers: 17,000 lb capacity and must have generator backup so we have meat even during storms.  Who provides the electricity (as I understand it is ridiculously expensive.)  What guarantee do we have of electricity?   Hi, I'm Carole Baskin and I've been writing my story since I was able to write, but when the media goes to share it, they only choose the parts that fit their idea of what will generate views.  These are my views and opinions. If I'm going to share my story, it should be the whole story.  The titles are the dates things happened. If you have any interest in who I really am please start at the beginning of this playlist: http://savethecats.org/   I know there will be people who take things out of context and try to use them to validate their own misconception, but you have access to the whole story.  My hope is that others will recognize themselves in my words and have the strength to do what is right for themselves and our shared planet.     You can help feed the cats at no cost to you using Amazon Smile!
