On this week's Extra Serving, NRN editor in chief Sam Oches and executive editor Alicia Kelso discuss the news that Dine Brands is laying off 9% of its corporate workforce as Applebee's and IHOP continue to languish with stagnant sales and traffic. How might these chains capture some momentum like full-service peer Chili's? Plus, Chipotle reported positive sales and transaction growth in Q4; Sam and Alicia talk about the keys to its impressive performance and how CEO Scott Boatwright has maintained consistent growth in his first few months on the job. And the National Restaurant Association released its annual State of the Industry report, noting that foodservice establishments could cross $1.5 trillion in sales in 2025. In this week's extra serving, Restaurant Business editor in chief Jonathan Maze joins to talk about Yum Brands, which just announced Byte by Yum, an AI-powered division aimed at achieving tech efficiencies across Taco Bell, KFC, Pizza Hut, and Habit Burger. Finally, Sam shares an interview he recently had with Roberto Espinosa, founder of Tacodeli, a taco fast casual based in Austin that has 14 locations around Texas. California Governor Gavin Newsom signed AB 1228 into law in September, which will raise the minimum wage for quick-service workers to $20 per hour starting April 1, with an annual increase in line with inflation. The state's current minimum wage is $15.50 per hour.Unsurprisingly, the move sent shockwaves throughout the restaurant industry and, given the timing, was a massive theme throughout third quarter earnings calls. Some companies already have a plan in place, while others are taking more of a wait-and-see approach. Yum Brands is already anticipating an approximately $10 million impact in Q4 at its California-based Habit Burger and Grill.Alicia Kelso joins the podcast to share how restaurant companies are preparing.

In these times of low retention levels and poor employee engagement, your ability to lead your team and your facility has never been more critical. It's the reason we're launching a much anticipated leadership program from GBNU here this fall, 2022. We're going to give PGA Professionals the chance to develop their leadership skills so they can become somebody that people want to follow, somebody that people want to work for, and somebody that can produce results for their facility. All through the lens of what you, the PGA Professional does every day. I can't wait to tell you more about it. And right on queue, we have an episode that can be a masterclass on leadership. I was so honored to have the chance to speak with our featured guest, David Novak. David is one of the premier leadership minds out there. He's the former CEO and co-founder of Yum Brands, which operates KFC, Pizza Hut, Taco Bell, and The Habit Burger. He's been named Chief Executive of the Year, and oversaw explosive growth as the company doubled its number of restaurants under his leadership and grew to a market cap of almost $32 billion. His marketing background includes such big wins as developing and launching Cool Ranch Doritos, and Pizza Hut's meat lover's pizza…along with one notable marketing mishap, which we'll discuss. You'll want to hear that. Now after retiring in 2016, David launched “David Novak Leadership” where he coaches leaders using his time tested methods and practices, including Purposeful Recognition. He's the host of the very popular “How Leaders Lead” podcast where talks with world class leaders every week. In addition he's a New York Times bestselling author.David is busy to say the least, but not too busy to find time for one of his biggest passions…golf. He's the definition of a “golf nut” and not to mention, quite a player as you'll hear early in our conversation about a huge accomplishment he achieved this summer. So David knows golf and he know golf pros. That's why this conversation is so powerful. Whether you're in a leadership position, or aspire to get to one, David's lessons here are priceless and ones you can implement the very next time you walk in the door at work. This was such a pleasure to have this conversation and I'm excited to share it with you.
The US Preventative Task Force updated their recent recommendations about vitamins and supplements in The Journal of the American Medical Association - reference https://jamanetwork.com/journals/jama/fullarticle/2793447?guestAccessKey=f8ea1de7-fbe9-4561-832e-7ea18d6579ce&utm_source=silverchair&utm_medium=email&utm_campaign=article_alert-jamainternalmedicine&utm_content=olf&utm_term=062122 (here). Their conclusion was: "Conclusions and Relevance Vitamin and mineral supplementation was associated with little or no benefit in preventing cancer, cardiovascular disease, and death, with the exception of a small benefit for cancer incidence with multivitamin use. Beta carotene was associated with an increased risk of lung cancer and other harmful outcomes in persons at high risk of lung cancer." We have published about how misleading labels of supplements are before - click https://www.yourdoctorsorders.com/2015/04/vitamins-supplements-lables-that-lie/ (here). The appeal of vitamins and supplements is the ability to extract the vital chemicals (like vital amines) antioxidants, and anti-inflammatory ingredients, place them into a pill so you can avoid having a healthy diet. Trust me, a healthy diet is clinically proven to work but it is a lot easier to eat a burger and pop a pill than to remember to eat some vegetables (I like Habit Burger). [caption id="attachment_9745" align="aligncenter" width="640"]V Yes, I do love a good burger - Habit is my favorite[/caption] But let's go back in history for a second and let you know that surgeons love vitamins. If you haven't listened to one of my favorite stories- listen to this about the first vitamin - click https://www.yourdoctorsorders.com/2019/05/the-first-vitamin/ (here). And let us not forget that the first evidence based study in the history showed that citrus fruits prevented scurvy - who was that person that showed that - was it a "nutritionist" or was it a surgeon? Oh yes, it was Dr. James Lind - a surgeon. Why the appeal of vitamins, besides my fantasy about eating burgers and popping a pill? First there is the "natural" fallacy - I don't know, I think natural is more eating fruits and vegetables than pills. People tend to think of vitamins as "good" or healthy, and they are. They seem to think of a vitamin as "natural" even though they were brought to us from the golden age of biochemistry. It is clear that the vitamin and supplement companies have taken advantage of that and use terms like "support gut health" or "support immune function" or "good for cardiovascular health, " - even if those statements are meaningless. Second, it is easier to think of things we believe we understand. Heart disease and cancer are complex topics (not that the true chemistry of vitamins aren't but they seem easy). We want to make things easy - like take vitamins and supplements for prevention or cure of cancer or heart disease, because if we start talking about scary statins or chemotherapy not only are there real side-effects but bad press. Of course with vitamins and supplements there can be real side effects - check https://www.yourdoctorsorders.com/2015/10/bad-supplements-23000-er-admissions-a-year/ (here). My aunt's son, a Ph.D. in nuclear physics, died after taking a supplement that was to help him be "fit." But the simple truth is this: however the polychemistry there is in fruits, vegetables, legumes, whole grains, as well as balancing dairy, meats, fats and alcohol has proven effect - we call that the Mediterranean Diet (for more see https://www.yourdoctorsorders.com/the-mediterranean-diet-the-good-the-overhyped/ (here)) [caption id="attachment_9746" align="aligncenter" width="640"]i Instead of vitamins and supplements from a pill - eat this[/caption] For whatever reason, eating a Mediterranean Diet or DASH diet continue to be the proven way to maintain your health. "You've got to have a mindset that you're going to be bringing in real partners. Those who will be spending their capital, blood, and sweat to help create the brand, continue the brand legacy, and hopefully, create opportunities for others to succeed in the business. The organization itself has got to have a mindset that's not just EBITDA-based, but it's also franchise-based, where you're growing the brand with other people and other people's money in a partnership. As part of that mindset, you've got to have the foundation right, and you've got to have the infrastructure set up to be able to do that. That's constantly morphing for us; how better to support our franchise partners and thinking forward now as we have a larger percentage of the restaurants that will be franchised, how we will better support them. We've done a few things that we've moved along on the infrastructure piece. Having that foundation throughout, even how do we make our IT systems more franchise-friendly or make them accessible to our franchisees to ensure they can share our IT and POS system's robust nature, is a big part of it.Of course, operations is always front and foremost for us. The operational management partners that are out there helping us and helping our franchisees be better operators, they all come from within." – John Phillips, Chief Global Business Partnership Officer, The Habit Burger Grill

Hey Fellas, its that time of year where we add another number to the count of how many years have passed since the beginning of counting the years 2022 years ago. That is how it works, trust me. This year is going to be one for the books, or the ipads that they give school children these days. I am going to go out there and live life and just do my best to make things that I like and have a good time with people that I enjoy. That's the main goal for this year. I have a lot of smaller sub-goals but they will all be driven by making things and having fun doing so. Highlights from this episode: Habit Burger grilled onions are not vegetarian. I almost died eating a Red Lobster biscuit once. I will now be streaming video games at a to be determined time/schedule at twitch.tv/notatalkshow Have fun out there. As a kid, Greg Creed played a game with his dad where they would watch TV and try to guess the brands and products the commercials were promoting. This encouraged Greg to become a marketer. Greg then went on to become the CEO of YUM! Brands where he was at the helm of Taco Bell, KFC, Pizza Hut and The Habit Burger. Greg shares with us what he's learned about leadership and culture along the way, marketing insights and the stories behind some of the most iconic marketing campaigns of all time. He also talks about Creed UnCo and his new book R.E.D. Marketing: The Three Ingredients of Leading Brands.

The Habit Burger Grill is the latest addition to the Yum Brands family, but its arrival as a new sister concept to KFC, Pizza Hut and Taco Bell came at an inopportune moment: The deal was closed last March, just as restaurants across the country were shutting down in the face of the coronavirus pandemic. The integration of The Habit into the rest of the company understandably took a backseat to the group's immediate needs, as did fun projects like new product development. In this podcast, The Habit's chief branding officer, Iwona Alter, shares how the chain, which now has close to 300 locations, adjusted its promotional schedule of new items while still keeping the research & development process moving forward with items like the Chicken Caprese on Grilled Ciabatta and — its biggest rollout during the pandemic — new fried chicken items, including a sandwich, of course, with extra ridges of crunchy batter called “cridges.” She also discusses the appeal of the new patty melt and hints at menu development we can expect to see from The Habit in the near future.

Keto at The Habit Burger Grill https://rockthatketo.com/?p=2230&preview=true (https://rockthatketo.com/keto-at-the-habit-burger-grill/) The first bite you take of their award winning Charburger, you can imagine yourself in Santa Barbara, California. The year is 1969. You are in the quaint, picturesque town on the Pacific Coast. Great doings are afoot in the world...humans have landed on the moon, there is great upheaval in society. Yet here in this quiet town, the original Habit Burger Grill came into existence. Two brothers partnered up and decided to offer their vision of burger perfection. With borrowed money from their mother, they started a humble little restaurant near Goleta Beach. They wanted fresh, not just in the burgers, but even the bread. They would get fresh baked bread daily from a local bakery, and grill the buns along with the burgers. Then use the best produce they could get their hands on, the ripest tomatoes and greenest lettuce. After they were well known for their burgers, they added to other ocean inspired items like their fresh grilled ahi tuna sandwich. Their intention was to make their restaurant a habit for the locals, and it worked. They now have over 250 locations, mostly in California. They were bought by Yum brands a few years ago, so there may be much bigger things in their future. The offerings of Keto at The Habit Burger Grill are a little slim, as is normal with burger places. But, what you get is quite tasty. The burger and the ahi tuna filet are keto approved. However, also like other restaurants, their house sauces use sugar, so be sure to ask that they are left off. They do have large leaf lettuce to wrap your burger, if you ask. Part S of our "A to Z" anthology series brings the debut of themikefrancesa.com poster "Sherrin" to the program. Sherrin and Dave catch up on life, reveal the origin of Sherrin's name, talk a bit about his few months living in Australia, and talk about delicious California fast foods like The Habit Burger and Del Taco. Later, we sing our praises of a terrific sports bar, Tony P's in Marina Del Rey, and extend the topic to break down various NFL team bars throughout Southern California. Among them are the notorious Sonny McLean's for the Patriots Fans, O'Brien's Pub for Giants fans, and a few others. The meat of the show, in our second half hour, is a thorough look at Sherrin's love for Disney and its theme parks. Dave and Sherrin both run down their favorite Disney characters, favorite attractions, and then segue to Sherrin's incredible story of how he got invited to the exclusive "Club 33" at Disneyland's New Orleans Square.

Yum Brands Inc. announced a major acquisition. The Louisville-based restaurant conglomerate is purchasing The Habit Restaurants Inc. (Nasdaq: HABT) for $375 million. The company’s existing brands include — KFC, Pizza Hut and Taco Bell. Does this really help the stock - with such a small brand in comparison to the other YUM powerhouses, this appears to be more of a management issue.
